BACKGROUNDER Dock to Dish ® (6 South Elmwood Avenue, Montauk, NY 11954 [917] 853-8559 www.docktodish.com) was founded by commercial fisherman Rudi Bonicelli and restaurateur Sean Barrett, fishing partners and longtime friends who believe the best way to eat fish is the way it has always been done – when the “catch of the day” was really caught that day. It harkens back to the times of concierge fisherman, who brought their haul to the back doors of restaurants, which served the fish that night: an experience Barrett had at a coastal town in Spain that had tugged at him for years. “We can do that here,” he thought. “We can be the salt water brothers to Farm to Table.” And now with the help of trusted neighbors in the fields of medicine, law and environmental conservation, Dock to Dish ® has become uniquely qualified in providing members with impeccably fresh seafood caught with the consumer and the planet in mind. The community sponsored fishing co-operative is pioneering a return to the way fresh seafood has traditionally reached its market with respect to seasonality and the local economy. The concept is simple – consumers purchase a membership and are ensured their portion of fresh in-season fish filets. However, the benefits of being a member of Dock to Dish ® are more than receiving a weekly share of pristine and expertly handled seafood. Members become an active part of a community that not only values fresh food, but also participates in protecting the environment, eating locally and supporting the vibrant fishing economy. Members also learn about the cycle of fresh seafood, how it is caught and how it may be prepared. During weekly pick-ups they will also have the chance to meet the fishermen and learn about their practices. Yearly get-togethers and member appreciation days also allow subscribers to meet other socially conscious consumers. After conducting a successful pilot program with Concerned Citizens of Montauk (CCOM) during October and November 2012, Dock to Dish ® is proud to announce their inaugural season beginning the Saturday of Memorial Day Weekend, May 25, 2013 and running through Saturday, June 29, 2013. Dock to Dish ® is currently enrolling members for this season on a first come, first serve basis with a maximum of 30-individual subscriptions and 15-family subscriptions. These participants will be the heart of the organization and are considered Founding Members. Subscriptions are valid for six weeks at a time and are available for individuals (serves 2 to 3 people twice, $36 per week), families (serves 4 to 6 people twice, $70 per week) and restaurants (approximately 25-pounds of whole fish, TBD). All fish is caught locally and sustainably, with respect to the environment, and brought to shore within 24-hours of the catch. Dock to Dish ® is committed to never overfishing and will never provide its members with endangered fish or items out-ofseason. In addition, the co-operative is committed to harvesting fish favoring methods by priority, which has the least overall environmental impact and incidence of unwanted by-catch possible. A variety of local Long Island and New England fish that will be provided include: black bass, blowfish, bluefish, haddock, hake, monkfish, Pollock, porgy, skate, striped bass, summer flounder, redfish, swordfish, tilefish, tunas, wreckfish, Mahi Mahi, mullet, snappers, triggerfish and wahoo. (Initially, shares will only include fileted fish. Shellfish and whole fish options will be made available when demand and supply are certain.) All new memberships are required to purchase a “Beginner Box” for $114 per subscription, which includes an insulated canvas tote bag, eco-friendly freezer blocks, cedar planks for grilling and a founding member t-shirt. In addition, founding members receive a one-year membership to Concerned Citizens of Montauk and an autographed copy of For Cod and Country, a seafood cookbook by Barton Seaver, director of Healthy and Sustainable Food Programs at Harvard University and Dock to Dish supporter. Members will visit the designated pickup location at the Dock to Dish ® Fresh Fish Stand near the corner of Windmill Lane and Town Lane in Amagansett. Members are reminded to bring their insulated canvas tote bag and freezer blocks (from the beginner box) each week so that filets maintain the proper temperature during transport.
