Welcome to Spring!

W

hen we think about the spring season, we think about many things. We think about beautiful blooming flowers and freshly cut grass. About the warmer weather, longer days and the beautiful melodies of songbirds back from their winter migrations. When we think of spring, we think about renewal and freshness. And that’s what we were thinking about when we were putting together this spring farm-to-table issue of Vinings Lifestyle. We were thinking about perusing the Marietta Square Farmers Market and finding the best in-season produce—apricots, asparagus, broccoli, honeydew, oranges, pineapple and strawberries, to name a few. Photo: Donna Permell, PrimePhocus.com

We were thinking about honey, about edible flowers to bring the beautiful colors of spring to your table, about refreshing spring looks and about all the locally sourced goods this season has to offer. So as you make your way around Vinings/Smyrna this season, breathe in a plethora of fresh air. Enjoy the sun’s warmth, the clouds’ showers, the bustling of people and the rejuvenation spring brings after a long winter. Festival season is also upon us. There is no need to search the internet for dates, we’ve put together a 2017 list of festivals so you can start making plans now. May you find the contents of these pages as renewing and refreshing as we find this time of year.

Q: What is Academic Coaching, and is it right for my child? A:

Academic Coaching is more than tutoring, it is a broad approach to helping your child acquire the necessary tools to be successful in the classroom. At the Cora Lee Institute, our Educational Division is committed to providing each student a safe, supportive environment that promotes self-advocacy, motivation, and excellence in learning. The “Cora Lee Method” of academic coaching provides specialized advantages over traditional tutoring. It is our belief that all students are individuals, and thus we provide a tailored approach with personalized attention to meet the child where they are, both emotionally and academically. Our academic coaching staff is made up of certified, veteran educators, both male and female, with combined years of experience working with children and adolescents both in the classroom and in clinical settings.

We offer many academic programs including: • Reading/Math Recovery - An intense, customized program for students two or more years below grade level. • Remediation/Support – Individual program for those below, but within two years of grade level. • Coaching – Individual program for those who are on grade level, but require support. We can also help students review and prepare for EOG (3rd – 8th grade) or EOC (9th – 12th grade) standardized state tests/examinations. • Development of Executive Function Skills – Designed to address the eight key executive functions instrumental in academic acquisition and learning including: impulse control, emotional control, flexible thinking, working memory, self-monitoring, planning/prioritizing, task initiation and organization. • Development of Study Skills – Designed to work with students to develop key study skills that often times impact a student’s academic performance, such as time management, note-taking, reading/decoding of questions, environment, proper value and habits). • ACT/SAT Preparation – This program is designed to help students prepare for their high-stakes tests providing them specific skills and review of content generally presented on these tests.

If you think that you and your child may benefit from any of these programs, reach out to our Director of the Educational Division for a consultation. Q: HOW DO I MANAGE TEMPER TANTRUMS? A: THE FIRST GOAL, IN MANAGING TEMPER TANTRUMS, IS FOR PARENTS TO UNDERSTAND THAT MOST TODDLERS WILL HAVE TANTRUMS. Most toddlers go through a stage we like to call the “terrible twos”. However, I think parents are starting to experience the “terrible ones”. Temper tantrums are starting earlier with toddlers. They are the hallmark of one of the more difficult behavioral periods for parents. The first goal in managing temper tantrums is for parents to understand that most toddlers will have tantrums. They are characterized by periods of falling out, screaming, crying for prolonged periods, stomping feet, and other behaviors. Frequently, if you are able to ignore and avoid eye contact during these periods, the behaviors will possibly subside or present for shortened periods of time. You will need to ensure the safety of your child prior to ignoring. This isn’t a method to utilize when outside of the home. Additionally, redirecting your child to a more desirable activity will assist in stopping undesired behaviors. Parents should support each other and ensure they engage in relaxing activities to avoid being frustrated with temper tantrums. If you have concerns of how to manage your child’s behavior, please ensure you schedule an appointment with your pediatrician.

M A RK ET A Saturday at Marietta Square Farmers Market

Vinings Lifestyle | March 2017

T

he great thing about spring is that it inspires us to venture outside. Whether to play catch at the park or to dine alfresco, spring is also a great time to check out your local farmers market.

Marietta Square Farmers Market, located in the heart of Marietta, vibrates with an energy that will inspire the foodie in all of us. Open 9 a.m. to noon every Saturday and Sundays, May through October, the farmers market offers options that cater to both health conscious and indulgent eaters alike—making it no surprise why it is named the No. 1 farmers market in Atlanta. Visit MariettaSquareFarmersMarket.com for hours and a full list of vendors. For some, the day cannot begin without a great breakfast and, for me, a hot and toasty pastry is always a favorite. Seven Sisters Scones, located in Johns Creek, offers an array of f lavors that excite the palate. Chef and owner Hala Yassine—who coined the name because she is one of seven sisters—takes a nontraditional approach to the scones, making each one moist and packed with f lavor. Its best-selling item is the fig and goat cheese scone, which I was lucky enough to grab one of a few left. It is the perfect balance of sweet and savory, and the scone is so buttery you can eat it without the worry of making a crumbly mess. Its fragrant lemon poppy scone is another major hit as well as its classic cranberry scone, which sold out within the few minutes I was there. Seven Sisters also sell delicious soups, salads and desserts, which are available online at SevenSistersScones.com and its store location. No doubt these Sisters are welcome favorites at the breakfast, CONTINUED > brunch and lunch tables.

Scone & Lamb Sandwich SCONE AND LAMB SANDWICH

• 10-15 Seven Sisters fig and goat cheese scones • 1 (3 to 4 pound) leg of lamb • 6 cloves garlic • 1 tablespoon ground rosemary • 1 tablespoon kosher salt • 1 tablespoon pepper 1. Preheat the oven to 375 degrees. 2. With the point of a knife make small slits, about 1-inch deep, in the fat side of the roast. In each slit, stuff 1/2 clove of garlic. 3. Rub the rosemary, salt and pepper over the roast. Place the roast over a bed of mirepoix or in a roasting rack. Cook for 30 minutes. 4. Lower the heat to 250 degrees. Continue cooking until internal temperature reaches 150 degrees, about another 1 1/2 to 2 hours. 5. Remove from heat and let rest for 15 minutes before slicing. Serve as an open-faced sandwich with two slices of lamb with Dijon mustard. (Full recipe: FoodNetwork.com)

MARKET FRESH (CON TI N U ED)

I wanted pasta for my dinner menu, so a fellow shopper recommended I stop by Mary Alicia’s Artisan Pasta, where the pasta is made fresh to order and features ancient grains like farro. With its selection ranging from spinach to golden butternut squash pasta, the lemon artichoke pasta is its standout star. It is tart, refreshing and light, which is perfect to eat on a cool evening. Mary Alicia’s also sells ravioli and sauces for all pasta needs, and owner Mary Blanford will happily make pairing suggestions if you need one. Mary Alicia’s is a market favorite, often selling out early, so it’s a good idea to visit this stand first. Visit the shop online at Facebook.com.

• 2 handfuls of greens of choice (spinach, kale, collard, turnip, etc.) • Goat cheese (flavored or unflavored) Take a couple handfuls of chopped greens and add them to your pasta water for the last four minutes of cooking. Before draining the pasta, save 1/4 cup of water from the pasta. Drain the pasta with the greens in it. Mix the reserved water, and about 1 ounce of cheese per person. Mix well. I was nearing the end of the market when my nose led me to the smoky grill of Sausage World, Inc. The small butcher shop run out of Lilburn is a market staple—and for good reason. At first, the selection of meats can be intimidating, and your decision may get more difficult after each sample, but the all-around favorites are the Dracula and Cajun andouille sausages. The Dracula sausage, which is available in pork and chicken, is savory and has the perfect amount of fat to keep the sausage (particularly the chicken) from drying out. The andouille is spicy and smoked. I bought several for dinner that night, feeling like I struck gold. For shop info and delivCONTINUED > eries, visit SausageWorldInc.com.

The patented high-efficiency wind circulation system allows anyone from 3 to 103 to safely simulate the experience of skydiving. The main person responsible for your seamless experience at the iFly on Cobb Parkway is general manager Ian Vanderkley. His journey to Atlanta started

in New Zealand where he grew up and obtained a degree in sport and exercise science from the University of Auckland. He settled in Atlanta seven years ago after he met his wife while working on Royal Caribbean Cruises. His family now includes their 1-year-old daughter and three rescue dogs. CONTINUED >

Instructors show their trick moves.

There is no typical workday for Vanderkley. “I have huge variety in my work and I am constantly encountering new situations. But most importantly, I spend a significant time interacting with my staff and making sure we have a happy and healthy team environment.” This teamwork is what ensures the fliers to have an amazing experience. At iFly you work with flight instructors (most are former skydiving instructors), a flight driver who controls the velocity of the wind, and of course, the front desk team. Vanderkley manages 25 employees. “I cannot praise my staff enough as they are all outgoing and excited about life,” he says. “We deliver the best customer service possible so that people can feel comfortable and confident flying.” His employees agree, and operations manager Ebonee Clark says, “He’s the best boss I ever had. He’s a great communicator.” You can be certain to have a memorable experience at iFly. All the instructors are put through a four-week training program and also engage in comprehensive ongoing training. Anyone can participate from beginners to advanced skydivers. The company also hosts all-abilities nights where they fly people with physical disabilities and special needs. “I love that I am part of a company that is delivering the dream of flight to people all over the world,” Vanderkley says. Vanderkley loves flying himself and looks forward to the day his daughter turns three so they can fly together.

Members of the team love to fly.
