PROTECT YOUR SKIN Sun protection is your first defense against skin cancer—and wrinkles. The Summit Club, with its amazing view of downtown Tulsa, has been Tulsa’s premier dining and social club and event facility since 1967. EXPERIENCE TO THE CLUB. He spent the last four years as executive chef at Crystal Bridges Museum of American Art and has served as executive chef at Ella’s restaurant at the Inn at Carnall Hall. He also worked closely with the University of Arkansas Hospitality Department to open a kitchen to host training and internship opportunities. “As we create new flavors and entrees, I enjoy working with local farms to bring the freshest ingredients to the table,” he said. One of Lyle’s healthy specialties is 413 Farms chicken liver pate with a black currant jelly, served with brioche toast points. Maintaining a healthy lifestyle means being active but also eating healthy. As Chef Bill explained, eating the right foods can still include good fats. “Eating healthy doesn’t necessarily mean you have to reduce fats, it’s more about eating the good fats from good meats,” he said. “The dishes I create are made with olive oil, fresh produce and meats that are not artificially grown or raised with chemicals. Because these meats from our local farms are vegan fed and are hormone-free, it ensures the food is fresh and of the highest quality.” Chef Bill points out there are a number of healthy substituting secrets that can be used for different dishes.

“Cauliflower is a versatile vegetable that is taking the place of dairy in everything from mac-n-cheese to a number of sauces,” he said. “By simply replacing key ingredients with healthier alternatives, it makes for a more flavorful and healthier meal.” He works closely with general manager Jared Jordan, a certified sommelier, to pair entrees with the perfect wine. It helps that the wine list at The Summit Club is one of the most expansive in Tulsa. “The pate and pork belly are fairly French in food style and both traditionally pair well with wines from France, so I’ve paired them with a Beaujolais,” explained Jordan. “Beaujolais is producing some of the most stellar wines in France these days, and the last several vintages have been spectacular. The other great thing about Beaujolais is that you get killer wines that are as good as, if not better than, wines from Burgundy – at half the price.” Specifically, Jordan paired both entrees with a 2014 Domaine Marcel LaPierre Morgon from Beaujolais – a wine that features notes of vibrant cherry, a very fresh acidity and very well structured tannins, and a hint of lingering spice.

Duck Liver Pate 40 oz. Liver (trimmed) 7 oz.  Red Onion (small dice/ice water) 4 T.      Fresh Thyme 4 T.      Fresh Tarragon 14 oz.  White Wine (weight) 1/2 T.   Salt 1 t.       Sugar 14 oz.  Cream (weight) 14 oz.  Butter (weight) + Sear liver hard on one side, cool. + Sweat onion, add herbs and deglaze with wine, reduce by 2/3, add liver for last two minutes of cooking. + Add cream and sugar with blender on, then emulsify butter into the mix, check salt. + Press through chinois twice. Pour into desired container and chill for 20 minutes. Pour just enough melted butter or duck fat to cover the entire surface of each pate and chill for at least 2 more hours.

Cauliflower Bechamel 4 T.   Butter ¼ c.   Flour 1 ea.  Shallot (chopped) 1 ea.  Small Head of Cauliflower (chopped) 4 c.    Whole Milk 1 c.    Parmesan (grated) 1 t.     White Pepper 2 t.    Truffle Salt (optional) + Heat milk to a simmer. + In a separate pot, heat butter with shallots. Stir in flour and cook until light blonde in color. + Pour milk slowly into the roux while whisking. Stir

within the workout arena. After years in the physical fitness industry and own-

ing gyms, they invested in the idea of bringing local people together to grow in the concept of helping others be their best self. This idea of working next to others and growing along-side others on their fitness journey has produced tremendous results, Kevin said. “When Kevin and I came up with Revved Fitness, our idea was to bring everything we loved about our experiences into one place and leave out everything we disliked. We devised what is a group physical training facility where everyone who walks in goes through our programming. So, everyone who walks through our doors is never left behind,” Emily said. So what exactly is such a community and how does it work? First off, Revved Fitness is a boutique type of business, meaning it focuses on unique aspects of an industry. Think yoga or pilates as examples of what is considered specialized workout facilities as opposed to a gym with a one size fits all mentality. Although the examples mentioned above are more heavily attended by women, Revved Fitness’ concept appeals to both genders. “Revved Fitness is a high-intensity interval training concept where the client will burn between 500 and 1000 calories during the one-hour workout session,” Kevin said.

In addition to the sessions, the team members at Revved use body image scanning and other tools of modern science to allow their clients to see the actual results that they are achieving, Kevin added that they are the only facility which offers this. They also have each client wear heart rate monitors. This is then projected onto a screen allowing for the trainers to observe and tweak each workout for optimal efficiency and for the clients to actually see the calories they are burning. The heart monitors serve multiple purposes though. Since these sessions are group sessions where clients workout next to each other, the personal trainers leading those groups can optimize each person’s session, which can be progressed or regressed by using all of the stats from the monitors to make sure clients are getting the most out of the sessions while still remaining within health limits of what their bodies can handle. In addition, it allows for the beginner to work out next to someone who is much more advanced in fitness. Kevin reiterated that these are group workouts with a personal trainer leading the sessions. As such, a community bond is created between the clients themselves and their trainer. In many ways, it’s like having one’s own cheerleading squad to help keep them focused and supported during their fitness journey.

“WE WORK TOWARD HELPING OUR CLIENTS REACH THEIR GOALS, WHETHER THOSE ARE PHYSICAL, EMOTIONAL OR SPIRITUAL,” KEVIN SAID. WE APPROACH EACH CLIENT ON A PERSONAL LEVEL. WE USE A MASTER WORKOUT CONTAINING SEVEN DIFFERENT WORKOUTS WITHIN IT; ONE FOR EACH DAY OF THE WEEK. THESE ARE USED IN TWO-WEEK INTERVALS AND THEN A COMPLETELY NEW MASTER WORKOUT IS WRITTEN. THIS ALLOWS FOR FRESH CONCEPTS AND KEEPS CLIENTS’ ROUTINES FROM GROWING STALE. “The advantage that Revved Fitness has over other fitness centers is that each client gets the personal trainer experience, but without the cost associated with actually hiring one. And this is in a community atmosphere where those helping you in the fitness journey actually care about the results of each client,” Emily said. In addition, they touch on many other aspects of their client’s lives ranging from nutrition, supplements and lowering stress levels. “We’ve created something that we love and we hope that people will gravitate toward us,” Emily said. Kevin and Emily opened their first Revved Fitness on Brookside in January of this year and have a new location opening in Broken Arrow this month. There is also a franchise location in South Tulsa operated by Adam and Breean Akins. Kevin explained that whichever location one chooses to utilize, they will find the same experience as they experience in their home location. All locations are connected with the same master workout sessions and so no matter which one a client visits, they will still feel right at home on their journey to becoming their best self. Fitness is a journey. Whether one is traveling from Oz like Dorothy or across town to reach it, there is still no place like home and no other place like Revved to make you feel like you are there. 30
