IS THAT JUST A CATCHY SLOGAN OR A PROPHECY? I vote for option B! Never before have women had so many choices--to have children, a career, or both? Follow your passion or follow the paycheck? Choose your own adventure is rapidly becoming reality for more and more women and it excites me for the future generations that we are now raising. My daughter is 18 months old right now and I can already see the pluck and drive that is innate within her. She's determined in a way that only a toddler can be. She's smart but also sweet and affectionate. The world hasn't had a chance to toughen her up yet and for that I'm grateful. As she learns and grows, I want to keep working to make sure that she has all the options available to her, both educationally and professionally. The women that we've showcased in our Movers and Shakers feature are the trailblazers that are making this possible. So many different walks of life are represented--a doctor, a banker, a stay at home mom and foster mom, an artist, and an entire architecture firm founded by women. My daughter has some pretty great role models to look up to and

The Center also offers private and semi-private horseback riding lessons for riders at all levels and ages, including beginners, recreational riders, and show ring competitors. “It’s like family at the farm,” Randles says. “Once you get the itch to ride and be around horses, you have it for the rest of your life.” Randles started riding horses when she was two-years-old. Saddlebred horses are a favorite. “I’ve had horses nearly all of my life,” she says. “When I lived in Boston, I’d make my husband drive me 30 minutes to the country just so I could see horses.”

“IT’S LIKE FAMILY AT THE FARM,” RANDLES SAYS. “ONCE YOU GET THE ITCH TO RIDE AND BE AROUND HORSES, YOU HAVE IT FOR THE REST OF YOUR LIFE.” Randles created the equestrian center as a way for the public to learn about and share a love of horses and equestrian culture. Equipped with a round pen, paddock, stalls, and indoor and outdoor areas, the Center schedules horseback riding camp and mini camps for adults and children. Tryon, an expert horse trainer, works with colts, prospective show horses and finished horses. With more than 30 years of experience under his belt, Tryon has cross-trained with western horses, Arabian horses, quarter horses, and show horses. “Jeff came to us from Callaway Hills Stables near Jefferson City,” Randles says. “His philosophy is to train horses from a happy place. Jeff has trained virtually every breed of horse. Saddlebred horses are his passion. They are social, smart, and high-spirited but safe for children. They’re a unique breed.” Tryon, who has trained horses in eight states, has worked for and learned from world championship trainers such as Sonny Sutton, Richard Obenauf, and Dena Tanner Lopez. The public is welcome to attend free monthly meetups at Liberty Farm Equestrian Center, visit with the staff, and meet the horses. “They can learn about the horses and ride for a few minutes,” Randles says. The Center’s camps and lessons provide another means of learning about and participating in equestrian culture and a shared love of horses. Liberty Farm Equestrian Center is also available to rent for events. The Center works with Ben Carrick of Meeting Excellence, who has planned fundraisers, dances, and parties at the farm and facility. Honestly, it’s the anticipation of what’s going to excite my kids that day. Today, my 6-year-old was jumping out of his skin thinking about his next baseball game; yesterday, my 9-year-old looked forward to lunch and a movie we’d been planning for some time. Last week, one of our foster kiddos was counting the days (to anyone who would listen!) until his big 8th birthday. It’s so easy to get wrapped up in the busyness of life that I try not to take these moments of excitement and celebration for granted, especially when they mean so much to our kids. THE DISH ALMOND PISTACHIO TARTLETS WITH APRICOTS INGREDIENTS ›› 1/2 cup oats, gluten-free ›› 2 1/4 cups almond flour ›› 1 teaspoon baking soda ›› 1 teaspoon salt ›› 1/4 teaspoon ground cinnamon ›› 1 cup melted coconut oil or butter ›› 3/4 cup brown sugar, packed ›› 3/4 cup granulated sugar ›› 1 tablespoon vanilla extract ›› 1/2 teaspoon lemon juice ›› 2 large eggs ›› 1 1/2 cups chopped pistachios ›› 1 cup apricot jam ›› 8 ounces dried apricots ›› Whipped cream

INSTRUCTIONS 1. Preheat oven to 350 degrees. Lightly coat one large or six mini tart pans with oil.  2. Place oats in blender and blend until turned into a powder. Place in a medium-sized bowl and whisk in almond flour, baking soda, salt and cinnamon. Set aside. 3. Stir together melted coconut oil or butter, brown sugar and granulated sugar until smooth. Stir in vanilla, lemon juice and eggs. Add the flour mixture.  Scoop the dough into the tart pan and place on a cookie sheet. Cover well with plastic wrap and chill at least 4 hours. 4. Bake for 13-17 minutes. Cool 30 minutes on a cooling rack.  5. Pop tarts from pans, and brush with apricot jam to glaze. Top with cream, apricots and additional pistachios.

INGREDIENTS ›› 1/2 pound (1 3/4 cups) whole almonds or ½ pound blanched almond flour ›› 6 large eggs, separated ›› 1 1/4 cups sugar ›› 2 tablespoons matcha powdered tea ›› 1 teaspoon vanilla extract, divided into 2 parts ›› 2/3 cup egg whites, from 5 to 6 large eggs ›› 1 1/4 cups sugar ›› 1/4 teaspoon salt ›› 1 pint raspberries INSTRUCTIONS 1. Preheat oven to 350 degrees. Lightly grease a 9-inch cake pan.  2. Grind almonds to a fine consistency (or use almond flour). Beat egg yolks and sugar until fluffy. Add ground almonds, ½ teaspoon vanilla and salt and beat until smooth. Whip whites to soft peaks, and fold into almond mixture. Pour cake batter into pan. Bake 40 minutes.  Cool 10 minutes, then remove. 3. For buttercream, put egg whites, sugar and salt into a glass bowl.  Set the bowl on top of a pot of simmering—not boiling—water. Stir constantly until sugar dissolves and temperature has reached 175 degrees. Remove from heat and beat with electric mixer until stiff peaks form. On low speed, add ½ teaspoon vanilla extract, then add butter slowly cube by cube until velvety smooth. 4. To finish, cut cooled cakes with 1-inch cookie cutters, or use full-sized cake layers.  Layer with Swiss meringue buttercream and top with frosting. Garnish with matcha and raspberries.
