And this month at North Scottsdale Lifestyle, we’re all about feasting with foodies as we just scratch the surface of all the fine eats and drinks North Scottsdale has to offer. The dog days of summer brought us ice cream, refreshing salads and cocktails enjoyed by the pool as we celebrated the Fourth of July, vacations and abundant sunshine. But the autumnal days of October bring us chili cooking on the stove, seasonal fruits and veggies and pumpkin spice, well, pretty much everything, as we celebrate football season, some warm-weather relief and shorter days moving toward the end of the year. Whether you consider yourself a foodie, a gourmet, an epicure or just an average eater;

RENOVATE & REFINE

A DECORATIVE TOUCH THAT DEFINES YOU INNOVATIVE PIECES CAN ENHANCE PERSONAL STYLE AND BREATHE NEW LIFE INTO ANY SPACE ARTICLE STACI HAUK | PHOTOGRAPHY PROVIDED

W

HEN IT COMES TO DESIGNING A HOME, IT SHOULD NOT ONLY BE A REFLEC-

TION OF PERSONAL TASTE BUT ALSO A WAY TO EXPRESS FEELINGS. “Rooms have no feelings, you do! The room won’t care how it’s decorated, but you

should care because it is your space to rejuvenate and unwind after a long day,” says

interior designer Barbara Kaplan.

Barbara owns Design Dimensions Interior Design and also has a website called

BarbarasPicks.com where she encourages clients to take her online quiz to determine their personal style and how it translates to customizing their homes. She recently wrote a book about the subject as well. “My book [The Bajaro Method: Rooms Have No Feelings, You Do] encourages people to

express themselves in their personal space. Every environment we are in either makes us feel good or bad, comfortable or not comfortable. Ultimately, it’s up to us.” This method of design simplifies decorating and helps clients gain confidence and trust in their own creative talents and spirit. Barbara focuses on textures and prints because she understands that what you look good in can also be what you design with.

12

North Scottsdale Lifestyle | October 2018

“My vision is to empower people to be their own interior designers,” she says. Due to her appreciation for beauty and innovation, Barbara describes a kitchen that perfectly reflects a need for that particular space to exude the taste and lifestyle of diverse people and activities. "The kitchen is the heart of the home, and it affects our health and well-being. This space is often our entertainment room or the space where guests love to congregate. This kitchen was designed for homeowners who are sophisticated and passionate about art. They definitely wanted the drama of an intimate and sensual space." Barbara has been an interior designer all her life, as her parents were antique importers and surrounded her with artistic individuals. She knows that everyone’s definition of beauty is different, so personalizing a home with your idea of beauty is key. “As designers, we have a responsibility to bring people into surroundings they can feel good in. I want you to stay focused on your idea of what feels good,” she says.

CRISP FALL AIR, FLOWING STREAMS, LUSH SURROUNDINGS. Page Springs Cellars provides the perfect backdrop for a fall escape. A few hours drive from Scottsdale, the vineyard is an oasis for the wine enthusiast looking to engage in all that a winery has to offer. "It's absolutely gorgeous here at Page Springs. We have a creek that runs through the middle of our property. You'll experience fall color change, and from the moment you drive up, it's like another world," says Brand Manager Luke Bernard. Fall is harvest time at Page Springs, so guests can see fruit being harvested and processed. "If you walk around the property, you will see winemakers gathering grapes and moving barrels around. You'll witness active fermentation. It's that association between the vineyard and what you're drinking that really elevates the whole experience," Luke says. Page Springs is home to the largest wine club in the Southwest. Membership comes at no cost, with a commitment to purchase pre-selected wines. The winery treats members to private tastings, blending trials coupled with competitions, barrel samples in the winter and movie nights by the river. "The club is highly interactive. What is truly amazing is our offerings, and it all happens on location." Guests to the winery can visit the tasting room daily, delve into the inner working of the winery's substantial culinary program, take behind-the-scenes tours of the wine process, host private custom parties, participate in the yoga brunch and so much more. "We have a big family of a wine club that is intertwined in every aspect," he says. Luke wants visitors to know that Page Springs Cellars will exceed expectations and leave you wanting to revisit soon. "Wine in Arizona is better than most people expect. Page Springs is a very different experience than you will get at most wineries. With rolling acres and rivers, our vineyard is set in a picturesque location and, paired with our offerings, is often compared to Napa Valley. That’s what separates us."

"IT'S ABSOLUTELY GORGEOUS HERE AT PAGE SPRINGS. WE HAVE A CREEK THAT RUNS THROUGH THE MIDDLE OF OUR PROPERTY. YOU'LL EXPERIENCE FALL COLOR CHANGE, AND FROM THE MOMENT YOU DRIVE UP, IT'S LIKE ANOTHER WORLD."

Innovative Wine Cellar Designs BRING MODERN ELEGANCE TO ANY HOME

ARTICLE STACI HAUK PHOTOGRAPHY PROVIDED

INNOVATIVE WINE CELLAR DESIGNS LIVES UP TO ITS NAME, AS ITS HIGH STANDARDS FOR QUALITY AND ATTENTION TO DETAIL HAVE BEEN UNSURPASSED SINCE 2002. “We were one of the first companies in the country to move from traditional wood wine cellars to a more contemporary look, and we continue to develop new products along those lines,” owner Sandy Horowitz says. With a background in the closet industry, Sandy tapped into the wine cellar business in its infancy. “I contacted some of the architects, interior designer and custom home builders that I had developed relationships with while at California Closets. Custom wine cellars were a new concept, but they were willing to take a chance with me and we started adding them into some of the homes that they were designing and building.” Now more than a trend, wine cellars are adding a touch of sophistication to custom homes. And while these cellars serve a purpose, they have become artistic in nature as well. “The most popular looks in wine cellars out west are sleek enclosures of glass with the racking made of metal, glass, acrylic, aluminum and stainless steel cable. The newest look is what we refer to as ‘label forward’ (where the bottles are displayed horizontally so the label can be easily read rather than the front-to-back storage that was previously the only option,” Sandy says.

Finding the perfect bottle easily and efficiently was an issue Sandy solved with the new design elements, and he is currently working with manufacturers in Europe in changing the look of wine cellars to further create custom spaces for clients. Sandy takes pride in each unique design and describes the importance of convenience and luxury when he designed his own cellar. “My cellar is built from All Heart Redwood and stores approximately 700 bottles," he says. "It has a hidden door that goes into an office behind the wine cellar. The rack on the back right actually has hinges that hold the door. Once closed, you can’t tell that there is a door there. It is designed with diamond cubes above the opening that displays a contemporary piece of art, has a frosted glass countertop with larger diamond bins below and is finished with frameless glass doors and a black honed slate floor." Some other structural decisions include reclaimed wine barrel racking, brick flooring, herringbone wood ceilings and space for wood cases, large-format bottles and wine glasses (as seen in the Bancroft photo). “The Harper has rolled steel on the back wall and the front and sides of the soffit," Sandy says. "The cellar consists of brushed nickel label-forward racking that holds Bancroft Wine Cellar

three bottles deep. The racking below is acrylic panels with stainless steel rods. In the center, there is a cigar humidor with glass front and top."

Horowitz Wine Cellar

The Desert Mountain home cellar has diverse elements including brushed metal racking with bottles laying horizontally but placed with bottles front to back. This cellar is larger, with an 800-bottle capacity and is the focal point of the home with the opposite side facing the kitchen. Innovative Wine Cellar Designs has always been a leader in wine cellar concepts and continues to bring elegance and functional allure to each cellar they design. CHEF WADE SIMPSON KEEPS ON TRUCKIN' WITH HIS GOURMET MAC AND CHEESE ARTICLE STACI HAUK PHOTOGRAPHY ERICA + JON PHOTOGRAPHY EFORE CHEF WADE SIMPSON STARTED WHAT IS NOW VOTED AN OUTSTANDING FOOD TRUCK IN THE VALLEY, HE HAD A DIVERSE CULINARY BACKGROUND THAT HAS LED HIM TO SUCCESS. “When I started my original food truck [Bistro on Wheels] that I still use for catering, people didn’t quite understand what our niche was. They were thrown by the Bistro name, and although we were American- and Frenchinfluenced in our cuisine, the message didn’t translate,” Wade says.   Chef Wade’s Mac 'n' Cheese was the second brainchild of his and focused on the customer favorite at his former food truck: the truffle mushroom mac and cheese. “I just do mac and cheese with this truck, and when we started there wasn’t another like us on the road," he says. "We created a menu centered around mac and cheese and now have 10 to 12 different variations that we constantly change.” Chorizo mac and cheese, New Orleans-style, lobster, even vegan—the possibilities are endless when you visit Chef Wade. And his mouthwatering array comes from his complete understanding of the food industry. “I am a Phoenix local—a dishwasher at 13 at a little restaurant next to my mom’s barbershop on Osborne, I aspired to do more. I started cooking at 16 and have been cooking ever since.”

Wade attended California Culinary Academy in San Francisco. He then worked in the luxury hotel arena before moving back to Phoenix where he worked in the private club setting and finally realized his dream. “I wanted my own restaurant, but starting a mom-and-pop restaurant is a difficult route. I wanted my friends to be able to eat wherever I was. I decided a food truck was the best idea for me,” he says. Owning a food truck has its challenges. “When you cook for a restaurant, the food comes to you, it’s delivered. With a food truck, you do the prep, the shopping, the delivery to a location, the truck loading. Then you drive to a destination, execute the event and clean the truck after. You hope nothing goes wrong because it’s not only about the food, it’s about vehicle maintenance as well.” Wade says that overall owning his food truck is the best decision he ever made. “It’s a beautiful thing to not have to ever ask permission," he says. "When I changed my vision, my graphic team rewrapped the truck and I was done. The idea and concept can just happen when you own the business.” Wade’s unique business model includes his mac and cheese food truck as well as his bistro, which provides catering for large private events. From a plated meal to a buffet, Wade can accommodate an array of culinary needs. “Local ingredients are key. I use Shamrock Farms cream, French’s Meats on McDowell and local cheese from the Dairymen’s Association,” he says. For the perfect fall food truck experience, check out Chef Wade’s Instagram and Facebook page for weekly updates on where he will be in Scottsdale. “Fall is ideal for a visit to the mac and cheese truck, where my visitors can try Philly mac and cheese, Sicilian mac and cheese, chicken fajita mac and cheese and many other flavors. We look forward to serving you,” he says.

MODERN MARKET CULINARY CREATIONS

FAST FOOD CAN STILL BE FRESHLY PREPARED AND HEALTHY. This idea led to the creation of Modern Market in 2009. Modern Market is for those who see food as not just food but as the ingredients that feed their zest for life. Chef Nate Weir says to expect fresh, Market-made dishes that will make for a nutritious meal, even when you are on the go.

Nate believes fresh, thoughtfully sourced, healthy and delicious food should be affordable and available to everyone. He finds daily challenge and fulfillment in creating a brand that combines his ideals about food with the accessibility of fast-casual restaurants. Whether you are dining in or ordering to go, the menu options at Modern Market offer an abundance of options that complement a healthy lifestyle. Grain bowls, hand-carved plates, avocado toasts and even a kids' menu are just a few of the offerings at the North Scottsdale location. Seasonal options are an essential part of the Modern Market menu, and the  Tuscan Summer Squash recipe is delicious and light and easily transitions from summer to fall. After tasting this colorful dish at Modern Market, impress guests by recreating this versatile recipe at home.

38

North Scottsdale Lifestyle | October 2018

OFFERS A FALL FAVORITE PACKED WITH NUTRITION

TUSCAN SUMMER SQUASH (Makes about 6 servings) INGREDIENTS » 2 pounds summer squash (zucchini, yellow crookneck, etc.)  » 2 tablespoons extra-virgin olive oil » 1/4 teaspoon red pepper flakes » 2 cloves garlic, chopped » 1/4 cup fresh herbs, chopped (basil, oregano, rosemary, thyme) or 1 tablespoon dried herbs (high-quality Italian herb blend) » 1 teaspoon kosher salt DIRECTIONS 01 Preheat oven to 500 degrees. 02 Make a thin slice to trim the tops off squash, then cut each in half lengthwise. Place flat cut side on cutting board, then cut into large half-moons about 1/2 inch wide.  Consistent-sized pieces are important so the squash will roast evenly. Place cut squash in a bowl. 03 Peel and roughly chop garlic cloves; add to bowl with squash. If using fresh herbs, rinse and dry well, then roughly chop and add to bowl.  Note: Many combinations of fresh herbs taste great with this dish, or even just a single herb like rosemary or basil. However, it’s most flavorful and interesting if you use a variety of herbs. 04 Add olive oil, red pepper flakes, salt and dried herbs (if not using fresh ones) to the bowl. Toss well to coat the squash.  Tossing well also helps the fresh herbs to release more flavor, so don’t be shy with this step. Taste a piece, and adjust seasoning if needed. 05 Transfer squash to a cookie or baking sheet. Roast in hot oven for 5 minutes, then give the tray a good shake. The squash should be softened and a bit charred where it was touching the pan. 06 Remove from oven and serve immediately.

ARY VOORHEES AND HIS DAUGHTER, CANDACE, ESTABLISHED ARIZONA TASTE CATERING AND EVENT PLANNING IN 1990 TO PROVIDE PREMIER CATERING AND EVENT PLANNING SERVICES FOR PRIVATE AND CORPORATE CLIENTS OF ALL TYPES. Now, as the top caterer in the Valley, Candace says that impeccable attention to detail, along with exquisite cuisine and wines are what Arizona Taste blends to create occasions that exude beauty and elegance. Designing the perfect atmosphere for any occasion begins with food

presentation. From seasonal colors to staging against breathtaking backdrops, Arizona Taste takes many factors into account when arranging a meal for an event. “The only thing better than our service is what we serve,” Candace says.

tips

Capturing food presentation at an event means setting the scene for photo-worthy food ahead of time. Candace shares her tips for beautiful food photography.

» TIP #1: Tabletop light boxes are such a convenient and handy tool at events. Just pop the lightbox up wherever you're at and take the perfect picture. It's like a tent and creates great lighting even when it isn't a well-lit area.

» TIP #2: When photographing an event with a buffet, setting it against a nice backdrop is key. If you can create a tablescape that is wonderful or arrange the food in front of a sunset outdoors to make for incredible photos.

» TIP #3: Color pops in your photos, so think seasonal. If you are photographing food in the fall, green, oranges and even reds will make food blend with the abundant colors of that time of year.

» TIP #4: Be impromptu with food shots. Don't be too rigid when taking food shots; embrace imperfection and go for it.

» TIP #5: It's nice to have dimension in a shot. For example, we've used headboards and transformed them into wood risers.
