Letter from the Editor SPRING IS HERE, AND I AM MORE THAN READY TO GET OUT AND ENJOY THE OUTDOORS. I openly embrace the upcoming season of shuffling kids to soccer, baseball and track which lends itself to spending a great deal of time outside in the fresh air. Aside from the early morning spring soccer games that can be painfully cold at times, I love the start of our spring activities.  Our family loves to camp, hike, bike, fish and explore, so finding pockets of time to be able to do that is always a priority for us. There are so many diverse spots around Lee's Summit to hike, camp or spend time on the water, each with their perks. We have narrowed down our list of favorite spots and trails to visit and explore, but it is always fun to try something new and keeps it interesting. For our April issue, we wanted to share with you some of the ways our neighbors

TELL US A LITTLE BIT ABOUT BOOMERS GET CONNECTED Boomers Get Connected is a program started by the Truman Heartland Community Foundation in partnership with United Way to help baby boomers get involved in their community through the free, online volunteer database. Anyone can register for a free account and find hundreds of volunteer opportunities serving Eastern Jackson County. When you sign up with Get Connected, you’ll start receiving email listings of volunteer opportunities that fit your interests.   WHAT WAS THE INSPIRATION BEHIND STARTING THIS ORGANIZATION? Volunteering allows older adults to continue to give back to their community after they leave the workforce, as well as provides them with opportunities to socialize, get physical activity and have a sense of community. Because so many in our local communities will soon be in this age group, we decided we wanted to create a place for them to easily access volunteer opportunities that fit their skills.   WHAT VOLUNTEER AND SERVING OPPORTUNITIES ARE AVAILABLE THROUGH BOOMERS GET CONNECTED? YOU COULD CALL ERIK AND RACHAEL MESSNER A LITTLE OLD-FASHIONED, AND THEY’LL PROBABLY TAKE IT AS A COMPLIMENT. As a young married couple, they took a chance and requested a slightly unorthodox Christmas gift from Erik’s grandparents: a beehive. Already into urban gardening and raising chickens, becoming beekeepers seemed like a natural trajectory. After all, the local honey would help with Erik’s seasonal allergies. “It sounded so romantic to have bees,” Rachael says. “Fun and scary at the same time.” But, after a few years, what they stumbled onto as a fun hobby became the couple’s intellectual and practical passion as well as a flourishing full-time business: Messner Bee Farm. In 2015, Erik, a structural engineer, and Rachael, a Kansas City Art Institute graduate, both left their jobs in the corporate world to pursue their own path of entrepreneurship. Today, Erik splits his time between keeping bees and running his own structural engineering company. Rachael runs Messner Bee Farm as her full-time job. In 2017, the Messners expanded their beekeeping business with their relocation to a 1920s homestead just off state Route 350 in Raytown. The property brings with it a rich history, evoking Americana and Arts and Crafts spirit. The original homestead house on the property was an all-you-can-eat chicken restaurant. While this building no longer stands, the profits from the restaurant were used to build the chicken house where the Messners' shop is now located, the building next door that they call home and the yellow rock barn on the property now owned by Erik’s grandparents. The Messners embrace the idea of returning to the land and replanting apple trees and berries originally on the property, which they hope will someday thrive in a symbiotic relationship with their bees. Since 2006, researchers estimate that one-third of all honeybee colonies in the United States have vanished as a result of Colony Collapse Disorder, which is thought to be the result of a combination of environmental effects including global warming, pesticide use, habitat loss and parasites. This presents a problem to the U.S. agricultural industry, which relies on bees to pollinate crops including apples, berries, cantaloupe, cucumbers, alfalfa and almonds. In their small family business, Erik is the head beekeeper, and Rachael creates the products and designs all the packaging for their beeswax products. It’s a hands-on creative process that brings them together toward a common good of helping pollinators thrive. “Now that we’re here and it's consuming our days, it’s great to know that you’re doing something that’s helping people, helping the environment and doing right by this species,” Erik says. “It’s nice to be devoted to something that’s so uncontroversial … everyone wants to help the honeybee.” The products derived from the beeswax from their hives—lip balm, beard oil, deodorant and solid perfume—make up two-thirds of their business. They also sell raw honey in their on-site store and online. A goal for 2018 is to put the finishing touches on their commercial kitchen so Messner honey can also be sold in retail locations as well. For the Messners, there’s beauty in the story of living on the land where they tend the hives and make their product. “With us, there’s so much background in where it comes from and how it got to you,” Rachael says. “It just feels right.”

NUT AND HONEY COCONUT GRANOLA INGREDIENTS + 3 cups rolled oats + 1/2 cup unsweetened coconut flakes + 1 cup almonds + 1 cup pecans + 1/4 cup craisins + 3 tablespoons sugar + 1/4 teaspoon salt + 1/2 tablespoon ground cinnamon + 1 tablespoon cocoa powder, optional + 1/4 cup extra-virgin coconut oil + 1/3 cup + 2 tablespoons honey  + 1 teaspoon vanilla extract INSTRUCTIONS 1 | Preheat oven to 340 degrees. 2 | Mix the oats, coconut, cinnamon, sugar, cocoa powder, salt and nuts together in a large bowl. 3 | In a small saucepan over medium-low heat, warm the coconut oil, honey and vanilla extract. Pour over the dry ingredients and mix well. 4 | Spread the mixture evenly onto a baking sheet and bake for 20-25 minutes, stirring a bit near the halfway point. WE DIDN’T SET OUT TO BE CAMPERS. In fact, after a crazy remote Colorado experience, my husband knows sleeping in a tent isn’t an option for our family—mostly me. We enjoy city dwelling and artisan coffee and spend much of our weekends watching our kids thrive in their activities. Even though we like our comforts, we don’t want them to stand in the way of pursuing adventure.   Early in our relationship, we committed to exploring. We traveled the U.S. as well as our favorite place of all time: New Zealand. Then, jobs and houses and lawns and kids and moving and just being plain tired slowed our expeditions. After settling into family life, our longing for adventure rekindled. The appeal for spontaneous quality family time without the need for flight tickets was inescapable. Thus, our latest family addition: a 1968 Avion. It's our current answer to adventure and exploration. It gets us out of the suburbs—back into beauty and nature without having to plan an elaborate trip. We drop screen time and pick up board games. We take early morning nature walks, and the kids' imaginations run wild with sticks, flowers and caterpillars. Exploring a different patch of grass than our front yard renews discovery. Camping also fuels our desire for simplicity. We believe disconnecting from life’s stressors is not only fun, it's also critical. Our lives are filled to the brim with amazing opportunities. Sifting through and aligning them to our family’s vision takes effort—effort that comes in the form of being away from the laundry, work calls and meal planning long enough to behold and pursue the true essence of our kids. There’s quiet refuge in being outside and only having the essentials at our fingertips. Another perk of fumbling over each other for days in 200 square feet of space is relational bonding. Together we spend longer hours playing, reading, sitting by the fire—these moments solidify our family bond. For us, healthy connection means gaining the ability to invest in our kids' hearts. Not only are we required to help each other, but we also find ourselves helping and relating to other campers. On a quick weekend getaway last summer, our daughter made such fast friends with another girl they were calling each other “sis” within hours of meeting. So, in these camping moments, we hope to place small seeds which will lead them to a lifetime of looking beyond themselves.

We quickly found it’s less about the destination as it is about being together. Our kids are just as happy spending a weekend at Lake Jacomo or Longview as they are heading out of town. So, our summers consist of half-a-dozen mini-retreats and one longer excursion. Last year it was eight days in Colorado. This year, we’re doubling that (a la Clark Griswald) to Mount Rushmore and Badlands National Park in South Dakota and Yellowstone National Park and Jackson Hole in Wyoming. (What are we thinking?) As much as we love our local coffee shops, we can’t wait to grind our own beans on a brisk morning before heading out to see Old Faithful.

SHANE WILSON CAME TO BE A VEGAN SLOWLY—HE STARTED BY CUTTING MEAT OCCASIONALLY FROM HIS DIET, THEN TRANSITIONED INTO FULL-TIME VEGETARIANISM. Then he met his wife, Tara, a vegan with a knack for baking. Now, this vegan household finds tasty ways to eschew animal byproducts while celebrating the best of the season, as he does with these spring vegetable street tacos. They combine the spices you expect from Mexican food—cumin, cilantro—with a touch of sweetness from a pear salsa and a big crunch from mixed cabbage slaw. Heaped into griddled corn tortillas, they are a snap to throw together on a weekend with a little planning.

THE 'MEAT '—ROASTED BRUSSELS SPROUTS + 15-20 buds Brussels sprouts + 1 tablespoon salt + 1 teaspoon pepper + 1 teaspoon cumin + 1 tablespoon olive oil 1 | Preheat oven to high broil. Cut buds into ¼ inch slices. Place into bowl, add ingredients and toss. 2 | Lay on parchment paper on baking sheet. Broil until browned; turn over each piece, broil again.

THE BASE—CABBAGE SLAW + 2 cups chopped green cabbage + 1 cup chopped red cabbage + 2 tablespoons olive oil + 1 tablespoon pepper + 1 teaspoon salt + 1 teaspoon cumin 1 | Mix ingredients.

THE KICK—PEAR SALSA

+ 2 medium pears, diced small + ¼ cup red onion, minced + 1 jalapeno, minced + 2 tablespoons lime juice + ¼ teaspoon pepper + ½ teaspoon salt + ¼ cup chopped cilantro

1 | Mix all ingredients. Mix and set aside in refrigerator a day in advance for better flavor.

THE SQUIGGLE—CHIPOTLE MAYO + 1 cup vegan mayo

+ 1-2 cloves minced garlic

TACO DIRECTIONS
