Letter from the Publisher THIS MONTH, WE PRESENT OUR “GENTS” ISSUE IN CELEBRATION OF FATHER’S DAY AND THE MEN IN OUR LIVES. I originally planned to write a tribute to my husband, who still takes my breath away every day. But my dad’s health recently took a turn due to several old age maladies, and my plan changed—as most best laid plans do. This one’s for you, dad.

My dad—The Last Cowboy—looms large. He’s unmatched when considering the impact a father can have on his daughter. Indeed, I am who I am because of the house I grew up in. My dad taught me to love learning, whether in the traditional sense— education—or non-traditional sense—the journey and ability to explore. He read voraciously—everything from Kipling to Bogle to Louis L’Amour to the Gettysburg Address. And he passed this love on to me, too. My dad was not much of a conversationalist, unless, of course, he was talking and you were listening. But he still subscribed to John Wayne’s “less is more” strategy: Talk low, talk slow and don’t say too much. Complete with handlebar mustache, he was rarely seen without a sweat-rimmed cowboy hat. He liked a good steak, a good scotch, and quiet kids. My dad wasn’t much of a parent in the customary sense. He didn’t teach me to ride a bike and he never attended even one of my golf tournaments. Instead, he was traveling throughout western Kansas, working hard to pay for my college, my siblings’ college, and his grandkids’ college. This is, in his mind, his greatest accomplishment.

The Ferrari Club of Kansas City ENJOYING THE RIDE OF CLOSE FRIENDS AND BEAUTIFUL CARS

ARTICLE LISA MOYER | PHOTOGRAPHY TRAVIS CARROLL

Leawood Lifestyle | June 2019

ITALIAN LUXURY, PERFORMANCE, AND DESIGN HAS BEEN EPITOMIZED BY FERRARI EVER SINCE THAT 125S, 1500 CC. 12-cylinder won its first victory in the Rome Grand Prix in 1947. Named after Enzo Ferrari (b. 1898, Modena, Italy), the prancing horse logo symbolizes “Italian excellence that makes the world dream.” Decades of racing success has created a loyal following, revved by state-of-the-art Ferrari factories, museum, and theme parks attracting millions of enthusiasts worldwide. The Ferrari Club of Kansas City is among its aficionados. This local chapter was formed within the Rocky Mountain Region nearly 20 years ago by co-founder Christopher M. Parr, now Rocky Mountain regional director. Today, the chapter sports 83 members, and Parr estimates that 200 Ferraris can be sighted within a 175-mile radius of KC. “Whether young or old, Ferrari owner or not, members share a common passion for Ferrari,” says Parr, along with current president and friend, Ryan Anderson of Overland Park. “Our monthly activities include social, touring, and track events to enhance driving skills and automobile knowledge. We’re one of the most active chapters in the Ferrari Club of America, hosting up to 36 events per year—mostly family-friendly to include our spouses and children.” Anderson, owner of Elevated Electronics, was introduced to the Ferrari Club in 2011 through a business client. “Since then,” Anderson says, “it’s been a wonderful ride of close friends and beautiful cars.” Anderson has owned a 2004 360 Spider, 2013 California, and 2017 488GTB. He’s attended multiple Formula One and other racing events, saying: “Ferrari’s attention to detail and obsession with perfection really resonates with me.”    Parr has owned seven Ferraris over the past 23 years, including a 308 GTB, 348TB, 355GTB, 365GTB/4, F40, 550 Maranello and a 599 GTB. (His wife owns a 246 Dino GT.)

Parr has enjoyed a 38-year career in banking and wealth management that has allowed him to make several treks to the Ferrari factory in Italy and attend the Grand Prix and Ferrari Challenge races. “Ferrari is the last purebred sports/racing car company,” Parr says. “In recent years, new exotic cars have hit the market, offering incredible performance, but none has the history and pedigree of Ferrari.” Anderson says a common trait among Ferrari Club members is their drive for excellence: “Almost all are Type A personalities. You’ll notice engineers and radiologists are drawn to the cars because of this obsession with perfection.” But that doesn’t mean they’re not down-to-earth. They drive their Ferraris to work, to Wal-Mart, and lend them to friends or community events. “There’s no competing among members to be the most impressive or pretentious. It’s just real people with a common hobby,” Anderson says. Parr agrees that the relationships have been the true joy of the club, evidenced by his commitment to the annual Crescent Classic Ferrari Rally he created in 2004. As the most respected Ferrari road rally in North America, it was recently recognized in a Ferrari ceremony in Maranello, Italy and featured in leading Ferrari publications and on national TV with many F1 drivers participating in the rally over the years. Parr says he and his wife and team spend 18 months planning the Crescent Classic which will be a six-day driving event in Paris, Arkansas this year. The Ferrari Club is often requisitioned to provide cars for special events. Anderson says members give back to the community “constantly and generously, locally and globally.” “I’ve allowed employees to use the Ferrari for birthday parties, and I encourage my neighbors to pick up their kids from school in it,” Anderson says. “I truly enjoy sharing with all those who have a passion for the cars.” “Kansas City is lucky to have such a strong and thriving car community. It’s really not all about the cars as much as it is spending time with old friends, making new friends and going for a long drive.” —Christopher M. Parr, Rocky Mountain Regional Director

Paella pro tips ARTICLE RILEY COWING | PHOTOGRAPHY PAUL VERSLUIS

CHEF JONATHAN JUSTUS OF BLACK DIRT (FORMERLY OF THE INFAMOUS JUSTUS DRUGSTORE) TAUGHT A PAELLA COOKING CLASS AT KITCHEN STUDIO: KANSAS CITY, THE PROCEEDS OF WHICH BENEFITED OPERATION BBQ RELIEF. The experience was complete with wine, salad course and cheese plate for dessert while guests learned techniques to recreate his paella recipe at home.

28

Leawood Lifestyle | June 2019

+ The

Spanish-inspired

cooking

class with chef Jonathan Justus began honestly, with a confession that he hasn’t made paella since working as a chef in France. “There were a lot of people in the summertime that have condominiums there, and they would just take to-go’s of the paella. We did it once a day and when it was gone, it was gone,” Justus recalled at the beginning of class. “And I do have to be honest, that was the last time I cooked a paella. [laughs] Frankly, to be honest with you, it took years to quit having nightmares about paella. But I think it’ll all come back to me.” The recipe surely did appear to exist in his muscle memory. His movement was rhythmic and unwavering as he rinsed leeks and chopped carrots for the stock while he answered intermittent questions from guests— Leawood residents and Leawood Lifestyle readers—and told stories of his culinary experiences. With the relaxed ease in Justus’s tone, it was as though guests were front row in his own kitchen. Kitchen Studio: KC, local high-end kitchen and bath design firm, hosted the class. The intentional, elegant feel to each area of the showroom enhanced the already cozy atmosphere. A unique light fixture, featuring delicate glass teardrops with light bulbs inside, hung above the edge of the kitchen counter where Justus’s wife, Camille Eklof, plated handfuls of spinach for the salad course.

Aaron Fry, certified sommelier from Vintegrity, poured different Spanish white wines before, during and after each course. As he poured the first wine, an Alberiño, he explained that paella is typically paired with a Tempranillo or other lighter red wines. According to Fry, Alberiño had what he described as the “lemonade factor” — its slightly salty taste makes it refreshing while holding up to the food’s flavor.     Justus offered numerous tips over the first course — his version of a Spanish salad topped with Spanish-style chorizo, piquillo peppers and hard-boiled eggs. He described how paella differs from risotto in stirring frequency — paella shouldn’t need to be stirred more than once after all ingredients make it into the pan. He offered opportunities throughout the cooking process where guests could adapt the recipe to their own preferences and cooking abilities. For dessert, Pat, a Certified Cheese Professional from the Better Cheddar, provided an overflowing cheese plate. He wanted to create balance when assembling this assortment by establishing contrast. This was accomplished by intentionally placing sharp edges next to softer edges, like Manchego Curado placed next to serano or Spanish olives. After all ingredients were added into the paella pan, Justus emphasized the importance of cooking with your ears.  Every so often, he’d hover his ear near the rim of the pan before slowly rotating it to ensure the paella was cooking properly. “It’s not an easy dish,” Justus had cautioned earlier in the class. But he listened and rotated, listened and rotated. Once he determined the dish was complete, he spooned abundant portions onto each plate and carefully ensured each plate had mussels, scallops, shrimp, clams and prawns. 30

WORKS FOR ME PERFECT WORKPLACES BROUGHT TO YOU BY THE THOUGHT-LEADERS AT PURE WORKPLACE SOLUTIONS

WHEN YOU LOVE TO SOLVE PROBLEMS AS MUCH AS JEAN-PAUL WONG, PROVIDING OPTIMAL WORKPLACE SOLUTIONS FOR CLIENTS THROUGHOUT MULTIPLE INDUSTRIES AMONG SEVERAL LOCATIONS IS JUST ANOTHER DAY AT THE OFFICE. As president and CEO of PURE Workplace Solutions, Wong is a mastermind of industry knowledge, anticipating the market curve, acquiring, rebranding, and repositioning for maximum growth. “PURE provides thoughtful solutions related to workplace and learning environments. Individuals, businesses, or learning institutions often need professional expertise on space planning, interior design, or product selection. We represent furniture and architectural products from hundreds of manufacturers worldwide and provide solutions that match a client’s needs, purposes, and budget,” Wong says. Those who know Wong describe him as one of the good guys who is fastidious about pleasing his customers, so the name PURE is a mirror on how he conducts business. Wong chose the name as a rebrand in 2017 to create a commercial furniture business model that offers a streamlined process representing simple, clean, and unadulterated designs at approachable prices. With degrees in Finance, Economics, and a JD/MBA, Wong was making his mark in the financial sector before a business connection led him into the used furniture market 20 years ago. After decades of helping build an award-winning corporate identity, Wong anticipated a shift. 34

“New overseas imported products were being offered at extremely low prices and used furniture demand was dropping,” Wong explains. “It became a race to the bottom.” Wong hit the reset button and regrouped, retaining many trusted clients and gaining new ones. Last August, PURE purchased BA Designs in Topeka, an established office furniture dealership and interior design firm. It was a smooth integration met with enthusiasm and new energy. The company opened two more offices and several showrooms across the state. Today, Wong has a dedicated team in four locations: Wichita, Topeka, Manhattan, and Kansas City. PURE Workplace Solutions’ professional staff supports architects, designers and owners by providing solutions that best meet the owner’s needs, assisting in space planning, workplace strategy, creating 3D renderings and proposing finish palettes. “We provide holistic solutions, considering every detail, and provide an efficient, aesthetically pleasing concept with products designed to meet the needs of the modern workplace. Our goal is always to exceed the client’s expectations and to complete the job on time, every time.” Products delivered include workstations, private offices, seating, receptions/lobby spaces, filing/storage, tables, lighting, windows and architectural walls with personal collaboration and attention to ergonomics. “Commercial furniture always has new trends,” Wong says. “The open plan concept is still influencing furniture design, but people debate its impact on productivity in the workplace. Regardless, workplace design is driven by attracting and retaining the best workforce. Today’s workforce is highly mobile, and technology allows us to work almost anywhere at any time. Workplaces and furniture are facilitating a more diverse mix of dedicated spaces, casual meeting or collaborative spaces.”   In addition to growing a thriving business, Wong is dedicated to his family and multiple philanthropies, serving on several boards over the years, including the Kansas City Ballet, Francis Family Foundation, Charlotte Street Foundation, Wonderscope Children’s Museum, ArtsKC, and Metropolitan Community College Foundation. “Kansas City has been a great place for me,” Wong says. “My children are surrounded by people with strong Midwestern values, and it has an affordable cost of living. It’s also well documented that KC has a strong philanthropic community, which I’m passionate about. It’s a great place to own a business because the people here love to support its entrepreneurs.”

COMPONENTS. The key is to discover what style you enjoy most, and don’t be afraid to experiment. Oh, and taste often during the preparation process to adjust if so desired.

+ SOMETHING SWEET.

This can be honey, cola, molasses, preserves, brown sugar, or syrup. This caramelizes as you cook, brining those smoky, sugary flavors.

+ SOMETHING TANGY. Think vinegar, mustard, or citrus. This is what brings the zing to your sauce.

+ SOMETHING SPICY.

This provides your heat: a hot sauce is a great choice. A good rule of thumb is to use about 1/2 teaspoon for every cup of sauce you’re making.

+ SOMETHING LIQUID. It can be beer, water, chicken soda, stock, or wine. Start with about 1/2 a cup and see what happens.

+ SOMETHING TOMATO. You’ll most likely use ketchup, but you can also use tomato paste.
