Letter from the Editor

T

he holiday season is upon us, and the spirit of giving and serving is in full swing. This time of year can carry so many wonderful memories and is often a time to celebrate long-time family traditions and make new ones. For some, however, this time of year can be hard to get through for a variety of reasons. There are so many practical ways to reach out to those around us who may be alone during the holidays or may be spending their first winter without a loved one. Even little gestures can go a long way and can make people feel thought of and loved. During this time of buying gifts, it is easy to focus on the commercialization of the holidays, and it can even be distasteful at times. One of my favorite things to observe on Christmas morning at our house is not necessarily watching my kids open their gifts from me, but rather watching them give each other gifts that they came up with on their own. I can see how much joy they have to give something that means something to them. Every year is slightly different, but all four of them give gifts to each other without being prompted. Sometimes the gift is handmade, sometimes it’s a treasured possession that they are parting with as a regift, and sometimes they have spent the little bit of money they have on something new. Regardless, the excitement is always the same, and the personal joy that comes from selflessly giving is so evident on their face. Giving is so much better than receiving. For our holiday issue, we wanted to spotlight how some people in our community choose to give back. There are countless ways to give and serve around the city, and needs can definitely be greater at this time of year. Thanks for all you do in your own way to give of yourself, and if you are looking for more ways to get involved in your own community, reach out to local churches, schools, hospitals, fire departments and city hall, as they often know of local needs and ways to get involved. I hope you have a wonderful holiday season!

Last but not least, have fun! Some of my favorite pictures we have captured as a family are when we are just having fun, not evening thinking about the camera and are candid. I have learned after years of taking pictures with the entire family it is hard to get everyone looking, smiling and posing for the camera. Well sometimes, you just need to scratch that and let the shoot happen!

And each holiday season, you have the Kansas City-based trio, The Snow Globes. “One of the incredible things about Christmas is the nostalgia and feelings those old songs bring up in people,”

Lindsey Jones, The Snow Globes’ lead vocalist, says. “It’s those traditions that we have every year—making the same cookies, singing the same songs—going through those familiar rhythms.”

After a post-holiday break, the group reconvenes in early spring to begin writing, arranging and recording new music. “We’re crazy busy in December, but it takes all year to get it ready,” Lindsey says. Since they began playing together in 2011, the group has donated a large portion of their proceeds to benefit a cause they care about. After spending time in Mali, West Africa, Barclay was inspired to form The Wash Project. Since 2013, Snow Globes pro-

MISSIONARY EYE CARE IS A CORNERSTONE OF FAIRWAY EYE CENTER'S BUSINESS

22

Leawood Lifestyle | December 2017

F

airway Eye Center cares deeply about the visual needs of the community and those who do not have access to eye care both locally and globally. They offer a complete range of optometric care services, with missionary eye care being an integral part of their business. The Fairway Gift of Sight Program provides those without access to eye

care around the world by donating one pair of glasses for every pair purchased at all four locations in Leawood, Liberty, Raytown and Fairway. A fifth location will open next year in Overland Park.  Dr. Burt Schreiber is the optometrist serving both the Fairway and Leawood locations. He was born in Overland Park, graduated from St. Thomas Aquinas and received his undergraduate degree at Rockhurst University. He then received his doctorate from Southern College of Optometry and went on trips to Mexico and Belize to provide eye care through the Student Volunteers in Optometric Service for Humanity program.   Fairway Eye Center was founded in 2003 by Dr. Mark Bunde. Both Bunde and Schreiber have been involved in trips throughout Latin America, with their trip to Guatemala in 2012 bringing them together as partners to open the location in Leawood.   “Working together for a purpose that is greater than yourself is something that provides perspective about what is really important, and when you know you are working with someone that wants to help others, it starts to feel less like work and more like something you look forward to,” Schreiber says. Wanting to help people who need it most—those with high sun exposure—they began their journey to countries with residents spending the majority of their time outdoors who cannot afford UV protection for their eyes. Since 2005, they have journeyed to Tampico, Ensenada, Guatemala and Belize.  “As a part of the mission of the Gift of Sight program and our partnership with the Lions Club, we have been able to provide eye exams, glasses and sunglasses for thousands of people in both our local KC community and in Mexico, Belize and Guatemala," Schreiber says. "Revenue from frame sales provides money for trips, glasses frames and lenses depending on the need." Fairway Eye Center has partnerships with numerous charities and orga-

nizations, including Children’s Center for the Visually Impaired, Operation Homeless Connect, Operation Breakthrough, Leawood Lions Club, Harvesters, Homeless Connect KC and WhyJo Care. “We are going to continue to expand our reach in Kansas City as we have found that the bigger we grow, the more people we can help through the utilization of shared resources and staff at our growing practice,” Schreiber says. “Through the partnership with the Lions Club, we are able to keep an ear open to new opportunities to bring our time and treasure to help those most in need.” For more information on how to get involved with Gift of Sight, visit FairwayEyeCenter.com.

If you think the classic chocolate chip cookie can’t be beat, just try these. ‘Nuf said!

Makes four dozen cookies Ingredients for the cookies 2 1/2 cups all-purpose flour

Instructions 1. Preheat oven to 375 degrees. 2. In a bowl add flour, baking soda and salt. Gently stir to combine and set aside.

½ teaspoon baking soda

3. In a mixing bowl add butter, sugar and brown sugar. Using an

a spatula as needed.

1 cup sugar

4. Add egg, zest and juice.  Mix together until well-combined.

½ cup brown sugar, packed

Add flour mixture, a little at a time, and mix until all ingredients

1 large egg 1 teaspoon orange zest, freshly grated 2 tablespoons orange juice

are thoroughly combined. 5. Turn off mixer. Add cranberries and nuts. Using a large spoon, gently stir in until just combined. Do not overmix.

2 cups dried cranberries

6. Using a tablespoon, spoon cookie dough onto a baking sheet

½ cup pecans, coarsely chopped

lined with parchment paper, spacing at least 2 inches apart. Bake 10-12 minutes or until golden brown. Remove from the oven and

Ingredients for the glaze 1 cup powdered sugar 2 to 3 tablespoons orange juice ½ teaspoon orange zest, freshly grated

set aside on baking sheet to cool. Using a spatula, gently remove cookies from baking sheet and transfer to a wire rack to cool completely. (These cookies will firm up when cooled.) 7. For the glaze,  in a bowl add sugar, juice and zest. Stir until smooth and combined. Drizzle over the top of cookies.

E TC Zesting is a very simple cooking technique. Citrus zest adds a lot of zing and flavor to salads, meats and beverages.  There are several good zesting tools on the market. Simply rub the clean, whole fruit in one direction against the blades, turning it as you go so that you remove the top layer of the skin only–this is where the flavorful oils of the fruit reside. You want to avoid going into the second, white layer called the pith as it is bitter.
