After graduating, he spent two years in the Dominican Republic where he learned to speak Spanish while serving a church service mission. After returning to ASU, he completed dental school, earning his Doctor of Medical Dentistry Degree (DMD). It was there that he also received his certificate in Public Health, Certificate in Orthodontics and his Doctor of Health Science degree (DHSc) and completed the process to become board certified by the American Board of Orthodontics. Dr. Cox is active in his church and enjoys all outdoor activities. An accomplished long distance runner, he has competed in both marathons and ultramarathons. He also competes in mountain biking and road cycling races. He recently hiked Mt. Whitney but his favorite hike was the Grand Canyon. Most importantly, Dr. Cox is a family man. He and his wife Carrie are the parents of four children, 3 girls and a boy. He loves being an orthodontist and considers it his dream job being able to create beautiful smiles.

THE NAME CODY VASQUEZ MIGHT SOUND FAMILIAR— THAT’S BECAUSE, IN 2015, THE GILBERT TEEN (THEN A PRE-TEEN) COMPETED ON THE FOOD NETWORK’S POPULAR “KIDS BAKING CHAMPIONSHIP” WITH HIS FAMOUS RAZZLEBERRY PIE. Now, five years later, the 17-year-old junior at Campo Verde High School has continued his culinary adventures with a fun, healthy twist. “The best compliment I can get is when someone says that they didn’t realize one of my dishes is vegan,” Vasquez shares. About five years ago, the teen chef—who has been cooking since he was 7 and baking since age 4—decided to become vegetarian. He says he was motivated by his own convictions about not eating animals. After awhile, his vegetarian diet became vegan and he entered what he calls “an entirely different cooking environment.” “I definitely had to re-learn some of my most popular and common recipes,” Vasquez says. “One of the easiest things to begin replacing in recipes was butter.” Other common replacement ingredients, he shares, are egg replacements (there are many types, he notes) and aquafaba (cooking water from cooking legumes such as chickpeas), which he uses to whip into meringues.  “Learning to cook and bake vegan dishes has been so cool,” Vasquez shares. “I either create new food to try or re-create dishes that I am familiar with new ingredients.” As a growing and busy teen, he shares that he does track what he eats to make sure he is getting the right amount of nutrients. “Because I’m still growing and am so active, I am most cautious about tracking my calcium and iron,” he shares.  To maintain his vegan diet, he makes and brings his own lunches to school daily—and when it comes to family dinners and occasions— he often makes his own vegan dishes for himself and to share.  “My mom’s side dishes are often full of vegetables, so it’s usually not too hard to eat dinner with family,” he shares. “I just kept at it, learning from my mistakes along the way. My leadership style is definitely inspired by cooking; I keep trying and I learn from my mistakes and strive to do better. There’s a real connection between the kitchen and leadership.” For the featured cake recipe, Vasquez says he chose it because those who follow it can tailor it depending on their needs. “I chose this chocolate cake because you can make it into so many variations,” he says. “For example, you can add coconuts, and make it a German Chocolate Cake. You can add specific toppings and icings to tailor it for a special occasion. I encourage people to take the recipe and customize it.”

He knows every inch of the Gila River Indian Community like the back of his hand. The Pima and Maricopa communities are home to over 1,500 wild horses.   The wild horses  roam for hundreds of miles but for Estes finding the herds is a second nature. “I can tell you where every herd of wild horses is out here,” he said, “ from the ones with over 100 horses to the ones most people can’t find.” Through years Estes has given hundreds of guided tours and strives to leave every guest with a life changing experience. The relationship between the guides and the wild horses is one of respect. Riding along side of these beautiful wild spirits brings guests closer to the history of the Tribe who have protected the horses for over 100 years.   After the long ride guests can pair their experience  with a rejuvenating massage at the Aji Spa.  The Mustang & Massage experience  package includes a 50 minute wind down massage using the natural plants of the desert that have been infused with essential oils for added stress and inflammation relief.    Aji is the only Native American owned spa in Arizona. Aji means “sanctuary” in the Pima native language, and it truly lives up to its name. The spa features treatments based on ancient legends past down for generations from the Pima and Maricopa tribes. The luxurious 17,500 square foot facility includes 17 treatment rooms, a private pool, sauna, and fitness center. The spa provides the complete relaxation experience that heals not only the body but the mind. Massages utilize Creosote extract which is a plant that can be found along the Sheraton Grand trails and is used primarily by the tribes as a medicinal herb. They fly in ingredients such as, buffalo raised by a sister tribe in Montana to be served nightly in the restaurant.  At the end of every guest's journey, Chef Swanson hopes they come away with a better understanding of the culture of Indigenous Pima and Maricopa tribes. He wants his meal to be not only a flavorful but and educational experience as well.    The Sheraton Grand at Wild Horse Pass is an escape from everyday life providing a wellness journey to heal the mind, body and spirit just a few miles outside of Gilbert.

The local Mediterranean restaurant has mastered “The Art of Eating Healthy®” and has been the go-to spot for nutritious and delicious cuisine in the East Valley for more than two decades. With the mission of helping guests sustain a healthy and balanced lifestyle, the restaurant serves up a diverse menu of tasty, fresh, wholesome foods, including a variety of vegetarian, vegan and gluten-free options. Pita Jungle’s menu is influenced by tastes from around the globe with the benefits of the Mediterranean diet always apparent through the use of healthy lean proteins, veggies, legumes, nuts, grains and fruit. From tapas and hearty salads, to fresh pitas and wood-fired pizzas, Pita Jungle truly offers something for everyone. Pita Jungle was founded in 1994 by Bassel Osmani, Nelly Kohsok and Fouad Khodr, three students (at the time) attending Arizona State University. Upon graduating college, they all recognized a need for more healthy restaurants around the University’s Tempe campus, and set out to make a difference by leveraging their own personal experiences gained by working in the local restaurant industry. It was then that the vision for Pita Jungle was born.   “Pita Jungle was founded on the principle of serving the best quality food at a reasonable price with exceptional customer service,” says Osmani. “Instead of focusing on profit right away, we placed bringing people through the doors as our top priority. Another key component and differentiating factor for us was the vegan and vegetarian menu items. At the time when we started, there was only one nearby market offering these kinds of options, and our team wanted to make healthy, great-tasting food readily available for those leading both lifestyles.” Last year, Pita Jungle celebrated 25 years in business with 23 locations throughout Arizona.   While the delicious menu remains the same at every location, each Pita Jungle restaurant has a unique mood and personality; it is designed to have a character that is reflective of the times and the locality. From the unique décor and original artwork by local artists, to the custom, handpicked music playlist and creative non-formulaic staff, there are no cookie-cutter locations at Pita Jungle.  Every few months, the restaurant serves up a Seasonal Kitchen Crafts menu featuring a handful of new dishes that satisfy every palate. IT’S THE NEW YEAR, A TIME WHEN MANY OF US MAKE RESOLUTIONS TO BUILD HEALTHIER HABITS OR TRY SOMETHING NEW. If starting a new workout routine is on your to-do list, why not consider the health benefits that come with dancing? Yes, dancing – like you did as a kid, but this time it may be more fun than you’re thinking. “Dance lessons are a great way to pick up a new hobby with the side benefit that you might also lose weight and become healthier,” Bianco says. Lindsey Bianco, owner of the Fred Astaire Dance Studio in Gilbert, admits that starting dance can be intimidating. “Dancing is a vulnerable thing, especially as an adult,” she says. “It’s a lot to put yourself out there and you may be worried that you’ll do the wrong moves.” But, Bianco, who began competing in ballroom dancing at the age of 12, shares that the health benefits of dance are worth it. “The main benefits of dance are improved cardiovascular endurance, increases in muscular tone, reductions in excess body weight and improvements in coordination and balance,” she says. “More specifically, creating a caloric deficit of 3,500 calories will eliminate one pound of excess body weight. A typical individual weighing 150 pounds can expect to burn between 175 and 250 calories per every 30 minutes of performing a Latin and Salsa dance-oriented routine.” Other perks of dance lessons for adults, according to experts, include: stress relief, a mental workout (especially when learning new routines!), the social experience, increased flexibility, a unique take on “me time,” and more. Adults who want to get into the swing of dancing? Consider beginner classes and lessons that are geared toward new dancers. For example, Fred Astaire Dance Studio in Gilbert—which specializes in partner dances like ballroom, Latin, swing, and more—is open to new students with little to no experience and body shapes of all types.

Bianco recommends to look for a warm, welcoming environment, and consider bringing a partner or friend. But, if you go solo, especially at Fred Astaire Dance Studio, it’s totally fine too— you’ll be paired up with an instructor for dance lessons. “At Fred Astaire Dance Studio, students learn to social dance— essentially dances they can do in a social setting with confidence,” Bianco explains. “We also have a competitive track students can do as well, but many come to learn, try new things, and kick start a fitness routine.”

Lastly, be open to learning and having fun.”

It’s not just about burning calories… According to a recent study, salsa dancing positively impacts people’s moods. “Researchers explained that it was the combination of social interaction, exercise, and the concentration that learning a new skill requires that significantly boosted the mood of all the study’s participants,” according to the Fred Astaire Dance Studio website. But if you’re counting calories… Dancing can often burn more calories than “more traditional” workout routines such as jogging, according to experts. 28
