Auction of Washington Wines Raises More Than $4.5 Million Auction of Washington Wines (AWW) celebrated its 32nd annual weekend of charitable wine events Aug. 15-17, raising more than $4.5 million. More than 200 winemakers, vintners and growers  celebrated, poured wine  and auctioned wine products to help achieve this goal. Deemed as a wine lover's paradise, Napa Valley, JUST 30 MILES LONG AND FIVE MILES WIDE, IS MADE UP OF THE PERFECT TOPOGRAPHY, CLIMATE  AND SOIL TO HARVEST RENOWNED CHARDONNAY AND CABERNET SAUVIGNON WINES.  With great wine  also comes fine dining, deluxe lodging, popular events and modern culture. It’s no wonder tourists flock to Napa Valley, last year welcoming a total of 3.85 million visitors. Not bad for a wine community that has barely been on the radar for 40 years!  How did the Valley’s popularity rise so quickly? Knowing a little slice of history before you go will spark intrigue and help bring your Napa experience to life. In the wine world, there is “before the Paris tasting” and “after the Paris tasting.”  At the “Judgment of Paris” in the spring of 1976, nine top wine judges gathered in Paris to blindly taste 10 white and 10

red wines. Knowing that some wines were from France and some from California, the French judges were confident that the French wines would win. To their surprise, California’s wines triumphed. And 40 years later, that tasting still matters. Prior to the judgment, French wines ruled the world, and there were about 67 wineries in Napa Valley. Postjudgment, the tasting results shot Napa Valley into the limelight, where today there are nearly 500 wineries. Indeed, the “Judgment of Paris” was the turning point for not only California’s wine country but for the wine industry as a whole.  While Napa’s notable reputation has taken root ever since “The Judgment,” life changed dramatically in the fall of 2017 as the wine country wildfires destroyed some wineries and damaged others, burning 144,000 acres in three counties and destroying more than 650 Napa County homes. The rebuilding has been a slow process;  however, the community’s message is clear.  Visitors are invited back to celebrate the strength of the region. While the wine country fires were devastating for locals, most visitors to Napa are hard-pressed to see signs of the impact. No hotels in Napa County burned down, and the majority of the Valley’s wineries resumed operations within days after the fires. The core of Napa Valley—where most of the hotels and wine tasting rooms are clustered—remained almost entirely untouched by damage. CONTINUED >

Picturesque Napa Valley is home to multiple small towns, each with its own special charm. With nearly 500 wineries, each with its own unique style, setting and history, the valley offers something for everyone, and narrowing down options is tough to do in one visit. For this reason, Bellevue Lifestyle’s visit led us to explore and focus on the town of Yountville and Downtown Napa.  Downtown Napa has seen a surge of growth and has plans to continue on the trajectory to become Napa Valley’s “beating heart” with an influx of new hotels, restaurants and tasting rooms. Just 10 miles north, located in the heart of Napa Valley, sits the town of  Yountville, considered Napa Valley’s culinary capital. Yountville is a food and wine lover’s dream, boasting the three-star, Michelin-rated restaurant, The French Laundry, and scores of other fine dining and luxury resorts and hotels. Yountville is also known for its culture scene, which includes museums, an art walk and a performing arts theater featuring international performers year-round. Napa Valley truly deserves multiple trips to experience the variety it has to offer. If it’s your first time visiting, don’t be afraid of visiting hotspots that may be a bit more touristy; remember that there’s a reason for its popularity. Here are a few notable stops to help narrow down your search. 28

KARLA ILICIC IS A YOGA TEACHER, NUTRITIONIST AND OVERALL WELLNESS COACH WHOSE LOVE FOR COOKING STARTED WHEN SHE WAS JUST A LITTLE GIRL, AS SHE WAS WATCHING HER GRANDMOTHER IN THE KITCHEN. The amount of love that was poured into every recipe was intoxicating, and Karla found herself helping her out and wanting to learn more and more. Her father is a passionate foodie and an amazing home cook himself, and with him, she was able to discover incredible restaurants all over the world and recreate those recipes in their home. Unfortunately, after discovering she had celiac disease, Karla had to change her lifestyle and eating habits, which led her to Institute for Integrative Nutrition (IIN) where she gathered more knowledge on autoimmune diseases and decided to become a health coach and nutritionist. Her passion for food combined with helping others heal and thrive in spite of their conditions made her get creative in the kitchen and create recipes full of nutrients, vitamins and minerals that won’t leave you feeling like you’re missing out on any of the common allergens, meat, dairy or refined sugars. She is currently in the process of writing her e-book!

STUFFED ACORN SQUASH WITH CRISPY CHICKPE AS, GOAT CHEESE AND Z A'ATAR This recipe is one of my absolute favorites all throughout the fall and winter season. Seriously though—I make it at least once a week! I love playing around with it and modifying it according to what I'm craving that week. Sometimes I like to use feta cheese instead of goat, add some crispy lentils into the mix, chop up some sundried tomatoes, and of course, use a variety of mushrooms. You can also add some other spices and turn it into a completely different dish (like curry, oregano and thyme or smoked salt and tarragon)!

I N G R E D I E NTS + 1 large acorn squash + 1 can of chickpeas (rinsed and drained) + 1 medium onion + 1 cup diced carrots + 1 cup diced mushrooms + 1/3 cup goat cheese + 1 teaspoon coconut oil + 1 teaspoon Himalayan sea salt + 1 teaspoon black pepper + 2 teaspoon za’atar spice + Microgreens or sprouts to garnish

METHOD Preheat the oven to 400 F. Slice the acorn squash in half and scoop out the pumpkin seeds. Sprinkle some salt and black pepper, and place in a deeper dish, flesh facing up. Place in the oven for about 30 minutes (or until it feels soft with a fork and the surface is slightly golden). In the meantime, rinse and drain the chickpeas. Put them in a paper towel and slightly roll them over your surface to make it easier to take the skins off. You don’t have to clean every single one of them, but the more you do, the better. Chickpea skins can be hard to digest, so taking them off prevents bloating and cramps. Heat up a teaspoon of coconut oil in a pan. Add the onions and saute them for 3 minutes, or until they start to caramelize. Add 1 teaspoon of za’atar and mix it through before adding the carrots and mushrooms. Lower the heat and keep on sauteing and letting the juices coat the veggies. When the veggies are close to done, remove the pan from the heat. Take out the acorn squash and stuff it with the veggie mixture. Add chickpeas on top and let the rest fall all over your dish as they’ll crisp up nicely. Sprinkle the other teaspoon of za’atar and add a bit more salt and black pepper. After 10 minutes, crumble some goat cheese on top and leave in the oven to melt. Once the cheese has melted, your acorn squash is done! Add a handful of sprouts on top and serve immediately! October 2019 | Bellevue Lifestyle
