BUT TERCRUNCH SNACK MIX Perfectly sweet, buttery, and crunchy, this snack mix has everything you want in a holiday treat. It’s easily customizable to include your favorite munchies and just the right amount of saltiness. Just a warning though—this is highly addictive! You may want to make a double batch just in case. INGREDIENTS + 4 cups rice Chex cereal

+ 1 teaspoon baking soda

+ 4 cups corn Chex cereal

+ 1 1/2 teaspoons vanilla extract

+ 2 cups bite-size pretzels

+ Up to 4 cups desired mix-ins

+ 1 cup chopped peanuts

Stir gently until sugar is dissolved, then stop stirring and bring to a boil. Boil undisturbed for 8 minutes. Working quickly, take cereal mix out of the oven and have at the ready. Turn off the heat and add vanilla and baking soda, stir quickly to incorporate. Pour over cereal mixture and stir gently but quickly to coat. Careful— this is hot stuff.  Return to the oven and bake for 45 minutes, stirring every 15 minutes. Line counter with foil and lightly spray with nonstick spray. When baking is complete, pour cereal mix onto the foil and carefully spread out on foil, separating any large clumps. When completely cool, break into bite-size pieces and put into a large bowl. Add desired mix-ins and toss to combine. Store in an airtight container.  14

NOW OPEN A FAMILY AFFAIR

FAT PANT’S GRAND OPENING IN A TIME WHEN YOU AREN’T SURE WHAT TO EXPECT FROM MOST RESTAURANTS, THERE’S COMFORT IN SOMETHING FAMILIAR. That’s exactly what the owners of New Fat Pants Brewing want you to feel like when you visit – comfortable - like you were in your own living room. As founders Elizabeth, Linda, and Don Anderson understand the pleasure of feeling at home. The Andersons are life-long Eden Prairie resident and wanted to create something they felt was missing in the community. “My goal was to create a fun space where it would be easy to meet friends. Someplace where you could come as you are, and maybe have a bite to eat or something to drink that you wouldn’t find anywhere else”, says Elizabeth. With Fat Pants, she and her partners have hit a home run. When the space just off Flying Cloud Drive and Prairie Center Drive became available, they jumped on it. There has been a lot of work over the past two years to bring their vision to reality, as the space has been completely transformed into the City’s first taproom Joined by childhood friends other family members and Elizabeth’s fiancé, Joshua Schmidt,  the partners did much of the work themselves. My father had the honor of placing the star on the top of our tree. Signaling the end of our tree decorating, my father would bring the ladder out, always stretching a bit to reach the top, past the sides of the tree that were now filled to capacity.  Our tree design became more sophisticated as we grew older. The homemade star was replaced with something more dignified. What didn’t change was the laughter and fun we had decorating the tree, that never went away.  Inevitably, my sister and I moved forward with our lives. Still, many of our traditions today mirror those of my youth. The sequence of decorating the tree is one tradition that remains the same, with my wife playing the role of expert master planner. As the father, I still enjoy placing the star at the top of the tree. Our family’s traditions were borne from love and laughter. When I look at the lights this Christmas season, I will remember the best of those memories. Much to my wife’s dismay, I will add a string of gurgling bubble lights to our tree. In a darkened living room, watching those lights softly dance and flicker, I will again feel safe … wrapped in thoughts of days gone past. December 2019 | Eden Prairie Lifestyle
