hope this finds you sipping sweet tea in the shade somewhere that makes you feel like a kid again. Isn’t that what summer is all about? Feeling unencumbered and inspired? I thought I’d keep it simple this month and share this recipe from a cookbook I helped edit in the 1990’s when we lived in Hong Kong. It’s a winner for BBQs and potlucks. Have fun and enjoy this issue with ideas for nearby summer outings and maybe even a little inspiration!

4. Scrape down bowl and paddle: add lemon juice and vanilla, mix one minute on low speed. 5. Scrape down bowl and paddle; add eggs and mix one min6. Spray the inside of a 12" spring-form pan with non-stick Oven Spray.  7. Combine Nilla Wafers, batter, and sugar in a bowl until butter is completely incorporated.  8. Press crust mixture in bottom of the pan, approx. 1/4" thick.  9. Pour batter in pan over crust and cover loosely with foil.  10. Place cheesecake pan in a large roasting pan and add 1/2" water. Place cheesecake in 275°F oven for 2½ hours. Check the cheesecake, it may need an additional 15-30 minutes.  11. Remove from oven and let cool before refrigerating.  12. (CVI) programming is Buckhead resident Will Branch. In 2015, the 28-year-old was start-

ing his master’s degree at Boston College’s Wallace E. Carroll School of Management. Three weeks into classes, he was brutally assaulted on his walk home and beaten within an inch of his life. “I should have died in Boston, by every medical standard,” says  Will. “That’s what makes this story unique. I didn’t lose my eyesight, my eyesight was taken from me by force.” His attackers broke his femur and his skull, which badly damaged his optic nerves. Doctors said the damage done was equivalent to being hit by an IED. Will was told he would likely never see again.  But after four months of being completely blind, Will’s vision did start to come back in his left eye. “The left eye is repairing itself but it is taking a long time,” says  Will. While the nerve is damaged, he still has some peripheral vision.  Will started CVI's New View program in May 2016, taking him through courses like braille, orientation and mobility, adjusted life skills, PC and job readiness training. Will says that PC course was most helpful to him. “Before grad school, I worked at Deloitte, so Excel and PowerPoint was my life. My teacher Greg Aikens let me skip ahead to more challenging courses and taught me JAWS, a screen reader program, on both PC and Macs. I think it will help to know both when I go back to work.”  He helped celebrate the support the CVI recently at A Night Under the Big Top: Annual Night Visions fundraiser.  This special circus-themed event had carnival games and entertainment, as well as delicious carnival treats, like gourmet popcorn and cotton candy. Attendees tried their hand at giant Jenga, adaptive golf, and an obstacle course while wearing blindfolds or simulation goggles. A fortuneteller, 16

Work in Buckhead juggler, balloon hat maker and a stilt walker roamed among the crowd. The silent auction featured prizes like tickets to Braves and Atlanta United games, fullday spa packages, wine tastings and a year membership to the High museum. Attendees also had the chance to “flip-for-a-trip” in a coin toss bracket that led to two round-trip tickets from Southwest Airlines.  The night was topped off by a high stakes live auction, where winners walked away with prizes like a Darioush collection of fine wine, a round of golf at the exclusive Peachtree Golf Club, and a 7-night stay at Bahia Beach Resort in Puerto Rico for eight.  All donations from the night went to CVI’s rehabilitation programs, which serve people of all ages impacted by vision loss in metro Atlanta and throughout Georgia.  Will is eager to rejoin the workforce, and is currently going through job readiness training. He hopes the Night Visions fundraiser will make a difference for CVI’s facilities.  “Nothing about the place feels nice or new. All the equipment for PC is outdated, old and slow. It’s really a shame.” Will also says  he hopes the funds go towards getting others the resources they need to get back on their feet. “At CVI, I learned I could function with limited vision; that there was hope out there for me, that there was help.” The Night Visions event raised $135,000. These funds will empower people impacted by vision loss to live with independence and dignity. CVI is the only nonprofit organization in Georgia that provides vision rehabilitation services and support to people of all ages and with all degrees of vision loss – from low vision to total blindness. Thank you! Alicia Harden was the lucky winner and last month embarked on her 24-hours of luxury and pampering. Alicia and her boyfriend Svante checked into the Mandarin Oriental and immediately headed to the MOHA spa for a couples massage.  They enjoyed a 1 hour and 20 minute Oriental Essence Massage in the VIP Couple’s Spa Suite.The private couples treatment room has a private jacuzzi and shower.  The men’s and women’s lounge each has a steam room, sauna, jacuzzi, private showers and a terrace overlooking the Buckhead skyline. Healthy snacks, infused water and tea are on tap, too, in the plush lounges. In the fluffiest robes, the couple met at the bright indoor pool for a cocktail and snack before being whisked off in the hotel Tesla to Van Michael Salon for hair and make-up services. (Van Michael Buckhead and Sandy Springs were voted as the best salons in both the BuckHaven and Perimeter North reader’s choice contests earlier this year.) Alicia received color services with Ashley and a gorgeous cut and blowout by Brandon (shoulder, head and hand massage with compliments) and Svante met with Alex for color and a cut with Erin. Back at the Mandarin Oriental, they relaxed in the city-view king room before changing for dinner.  Stopping at the The Cafe’ & Bar for a cocktail, they toasted with a signature cocktail. For dinner, Alicia and Svante were treated like royalty at Davio’s Northern Italian Steakhouse at Phipps Plaza, and called the MOHA Tesla for luxury transport back for a lovely night at the hotel.

Now the week has started over and we are still thinking about the special day we were able to experience on Friday.  The stay at the Mandarin was a pleasure, the room was very comfortable and a nice view of Peachtree Rd.   The spa was just beautiful we definitely relaxed and enjoyed the massages! We also got to try out some new summer cocktails at the bar, try the Caipirinha it was delicious! And the lychee martini was refreshing.  Great place to stay!!  At Van Michael salon everyone was super friendl y and accommodating us every step of the way.  They definitely have some very talented stylists who made sure we were ready for a night on the town.  We both looked like movie stars! We even received neck and hand massages now that is V IP treatment!  We made our way over to Davio's for a fantast ic dinner.   The service was top notch and the food was delicious.  I especially loved the bread, it's like nothing I had before!  Excel lent wine choices as well.   We wanted to again thank you all for this opport unity we truly enjoyed everyt hing!  Warm regards, Alicia & Svante
