I

n a salute to the thriving craft brewing industry in this town, we’ve dedicated this issue to brews—complete with a comparison of different types of beer, a listing of local beer festivals, and a guide to choosing a local watering hole, depending on your mood. Celebrate February with your favorite beer in hand, a warm fire in the fireplace and good friends by your side! We couldn’t leave out coffee in our “brews” issue. In “The Business of Beans,” take a look at how a local coffee entrepreneur combines his love for coffee with his passion for music.

ROASTING THE ROAST

While there are several types of roasts— including light, dark and French—the majority of Bonsai Bean’s offerings are a “musically-enhanced” medium roast, with a slightly sweeter taste than light roasts and a more balanced aroma and acidity by comparison. Bonsai Beans also has a flavorful cold brew, which is very popular in the summer months.  The process of roasting coffee beans, which is similar to a popcorn popper, transforms the chemical and physical properties of green coffee beans into roasted coffee products and is what  produces the characteristic flavor of coffee by causing the green coffee  beans  to change in color  and taste. Newson uses a Fluid Bed Air Roaster from Ashe Industries with a separate cooling tray, enabling the start

of a new batch while the last batch cools.

There’s a certain freedom here [in Central Oregon] that allows people to chase their dream with the support of the local community. Chris Newson

Currently, Bonsai Beans are available directly online, at CE Lovejoy’s Brookswood Market and Central Oregon Locavore, and will soon hit the Market of Choice shelves. In the coming year, Newson has plans to brand

his coffee in very creative and ‘musical’ ways. He’s begun by naming one of his specialty roasts, Slightly Roasted, in honor of the international touring band Slightly Stoopid. By using this model for local bands as well, Bend is sure to see Bonsai coffee being served up on the main stage near and far. BonsaiBeans.com

THE BEERS OF BEER TOWN, USA ARTICLE GREGG MORRIS | PHOTOGRAPHY GARY CALICOTT

With Oregon having over 200 breweries—34 in Central Oregon alone—the days of walking into a bar and telling the bartender you’ll have a “beer” are long gone. Choices now range from locals’ favorite India Pale Ale (IPA) to specialty beers, crafted for the season. First, let’s start by increasing your knowledge on how beers are defined. Alcohol By Volume (ABV) is the standard measure of how much alcohol is contained in a given volume of the beer. International Bitterness Units (IBU) is the standard scale measuring a beer’s bitterness. We’ve also included the breweries’ descriptions of their beer.  So, if you’re looking to expand your beer horizon, but need a little help, here are six different varieties to help you choose the beer that best suits your mood. Cheers!

Don’t fear! We have three options for you that are sure to score more points than any simple ‘dinner out’ plan would.

Be like James Bond and stash your finest attire in your backpack for a stealth cross-country ski trip to a remote cabin in the woods. Upon arrival, spiff yourself up, have a martini—shaken, not stirred—and head over for a fine dining experience at the Lodge.  While 2017’s menu has yet to be crafted, last year’s three-course meal choices included Seared Scallops, Fried Sage, Roasted Beet Passato, Pan-Fried Lump Crab Cake, Braised Beef Short Ribs, HouseMade Gnocchi, and Candied Orange Crème Brulee with Sea Salt. Start your DIY evening by cooking up a pizza just the way each of you likes it. Add a Dean Martin serenade and you can’t go wrong. After you’ve done the bossa nova around the kitchen, settle in at the table to enjoy your concoction and throw out a few conversation starters from Table Topics.  Tummies full and hearts a-flutter, put on your work clothes and sturdy shoes and head out to Bend’s DIYcave for your Couples Welding Class. You’ll create two halves of a steel heart and use the glowing warmth of—well, a welding torch—to join them together.

ROMANCE ON THE SNOW

Planning: ◆ Choose February 10, 11, or 14, $95/per person. ◆ Reserve with Wanderlust Tours. If you’re looking for that perfect excuse to cuddle up close, try taking a night hike in the snow. Your destination is an amphitheater carved into the snow with a bonfire at its center. Guides bring in desserts, champagne, and hot cocoa with Hazelnut Espresso Vodka. And, when not listening to the sweet nothings whispered in your ear or being mesmerized by the flames, turn your attention to one of Wanderlust’s award-winning Naturalists as they drop some facts on the forest and night sky.  The tour also includes rental of a headlamp and snowshoes. Waterproof boots, pants, and jackets are available for rent for an extra fee. Warm fire, warm friends, warm drinks, beautiful snow and expansive sky, what’s not to love? Stout Chocola te Brownies

INGREDIENTS

• ½ cup stout beer • 1/4 cup espesso or strong cold brew • 10 ounces 60% bittersweet chocolate chips • 1 cup butter • 1 cup sugar • 1 teaspoon vanilla • ½ teaspoon kosher salt • 3 eggs • 1 cup flour INSTRUCTIONS

• Preheat oven at 250 degrees F. Prepare a 9" X 9" baking pan with parchment paper allowing the paper to hang over the edges and spray with cooking spray. • Bring stout to a boil and reduce to simmer and cook for about 10 minutes or until reduced to ¼ cup. Set aside to cool. • In a double boiler or a small bowl atop a small saucepan filled with 1 inch of water, melt chocolate chips and butter over high heat, stirring occasionally, until melted. • Pour melted chocolate into a medium bowl and cool slightly. Add sugar, vanilla, salt and stout and mix well with a whisk or wooden spoon. Add eggs one at a time, mixing just until combined before adding the next egg. • Fold flour into mixture and pour into baking pan. Bake for one hour or until a toothpick comes out clean.
