A Time to Be Thankful

T

hankful: it’s a word that gets tossed around a lot this time of year as November arrives and 2017 begins to draw to a close.

And although it typically marks the winding down of the year, November is also a season of beginnings. This month begins the season of giving and the season of receiving. It begins the season of family gatherings and time spent with friends. It’s the month of Thanksgiving Day parades, Black Friday shopping, mom’s traditional holiday dinners and naps on the couch when you’ve had too much turkey ... or casserole ... or pie …

But, perhaps most importantly, it’s the beginning of a season of reflection and gratefulness.

Easton Lemos, Kara Mercer

While we’re incredibly thankful for all of the food (who isn’t thankful for the person who came up with pie?), wine and family time November brings—food and wine is this month’s theme, after all—here at Bellevue Lifestyle, we’re truly thankful for you. When we fill this magazine each month with local restaurants, locally-owned businesses and inspiring members of the Bellevue community, it’s because we’re thankful for everything the place we call home has to offer, and for you—the readers and members of this community—who continue to inspire us to make every issue of this publication special. Thank you for taking the time to join us as we strive to connect you with your community through meaningful words and beautiful photographs. And to you, our readers, take some time to think about what you’re thankful for this November. May you find gratitude in the little things, and may the list of what you’re thankful for go on forever.

If you are a serious collector, investing in luxury wine storage makes perfect sense. Bellevue restaurants have long used wine storage as a showcase piece. Wine collections have moved from basement cellars and out of sight to front and center for all to see. Glass-enclosed wine rooms and modern wine walls have become the ultimate status symbol. Designed for the epicurean, eastside kitchen and wine storage trends speak volumes to an inspired home design at its most exceptional, boasting outstanding appointments within an idyllic setting that caters to every luxury while creating something special to highlight the unique verve that is the Bellevue lifestyle.

“It started with pancakes,” the proud mom says of how she and David became such a great baking duo. “He knows the way you mix things, he knows how to crack eggs. He is really good.”

PUMPKIN CAKE INGREDIENTS

2 cups sugar 1 cup vegetable oil 4 large eggs at room temperature 1 teaspoon vanilla extract 2 cups gluten-free 1 to 1 flour blend (All-purpose flour works perfectly here, as well.) 2 teaspoons baking soda 1 teaspoon baking powder 2 teaspoons cinnamon 1/2 teaspoon ground ginger Pinch freshly grated nutmeg 1/2 teaspoon salt 2 cups pumpkin puree INSTRUCTIONS

1. Preheat oven to 325 F. Butter 3-by-6 inch cake pans, line with rounds of parchment paper, dust with flour and tap out the excess. 2. Beat the oil and sugar in a stand mixer fitted with a paddle attachment (or a handheld mixer) on medium speed for about 3 minutes, then reduce the speed and add the eggs one at a time. Beat on medium speed until combined and creamy, about 3 more minutes. Add the vanilla and mix for 30 seconds. 3. Sift the dry ingredients together and add slowly, mixing on low speed until combined. Add the pumpkin and mix by hand until smooth. 4. Distribute the batter evenly in the prepared pans and bake for 20 minutes without opening the oven, then rotate the pans and bake for an additional 5-7 minutes or until a toothpick inserted in the center of the cake comes out clean. Place the pans on cooling racks for 15-20 minutes or until the pan is cool enough to handle. 5. Run a sharp knife around the edges of the pans to loosen

SPELT AND MOLASSES COOKIES INGREDIENTS

1/2 cup melted butter, browned, if desired (directions below) 2 cups spelt flour 1 1/2 teaspoons baking powder 1/4 teaspoon baking soda 1 1/2 teaspoons ground cinnamon 1 teaspoon ground ginger 3/4 teaspoon ground cardamom 1/2 teaspoon salt 1 large egg 1/3 cup granulated white sugar 1/4 cup light brown sugar 1/3 cup molasses Turbinado (or other coarse-grained sugar) for rolling the cookies INSTRUCTIONS

1. To brown the butter, place it in a saucepan over medium heat, swirling occasionally as it melts. The butter will foam as it cooks, continue swirling the pan occasionally, keeping a very close eye on it. Once the milk solids begin to brown and the butter smells toasty, remove it from heat and pour it into a heat-proof bowl, scraping the milk solids from the bottom of the pan as you pour. Allow the butter to cool. 2. In a large bowl, whisk together flour, baking powder, baking soda, cinnamon, ginger, cardamom and salt. In a separate bowl, whisk egg, white and brown sugars  and molasses. Stir in the cooled butter, then pour the wet ingredients into the dry and mix until combined. Chill the dough for at least 30 minutes. 3. Once the dough is chilled, preheat the oven to 375 F. Prepare two cookie sheets by lining them with parchment paper and set aside. Taking spoonfuls of dough at a time, form the dough into balls, roll in turbinado sugar, and place on the cookie sheet 2-3 inches apart. Bake for 8-10 minutes. 4. Allow the cookies to cool on the baking sheets for a few minutes, then with a spatula transfer them to cooling racks. If you’re using them for ice cream sandwiches, pop the cooling rack into the freezer once the cookies are room temperature to firm up the cookies and make them easier to fill, about 10 minutes.

GINGER ICE CREAM (TO MAKE ICE CREAM SANDWICHES) INGREDIENTS

6 tablespoons fresh grated ginger 3 tablespoons water 2 1/4 cups sugar, divided 3 cups heavy whipping cream 2 cups whole milk 4 whole eggs Pinch of salt 2 teaspoons ground ginger 1 teaspoon vanilla extract 2 tablespoons ginger liqueur, optional INSTRUCTIONS

1. Combine the ginger, water and 1/4 cup of sugar in a large, heavy-bottomed saucepan and bring to a gentle boil. Cook for about 5 minutes. While the ginger cooks, gently whisk the eggs with the remaining sugar and set aside. Add the heavy whipping cream and whole milk to the saucepan with the ginger, reduce the heat to medium and scald—bring it nearly to a boil, until the milk is steaming and bubbles are starting to form. Remove it from the heat and temper the eggs by pouring about a cup of the cream into the egg and sugar mixture, whisking constantly. Add the egg mixture

Giving Back

Playing the Long Game RANDALL MORRIS WORKS TO HELP CHILDREN AND THE HOMELESS—ONE PUTT AT A TIME

R

andall Morris might be best known as a former Seattle Seahawk running back who played in the mid-to-late '80s, but for the last two decades, golf and charity have been his game.

As a young man, Randall was influenced by a couple of

mentors—his high school coach and a family friend—who instilled values in him that he holds dear to this day. One of those values is paying it forward. “I have a platform here, where I’ve been a professional athlete and kids look up to athletes, and so there’s a hook there,” he says. “I got an automatic hook for getting the attention of the young folk. So, I said why not use it.” Randall has been hosting his celebrity golf tournament for 11 years, with money raised going to the Burned Children’s Recovery Foundation, and more recently, Mary’s Place. Five years ago, with the support of his wife, Amanda, he decided to make his philanthropy official by starting the Randall Morris Foundation for Youth and Families. The charities were chosen for the personal significance they have for Randall and Amanda. “There were people in my family that have been severely burned,” Randall says. “There are also people in my family that have been homeless—close family members. It’s just heartfelt to me.” This year though, his golf tournament is a bit more.  Due to the Pacific Northwest not having an active NFL Alumni Chapter, it has been ineligible to participate in the NFL Super Bowl of Golf, an NFL sponsored event that culminates in representatives of each of the 31 NFL teams playing golf against each other in Las Vegas. This year, the alumni chapter was rekindled, and Randall Morris’s golf tournament was awarded the qualifying tournament for the Pacific Northwest. “My eyes lit up when they finally awarded it to me,” he says. “I was so honored, because there are so many other great tournaments here, and they gave it to me.” The tournament was held September 11 at the White Horse Golf Club in Kingston, Washington, with 36 fivesomes competing against one another for a package that includes an all-expenses-paid stay at Caesar’s Palace in Las Vegas. The winners were the Patterson Group, consisting of Bill Patterson, Mark McLaurin, Joe Rebecee and Dante Robinson. Randall considers himself a blessed man, and he wants to pay it forward.
