The fine folks at The Henderson Beach Resort in Destin, Florida let me ring the sunset bell on our 30th wedding anniversary. That silly look on my face? We made it to the bell with seconds to spare, dashing out from our third fabulous course at Primrose Restaurant just as the sun was dipping below the horizon. Happy Anniversary, honey!

KALE THAT, FARM-TO-TABLE HERE AND DOCK-TO-TABLE THERE. I like all food trends. They are fun and sometimes even tasty. But mostly, trying something new builds our confidence and gives us perspective. I remember begging my mother to buy individually wrapped processed cheese slices thinking my street cred in the lunch room would significantly improve. No such luck on either front. My mom was dedicated to Koepplinger's 100% whole wheat bread and natural peanut butter. Cardboard on cardboard. And, rather than the zip top sandwich bags, I’d get wax paper or the basic fold top sandwich bags.  She was not one for trends, gadgets or even shortcuts.

THE DAY OFF

A DAY (OR TWO) IN BLUE RIDGE ARTICLE SUE G. COLLINS

FOR THE BETTER PART OF THREE HOURS STANDING IN THE MIDDLE OF THE GIN-CLEAR NOONTOOTLA CREEK IN BLUE RIDGE, I WAS LASER FOCUSED ON A 2-INCH PIECE OF GREEN YARN. I’d glance up occasionally for a new cast, looking for foam or those treasure troves of cold dark water. My guide David Hulsey was patient, then pushy when that green yarn indicator dipped ever so slightly. Six times over that morning, I won the battle with strong and willful trout, learning when to let the fish run and when to reel like hell. Hulsey leads trips along the two miles of water over 1,200 acres owned by Noontootla Creek Farms.Other members of his team teach and guide upland wingshooting and sporting clays. This is not your mama’s Blue Ridge, the cute little town where you have lunch on rainy North Georgia Mountain days. Head up, unplug and make plans to paddle, raft, hike, golf, fish, shoot, bike or really go deep and join a class at Oyster Bamboo Rods to craft your own fly rod. Waitlisted through next spring, the six-day workshops attract kings of industry and beginning sportsmen alike who are put through the paces of planing, shaping and finishing a bamboo rod true using age old techniques. W H E R E C H E F S E A T FIND OUT WHERE YOU'LL CATCH ALPHARETTA CHEFS WHEN THEY AREN'T THE ONES COOKING.

"ONE CANNOT THINK WELL, LOVE WELL AND SLEEP WELL IF ONE HAS NOT DINED WELL." Virginia Wolfe No one understands this quote better than those who spend their lives and make their livelihood based on creating spectacularly delicious food. But where do chefs and restaurateurs eat when they aren't the ones making the food? What foods do they dream about someone else cooking for them? We caught up with four local chefs/restaurant owners to find out. You may be surprised at some of the answers and glean some new places to check out for yourself!

Alpharetta Lifestyle | October 2018

1. WHERE DO YOU EAT WHEN YOU'RE NOT COOKING FOR YOURSELF? AND WHAT'S YOUR FAVORITE MEAL THERE? CAMERON UDICK, EXECUTIVE SOUS CHEF, CHATEAU ELAN WINERY & RESORT: When I'm not cooking at home, my fiancée and I love to explore all the unexpected ‘pop-ups’ that seem to appear all around Atlanta nowadays. The menus are small but truly showcase the local chef’s talents. I like to get one of everything! My favorite thing on the menu is always something I've never tried before. I'm always looking for new ideas, new flavors or a unique spin on a classic dish. SHAUN DOTY, CHEF, KING BARBECUE:  Mamak off Buford Highway. My favorite meal is Roti Canai. This is a type of crepe served with curry sauce. You tear the crepe with your hands and dip it into the sauce. Yum. CAREY WISE, PIT MASTER AND MANAGING PARTNER, KING BARBECUE: Havana Sandwich Shop off Buford Highway. My favorite meal is  Medianoche full sandwich combo. Chef Sean Doty of King Barbecue Photo credit: Sarah Dorio

STELLA LEE, OWNER, ARI KOREAN STEAKHOUSE: I love traveling and trying new cuisine. I try to find local food that local people enjoy. One of my favorite restaurants in Atlanta is Kimball House in Decatur. Not only are their oysters and cocktails the best, all of their menu is on point. And of course, ARI Korean Steakhouse has the best Korean food in town! I never get tired of the menu.  At ARI Korean Steakhouse I have  Galbi, Wagyu, Beef Tartare. And the  small bar snacks. At Kimball House I have oysters, Kimball House Signature Cocktail (only cocktail I drink in

2. WHAT DO YOU LOOK FOR WHEN DECIDING WHERE TO EAT? UDICK: Often I read about a new restaurant on social media and I am instantly dying to try it. Great chefs make great food and if I’ve heard of or know the chef at the helm, I'm sold. DOTY: Freshness and a good value. WISE:  Authentic cuisine, great customer service and a clean restaurant. LEE:  I myself am  a designer so I definitely check out places with great design and ambiance, but they don't always have good food. I look for the quality of food and authenticity of the cuisine when I try to find really good place to eat.

3. IF YOU COULD EAT ANYWHERE IN THE WORLD AND ANY DISH IN THE WORLD, WHAT AND WHERE WOULD THAT BE? UDICK: Next spring, my fiancee and I are planning a foodie trip to Tokyo. We plan on eating at every ramen bar and sushi house we can find. I can not think of a better vacation DOTY: The pressed duck at La Tour D’Argent. This is a famous, old, historic restaurant in Paris. The pressed duck dish is a well known signature dish. WISE The jerk baby back ribs from Hometown Barbecue in NYC. It has amazing flavor, a great atmosphere and always perfectly cooked. LEE:I love so many different places. French, Italian, Japanese, Thai, Vietnamese …but of course my soul food would be in Korea. I can eat the  fresh seafood near the harbor in Korea everyday.

LOCAL PHOTOGRAPHER, AUBRY CANALES, DISHES ON HOW TO TAKE THE BEST FOOD PHOTOS.

5 SECRETS TO FAB FOOD PHOTOGRAPHY

F

OOD PORN. It's all over social media. There's that spectacular piece of towering chocolate cake or the glistening lobster tail

tips

that makes you want to lick the butter off your iPhone screen. How do people who

don't take photos for a living get these unbelievably

delicious-looking

shots?

Local photographer, Aubry Canales, shares their secrets! Aubry is a Johns Creek resident, mom of three, and owner of Aubry Canales Photography. She specializes in unusual and unique photo compositions for corporate clients as well as individuals, emphasizing her graphic design background. Through years of hard-earned experience, she has learned the ins and outs of taking the best photos of just about anything. Here are her tips.

» TIP #1: It’s hard but try to photograph your food before you start eating it. Presentation is everything for chefs so showcase what they give you.

» TIP #2: Use different angles. Go ahead and get your phone/camera down on the table so you are on the same level as the food. Or take the photo from directly above if there is a unique design to show off.

» TIP #3: Get up close. Food often has great textures that we overlook. Most cameras have a “portrait/ macro” mode which helps you focus on something closer, while putting the background slightly out of focus. It creates a fantastic effect.

» TIP #4: Always be conscious of the background when taking the photograph. Move glasses, silverware and other items out of the background. This will simplify your photo. Also, just tweaking your camera angle slightly can change the background.

» TIP #5: Lighting is everything! If you have natural light, use it! If you need light, try not to use the flash on your phone/camera. Instead, have a friend turn their phone’s flashlight on and light the food at an angle from above. This trick also works really well when taking photos of people too. 32
