Spitroast dual personality franchise store opens in Mount Gambier

The food court at Centro Shopping Centre, Helen St Mount Gambier is the location of the first Spitroast franchise store in Australia. Specialising in infusing and roasting local meats during the day (roast meat burgers, baguettes, yiros, rolls and wraps starting from $4.50), the venue will transform into a hip Mexican canteena concept modelled by Chef Dave Carrigan after the Centre closes at 5.30pm, offering fajitas, tacos, tortillas, burritos and nachos, from June 5. “Approximately 70 Spitroast stores are planned, and this pilot store is very important for testing new menu items and proving the almost unanimous appeal of perfectly roasted quality meat combined with something Dave noted was missing from Mount Gambier – Mexican,” said franchise owner Steve Moignard. The Centro location is unique in that it has a private seating area and an outdoor dining/ smoking area as well as its own entrance to Helen Street, making it possible to operate independently of the centre’s hours. Opening the pilot franchise has been a lot of work for Mr Moignard’s team, most of whom hail from towards Penola where his other restaurant Coonawarra Station is located. “We had to clean up a basically derelict shop, train the new staff, design the menu, set up new equipment and install all the electronic menu screens (seven plasmas) in a very short time,” he said. “Delays in deliveries over Easter meant we were running less than 50% of our menu and with untrained staff and it was pretty chaotic – meat was flying everywhere. “I recommend anyone who came over Easter should come again to try the completed concept – I can guarantee they will be impressed.” The store offers seniors discounts on Tuesdays and the centre’s lowest priced coffees/fries. “We are excited about our take-away roast dinner option – roast meat, roast vegetables, fries, gravy and 1.25 litre drink, all for only $22, which is great value. “Customers need to remember to phone 30 minutes early to get the roasted vegetables as they are made to order.” The infusions for the roasted meats – fig and lavender for lamb, strawberry for pork, and onion with beef, are used to enhance the flavor of the meat and the larding and barding process increases its softness and moistness, so that it remains perfect on hot dishes and cold on healthy salad wraps. “The emphasis in now on fast service, understanding that people have limited time, particularly over lunch. “For the first few days, the girls took quite a long time to make a sandwich, now they can build one in front of your in seconds.”

COLLECTED STUPIDITY A gift that will keep giving by Robbie Tansel Well since we’ve just made it through another Mother’s Day, I thought I might share a story regarding my mother. My family has become a

little concerned lately that my mother might be in the early stages of dementia. We’ve kind of been expecting it for a number of years now.

She took more than her fair share of beatings while in jail and we know that repeated concussions don’t do a lot for the grey matter.

Not to mention the amount of alcoholic beverages Mum has worked her way through over the years. Jail wasn’t all bad for Mum. She got quite skilled at making shivs from all manner of everyday items while in the grey bar motel. When not using them in prison brawls she used them to find an enjoyable hobby. With just a minor adjustment she could use the shiv to stitch up wounds after the fights. She got sick of straight stitching and mastered cross stitching which became her favourite thing to do while sculling bottles of vodka once she left jail. If you look at many of her prison scars they still look like the animals she stitched up her wounds with. What has increased our concern for Mum has been

her behaviour in shopping centre carparks. She used to forget where she parked her car. She then moved on to forgetting the colour of the car she was looking for. The next step was forgetting she had a car. Over the last week she has rung me several times wondering if I’ve seen her helicopter. Now many of you would think this is a fairly straight forward and obvious case. But I’ve actually come up with a groundbreaking test of my own which will categorically show when the old girl has reached the stage where we need to put her in a home. Feel free to use it on your own parents. Patent pending. Here’s how it goes. Ring up the family member you are concerned about. Make

your usual small talk. How about the weather? What have you been up to? What about the ongoing situation in the Ukraine? Keep it to around the two minute mark. At this point you allow an uncomfortable pause. Let the pause just hang awkwardly in the air. Then say, “So what did you call for?” The response you receive will determine if it’s time to give the lovely staff at Boandik a call. My mother is still responding with, “You called me, you idiot” so she’s obviously still hanging on. I’ll know there’s a problem when she answers with, “I can’t remember, dear.” In fact if she simply calls me “dear” I’ll know there’s a problem. “You idiot” is how she prefers to refer to me. At the very least it

shows she’s still in control of her faculties. The honest truth is that my Mum is an absolute legend. Having to parent a young Robbie Tansel would lead anyone to a life of booze and crime. She never gave up on me though and managed to turn me into…whatever it is that I’ve become. This was back in the day when parents actually parented their children too, not put them in front of an electric device or left it to the grandparents to bring the children up. Things weren’t easy for my mum and dad. They made a decision that it was important for Mum to be at home and raise us. There wasn’t a lot of money and it would have been easier for Mum to go back to work, but apart from a few breakins here and there they just made do with what we had. So Happy Mothers Day, Mum. Mexican bean soup with cheese toast 1 tablespoon olive oil 1 brown onion, finely chopped 2 garlic cloves, finely chopped 1 long red chilli, half finely chopped, half thinly sliced 2 x 400g cans diced tomatoes 1 cup vegetable stock 400g can red kidney beans, rinsed, drained 4 slices White Sourdough Vienna 140g Vintage Cheddar, grated 1 avocado, diced 1 ripe tomato, seeded, diced 1/3 cup coriander leaves

Method Heat oil in a large saucepan over medium heat. Cook onion, garlic and chopped chilli, stirring, for 5 mins or until softened. Add tomatoes and stock. Increase heat to high and bring to the boil. Reduce heat and simmer, covered, for 10 mins. Carefully use

Book lovers paradise They say a change is as good as a holiday and Cindy Patzel is hoping the change of name and location for Mount Gambier’s Book Exchange will reinvigorate interest in reading. As of May 3, The Mount Gambier Book Exchange, which has moved across the road to 95 Commercial Street West, from its previous site, will be known as The Book Place. New owner Cindy Patzel has been busily making the new premises a more user friendly book shop complete with comfy seats on site. “I want it to feel inviting and welcoming and an easy place to browse for your favourite authors and genres,” Cindy said. “I love books, all genres, and I couldn’t think of anything better than being surrounded by books all day.” The Book Place only sells second hand books and works on an exchange system – if you buy a book for $8, which is the price for a good condition novel, when you bring it back to exchange it, you get a 50% store credit ($4) and you can either use that credit off your next instalment of books or save them up over time. Cindy has already got together an impressive collection which will only be enhanced when the current book exchange catalogue is transferred

to The Book Place. And the new store will not just be an exchange but a book shop. “Many customers buy books to keep them,” Cindy said. “It’s a good place to complete a collection and buying a book that is now out of print.” The Book Place is happy to take second hand books from anyone, except from smoking homes, and will keep what suits their requirements and deliver the rest to charity shops like Lifeline, St Vinnies and the Salvos. “If we take your books you get store credit for that donation

as well,” she said. The Book Place is open Monday, Tuesday Wednesday, Friday and Saturday from 9.30am to 3.30pm and until 5pm on Thursdays and Sundays from 9.30am to 2pm. Cindy has looked to create a nice, bright and comfortable feel to the new look book shop which has plenty of room to expand and has been designed to keep authors located within those genres easy to find. LOCAL Emerging Emerging artists Tara O’conal, Lori Smith and Sue Chenery will present Essence: an exhibition of new works when they join the Penola Coonawarra Arts Festival. Essence shows from May 24 – June 22 at Penley Estate and will be opened by Adelaide artist Lisa Young on May 24 at 1pm. The three artists met while studying art and this is their first exhibition together. Each interprets the human form and the world we inhabit. Different mediums and visual languages are utilized to communicate a diverse range of responses to the human condition. Paintings in oil and drawings in charcoal and miniature will delight and challenge visitors to the exhibition which is the first of Penley Estate’ s new works exhibitions for 2014. Tara O’conal’s work explores the photographic snapshot as a means through which we can retrospectively view a moment held statically in time and space. In the creation of the photograph the subject is converted into a composition of

artists on show

tonal values becoming an impression that is removed from its original source. The transcription of the photograph through the means of drawing acts as a filter, highlighting the obscurity from reality that occurs in the image making process. The scale of the work challenges the fluid nature of the charcoal medium, causing a loss of detail and a generalization of the image, while at the same time offering an intimate perspective. Lori Smith explores the representation of emotion through the depiction of the figure in space. Influenced by Rembrandt, Mark Rothko and Gerhard Richter, she enjoys the sheer sensuality and beauty that can be created with paint. She works intuitively with oils and by immersing herself in the process of painting, generates an emotional state that translates onto the canvas. There exists within the work a tension that arises from the interplay between abstraction and realism. Sue Chenery’s works are influenced

by the art of Sir Stanley Spencer, William Dobel and Alice Neel. These works introduce a sense of unsentimental whimsy and look at the mundane, the everyday in a way that has meaning. It enshrines the artist’s endeavours to justify the stories she tells herself as she stands before the universe, naked and alone.

WARMING UP THIS WINTER Everything you need to beat the winter blues tempt the tastebuds - winter warmers Pumpkin Soup 2 tablespoons olive oil 1 onion, finely chopped 1 leek, white part only, finely sliced 1 garlic clove, crushed 1/2 teaspoon ground coriander 1 teaspoon ground cumin 1/2 teaspoon freshly grated nutmeg 1kg peeled pumpkin, diced 1 large potato, peeled, diced 1L chicken or vegetable stock 1/2 cup thin cream

Method

Self saucing mocha pudding 1 2/3 cups self-raising flour, sifted 2 tablespoons cocoa powder, sifted 1 teaspoon instant espresso coffee powder 3/4 cup brown sugar 125g butter, melted 1 cup milk Vanilla ice-cream, to serve Sauce 1/4 cup brown sugar 1 tablespoon cocoa powder, sifted 1 1/2 teaspoons instant espresso coffee powder 1 cup boiling water

Method Preheat oven to 180°C/160°C fan-forced. Combine flour, cocoa powder, coffee powder, sugar, butter and milk in a bowl. Stir until smooth. Spread into six 1 1/2 cupcapacity ovenproof dishes. Make sauce: Place sugar, cocoa powder, coffee powder and boiling water in a heatproof jug. Stir to combine. Divide sauce evenly over batter in each dish. Bake for 30 to 35 minutes or until top of puddings are just set. Stand for 5 minutes. Serve with cream. Heat oil in a large saucepan over low heat, add onion and leek and cook for 2-3 minutes, until softened but not coloured. Add garlic and spices and cook, stirring, for 30 seconds. Add pumpkin, potato and stock and bring to the boil. Turn heat to low, cover and simmer for 30 minutes. Allow to cool slightly, then blend in batches. Return soup to pan, stir through cream and reheat gently. Season and add a little more nutmeg if desired.

What you’ll need 4 ripe tomatoes 1 red onion 2 tsp garlic 1 tsp sugar 1/2 bunch of basil 100 mls extra virgin olive oil Salt & Pepper to taste Crusty bread for bases drizzled with extra virgin olive oil toasted and rubbed with garlic. Method Fine dice the Tomato and Red Onion, add chopped basil, sugar, garlic and extra virgin olive oil adjust taste with salt & pepper. Top bases with Salsa. You can drizzle a little balsamic vinegar or crumble some fetta on top to enhance your dish.

VICTORIA HOTEL - GLENN KER It’s been a bumpy but exciting ride for chef Glenn Ker. He started his apprenticeship on February 1, 1986, at a Travelodge - a hotel in the heart of. It was part of The Southern Pacific Hotel Group and Glenn was one of 10 apprentices working alongside 17 of the angriest chefs you could imagine. “Life for an apprentice there was hard and tough,” Glenn said. “I was naughty at High School and was always going to find life tough there due to the nature of the business and the fact I didn’t always know when to stay quiet.” But Glenn clearly had a talent for the industry, shining at inter-hotel competitions, winning a swag of awards. He picked up awards in first year, second year and fourth year. “I missed out in third year after breaking the chef’s door on his office with the fire hose and soaking all his cookbooks after the apprentices had a food fight in the kitchen,” Glenn said. “Chef McMurchy, a Scottish chef, did not find this funny and as a matter of fact I have never, to this day, seen someone so angry and so my punishment was to miss the year that would of given me the opportunity to become the first apprentice to win all four years of our apprenticeship.” Glenn has worked in hospitality all his working life, including stints as an executive chef in 5 star hotels and owning his own pub. Locally Glenn has worked at The Barn. Penola’s Prince of Wales Hotel and is now down by the seaside at Port MacDonnell’s Victoria Hotel. “Life for a chef is awesome,” he said. “I have had the best ride of my life.”

fit for a queen

What do Queen Elizabeth, US rock band R.E.M. and Aussie singer/songwriter Megan Washington all have in common? They have all enjoyed the tasty fare of, now Mount Gambier based chef, Ian Perry. And chances are you have to. If not a dish prepared by the experienced chef then at least something created by one of the many students he has mentored in his role as the cookery lecturer at tafe SA Mount Gambier Campus. Born and bred in London, Ian wasn’t much of a scholar and at age 16 left school and signed up at catering college - a two years full time, five day a week course that included clocking up work experience in the evenings and on weekends. “I still can’t spell,” he said. And when he graduated he was determined to learn from the best and the best at that time was Albert and Michelle Roux – the first chefs to earn a Michelin star in London.

“They were who I wanted to learn from and I got the chance,” Ian said. “They ran restaurants at various levels and I worked in a bistro style restaurant and learnt about using high quality produce and treating it with respect.” It really was the perfect grounding for an ambitious young chef. “I learnt the best techniques and they have stayed with me – that kind of solid background is something you never lose,” Ian said. It centred on the French basics – the same techniques he now passes on to students. As his two years at Roux Bros ticked over, the travel bug bit and earning good

money quickly became the priority. A Scouts contact soon became his meal ticket as he secured a catering gig at one of the most prestigious addresses in the world – Buckingham Palace. LOCAL Laos

doubles as a classroom for local students

After 12 months of fundraising and planning, 15 students and four leaders from Penola High School left Adelaide Airport for Louangphrabang in northern Laos. Laos is a small mountainous country in Asia, with no sea coast, bordered by Thailand, China, Burma, Cambodia and Vietnam. The trip was organised through Antipodeans Aboard as a Service Learning Tour, providing Penola High School students and staff with the opportunity to experience another culture and complete a service project, aiding a community in need. The project was to complete the building of a boys’ dormitory for the Sop Jak High School in the small village of Na Pho in the mountains. Before

they left the travelling party didn’t really understand the enormity of the project, but after seeing the conditions the students were living in, the project became a huge reality. The Laos

students were living in makeshift huts built out of bamboo and timber, which continually get washed away during the wet season and had to be rebuilt every school year.

This is why a solid concrete dormitory structure became essential to house the students attending education from far away villages, with no way to travel home during the term. From there began a journey full of purpose and mission, and resulted in the following account of our time in Laos. Altogether the Penola High School group spent five days working on the dormitory at the Sop Jak High School; building and putting up the ceiling and painting both the inside and outside, including the skirtings and features. NATIONAL SELECTION FOR LOCAL SOFTBALLER Mount Gambier softballer Amber Hood has capped off an amazing 12 months with selection in the Australian 17 & Under Schoolgirls team which will represent Australia later this year in Hawaii. Selected as one of the team’s two catchers, Amber earned selection after an outstanding performance last week in Sydney at the 17 & Under Schoolgirls National Championships. She was consistent with the bat, including four three baggers and a home run, in a week where she played short stop and catcher in the SA line-up that finished fourth. Amber was joined in the South Australian line-up with sister Georgia, who pitched throughout the week, and Jenna Burston, who played third base and short stop. Three of Mount Gambier’s outstanding junior basketballers have been selected in the SA Country Under 16 State teams to compete in The Australian Junior Basketball Championships in Geelong from July 5 to 12. Tenille Gray (above right), Brenna McKay (above left) and Lachlan Hunter (below) will be joined by Millicent’s Olivia Fuller and Alana Winter, who are also members of the state team. Peter Seebohm, Basketball Manager of the Millicent Association is assistant coach and Melissa Rathjen, of Mount Gambier, is team manager of the Girls. Included in the Reserves is Jessica Allen, of Millicent, and Nicholas Lacey, of Naracoorte. The players and reserves will train over weekends through May and June leading up to the championships in early July. As well as this demanding assignment, the players have extensive individual home programs to complete. motor MOTOR Greetings Round two of the British Superbike Championship was held over the weekend (May 3-5), at Oulton Park in Cheshire. It is one of my favourite tracks on the calendar. It’s a very undulating circuit and a really exciting track to ride. After the disappointing qualifying at Brands Hatch down in 16th, which made for a lot of ground to be made up in the race for me to come home and finish 9th, I have been working hard in improving my approach to qualifying. We steadily worked through things in free practice and first qualifying, going a second faster than I did in 2013. The bike was feeling really good and I felt happy that I was able to push the limits more and make a few mistakes to find that limit and know what I could do to put in a good qualifying time. In qualifying two on Sunday I took another 4 tenths off my time, and put it 7th on the grid. There was only 0.3 of a second to 2nd place so I was a little annoyed that I didn’t find a few extra tenths to move me up a few spots. However I was still pleased to be back closer to where I know we can be and be in with a chance of a solid result in Monday’s 14 lap race. I know that our race pace is really good, I can consistently be on the pace, but I need to continue working on going that extra step in qualifying to get me right up the front on the grid. I was feeling really positive for race day! It had been a great weekend so far, I really enjoyed working with my team and riding the circuit and I felt we had made some really good progress from Brands Hatch, both for me mentally and in my riding. I got off to a decent start and moved into 6th. Pole sitter Ben Godfrey fell on the first lap moving me to 5th. I was away with the front guys but had just lost touch with them, making hard work for myself, trying to bridge that gap. I had a moment losing the front into a chicane, but thankfully stayed on. 4 I came around turn one, and on the exit of the corner, we suffered an electrical issue which caused the bike to switch off. I was hit from behind from a rider in the next group, as the bike slowed so quickly. I did my best to then get out of the way, and I pulled off to the side of the track. I managed to get the bike turned on and running again, and I re-joined the race in 20th position. I thought I have to push on for the remainder of the race. If I could get back up to 15th that would at least be in the points and even 1 point could make a difference at the end of the season. I put my head down and kept pressing on, managing to get into a decent rhythm and pick off some of the riders in front. On the final lap I was in 14th, and the rider in front of me I could see was fading badly due to arm pump. I managed to keep pushing on and pass him on the final lap to come over

the finish line in 13th. Obviously this isn’t the result me or the team had hoped for, but to come away with 3 points after what happened is a better result than what potentially could have happened, either crashing from being hit from the other rider, or not finishing. Our next round in at Donington as a support class for the World Superbikes in 3 weeks. Lots of work to do before then, further improving my qualifying

approach and also the beginning of the races, ensuring I get on to the fast pace as soon as the lights go off!
