Winter Venison Stew perfect for cold Serves nights in, or out, at 6 The Fintry Inn! Ingredients 1kg venison shoulder diced tsp salt tbsp flour 1 tbsp rapeseed oil A knob of butter 1 small onion 2 small carrots 2 sticks of celery sliced 4 cloves garlic Small bunch thyme

6 juniper berries 10 white pepper corns Zest ½ an orange 250ml white wine 250ml veal stock 750ml chicken stock Serve with buttery mash and rosehip jelly (we make our own but you can substitute it for Cranberry Sauce).

On a tray, season venison with salt and dust with flour. Heat oil in a casserole pan, fry meat until it turns a dark caramel colour. Pour out meat and excess oil into a colander, this will stop your sauce from being greasy. Without cleaning pan add a knob of butter, carrots onion, garlic and celery and fry until golden. Add thyme, pepper, zest and crushed juniper. Put venison back in. Add wine, reduce liquid by half and cover with stocks. Simmer for 3 hours, or until meat is tender. Leave to rest for at least half an hour before serving. Ideally this is made a day in advance. Check for seasoning, before serving with buttered mash, greens and a dollop of Rosehip Jelly.

Classic Christmas Cake

Put the dried fruit, zests and juice, alcohol, butter and sugar in a large pan set over a medium heat. Bring to the boil, then lower the heat and simmer for 5 mins. Tip the fruit mixture into a large bowl and leave to cool for 30 mins. Heat oven to 150C/130C fan/gas 2. Line a deep 20cm cake tin with a double layer of baking parchment, then wrap a double layer of newspaper around the outside – tie with string to secure. Add the remaining ingredients to the fruit mixture and stir well, making sure there are no pockets of flour. Tip into your prepared tin, level the top with a spatula and bake in the centre of the oven for 2 hrs. Remove the cake from the oven, poke holes in it with a skewer and spoon over 2 tbsp of your chosen alcohol. Leave the cake to cool completely in the tin. To store, peel off the baking parchment, then wrap well in cling film. Feed the cake with 1-2 tbsp alcohol every fortnight, until you ice it. Don’t feed the cake for the final week to give the surface a chance to dry before icing.

Striking the right note in Balfron

Katherine Bryan is a classical flautist and has lived in Balfron for 8 years. Her career as a performer, both as a soloist and orchestral player, takes her around the world, and she has released three solo albums. Katherine studied at the Juilliard School in New York before moving to Scotland to take up the position of Principal Flautist with the Royal Scottish National Orchestra, a position she has held since the unusually young age of 21. Her third album was released in September of this year. She can be heard regularly on BBC Radio 3 and Classic FM. “Living in Balfron with it’s beautiful views is really inspiring when I’m preparing for my performances. I love the area and it’s surroundings. Getting music practised and ready for concerts can take a long time, so being calm and focused is really important. Lunch Review The Old Mill, Killearn

A visit to The Old Mill, Killearn for lunch was an outing to which we were looking forward to with much anticipation. Recently taken over by Mark and Alice of The Inn at Kippen renown, the couple have come to Killearn with their philosophy of good, locally produced, cooked on the premises, food. The situation of the pub and restaurant is charming. Based in an 18th Century steading the centre of which was a weaving mill. It was a surprisingly sunny day at the beginning of September when we arrived at The Old Mill. On site parking in the courtyard: an immediate plus! We could have eaten outside in the garden - it was warm enough - but we opted for the bar. Very welcoming with low beamed ceiling, tweed upholstery and a sparkling gantry with the largest selection of interesting gin I’ve ever seen in a pub. Extremely good staff, friendly and knowledgable about the menu and the selection of beers on offer. An eclectic menu with sandwiches, starters and light bites, lunch , dinner and on Sunday, Sunday Lunch, soup, roast of the day followed by sticky toffee pudding.

We went with the light lunch menu where we chose from Cullen Skink to braised Ayrshire oxtail fritters with apple sauce and date purée to Great Glen venison Salami with granary bread and Scottish butter. Soup of the day or a portion of chips could be added for just £2, and the chips were very good indeed. I had the Cullen Skink which was delicious, not too creamy, plenty of smoked fish, just right and very satisfying. My friend went for the Ham and Morangie Brie sandwich (with chips) which she had as an open melted sandwich. It looked and tasted delicious. Regrettably we had no room for pudding or coffee, but we’ll be back with larger appetites to sample the lunch menu and the dinner menu. Reviewed by Janis and Eilidh

General Manager of Culcreuch Castle Hotel I have run Culcreuch Castle & Estate since February 2007 with my wife and family. Previous to this I managed hotels in Argyll (Loch Melfort) and Caithness (Portland Arms).

The main Castle business is a hotel, restaurant and wedding venue although we do have a couple of tenant farmers on the estate as well so a bit of agriculture thrown in. We also have self-catering lodges set on the hillside behind the Castle overlooking the Lomond Hills.

What is your main type business at Culcreuch? Most people think of Culcreuch as a wedding venue and yes it is true that we host many weddings throughout the year, but we do also welcome people from all over the world to stay here at the Castle and our Dungeon Diner is becoming more and more popular. We were recently awarded our first AA Rosette for the Castle Dining Room and we are quietly confident that 2016 will see us achieve our second AA Rosette. Our food is freshly prepared using as much Scottish produce as possible and all our desserts are homemade – and delicious! We are also members of the TripAdvisor Hall of Fame.

Festive Season at the Castle

Come and relax over the festive period by one of our roaring fires. Walk on the estate in beautiful winter surroundings and come in to warm yourself by the log burning stove with perhaps a small glass of mulled wine or chef’s own eggnog. You can enjoy the informal setting of our 700 year old Dungeon Diner for lunch or dinner and choose from either our Christmas menu or our full bar menu.

It is a hidden gem what would you like to tell people about the Castle that they might not know? Each year we host a number of Charity events with local organisations and have been the finishing location for the Strathendrick Car Rally for many years. A great sight with some 80 classic cars parked outside on the front lawn.

I can imagine The Festive period is a magical time for you at work, do you have any big celebrations organised? This year we have three December weddings so that will be wonderful along with our annual OAP Christmas lunch which is always great fun. We close on the 25th/26th so that our staff can be at home with their families. One of my sons, his partner and my daughter were away travelling the world last year so my wife & I are really looking forward to Christmas as they will all be home. Balmaha’s Braw Weekend, organised by The Oak Tree Inn and sponsored by Deanston Distillery is a festival of food, drink, music and entertainment on the banks of Loch Lomond. Starting at 11am on Saturday 3rd and Sunday 4th October the day will feature music, family entertainment and cooking demonstrations. There will also be a craft fair and children’s amusements.

Performing on stage will be children’s theatre group The McDougalls (Pictured above), with three performances each day of their funny food shows. Local musicians The Well Plaid Ceilidh Band, The Loch Lomond Ukulale Orchestra along with Linsey & Ken Campbell will be playing live on both days. On Sunday afternoon Balfron’s Dance Central Group will have a special show. To celebrate the 150th anniversary of Alice in Wonderland St Mocha Coffee Shop will be hosting a Mad Hatters Tea Party on a vintage bus with views over the loch. Enjoy a tea served by the characters from the story.

A food & drink showcase tent will showcase produce by Deanston Distillery, Fallen Brewery, Loch Lomond Brewery, Scotia Spice, Truffle Events, Skinners of Kippen and Creiff Fish. The Oak Tree Inn will be serving festival food with fish & chips, pizza, sausage & mash and burgers cooked fresh throughout the weekend. There will also be a special pizza station for

kids, where they can create and cook their own masterpieces! A large building will contain the festival bar that will be open from 11am-Midnight on both days. This will also be the home of food and drink demonstrations with a food and drink experts providing demonstrations and master classes

throughout both days. There will also be a craft fair and children’s face painting and amusements. On the Saturday night from 6pmmidnight enjoy a Beer, Whisky and Music festival. A strong line up of music acts for the evening includes Dave Arcari, The Zips, Mick Hargan and Have Mercy Las Vegas (Pictured above).

Park Life’s Scotch Broth Soup Recipe Ingredients 1kg neck of mutton or lamb 75g pearl barley 1 large onion 75g split peas or fresh peas 1 large leek 3 wee swedes 1 Turnip water depending on thickness required - try 2.5 litres 3 carrots 2 tbl spoons of chopped parsley salt and pepper

How To Make Scotch Broth 1. Pre soak the barley and split peas 2. Chop all the vegetables 3. Melt a wee bit of lard/cooking oil and add the chopped onion. Once softened add the water and meat (you can just add stock rather than boil meat) and boil, skimming off any fatty deposits from the top. 4. After boiling for about half an hour add the barley and peas and simmer for another 30 minutes. 5. Add the remaining vegetables.

6. If used, remove the bone and strip off the meat and return this to the pot. 7. Add parsley before serving. Great with warmed bread rolls!

Park Life Interview with John Ross Man Aboot the Hoose

In the summer of 2013 John Ross decided, after many years working on North Sea oil rigs, that he wanted to spend more time at home. John always enjoyed upgrading and renovating his own homes over the past 20 years and knew he would enjoy helping other people to do the same. In October 2013 John launched Man Aboot the Hoose. Based in Arnprior he is perfectly positioned to offer a professional local service to customers from Stirling to Killearn and Aberfoyle. He has seen his customer base steadily increase over the last two years.

What has surprised you most about your business?

How many regular customers I have already. Most people book me for a couple of small jobs initially and then before I leave they are booking me to come back to tackle a list! They see how efficiently I work and so know they will get value for money.

What have been the most popular jobs?

It really depends on the season. I do a lot of outdoor work in the summer such as fencing and repairing or erecting sheds. Now we are into Autumn people are looking to freshen up inside and so I am busy with various tiling work, and also installing new kitchens.

What job do you enjoy the most?

Every day is different which is the real pleasure of the business. I really enjoy tiling, either floors or walls. Tiling can transform a room within a few days! Customers usually can’t believe what a difference can be made in a day.

What do you plan for year three of Man Aboot the Hoose?

I really enjoy fitting kitchens as this can transform a house. I have had great testimonials from my customers. They were delighted to have someone who could fit the kitchen, as well as do the tiling and flooring. It saved them a lot of phoning around! I plan to build on this over the next year. Does converting to renewable heat still make sense? Converting to a heat pump or biomass boiler has made a lot of sense if you have been heating with an oil or LPG boiler. What about now given that the price of oil is comparatively low? A heating system is an investment over a number of years so a view on the future price of fuel needs to be considered. The price of oil has, traditionally, been volatile and it is unlikely that it will remain at its current level for too long. In 2004, the price of domestic heating oil was around 20p/litre rising to a peak in 2012 of over 60p/litre. It is now just under 40p/litre, at the time of writing. Another important factor is the government’s Renewable Heat Incentive (RHI) which pays householders over 7 years for renewable heat produced. Generous tariffs are still available for those installing a renewable

heating system like a ground or air source heat pump, biomass boiler or solar thermal panels. However, judging by published proposals to substantially reduce the generation tariff for domestic solar PV (from 12.47p/ kWh to 1.63p/kWh) from January next year and the Westminster government’s intention to radically reduce the DECC budget, the future of the generous RHI tariffs is uncertain. Despite the current oil price, now could be the perfect time to convert from fossil fuel to renewable heat and take advantage of the current, generous RHI tariff rates. There is also the Home Energy Scotland renewables loan scheme with up to £10,000 available towards heat pumps and biomass boilers. Up to 75% of the installation cost can be borrowed interest free and repaid up to 12 years.

If you have seen the little Get Windows 10 icon on the task bar of your PC you will now be able to upgrade your computer to the latest version of Windows. Windows 10 is available for free to Windows 7 and 8, 8.1 users until 28th July 2016. After this date the upgrade will no longer be free. If you have an older machine running XP or Vista you have to pay for your upgrade and will probably need to upgrade your hardware so that the operating system actually runs. For users who get the upgrade for free, if you decide to take the plunge and upgrade just make sure your laptop is plugged into the mains, follow the instructions on the screen then let it run. Your programs and settings should remain. The odd website or two may need to be added back on to your Start menu but your data and programs should be there. Before you start I would recommend you back up your data to either the cloud, a pen drive or an external drive, whatever you normally use to keep your data safe. Academic Ties Awarded at Lomond School

Following a fantastic set of SQA Examination results, Lomond School awarded Academic Ties to pupils in S5 and S6 to recognise top achievements. Looking at pre-appeal results, around 44% of last years’ Senior 4 pupils were presented with a Silver academic tie for attaining 6 or more grade A’s in their National 5 exams - over 80% of Lomond pupils attained 6 or more National 5 awards in S4. Almost all of Lomond’s leavers were successful in their applications to Further and Higher Education

Institutions. This was one of the key drivers in the school’s decision to stick with a curriculum that allows pupils to study 8 National 5 subjects in S3 and S4 as Mr Dodson, Head of Careers and Future Destinations at Lomond explains: “Five good passes at Higher is the ‘gold standard’ entry to the top universities in Scotland. However, university entry is becoming more and more competitive, and universities will sometimes look at pupils’ S4 results when trying to differentiate between

Callander Crags 4km/2.5miles & will take about 1.5 hours This circuit takes you high above Callander through mixed woodland to visit Callander Crags and the Jubilee Cairn, please note there are some steep sections, can be slippery when wet.

Take a walk on the wild side...

Stage 1

Start from the Callander Crags car park which is found by taking the minor road north from the main street in Callander signed for Bracklinn Falls and the Golf Course. At the entrance to the golf course bear left and follow the road uphill for another 300 metres until the car park on the left is reached. From here follow the marked path uphill passing the information board and the barrier. This route follows the red marker posts.

Stage 2

Follow the track uphill through lovely mixed woodland. Soon a clear junction is reached, turn right here and head uphill. Cross a small bridge and ignore a path which crosses the main route and keep climbing uphill with a couple of wide zig zags. A picnic bench is passed and soon after the path emerges into an area of clear ground with a bench at the top. From here the line of crags can be seen straight ahead. The path climbs steep stone steps to reach the top of the crags, with great views back over Callander.

Stage 3

At the top of the steps turn right for a short, but strenuous, detour to the Jubilee Cairn. Erected in 1897 to celebrate Queen Victoria’s Diamond Jubilee, the cairn commands an excellent viewpoint out over Callander and as far as the Wallace Monument near Stirling and to the north into an empty landscape of rolling hills, with a tremendous contrast between the two directions. From the cairn return back to the top of the steps and then continue straight ahead to follow the line of the Crags downhill.

Stage 4

The wide path descends gently through birch trees and then more mixed native woodland. To the right Ben Ledi can be seen and also excellent views over Callander to the left. Take care in wet weather when the tree roots and rocky sections can be slippery.

Stage 5

After a while a small bridge is crossed and pine trees dominate. After a picnic table is passed there are beech trees and the path continues to descend, steeply in places. Near the bottom, houses come into sight and the path bears left. Ignore a wide path leading right into Callander and continue in the woods.

Stage 6

Just before a bench is reached turn left uphill following the red marker posts. The path climbs through the woods before reaching the end of a track and turning right. Heading gently downhill, it is only a short walk back to the car park and the start of the walk. If you fancy combining this walk with a short trip to view the Bracklinn Falls turn left out of the car park and follow the road uphill until a metal sign points the way along the footpath to the Falls. www.parklife
