Poppys owner Janet Grindrod, the supreme floral artist, explained: “We are always looking out, home and abroad, for inspiration. A recent trip to Paris and an ‘antiques hunt’ led to this new look. Gilt mirrors and polished furniture give a boutique feel, providing a richer experience for our customers as they choose the designs to suit their individual tastes. “Our business is obviously fashion-led and it’s important to keep up with current trends, whilst developing our own ideas.”

Deliciously Different - with Duk Pond of Preston

THEY say who dares - wins! There’s a fantastic ‘foodie’ business hidden away in Preston that dares to be different and, as it’s based on two separate sites, it’s a ‘win-win’ situation as far as we are concerned. Check out Duk-Pond Restaurant, two establishments which between them are a

‘… incredible dining experience…’ The dishes at Pond are tapas style but more than generous portions - extremely tempting, be careful when ordering, it could be so easy to go over the top. Sharing, by the way, is a must, at least it was for us. We took advice and settled on two mains. With its reputation having gone before it, ‘Andrea’s Famous Peruvian Stew’ proved irresistible. There are vegetarian and vegan, and glutenfree versions, but I took the chicken option. ‘An unusual blend of fruit and vegetables make this very spicy and highly flavoured dish - it’s not for the faint of spice!’ Absolutely, it was simply magnificent. In contrast, we also sampled Gambas Pil-pil, king prawns finished in a chilli and garlic butter with fresh herbs. Mouth wateringly tasty - you bet! The supporting cast included a sumptuous dish of Moroccan style vegetables - roasted and crowned with a turmeric and coconut sauce, zinging with spices, apricots, sultanas and dates. Think Patatas Bravas, think El Classico, what’s not to like about Spanish potatoes finished in fresh tomato sauce with chillies? Each element of this amazing meal seemed to sing with unusual yet complementary


flavours. Everything was piping hot, cooked to perfection and beautifully presented. As a complete meal it was indeed deliciously different and an incredible dining experience - and it wasn’t over yet. In the interests of investigative journalism, we ordered desserts - as ever, another difficult choice. Imagine chocolate and honeycomb éclairs perfect - plus warm home-made treacle tart with ice cream. That’s indulgent heaven, is it not? The delights on offer at Pond are amazing - it will take many visits before we conquer the menu, but what an exciting challenge! Andrea says: “From lunchtime snacks to girly nights out, party banquets to weddings; the bespoke and unusual are normal in our world and we are here to make your duk-pond experience unforgettable!” Having visited both establishments in one amazing culinary quest, we can’t argue with any of that. She even runs cookery courses, the imagination behind this understandably growing business knows no limits. The word is out, Duk Pond has dared to be different and is a winner. Serves 6 Ingredients 6x sea bass fillets about 140g/5oz each, skin on and scaled 3tbsp sunflower oil Large knob of ginger, peeled and cut into matchsticks 3 garlic cloves, thinly sliced 3 fats, fresh, red chillies, deseeded and thinly chopped Bunch spring onions, shredded longways 1tbsp soy sauce

Method 1)Season the fish with salt and pepper, then slash the skin three times. Heat a heavy-based frying pan and add 1tbsp oil. Once hot, fry the fish, skin-side down, for five minutes or until the skin



is very crisp and golden. The fish will be almost cooked through. Turn over, cook for another 30 seconds-one minute, then transfer to a serving plate and keep warm. You’ll need to fry the fish in two batches. 2) Heat the remaining oil, then fry the ginger, garlic and chillies for about two minutes until golden. Take off the heat and toss in the spring onions. Splash the fish with a little soy sauce and spoon over the contents of the pan. Serve with stir-fried broccoli or Chinese vegetables and plain boiled rice

Pensions Revisited Money Matters with Derbyshire Booth Financial Management Ltd

Pensions were considered by some to be a fairly dull and unimportant subject - until recently. Then came the announcements of the state pension reforms and from last October Auto enrolment, where employees are being automatically placed in company pension schemes - and suddenly many want their say about what constitutes a good pension and when they want it. With average lifespan in the UK rising, it is important that people from all walks of life plan carefully for their future if they want it to be comfortable. One of the most common mistakes we find as Independent Financial Advisers (IFA) is the lack of reviews carried out on people's retirement plans. This often leads to mistakes in the early years and a need to adjust those plans later. After all a small mistake can be costly to fix later. The key questions you need to ask is: Are you receiving impartial financial advice? Have you completed a review of your current pension and any older pensions with previous employers? Where is it invested? And most importantly what is it likely to provide at your retirement date? Therefore, it is wise to review your pension provision regularly. Equally your pension fund might be invested in something that is totally unsuitable to you and take too much or too little investment risks. Again it is important to understand where it is held. As IFA's we deal with numerous pension and investment providers from all across the UK and we review the financial strength of each company, the charges they take and where the money is invested. This is then matched against your personal objectives and any potential problems highlighted. This is to ensure that a person's pension meets their longer term goals and is delivering value for money. After all, it is no use saving for 30 years plus only to discover that you did it all wrong.

It should be remembered also that pensions are just a long term savings plan with tax advantages. It is also important to remember they are not the only way of saving for your retirement and to have some balance is a good idea. For example some people prefer to use 'buy to let' properties, others running their own businesses and even deposit accounts. Whatever your plans to fund your retirement, it is a complex area that needs expert advice and regular monitoring to ensure comfortable years ahead The value of your investments and income from them may go down. Serves 6 - prep time 20 mins, cooking time 2-2¼ hrs Ireland’s national dish for centuries, a hearty, warming dish of chunky lamb, potatoes and onions Ingredients 2-3 tbsp vegetable oil 600g/1lb 5oz shallots, peeled 1.25kg/2lb 12oz boned shoulder of lamb, cut into large chunks 450g/1lb carrots, peeled, halved or quartered if large 1.3kg/3lb medium potatoes, peeled and cut into thick slices 6 thyme sprigs 2 bay leaves 1tbsp Worcestershire sauce Chopped parsley, to serve Method 1 Heat oven to 180C/fan 160C/gas 4. CENTRAL Lancs Business Club, which meets monthly at the Leyland Hotel, raised almost £300 for the Rosemere Cancer Foundation with their Annul Quiz Night, staged at Leyland Golf Club. Busiest of all was Steve Ward, of Leyland promotions company, who organised the event, provided all the prizes, including the coveted champions trophy - and found time to ‘MC’ and ask the questions! Paula Richardson, Area fundraising co-ordinator for Rosemere CF, said: “We are extremely grateful to the Central Lancs Business Club for choosing to support Rosemere Cancer Foundation. Events like this are great fun, whilst helping to raise essential funds for Rosemere. It’s wonderful to work in partnership with business groups like these, they are such an inspiration and encouragement to others.”

CLBC Chairman Simon Crompton, a financial adviser with Cheetham Jackson of Chorley, added: “It was a really fun evening, very competitive but always in the right spirit. Many local member companies contributed to the raffle and we are ever grateful for their support in helping us to raise a healthy sum for this worthy cause.”

Leyland’s very own Market ‘Micro-Pub’

LEYLAND has a new attraction on Hough Lane - the town’s very first micro-pub. The Market Ale House opened its doors - those of a former travel agent - in December 2013, and is now well established at the heart of town.

Entertainment is via conversation - plus, there is no food, apart from traditional snacks such as cheese, eggs, pork scratchings, pies, crisps etc. The Market Ale House, thought to be the first of its kind in Lancashire has seven traditional hand pumps serving a changing line-up of beers and one cider. It also sells wines and soft drinks. The intention is to stock predominantly beers from Lancashire micro-breweries.

The Market Ale House is the brainchild of local landlords Alison and Danny Hindle who have overseen the refurbishment and re-generation of the popular Railway @ Leyland in recent years. Danny explained: “We wanted to get back to basics with this, to create somewhere that will be a real hub of the community. It’s completely different to the Railway, which is very much entertainment-led. We are branching out to a whole new set of customers with the micro-pub.” The clientele are typically older and opening hours are flexible eg: evening hours will be adjusted if trade justifies it. The room can seat around 35 people, or fit 60 with some standing. Danny added: “It’s something different for Leyland. It’s about getting people talking to each other instead of watching TV. It’s really adding to the social scene in our town. The original micro-pub, the Butchers Arms, in Herne Kent, opened in 2005. Since then, many more have opened across the country, including Leyland.
