I’m a hands on learner. That’s why, when Jeffery Mitchell said to me at the American Cheese Festival Conference in Pittsburgh, Pa., “put on a hair net, grab an apron, go wash your hands, we’ll put on a line,” I immediately jumped at the chance. Once there, I was able to listen to American Cheese Society President John Antonelli talk about the mission - to raise the awareness of American cheese. It’s not just that stuff that comes wrapped in cellophane and looks like an Oompa Loompa from Willy Wonka and the Chocolate Factory. American cheese is the product of hard work, taken from grass-fed cows, aged with unique American ingredients and served
