April McClung Happy New Year! I'm excited to see what 2017 has to offer! I read an article recently that said Spouses' Clubs were going away. It said attendance was down and clubs were having trouble reaching out to people because they weren't presenting an online presence. Well that certainly isn't the case with LCSC. We manage multiple social media accounts. Do you follow us on Facebook, Instagram and Twitter? We have a Facebook page for almost all of our Sub Clubs. We have a website that is full of information on all of our programs. We send out emails 2-3 times a month telling our members what is going on. However, I believe, the real test for Spouses' Club is in the relationships we create. If you attend luncheons, our events, at least one sub club and get involved in our community outreach programs, then you know what we are about. Helping out our community and building friendships in the process. Every Hand Helps. If you haven't gotten involved yet, it's not too late. We would love to see you at our February luncheon! A healthy and easy Super Bowl Recipe If you are like some of us here at LCSC, you may have made a commitment to clean eating in the new year. Whether it's Whole30, Paleo, or just trying to cut down on the number of Diet Cokes you consume, it can be a struggle. And if you're like me, just when I hit my groove...BAM! It's potluck time. Or wine night at the neighbor's house. Or better yet, Super Bowl Sunday. Never fear! Here is a recipe you can make and take in less than 30 minutes. And it's Whole30, Paleo and yummy. Ingredients: 1lb. ground chicken 1 tsp salt 1 tsp pepper I tsp garlic powder Sauce: 3/4 cup chicken broth (I make my own) 1/2- 3/4 c Hot Sauce (Frank's is best, and Whole30 compliant) 2 1/2 TBSP dry ranch seasoning* Instructions: In a medium sauce pan, combine the chicken broth, hot sauce and seasoning. Mix together the ground chicken and spices until combined. Form into meatballs. Heat 1-2 TBSP of oil in large skillet, over medium-high heat. Sear meatballs for 6-8 minutes, turning for an even sear. While they are searing, bring the hot sauce mixture to a boil and allow to cook until it has reduced by half and thickened. (about 8 minutes). Add the sauce to the meatballs after they have been seared and cook for another 3-4 minutes or until they are cooked through. Serve with carrot and celery sticks. *I have made these meatballs without the ranch seasoning and they are still very good, you may just want to up the amount of salt and pepper and add some garlic powder and dried parsley.
LCSC In Action This month the Pacific Northwest Explorers went to Tacoma and visited the Museum of Glass. The museum had an Art Deco exhibit and also an Into the Deep exhibit. Both exhibits were beautiful and it was a great day at the museum!
The LCSC Craft Club met this month and created Valentine themed burlap bunting banners. This was a really fun craft to make to bring a little love to your home.
Join Our Sub Clubs! We love the luncheons, we love giving back to your community, we love the mock dining-in, but have you tried one our sub clubs? A sub club is an amazing perk of being a member of the LCSC. These clubs focus on fun and fellowship with members who all share a common interest. These clubs are a great way to form lifelong friendships. Come on out and roll those dice, discuss great books, learn to cook new foods, or enjoy some of Washington’s finest wine amongst your LCSC friends! These crafty spouses will share their expertise and fuel your creative fire with crafts ranging from wreath creation to stained glass and decoupage. Bunco is a fun dice game to play - no experience necessary! Please join us at the LCSC Schoolhouse on the last Tuesday of each month as we socialize and eat beginning at 6:00pm and start rolling the dice at 6:30pm. We ask everyone to bring a dish to share and $5 to play. We play for prizes – 6 prizes to win each month! The hostesses each month buys the prizes, provides snacks for the tables, and drinks to share. It is a great way to socialize and make friends. Each month, our host will pick a restaurant location to gather at which allows our LCSC Lunch Bunch members to experience different
cultures and tastes throughout the South Puget area. We meet the 3rd Tuesday from 11:30am1pm, with each member responsible for purchasing their own lunch.
