Bialik College Kitchen Garden Program Ingredients:
275g plain flour 1 tablespoon baking powder 1 teaspoon mixed spice 1 teaspoon ground cinnamon 2 large eggs 125g unsalted butter, melted 60g caster sugar 100ml milk 250g cooked beetroot, grated 2 medium pink lady apples, cored and grated
Equipment: metric measuring cups/spoons grater small saucepan muffin trays sifter large bowl wooden spoon
1. Line muffin trays with paper cases. 2. Preheat oven to 200C. 3. Sift the flour, baking powder and spices into a large mixing bowl. 4. In another mixing bowl, whisk together the eggs, melted butter, sugar and milk. 5. Pour the wet ingredients into the dry ingredients and mix very lightly. (Don’t worry if it looks a bit lumpy.) 6. Gently fold through the grated beetroot and apple and spoon into muffin cases. 7. Bake in the oven for 20-‐25 minutes until golden.
