Ingredients 40ml extra virgin olive oil 1 tablespoon lemon juice ½ clove garlic, peeled & finely chopped sea salt & pepper 6 Lebanese cucumbers, seeds removed, finely diced handful of basil leaves, finely chopped handful of mint leaves, finely chopped 2 tablespoons seeds, toasted
Equipment chopping board knife spoon frying pan metric measuring spoons
Method: 1. Combine the olive oil, lemon juice, garlic, salt & pepper and mix well. 2. Combine salad ingredients. 3. Toast seeds. 4. Dress salad and place seeds on top and serve.
