4 cups mixed green salad leaves, tightly packed. 1 cup snowpea sprouts or any other 2 medium cucumbers, chopped 1 avocado, cubed 1 tablespoon chia seeds 1 tablespoon sunflower seeds 1 tablespoon pumpkin seeds ¼ cup parsley, chopped Dressing: 1 tablespoon lemon juice 1/8 cup apple cider vinegar ¼ cup extra virgin olive oil ½ tablespoon wholegrain mustard salt/pepper to taste

Method: 1. Place all ingredients for the salad in a large bowl (except for parsley) and toss until combined. 2. In a jar, shake up dressing ingredients until combined. 3. Pour over salad and top with fresh parsley.
