IT’S FALL! Even though I’m a Summer girl, Fall has a really special place in my heart. There’s just something very special about this season. Besides the perfect weather, we get to celebrate Halloween and Thanksgiving, have fun picking apples and enjoying everything Fall has to offer. Last year I used sage green as my main color. This year I decided to go with rust orange. This eye-catching color adds the perfect balance to neutral shades and will add that pop of color your Fall decor needs without being super busy. To incorporate this amazing color to your decor, you can use throw pillows and blankets, fabric pumpkins, faux fall stems, rugs, or if you need a big change, you can add some rust orange furniture like armchairs. This color will for sure warm up your space.

Layer them in different directions.

SOUPS & STEWS of Fall Sausage Potato Kale Soup INGREDIENTS l 1lb smoked beef sausage or kielbasa, sliced l 1 medium yellow onion, finely diced l 4-6 cloves minced fresh garlic l 4 medium potatoes, cubed

32 ounces chicken bone broth 2 tablespoons heavy whipping cream 4 cups roughly chopped Tuscan or curly kale l Lost of fresh ground black pepper to taste l l l

INSTRUCTIONS 1.) Bring a large saucepan to medium heat. Add the sliced sausage directly without any oil, it’ll render its own oil. Saute for 2-3 minutes until golden then add onion and garlic, stirring and cooking for 5 minutes until onions are translucent and garlic fragrant. 2.) Add 1 heaped teaspoon smoked paprika, potatoes and bone broth. Place the lid on and cook for 15-20 minutes until the potatoes are cooked through and soft enough to mast a few with the back of a fork. This will thicken the soup up a bit, so have some more stock ready if you feel it’s not soupy enough. 3.) Add the kale and heavy cream, lower heat and simmer for 2-3 minutes until kale is wilted. Divide amongst your family and serve with some fresh black pepper tableside.

Autumn Stew

INGREDIENTS l 1 tablespoon fresh rosemary, finely chopped l 2 teaspoons brown sugar, packed l 1 1/2 teaspoon ground cumin l 1 teaspoon ground black pepper l 1 teaspoon paprika l 1/2 teaspoon kosher salt l 1 1/2 lbs fresh stew meat l 2 tablespoons olive oil

3 cups chicken broth 2 cups water l 2 teaspoons tomato sauce l 2 cup russet potatoes, chopped l 3 medium carrots, cut into chunks l 2 stalks celery, sliced l 1 parsnip, peeled and chopped l Fresh parsley for garnish l l

INSTRUCTIONS 1.) Combine chopped rosemary, brown sugar, cumin, pepper, paprika, and salt. Rub mixture all over meat. Heat oil over medium-high heat in a large pot. Add seasoned meat and brown on all sides. Add broth, 2 cups water, and tomato sauce. Bring mixture to boiling; reduce heat. Simmer, covered, for 1 hour. 2.) Add potatoes, carrots, celery, parsnip, and onion to pot. Bring stew to boiling; reduce heat. Simmer, covered, 1 hour more or until vegetables are tender. Garnish with fresh herbs, if desired.

Roasted Autumn Squash Soup INGREDIENTS l 1 medium butternut squash, halved lengthwise seeds removed l 1 small pumpkin, halved and seeds removed l 3 tablespoons olive oil l 1 small yellow onion, diced l 2 medium carrots, peeled and diced l 1 granny smith apple, peeled, cored and diced l 1 teaspoon curry powder

1/2 teaspoon ground turmeric 3/4 cups vegetable broth l 1/2 cup apple cider (do NOT use apple cider vinegar) l 1 cup milk l 2-3 tablespoons honey l salt l pepper l 1/2 cup toasted pumpkin seeds, for garnish l l

INSTRUCTIONS 1.) Preheat oven to 425 degrees. Brush the tops and insides of the squash and pumpkin with 2 teaspoons olive oil. Season with salt and pepper and place squash face down (flesh side down) on a baking sheet. Roast until fork tender, about 50 minutes to 1 hour. Remove from oven and cool. 2.) In a Dutch oven set over medium heat, and warm the remaining olive oil. Add the onion, apple, curry powder and turmeric. Stir to combine. Cook for 10 to 15 minutes, until the vegetables are soft. 3.) Stir in the broth, cider and roasted squash and pumpkin. Bring the soup to a boil, then reduce heat and simmer for 20 minutes. Remove from heat and stir in milk, honey, and a pinch of salt. 4.) Use an immersion blender or a standard blender to puree the soup. Season with salt and pepper to taste. Garnish with pumpkin seeds, if desired.

Roasted Sweet Potato Cinnamon Soup INGREDIENTS l 2 large sweet potatoes, peeled and cut into cubes l 1 1/2 tablespoons olive oil l 1 onion, chopped l 1 liter vegetable broth

1/2 teaspoon - 1 teaspoon cinnamon 1/8 teaspoon nutmeg l dash of cayenne pepper l Salt and pepper to taste l l

INSTRUCTIONS 1.) Preheat oven to 400 degrees and line a baking sheet with parchment paper. 2.) Roast the sweet potatoes for 25-35 minutes until tender. 3.) Heat the olive oil in a large pot on medium-high heat, then add the onions letting cook for 2 minutes. Add the garlic and cook for another 2-3 minutes. 4.) Add your potatoes to the pot and season with cinnamon, nutmeg, salt and pepper, mixing everything together. 5.) Add your soup broth and bring it to a boil. Then reduce heat to low and cover and let simmer for 15 minutes. 6.) Blend the soup until smooth and creamy and serve.
