BELLA HADID a Supermodel with Soul A

lmost overnight, Bella Hadid has gone from socialite and model to one of the biggest names in the fashion industry.

Gracing glossy magazine covers across the world, her influence has seen the 20-year-old amass over 14 million Instagram followers. These days, that’s the real indicator of influence, and Bella has it in spades. "I love the people that follow me," she told Elle Magazine, saying she prefers to think of them as "friends" rather than "fans." "I like to present the realest 'me' possible. If I'm working, I'll post a photo of me working. But if I'm sitting home on a Saturday night watching TV and eating pizza, I'll post that, too." Her unique looks and super-fit physique are the envy of women around the world, and her red carpet appearances make headline news wherever she goes. September 2017 has seen her grace Harper's Bazaar China, Elle Russia, Vogue China, Elle China, Vogue Australia and Vogue Spain. “I think working this much is going to give me a better platform to do bigger things in the world,' she told InStyle. The platform she seeks is in part to raise awareness of issues that are close to her heart, telling Elle magazine: “It's just devastating: you see completely emaciated children and I'm supposed to go eat these incredible dinners when there are children who don't even have water. Those are the things I want to help with.” It seems Bella was destined for the global stage. She got her break in the fashion world two years after her sister, fellow super model Gigi Hadid, had become a worldwide phenomenon. It seems fame and fortune was always in her DNA. Her mother is The Real Housewives of Beverly Hills star and former model Yolanda Hadid. Her father is millionaire realestate developer Mohamed Hadid. Although shielded from much of the furore that surrounds The Real Housewives franchise, Bella and Gigi were featured in the show from time to time, and interest in the pair was red hot from the beginning.

Although she was raised among the fame and fortune of Hollywood, Bella says her parents worked hard for everything they have and guided her to live a productive life. Her parents, she told The Guardian, “started from nothing and worked to give us the life that we have, and now I guess all we can try to do is repay them”. Her mother’s notorious work ethic has rubbed off on both sisters. “My mom always said there’s prettier girls in the world, there’s harder working girls in the world ... if you can’t be nice and work hard, somebody else will,” she said in the interview.

Although much has been made of Bella’s tendency to avoid smiling in photographs, she says this is not an indication of a bad attitude. Rather, she is surprisingly uncomfortable in front of a camera. “People meet me sometimes and say: ‘You’re so different to what I expected.’ People always tell me I seem mean or intimidating on social media. But I really love engaging with new people,” she told The Guardian. “I feel uncomfortable, sometimes, smiling in front of the camera. It actually took me until probably this year to really understand my face.” It has also taken her some time to understand and be comfortable with her role as a megastar, saying that in recent times she has started to take stock of the amount of personal information she shares with her adoring public who are eager for every morsel of information about her life. “In the beginning, I was very trusting,” she said in the interview. “Now I have taken a step back. So, I post things that are personal, but not too personal, things that still have that kind of look into my life ... but I guess I should hold off. I don’t know. It’s a very weird subject. You kind of feel it’s over-exposing sometimes. I guess there shouldn’t be that many people looking at one person constantly.” Bella has alluded to a career in acting in her future, telling the UK’s Telegraph: “I'd love to start acting and have more of a voice in the world.” She said. “I need to start taking acting classes and figure out a way to memorise things better because I have a really bad brain.” 

FASH IO N Seapia founder Fiorella Castro was born in Costa Rica, where she fell in love with nature and developed her low-impact life perspective. Harmonising her background in fashion with her environmental ethos, Fiorella creates Seapia’s swimwear range with reclaimed discarded plastics. Forgoing fast fashion culture, Fiorella gives Label an insight into the science of her swimwear.

What was your background in fashion prior to launching Seapia? 
I’ve had broad experience in the industry as a young womenswear designer for different brands here in Australia, the UK and Italy. I studied Fashion at UTS and later did a Masters of Fashion in Milan. 


What motivated you to create Seapia? 
I wanted to create an environmentally responsible label that gives customers a choice of more thoughtful products to counter the rise of fast-fashion clothing, which contributes to waste. Seapia reflects my core values of sustainability through fashion design with swimwear of high quality. What is Seapia’s brand philosophy? 
We believe in being thoughtful in how we produce our products and how they are worn. This starts with using fabrics containing recycled plastics such as fishing nets and bottles, recycled and organic packaging, a plastic-free supply chain and using carbo- neutral suppliers.

How do you curate your fabrics? 
We buy our fabric from a single Italian manufacturer, who have spent many years and invested over $40m in research and development to create this unique recycled swimwear fabric. We believe that one day all swimwear will be made this way.

What technology allows Seapia to turn reclaimed plastic into high quality fabric?
The fabric uses reclaimed plastics from fishing nets, carpets, pre and post-consumer waste, which is depolymerised and regenerated into Nylon 6 polymers and then processed into the yarn. This yarn is then used to create the fabrics we use. The great thing is that it can be regenerated over and over without any loss in quality.

What inspires your unique prints? Our prints are influenced by my love of nature and our surroundings. They are created by local artists under my direction and are printed with colour fast water-soluble inks that do not harm the environment 


What can we expect to see from Seapia this Spring? Spring brings us to more linear and geometric shapes. Playing with form and solid colour. Natural shades and highlights. Saffron gold is striking against darker skins and mocha is sophisticated against lighter skins. Cheeky bottoms are a little cheekier and a bit of under cleavage exposed. 
 Which celebrity would you be most excited to see in Seapia? Isabel Lucas. Apart from her obvious beauty and great talent, she is passionate about this planet of ours and is active in bringing about awareness of environmental issues.

What has been your most prominent learning experience in the swimwear business?
 There is always a way to do the right thing if you believe in it and work at it hard enough. We have managed to create a sustainable swimwear brand without compromising on style and quality, and we think this is a skill we can take beyond swimwear – watch this space!

What advice would you give to newbie fashion entrepreneurs searching for their big break?
 Make sure you have a clear idea of what success looks like for you and go for it. Do your research into customers and competitors, make sure you can scale up quickly when the brand gets traction, and work all the hours you can. What inspired the launch of Enbacci? Family was ultimately the inspiration behind Enbacci. My Mama has very sensitive skin so we wanted to make use of the amazing resources we have in Australia to develop luxury skincare that would cater to her sensitive skin. At the same time, we wanted to develop skincare that as a family we could use rather than having a whole bathroom (or suitcase) filled with everyone’s stuff.

What makes Enbacci different to other skincare brands on the market? I think the fact that we are a luxury, made in Australia brand is what separates us from the other high-end skincare brands out there. Yes, it is wonderful to say that you are using products formulated in Paris, but I think we have just as much to be proud of with the resources and infrastructure we have here in Australia to be able to create high quality products.

What are your signature ingredients? Our signature ingredient would definitely be the fruit stem cells that we use in our Vitis Vinifera Rejuvenating 3-Step System and Age Revitalising Eye Defence. We utilise grape stem cells and apple stem cells in the products respectively.

The newest product to the Enbacci family sees the introduction of apple stem cells for cosmetic use. The apple stem cells are cultivated from the Uttwiler Spätlauber (a variety of Swiss Malus Domestica). The Uttwiler Spätlauber was famously known for its excellent storability and longevity, which can be attributed to their especially long-living tissue stem cells.

What is your recommended Enbacci regime? I strongly believe everyone needs a basic skincare regime in order to maintain his or her personal hygiene. For this, I would recommend our Vitis Vinifera Rejuvenating 3-Step System, which consists of a gel cleanser, essence and crème.

What are stem cells? Stem cells are best described as undifferentiated cells, which have the potential to differentiate into specific cells with individual functions. For example, in the human body, stem cells have the potential to become muscle cells or other organ cells. As such, it has been recognised that stem cells have big potential in regenerative medicinal use.

What external factors can we change to get the best out of our skin? I believe that the two biggest factors that we can change to get the best out of our skin are diet and sleep. Some people may not realise that what you are putting in (or not putting into) your body can have real side effects on your skin. For example, not drinking enough water in a day dehydrates your body. Because water is essential in all bodily processes, a lack of water consumption means that there is less to rehydrate your skin cells, which may then cause premature ageing in the form of fine lines and wrinkles.

How do fruit stem cells work on human skin? The fruit stem cells we have utilised work like power antioxidants that help to protect the skin from the signs of ageing. Currently, we use grape stem cells and apple stem cells in some of our products. As research shows, grape stem cells have the ability to reduce the appearance of ageing due to exposure to environmental stresses, whilst apple stem cells can help promote the reduction of fine lines and wrinkles.

The grape stem cells are extracted from a cultivated grape of the Gamay family (a purple-coloured grape variety most known for its use in the production of red wine). This particular variety of grape was selected as they are very high in anthocyanin, which are powerful antioxidants and free radical scavengers.

Which celebrity would you most like to see experience Enbacci? I would love to have Angelina Jolie experience Enbacci. Mama and I would agree that she is the ultimate wonder woman. According to a 30-year-study by the University of California, people over 65 who drink up to three alcoholic drinks a day can look forward to a healthy old age.

The study show that moderate to heavy drinkers are more likely to live to the age of 85 without dementia or other cognitive impairments than non-drinkers. The study, which tracked more than 1,000 middle class white men and women in California, adds to recent research linking alcohol intake to longevity. However, the researchers warned excessive alcohol intake is known to cause alcoholrelated dementia. “This study is unique because we considered men and women’s cognitive health at late age and found that alcohol consumption is not only associated with reduced mortality, but with greater chances of remaining cognitively healthy into older age,” lead author Dr Linda McEvoy told Newscorp. Moderate drinking is defined as consuming up to one alcoholic beverage a day for adult women of any age and men aged 65 and older. For men age over 65, that constitutes drinking up to two drinks a day. Heavy drinking is defined as drinking up to three alcoholic beverages per day for women of any adult age and for men age 65 and older. For men under 65, that would be four drinks a day. Drinking more than four drinks a day is classed as excessive.

e love your can captions at Label. Why were social equality statements so apt for alcoholic beverages? We were struck by the fact that the drivers of growth in the beer industry are new customers between the ages of 18 and 24. These are millennials, and we know that 47% of them want to purchase from brands who practice inclusivity - that’s social, gender and sexual orientation, cultural and racial. How did you curate the brews for your initial product release? We wanted to have a range that appealed to many – with something available for everyone so that people who wanted to be part of the change (but didn’t drink beer for whatever reason) could. That meant instantly we had to brew beyond beer. Of all the causes in the world, what made you decide on highlighting these four issues first? There are so many social issues that we wanted to draw attention to. We sat down together and brainstormed the issues that we felt affected us strongly personally, so that we went out the door with the benefit of direct and personal experience. We asked ourselves, “What do we want to see changed – right now today? How many of them do we dare talk about on a can of alcohol?” The social issues of Gender Equality, Australia Day Respect, Refugee Policies and Asylum Seekers detention, Sexual Consent and Marriage Equality came up very quickly and stayed near the top of our list. As new products come out, new issues will get airplay. You’ll see the climate change issue appearing on a can message within the next four months. Each cause has a thoroughly researched position paper backing it up. We want to spark conversation from an informed position, so before we finally agree on a cause/issue, we have to review the facts.

Sip your way to equality: The Sparkke Change Beverage Company What’s it like being an all-female cast in the beer industry? Mostly our experience has been positive. Most of the males we have worked with have been really supportive. The amount of females working in the industry is really dismal though women make excellent brewers. We don’t really know exactly why this is, if it’s because females are intimidated by the perceived ‘boys club’ mentality, or because they think that they might not be physically able although there’s not a lot that male counterparts can do that our team have not also been able to do. Say I Do is your latest product to be released. Why is marriage equality special to Sparkke? Our marriage equality message is based on Sparkke’s core values of universal fairness, inclusion and social equity. It’s fantastic to campaign for the rights of all Australians to marry if they wish to - regardless of their gender or sexuality - and at the same time to produce a great fizz in a can.

How do you provide financial support to your causes? 10% of direct sales and 4% of channel sales (sales to pubs, restaurants, bottle-o’s etc.) go to aligned organisations working on the frontlines on projects or programs related to the issue on the can.

On the go bubbles sounds good to us. How do you can a white wine fizz? Making a quality white wine fizz in a can is tricky, but we’ve really cracked it! We’ve taken the same approach to making our brews – using the best possible ingredients. Each parcel of fruit is carefully selected to create a wine of quality, that is both highly approachable, fragrant, stylish, with a fresh acidity and dry finish. For example, we added Riesling for a lemon-sherbet-type acidity, Pinot Grigio for crunchy apple fragrance, Chardonnay for a fullness of texture. ADAMS How did you get your start? My husband I moved from the UK when I was 21. Our first hospitality business was a Subway Franchise in Brisbane. Six Subway restaurants later, we sold up and opened up Moo Moo The Wine Bar + Grill Broadbeach in 2005. What is a typical day like? My day can vary from holding staff meetings, training staff, greeting customers, hosting lunches and events and boring paperwork. I also try to spread my time by visiting and working on our Brisbane venue whilst also being a mum to a four-year-old. What are the challenges you face? Juggling business and motherhood, and not arguing with my husband at work - ha! We have worked together for over 15 years which is actually a great achievement. What’s the best career advice you can give? Always be passionate about what you do and surround yourself with individuals you can learn from and enjoy working with. What traits do you think women need to be successful leaders in hospitality? We need to be confident multi taskers, good communicators and know how to stand our ground, particularly in a very male dominated industry. It is very important to leave your emotions at home. What do you wish you had known to help prepare you for a leadership role in hospitality? I wish I had better computer skills and social media knowledge. In today’s market these two skills are vital in promoting your business. I would love to be able to carry out some of these role personally rather than outsource them. There is always time to learn!

MITCHELL How did you get your start? I didn’t have a typical entry into the hospitality industry. I’ve always had a great passion for food but never considered working in the industry until my career as an international flight attendant for Virgin Australia. The skills I learnt at Virgin were invaluable and transferrable to my current business. I was spending so much time away from my partner JP that we decided to look for business opportunities at home. He had also owned and operated a successful restaurant for years, and together we created and opened Mamasan Kitchen + Bar in Broadbeach in September 2015. Resigning from my job to take a huge risk like opening a restaurant was a leap of faith – luckily I now love the industry and the restaurant has been a great success. We are now in the planning stages of a new venue that we hope to open in a few months. Ironically, I now spend less time at home and with my partner than when I was flying – what was I thinking! What is a typical day like? My days aren’t really typical and that’s the appeal! They can be split between the restaurant and our office in Broadbeach. I try to spend as much time as I can in the venue as I think it is really important to have a presence and to be involved. If you’re not in your venue, you don’t see the little things, and you can get disconnected. I like to talk to customers and our loyal following of regulars, they will always let you know when things aren’t quite right or need improving, but also it’s fantastic to see people enjoying themselves and loving what we do! Having said that, we have fantastic staff and the venue is in good hands when I can’t be there. During busy times of the year I work in the restaurant a lot more, but at the moment as we are working on a new venue most of my time is dedicated towards that. It’s a lot more enjoyable second time around and the design process and creating something new is the fun part! From working with our designers, to furniture sourcing, to menu design and research and building a new team, no two days are the same right now and I wouldn’t have it any other way.

What are the challenges you face? It’s no secret that staffing a restaurant is one of the most challenging aspects of hospitality. No matter how good your food and venue is, if you don’t have a great, well trained team behind you, you will find it hard to succeed. We are lucky that we have a fantastic solid team of dedicated professionals that we work with, but the nature of hospitality is that it can be very transient and people don’t always see it as a long-term career however, this is changing. Our aim is to provide a positive working environment with a great culture, training and professional opportunities so we attract and retain valuable staff. Having a balanced life is also challenging at times – hospitality hours aren’t incredibly kind to your health or relationships so it’s important to make sure that you don’t neglect those aspects of life. What’s the best career advice you can give? You need to find your passion and relentlessly pursue it – be obsessed. It’s never too late for a career change or to start something new and challenge yourself to get out of your comfort zone. If it doesn’t challenge you it doesn’t change you. Be brave. Take risks. Nothing can substitute experience and you will never know if you never try and the reward on the other side and the sense of achievement is worth it. What traits do you think women need to be successful leaders in hospitality? 1. Drive - doing whatever it takes to work towards your goal 2. Value + respect people – you need a team to get you there 3. Don’t take it personally – embrace the negative feedback and turn it to a positive growth experience 4. Believe in yourself What do you wish you had known to help prepare you for a leadership role in hospitality? The reality is that it is harder than it looks and it’s not always glamorous – nothing worth having comes easy but the reward for the hard work is worth it. Everything that I thought I knew about business, I had to reassess. Learning and leadership doesn’t stop and you have to be a strong leader and back your decisions, but at the end of the day you have to enjoy what you do and have fun along the way.

GENNARI How did you get your start? I had never considered a career in the hospitality industry until my ex-husband, Patrik opened a cafe at Harbour Town 20 years ago! Having always had a passion for food and being a people person, in hindsight it was the perfect industry to fall in to. 20 years later we have since had seven restaurants and created the Gennari Group which has Koi, Glass, The Loose Moose and the Roosevelt Lounge. I could not imagine doing anything else. What is a typical day like? I’m up bright and early. My internal body clock never lets me down! First thing is a coffee then check emails and social media. I run the social media for all venues and I try to post something every morning. Then its chaos when my son wakes up until I drop him at school! I try to get to the gym each morning as it’s my hour of ‘me time’ and gives me that time to prep my day. I run between all venues but spend the majority of my time in our main office in the Wave building. We are in the midst of expanding at the moment so the rest of my day is split between meetings and paperwork. The days go very fast. It’s hard to juggle working at night time as I am at home with my son but we have amazing staff so I only work at night if they need me. What are the challenges you face? I think most people would say that staff are one of the major challenges within the hospitality industry with the high turnover but considering we have around 100 staff working for us I think we have been very fortunate. I guess another of the challenges is always staying current with the ever evolving nature of the restaurant industry it is important to keep reinventing yourself to a certain point to keep your customers coming back. We try and do some sort of renovation on all venues around every two years and change menus with the seasons to keep patrons interested. What’s the best career advice you can give? Success in business is about passion. When it comes to creating your vision be fearless in your approach and precise in your execution. Goals are so much easier achieved when passion is involved and you have to take risks, calculated of course.. but if was easy everyone would do it What traits do you think women need to be successful leaders in hospitality? First and foremost ambition and determination. I think communication skills are also vital as the enable you to connect with people. I am a firm believer that you are only as good as your team and at the Gennari Group we are very fortunate to have amazing staff, many of whom have been with us for 10 years (a lifetime in the hospitality industry). We are very protective of staff and treat them like family but in doing so you take on the role of councillor, mother, mentor and friend, all the while creating a positive example. What do you wish you had known to help prepare you for a leadership role in hospitality? The hospitality industry has some unique challenges both personally and professionally but I can’t say there is anything I wish I had known as the adversities I have faced have made me a stronger woman and business woman and enhanced my judgment in all aspects of decision making and life!!

How did you get your start? I started Providore Marina Mirage six years ago with chef Luke Turner. We managed to build this brand over into seven Providore branded businesses (Providore Marina Mirage, Brickworks, University, Catering, Raw, Bakery and Doughnuts). I am especially proud that Providore Marina Mirage has won best breakfast the last three years as voted by readers of the Gold Coast Bulletin, which is a great accomplishment when you think how many venues serve breakfast and it’s the biggest food service of the hospitality industry. Oh, and in my spare time I publish Label Magazine and Slim Magazine with my sister Kate Bennett. What is a typical day like? When I get up I am slow to get organised. I have a coffee, check my emails at home (I receive over 500 a day), I run all the social media accounts and promotions so I will check those and post something each day. Luke runs the internal operation of the business. I employ over 84 staff and an offsite office with staff doing back of house. I communicate with all our management staff on a daily basis.

What are the challenges you face? The major challenge is staff, and trying to find the correct ones for each business as they are all different. Keeping staff interested in your brand can be difficult along with staying ahead of trends that come and go. The interesting part of these businesses is they are very timeconsuming and the trading hours are so long. The Providore Brand is so strong now and the catering business is expanding daily. We do 150 weddings a year offsite in two venues plus we cater major events in Queensland and Northern NSW. Next year will be beyond hectic with the Commonwealth Games on the Gold Coast. We start catering events in February. What’s the best career advice you can give? Success in business is earned and with a little bit of luck being in the right place at the right time. I have amazing people around my including my parents and sister, so I am very lucky. And I am very driven; I don’t back down till get what I want. The key to business is having the right product offering in the right location. We have been very good in picking the

correct location for the Providore Brand which will only keep expanding. Providore University (located at the Uni and Gold Coast University Hospital) is unbelievable with 25,000 people at Uni a day and the same at the Hospital. Areas like this just don’t come up often on the Gold Coast. What traits do you think women need to be successful leaders in hospitality? I have always been ambitious and coming from a marketing, sales and media background has helped with the success of the Providore Brand. Being an employer and not an employee comes with great responsibilities, but is very rewarding. I have made lifelong friends and meet people that I would never have met otherwise. What do you wish you had known to help prepare you for a leadership role in hospitality? I turned down one site for a Providore that sounded too good to be true. In the end it was exactly that. Other than that nothing in my life I would change and I love being a restaurateur and publisher.

How did you get your start? It would be fair to say that as the daughter of a diehard fourth generation hotelier, the hospitality industry was instilled in my blood from a very early age. My father Richard McGuire installed in me a deep passion for the industry. I was encouraged to pave my own path and aside from a year overseas on a working holiday upon completion of my high school studies, I immediately begun adult life working within the Brisbane hospitality industry and outside of the family business. After years of doing the hard yards I eventually worked my way independently through the ranks to manage restaurants and hotels for some of the very best operators in Brisbane. I met my husband Scott who was also working in the industry and we combined our shared passion and purchased Shuck on the Gold Coast in 2002.

What is a typical day like for you? A typical day for me would be getting our three children ready for school and then returning home to clean up after the morning tsunami! I’m fortunate to have a home office so amongst the usual daily household duties I spend a great deal on my computer dealing with the administrative side of the restaurant and also responding to various function enquiries. I often head over to Shuck and have a chat with our staff and customers. The afternoon tsunami hits again and there is the usual running around with kids afternoon sports that both my husband and I share. Dinner is a family affair and always early and we are often in bed by 7pm! What are the challenges you face? Having built a loyal clientele at Shuck over the last 15 years our primary challenge is to ensure a level of consistent excellence in everything we do, the food, the service,

the entire dining experience whilst never losing our personal family involvement and interaction with our patrons. Retaining loyal staff and suppliers is key to meeting this challenge. What’s the best career advice you can give? Marry for money! No, jokes aside, just do what you love doing! What traits do you think women need to be successful leaders in hospitality? Running a business is somewhat like running a family so the biggest trait I would say is multitasking - which we as women excel at. What do you wish you had known to help prepare you for leadership in the hospitality? To ask more questions, listen and to learn from people with more experience so you don’t make unnecessary and costly mistakes. 

BUSINESS The Loose Lips Tea Co-Owner Cherri talks sipping on success with Label.

What motivated you to establish your own tea business? It all began in 2010 when I was running a florist shop and had been involved in both the growing and retail sector of flowers. I had done some training in aromatherapy, herbalism and cosmetic chemistry and decided to start making creams and balms as a side line to take to markets to sell on the weekend. I have always had a fascination with plants and their medicinal qualities and was reading and thinking quite deeply about plants for consumption for health reasons. I have always loved tea and it has been a ritual in my family ever since I can remember. We would always put on a brew, it was the solutions to all things and the start of all conversations.

From plants to packaging, what steps does the Loose Lips Tea Co. go through before they reach the sippers? It’s the entire process I adore, from woe to go! At this moment in time I’m a solopreneur, so I literally embody each stage of the process. Because I formulate my own recipes for all the blends I produce, I buy in the ingredients I need and then go to work on the recipe, I generally blend up batches of 5-10kg to guarantee quality and freshness and then pack them out in the bags, tubs and glass and then they are dated, batched and ready for dispatch. Everything is hand packaged and hand blended from start to finish.

What are your latest blends? You need to consistently be evolving and reinventing yourself and there are some gorgeous new blends available at The Loose Lips Tea Co. In the Specialiteas range there is the Tickle Me Licco Mint, which is a gorgeous combination of liquorice with mints, citrus, fennel and much more. It’s already proving to be very popular. If you’re into health and well-being then it’s worth taking a look at the My Organic Tea range. There is much more in the pipeline, there are currently around 70 blends to choose from.

Where do you go for tea inspiration? There are many places I go to within myself and also on the outer, most of my ideas come from an event or a season of a taste of something that’s triggered an idea or a spark. I’m a touchy-feely person so I gain plenty of insight from being around all the wonderful ingredients I work with. I love being in nature and draw much inspiration from mother earth and I read plenty of books on a variety of topics from cooking, to spirituality, to art. So, I would say I dive into the melting pot around me for tea inspiration.

What was your pioneer blend? There are a few blends I started with, however there is one that remains popular still today after 7 years and that is the Secret Garden tea, which blends mints with floral properties. It’s a blend that can be enjoyed any time of the day and is one that all my customers seem to come back to re-order.

Talk us through the different ranges. What makes a Simplicitea different to a Specialitea? I came up with this so that customers could see the difference between the ranges. Simpliciteas are basic blends and straight herbs, an example being peppermint and liquorice. With the Specialiteas range, they are blended with a little more gourmet factor! Crème Brulee with Charred Figs

Serves 4–6  6 egg yolks  90g caster sugar  1 vanilla pod, split and seeds scraped  500ml cream  6 figs, halved lengthways  2 tablespoons brown sugar

METHOD

Preheat the oven to 175°C fan-forced. Add the egg yolks, 65g of the sugar and vanilla seeds to a bowl and mix on high with a hand-held blender until light, fluffy and pale. Add the cream and vanilla pod to a medium saucepan and bring to the boil, then take off the heat. Pour the cream over the egg and sugar mix and combine well. Pour the mixture into ramekins, leaving a 1.5cm gap at the top, and place inside a large baking dish. Pour in 2cm of hot water to create a double boiler, cover with foil and bake for 25–35 minutes, depending on the depth of your ramekins – to check, give them a gentle shake, they should be firm with a little wobble in the centre. Remove from the water bath and set aside to cool before refrigerating – these

need to be properly chilled right through or they will melt when you torch the remaining sugar, so refrigerating overnight is ideal. When ready to serve, preheat the barbecue on high. Sprinkle the figs with the brown sugar and char on the grill until soft and caramelised. Sprinkle about 2 teaspoons of caster sugar evenly over each ramekin and caramelise with a blowtorch until golden and glassy. You can also place a large kitchen spoon on the burners until it’s glowing red (make sure you hold the handle with a tea towel), then place the hot spoon gently on top of the sugar until the desired caramel has formed. Serve each with a few pieces of charred fig. 

NEW TAX RULES

FOR PROPERTIES $750,000+

From 1 July 2017, new tax rules apply for any property transaction where the market value of the property is $750,000 and above. The laws are aimed at foreign residents however these laws also impact Australian residents selling property A Purchaser has a statutory obligation to withhold 12.5% of the purchase price of property valued at $750,000 or more for Contracts entered into from 1 July 2017. Each Seller is required to obtain a clearance certificate from the ATO to ensure sale proceeds are not withheld. The ATO will then issue the clearance certificate to a Seller that is not a foreign person for tax purposes. If the Seller is assessed as an Australian resident, the clearance certificate will be issued within a few days of the application.

A clearance certificate lasts 12 months and can be used multiple times for multiple properties. To avoid unanticipated delays, Sellers seeking a clearance certificate should apply through the online system as early as practical in the sale process. Perhaps Sellers should be applying for this certificate if they plan on selling a property within 12 months. Further, if a Seller is unsure about their anticipated sale price however believes the sale price will reach $750,000 or greater, it would be prudent for the Seller to obtain a clearance certificate - just in case to avoid funds being withheld at settlement of the property. Once a Seller has obtained the clearance certificate, the clearance certificate

should be given to the Purchaser (or the Purchaser’s solicitor) on or before settlement of the property to avoid the Purchaser withholding a large amount of the sale proceeds. If the Seller is a foreign person, then the Purchaser must retain the 12.5% of the purchase price and pay that directly to the ATO at settlement. There are exceptions to this if the Seller can provide a ‘Variation Notice’ to the Purchaser, in which case the Purchaser must remit to the ATO the amount stated on the Variation Notice. TIME TO VOTE YOURSELF OFF THE ISLAND? If

Australian Survivor shows us anything, it is the lengths people will go to as they try to ‘survive’ and ‘win the game’. They’ll endure deprivation, forms of physical pain and psychological mind games as they embark on a game of survival of the fittest. In some situations, our careers can operate like a game of Survivor. An organisation’s toxic culture underpinned by the poor behaviour of leaders creates a working environment that is both mentally challenging and physically exhausting. While constant restructures and office politics can establish a climate of uncertainty. If your work is making you so unhappy that it’s impacting your well-being and

the well-being of those around you it’s usually time to consider ‘voting yourself off the island’ - taking control and making the decision to go somewhere else or do something different. Steve Jobs said: "Your work is going to fill a large part of your life, and the only way to be truly satisfied is to do what you believe is great work. And the only way to do great work is to love what you do. If you haven't found it yet, keep looking. Don't settle. As with all matters of the heart, you'll know when you find it." There’s a practical side to all of this. Finding work can be challenging, and so finding what you love to do can appear even harder. At the same time, employment is critical for our self-esteem and the financial benefits it provides. Research shows the

positive impacts from working, and the negative impacts of not. Having a job you love takes this to a whole new level. There’s no doubt there are stages in your life where it can feel like a luxury to consider throwing in a job to go and do something you really want to do. There’s the reality of paying the mortgage, schools fees and bills. However, it’s not a luxury when you’re staying in a job that’s negatively impacting you and those around you. There’s are always aspects of a role that can be boring or tedious, and it’s unrealistic to expect to love your job every minute of every day. But when you are working in an environment that is eating away at you, impacting your behaviour, destroying your selfconfidence and causing undue stress and angst it’s time to go. 

Here are five warning signs that it’s time to move on: Performance is dropping - The work environment no longer brings out the best in you. Your motivation is dropping and so you are doing only what you have to do. This ‘bare minimum’ approach is impacting your performance, the outcomes you deliver and ultimately your reputation. Damage to your reputation can have long term consequences. There’s a value’s disconnect – Your values and those of the organisation are out of alignment such that you feel like you have to change who you are when you are at work. This may show up as you not feeling comfortable to voice your opinion, or having to support ideas that go against what you believe in. Cynic is your middle name – You are spending large parts of the day complaining about what’s happening at work. You don’t trust your work colleagues and you no longer offer ideas on how to improve things at work. You only complain about them. Afflicted by burn out – You feel burnt out and the physical signs of stress are coming out in how you behave at home with your friends and family. You feel exhausted all the time and the thought of going to work makes you feel anxious or highly emotional You’ve stopped learning – To stay relevant in today’s world we all need to continue to grow and be challenged. If you’ve stopped learning at work and there is no more room to grow or expand your horizons it may be time to step outside.

HOW TO FIND YOUR NEXT CAREER MOVE Getting clarity on your next career step doesn’t have to be hard, and it can be fun. It starts with throwing away the expectations that others have of us. Expectations drive us to hold a fixed view as to the job we ‘should’ do. However, accepting a role just because we ‘should’, isn’t likely to make us fulfilled and satisfied.

Know your career drivers

When identifying your next career step it’s best to do this in the context of what you want out of life. This is because how people view their career differs. For some it may be merely a job that pays the bills, while others may see work as central to their identity and so be seeking a job that’s fulfilling and challenging. Identifying your career drivers and parameters helps to set the scene for the environment you want to work in.

Don’t lock in too early

Be cautious about getting fixated on one thing and locking yourself in too early. When you do you can inadvertently close yourself off to other opportunities. You often find the alignment between your passion and what you are really good at by trying lots of different things. Be willing to experiment with options. Volunteer to get involved in different activities, and seek new learning. Life if all about experience, and so too is your career. The more you travel, network, are involved with groups, test and try new

things the greater your ability to see the world and the opportunities it offers in a different way. As well, by talking to a diverse range of people about the work they do you’ll gain insights into new areas which will help to expand your field view. This is all about expanding the range of what’s possible, so you can discover what may be a good fit for you.

Take a risk

Pursuing your passion and dream job often comes with a ‘risk’ tag attached. It can be easier to go with the flow and to follow what everyone else is doing. Taking a path that others around you haven’t taken means you need to get comfortable with ambiguity and also believe in yourself. There will be people around you who question your choice and challenge your thinking. Don’t let their fear of failure stymie your progress. The more you are willing to take a risk and to ‘have a go’ the more likely you are to find a career that is rewarding – on many levels.

Make the trade offs

When I made the decision to leave corporate I walked away from the security of a high paying corporate salary into the unknown of running my own business. I was willing to take that risk and make the accompanying trade-off so I could pursue a career change that aligned with my aspirations. Life is a series of choices and often to do one thing, requires you giving up something else. For example, you may be willing to accept less money initially because the role is a great learning opportunity, and provides the stepping stone for your next big career leap. It’s your career, so you get to choose. 

Cut one everyday expense

Choose one daily expense to say goodbye to – your daily juice, your child’s $2 for canteen, your bought lunch, or that old favourite your daily coffee. The pain of missing your favourite treat will be dulled when you realise you can save up to $1500 a year.

Find the best fuel prices with apps such as NRMA and www.fuelmap.com.au, make sure you combine all your errands that require driving in one trip, and slow things down a little – the Department of the Environment advises that at 110 km/h your car uses up to 25 percent more fuel than it would cruising at 90 km/h.

Review automatic payments

Regular payments such as Spotify and Netflix may seem insignificant but according to David Bach, author of Finish Rich, they represent big savings. “The fastest way to cut annual expenses is to cut back on these,” says Bach, so go through your statements and eliminate one monthly contract.

You may be paying more tax than you need to, especially if you’re doing your own returns. The cost of a taxation specialist is generally retuned in savings and refunds. Learn exactly what you can claim and record everything in a tax diary, with receipts. The extra work will pay off.

Consolidating your debts will result in significant repayment savings. Review your mortgage, personal loans and credit cards and seek quotes on consolidating. If you have credit card debt, consider taking a 0% interest deal to move to another institution.
