The festive season Sand, salt and sea is no doubt what we’re all about on the Sunshine Coast, and summer lets us embrace our natural environment even more than what we already do. Each summer we tend to face a similar qualm of wanting to spend more time in the sun, yet the harsh rays is summoning us to seek shade and slip, slop, slap. Our team recently went through some research into sunscreen and quite frankly I was shocked at a lot of the findings. I have been in the realm of the natural health world for a long time now and there are still things I learn that make my jaw drop; sunscreen being one of them. ne of the most controversial foods has just been legalised as a food in Australia.

On November 12th 2017, the Australian government legalised the consumption of hemp, joining a growing global industry. Acknowledged by Food Standards Australia New Zealand as a highly nutritious food, hemp has many health benefits. Furthermore, hemp as a plant is one of the most versatile of crops with a wide variety of uses in fibre, fabrics, building materials, paper and bio plastics. We touched base with CEO of Hemp Foods Australia, Paul Benhaim to get the latest on hemp. The company has been supplying Kunara with their products for over 5 years that are hugely popular with our customers. It has been a very celebrated topic and point of conversation with everyone recently. Paul says legalisation of the plant will pave the way for Australians to reap the health, economic and environmental benefits of a healthy local hemp food industry, with legalisation a key step towards more sustainable farming in Australia.

No compromising, make it exactly as you desire. 2017 was at times hard and testing, so please remember how far you have come, nurture yourself and be kind to yourself. Look after you. You have the time and space to do that now. We are in new times, a new cycle and that requires a new way of being. No more of the old stories and patterns, unless you want to spend another 9 years in that same old house? It’s a new year, a new you and a new life. With the 11 aspect of this year, remember 11 is the most intuitive of all numbers. It is instinctual, charismatic, dynamic and capable when its sights are set on concrete goals. 11 is all about alignment.

I did say 2017 was going to be a big year, sometimes I would like to eat my words as my predictions start playing out. So what now? Well let’s reflect a little on where we have just been and it will help with some understanding of where we are going next. 2017 was a universal 1 year. It was all about laying the foundations for the next 9-year cycle.

Please don’t think it’s not an important year, because it is. The work done over 2018 is so important for your future, it’s just different to last year.

There is the clearing and preparation of land. Deep digging, footings are laid, it’s sealed to prevent stuff getting in. It’s raw hard work. Sound like the year just gone?

Think about the house again. Once you put the walls up that’s where they will stay. How much light you let in will affect you long-term.

Now what? I hear you asking. You now have a strong base to start stage 2.

Please use this year to set up this next stage of your life exactly as you want it to be. I am talking on all levels here and with all things.

Fresh Produce Manager There is no doubt that Stuart’s passion for organic fresh produce runs deep, with his continual drive and conversations around a plant based diet, growing his own produce at home and wanting to make organic fruit and vegies available to as many people as possible. Stuart balances his work life with new found yoga practices, making his own home brewed Kombucha and walking his two dogs early in the morning. He has a vision to eventually live off the land and farm his own produce. You are sure to be greeted with wealth of knowledge and smiles from Stuart at Kunara.

Stuey’s recipe Spaghetti squash & fitters · 1 medium organic spaghetti squash · Olive oil, for cooking the squash & panfrying the fritters · ¾ teaspoon salt, divided · 1 can organic chickpeas, drained and rinsed · 2 large eggs, whisked · 1 whole onion chopped finely · ¼ cup flour, all purpose or gluten-free · 1½ teaspoons chili powder · 1½ teaspoons ground cumin · 1 teaspoon paprika · ¼teaspoon garlic · ⅛teaspoon black pepper METHOD 1. Refer to for how to cook your spaghetti squash. 2. Combine and whisk in a large bowl all ingredients together and mold into little flat fritter shapes and fry in a pan. he excitement of the festive season is here and before long we find that our shopping trolleys are filled with treats in preparation and celebration of the holidays. The festive season often comes with overindulgence, weight gain, bloating and the dreaded food (and alcohol) hangover. All of this can lead to an overload on our digestive system, in particular our livers. The liver reduces the toxic load to the body by acting as a filtration system, it filters blood and hormones, assists in immune function and regulation, helps to digest food and supports energy production. If your liver isn’t functioning properly you may be suffering from constipation, PMS, fatigue, skin conditions, headaches and migraines. To help the liver along, particularly during times of overindulgence and illness, a good liver supplement can help to support normal liver and gallbladder function. It will help protect the liver against toxic damage, improve bile production and bowel regularity, and in doing so will reduce instances of flatulence, constipation and bloating.

You can now think less as we have done the work for you with some amazing meal ideas that will impress your family members, guests and partners. Keeping it simple yet delicious, you don’t have to be a master in the kitchen to whip up these effective meals. We have worked it so that it doesn’t cost you a fortune to feed the family but adds some inspiration to your meals.

Summer Chicken Fajitas

SERVES 4 Gluten free, dairy free

INGREDIENTS 4 medium organic chicken breasts coated in smokey paprika and apple cider vinegar, sliced 1 organic red onion, sliced 1 organic red capsicum, sliced 1 organic green capsicum, sliced 1 organic yellow capsicum, sliced Gluten free pita wraps Fresh organic coriander and limes, to serve

METHOD 1. Heat olive oil in a large fry over medium heat. Add chicken breast pieces and cook on all sides until golden and cooked through. 2. Remove to the side. Add onion and all capsicum to the pan and cook for 3-4 minutes over high heat. 3. Lay the pita wraps out, add chicken and capsicum to each wrap, sprinkle with lime juice and fresh coriander before enjoying.

Green Veggie Fritters INGREDIENTS 4 cups shredded zucchini 2/3 cup chickpea flour 2 free range eggs. Lightly beaten 1/3 cup spring onion, finely sliced Olive oil

METHOD 1. Squeeze as much liquid out of the zucchini as possible. 2. In a large bowl, combine the zucchini, flour, eggs, spring onion, a few pinches of sea salt and some cracked pepper. 3. Heat olive oil in a large fry pan over medium heat. Using your hands, form large patties and grill in the pan, pressing down to flatten. Cook for up to 5 minutes each side until golden brown and cooked through. 4. Dab with paper towel before serving.

Chargrilled Tofu Skewers

SERVES 4 Gluten free, dairy free, vegan

INGREDIENTS 2 packs firm or extra firm tofu, cut into cubes 1 organic red capsicum, chopped into cubes 1 organic yellow capsicum, chopped into cubes 1 organic red onion, chopped into cubes + any more of your favourite veggies Botanical Cuisine’s classic cashew cheese

METHOD 1. Heat BBQ over mediumhigh heat. Arrange tofu and veggies alternately on skewers, lightly brush in olive oil. Grill on all sides until tofu is golden and veggies chargrilled. 2. Dip into cashew cheese and enjoy immediately.

Quinoa Spinach Burgers INGREDIENTS 1 cup uncooked quinoa 4 free range eggs, whisked 1/3 cup savoury yeast flakes 3 organic spring onions, chopped finely 3 gloves garlic, grated Couple of pinches of sea salt 1 cup steamed spinach 1 cup quinoa flakes (or GF breadcrumbs)

METHOD 1. Cook the quinoa as per packet instructions. Set aside to cool. In a large bowl mix the quinoa, eggs, savoury flakes, spring onions, garlic, salt, spinach and quinoa flakes. Mix until it’s moist and absorbed, but not runny. 2. Heat oil in a large pan (or BBQ) over medium-low heat. Form patty burger shapes to your desired size and cook for 8-10 minutes each side until golden brown and cooked through. Serve on burger buns with lettuce, sliced tomato and your favourite condiments (we love Botanical Cuisine’s Caramelised Beetroot Cashew Dip!)

Thysanotus multiflorus A clumping grass-like perennial with attractive narrow blue-green foliage and masses of delicately fringed flowers. Good for a sunny rockery, raised bed, border or in a pot. Likes well drained soil and will form a clump 30cm wide with a similar height. Also grows well in coastal conditions putting on a stunning display of mauve flowers several times a year.

A small naturally bushy shrub with attractive bright green foliage and beautiful cream flowers that turn peach as they mature. Bird attracting flowers appear all year, making it a perfect feature plant. Growing to a height of 1 – 2 meters with a spread of about 1.5 meters. Plant in a sunny, well drained position and lightly prune early spring to maintain vigorous growth.

It is well-known for its extremely large flower spikes which easily can become 40cm long. The flowers are deep bronzy-orange and will be showy from late autumn through winter. They will grow in most well-drained soils, and will flower most profusely if grown in full sun. “Giant Candles” is produced from cuttings as well. They grow 4 - 5 meters in height with a spread of 3 meters.

When waste breaks down under the soil all of the nutrients and carbon are returned to the soil and no greenhouse gasses are released. There can be some challenges with this form of composting, however using the Bokashi composting system overcomes many of these issues. he festive season is upon us! It’s crazy to think that despite the sweltering heat, us Aussies still cook a roast on Christmas day; potatoes and gravy galore. They can zap our energy levels, making us collapse on the couch feeling overindulged and lethargic, when really summer is a time to enjoy our beautiful oceans and outdoors. While it’s still nice to enjoy treats throughout the festive season, make sure you restore balance with a raw diet cleanse to have you looking and feeling radiant. Recipe Share MERMAID SMOOTHIE BOWL By Nutra Organics This dreamy mermaid bowl is like a chai oasis in your mouth and gives all the mermaid feels. Plus the cacao butter mermaid scales are super cute and fun to make.

M E R M A I D L AT T E To make the mermaid latte, add 1-2 teaspoons to a little heated or chilled milk of choice, stir to combine. Add the remaining milk to make 200ml.

○ 3-4 tsp of Mermaid Latte (depending on desired strength)

Do this step in advance if you wish to make the mermaid scales:

○ 3 frozen bananas

Melt the cacao butter in a saucepan over a gentle heat, add the maple syrup and vanilla extract. Pour into a bowl, and place in the fridge to cool. Don’t let it fully harden, but enough to make it pliable. Lay out a sheet of baking paper onto a baking tray, with a pallet knife or butter knife, scoop a little onto the knife, then smear onto the baking paper in a rustic ‘scale’ kind of shape. Repeat until cacao butter mixture is used up. It should harden on the bench but you can also pop them back in the fridge to harden quicker.

hen visiting Susan’s farm in Eumundi and chatting to her about all things egg, related it became very apparent to me that what conventional shoppers think they are purchasing and consuming may not actually be what they think it is. I started to learn in depth about what can be done to conventional eggs to get the mass amounts on shelves. From harsh chemical egg washing systems, to the chemical laden feed that the chickens are given to make the yolk more yellow. On top of this, ‘free range’, a term that has been dubbed on nearly every carton of eggs you see, is not necessarily that ‘free’ with the law allowing for 10,000 chickens per hectare. The saying ‘what you don’t know won’t hurt you’ is out the window in this day and age. Because what you don’t know may very well be contributing to a lot of illnesses, ailments and environmental damage. Lucky for us we have local farmers like Susan that supply us with her incredible biodynamic pasture farmed eggs; Eumundi Egg & Feather - where I witnessed first-hand very happy, healthy, loved chickens. Every supplier farm visit that we do, I am completely blown away at the natural sustainable farming practices that are implemented. Susan says they have a lot of geese, guinea fowl, and ducks to help with ticks on the farm. Plus they have four of the most amazing Maremma sheepdogs to protect the chickens from foxes. “Sustainable farming practices are so important, not only for our environment but also for the health of ourselves and our animals.”

“It took us five years when we first brought the farm to get the soil quality to where it needed to be for our Demeter certification. It now has rich healthy soil with great humus, healthy plants and healthy animals which leads to nutrient rich eggs” Susan says. The farm hosts 700 chickens on 50 hectares and the team collect 500 eggs per day. “When assessing what the chickens can do to the ground with the quantity that we have in the large amount of space, it astonishes me that legislation would allow for 10,000 chickens per hectare as free range. We have 30 times more space than the free range standard. 330 chickens per hectare is how we operate.

“We use the old fashioned way of feeding our chickens with certified organic feed and clotted Heavenly bath milk. Our feed is soy & gluten free, a super important element as our customers aren’t getting soy isoflavones that mimic estrogen in their diet.” Having come from the city originally and working a high pressured job, Susan was determined to not retire and sip lattes, she wanted to work with the land and have something to do still, plus after battling cancer naturally she knew and understood the importance of organic foods. “I was actually a Bio Chemist originally and then moved into marketing, throughout this time and overcoming cancer, I wanted to slow the pace and be at one with nature. The farm was the perfect option for me and I couldn’t be happier” Susan says. Available in our fresh produce department fridge.

e often think of inflammation as external, like a reddened skin graze; however, it’s also internal and may be affected by the foods we eat. Inflammation is a stress response in the body, including food allergies. It’s helpful when triggered in short bursts for the immune system to protect us from pathogens and infection.
