Restaurant - Brewery «KUMPEL» where beer is ﬂowing ROUND THE CLOCK «Kumpel» in Mytna Square is the ﬁrst brewery restaurant in Lviv; it is also the ﬁrst restaurant in Ukraine with exclusively traditional Galychyna cuisine. The Restaurant - Brewery is famous for live unﬁltered beer brewed directly here from the best sorts of German malt by the recipes close to those which Lviv brewers were using since the 15-th century. Our cuisine representі traditional Galychyna dishes prepared by one of the best cooks, Oksana Zadorozhna. The search for authentic recipes and their adaptation took us more time and eﬀort than all the rest organization matters. Music, interior design and atmosphere of the Restaurant reﬂect the special cheerful spirit of Lviv light-headed men – the “batyars”. It is not accidentally that the restaurant is located in the beginning of Lychakivska street – once it used to be the heart of joyful life of the old Lviv. The Restaurant – Brewery is a member of the Galychyna Cuisine Club established in Lviv in 2013 to restore and promote traditional Galychyna recipes and dishes.

Served in a frying pan. You can take pyrohy with mushrooms sauce or cracklings.

A blood sausage with buckwheat made by a traditional Lviv recipe. Served on a frying pan with potatoes, fried lard, fried onions and horseradish sauce. All Kumpel’s sausages served on one frying pan, dressed with hot sauce. Dish for 6 persons.

With a vegetable ratatouille. Ribs are stuﬀed with buckwheat porridge with mushrooms and chicken liver. Served with fried vegetables seasoned with garlic and greenery.
Veal Breast with Forest Mushrooms
Served with mashed potatoes, green peas and chanterelles in sour cream sauce.
Veal chop, fried with white bread. Served with “home-style” fried potatoes.
Meat Deﬁlada (Feast)
Various meat delicacies on a pan: blood sausage, potato sausage, smoked chicken shashlik, pork tenderloin, pork neck, turkey, ribs grilled and roasted with beer and all Kumpel sausages. All this variety with baked potato slices, buckwheat porridge with pork rinds, pickled and fresh vegetables, warm bread, pork fat (bacon) paste and sauces. Is served with original Kumpel-made moonshine prepared in your presence. The dish is for 6-8 big guys. Cooking time: 40 minutes.

Restaurant-brewery «Kumpel» rules
1. Restaurant-Brewery «Kumpel» is open round the clock. The day-time menu is actual from 10:00 a.m. till 10:30 p.m. (10:00 - 22:30). The night-time menu is actual from 10:30 p.m. till 10:00 a.m. (22:30 - 10:00). Breakfast time is from 07:00 till 12:00 a.m. Administrator of the restaurant is responsible for keeping to this schedule. 2. The following visitors are not allowed to the restaurant: persons under the inﬂuence of alcohol or other intoxicating substances; persons who behave aggressively towards other guests or restaurant staﬀ; persons possessing weapon, knives or other sharp objects as well as means of individual protection; persons with own alcoholic or non-alcoholic drinks and foodstuﬀ; persons in untidy, torn or dirty clothes and footwear; Restaurant staﬀ, in particular, a hostess, administrator and security guards are responsible for keeping to and monitoring the requirements in Par. 2. 3.Restaurant stops servicing a client and may ask a client to leave, with previous full receipt payment, in case the client gets drunk or behaves non-adequately. If a client behaves very aggressively, the staﬀ is empowered to call for the security guards or the police. 4. Administration of the restaurant is not responsible for the safety of personal belongings of the visitors. Please be careful and do not leave your personal belongings unattended. 5. Visitors shall pay for the products consumed in the restaurant according to the receipt. Do not cross out, correct or write anything in the receipt!

Galician cuisine doctrine We, as scientists, cooks, restaurant- keepers, writers and journalists of Galicia, taking into account the following peculiarities of our region: Unique history that reﬂected on the local cultural phenomenon Multinationality that promoted creation of authentic culture, especially gastronomic culture that derived from synergy and interpretation of Ukrainian, Polish, Jewish, Austrian and Armenian inﬂuences Territory that consists of 3 countries that automatically turns Galician Cuisine into multinational phenomenon Naturally suitable for growth and cultivation of diﬀerent types of products environments and obtaining organic raw materials; Strategic course of local economy is focused on customer service and tourism, which induces reclamation of traditional gastronomy and creation of new one Take as a basis the following criteria of Galician Cuisine : Territory where dishes, products and idea’s origin reaches out to Lviv, Ternopil, Ivano-Frankivsk, part of Chernivtsi regions of Ukraine as well as Podkarpatsky and Malopolsky voivodship of Poland, and Pryashiv region in Slovakia. Traditions that were forming since 11th century until the Second World War Recognition of input of all nations that lived and are still residing in the region on development of Galician Cuisine and high possibility of serving a dinner table with the same dish despite nationalities diversion. Use of only high-quality organic products that are traditionally grown on the territory of Galicia or have been imported for many years. and hereby enter into commitment to: Reintegrate traditional Galician recipes and products; Combine them with the newest tendencies and highest culinary quality standards; create new Galician dishes that would also include street food, diet food, vegetarian food and haute cuisine ; Interpret peculiarities of culture and history of Galicia through these dishes; Take good care of ecological and organic qualities of raw materials Galician products are made from and Galician dishes are cooked from; Provide close cooperation between food producers/farmers and restaurants; revive practice of local meals by cooking from quality local products only; Revive and develop links between Galician cuisine professionals in diﬀerent countries, set up programs of cross-border cooperation; Promote and spread information about unique qualities of Galician dishes, products and Galician culture in general: for customers inside and outside Galicia.
