GRILLING SEASONAL VEGETABLES By Paula Deen Test Kitchen

Accord Massages

Grilling fresh seasonal vegetables is a not only a healthy way to prepare them, it’s also a snap! Why dirty up another bowl, pan or dish after a long day? Not to mention the ease and speediness in which dinner is ready and the cost effectiveness of grilling a side dish. The exclamation points are the appealingly sweet smoky flavor that a grill imparts and the bright colors left behind.

Forget Pain...get back to your life with a good massage. In our studio or in your home or office.

Here are some handy grilling tips for preparing vegetables along with a couple of recipe ideas. We hope the next time you have a chance to pick vegetables fresh from the garden or your local farmers market you use these tips and cook them on the grill.

accordmassages@gmail.com

Vegetable Grilling Tips: ** Spray the grill with non-stick cooking spray prior to heating the grill to help make clean up a snap. **Make sure your grill is medium hot. One way to test this is to place your hand over the grill. If you can hold it there for 4 seconds, the fire is medium hot. **Prevent your vegetables from drying out on the grill by soaking them in cold water first. **Vegetables should be cut to expose the most surface area to the grill. This helps them to cook quickly. Also, cut the pieces equal in size so they will cook evenly. For example: Cut your squash and eggplant into strips, not rounds, of the same width. **Use kosher salt or sea salt on your vegetables to bring out extra moisture. Seasoning with salt and pepper both before and after grilling helps to make them sweet and full of flavor.

**Use tongs to turn your vegetables on the grill instead of a fork. You don’t want to puncture them, as it will release the moisture.

832-868-3775

**Smaller vegetables such as cherry tomatoes (we’ll just pretend and call this a vegetable) and small mushrooms might fall through the grill and should be skewered first. Thick onion slices should also be skewered all the way through to keep them whole while grilling. I like to use metal skewers instead of bamboo since they don’t burn and I can reuse them.

**Because vegetables lack fat, they need oil or some sort of liquid marinade to prevent them from burning and sticking to the grill. Brush them with a vegetable oil or flavored oil such as a prepared salad dressing prior to placing on the grill. You can also marinate them in a prepared dressing or your own marinade recipe.

**Someone in the family doesn’t like grilled vegetables? Try this trick. Sprinkle a little sugar on the vegetables half way through the cooking. This gives them a wonderful caramel flavor.

CYPRESS-FAIRBANKS INDEPENDENT SCHOOL DISTRICT WWW.CFISD.NET IMPORTANT DATES July 4 – STuDENT/STAff hOlIDAy Th

HIGH-STAKES TESTING During the April 12th Board meeting, the Cypress-Fairbanks ISD Board of Trustees passed a resolution calling for a re-examination of the public school accountability system by the Texas Legislature. The resolution states that standardized, high-stakes testing is undermining our mission to prepare students for competitive careers in the global arena. CFISD superintendent Dr. Mark Henry stated, “The educational system is overly dependent on high-stakes, standardized tests. Educators do support accountability, but at the same time, oppose the current system that does not support preparing all of our students to be productive citizens and leaders in a rapidly changing world. Standardized testing, as currently implemented, hinders progress toward a world-class educational system by driving instructional time.” It is the district’s responsibility to produce graduates who are college ready and flexibility is imperative to address quality career and technology education programs for those students who are not college bound. Unfortunately, with the requirements of the current state system, students have very little room in their graduation plans to explore vocational opportunities. Recently, the CFISD Community Leadership Committee (CLC), whose membership includes parents, business leaders and community members, endorsed the Board’s resolution, which calls for the review of the role of high-stakes testing and its impact on schools. According to Stacye Anderson, CLC community chairperson, “The CLC unanimously agreed to support the CFISD Board of Trustees Resolution Concerning High-stakes, Standardized Testing of Texas Public School Students. We are so glad to see our district become the largest district in the state so far to join this movement to implore our legislators to rethink the current approach to assessment of learning. Although we are extremely supportive of holding schools accountable for teaching all Texas children, the current overemphasis on standardized testing impedes learning and the requirement that the grade on End-of-Course exams be weighted to count as 15 percent of the final course average for high school students is onerous.” Although promotion of high-stakes testing may be based in good intention, adopting the attitude that if a little testing is good, then a lot of testing must be even better is detrimental to our students and their futures. The lack of graduation plan flexibility and the over emphasis on high-stakes tests restricts student career options, which in turn negatively affects our state’s economy. Local school districts must have flexibility to prepare students for a variety of post-high school pursuits, including technical and vocational careers.

Kimberly AKimbo, By David Lindsay-Abaire, Directed by Ron Jones, November 29-December 15, 2012, STUDIO 101 (1824 Spring Street, Houston 77007). Kimberly Akimbo is a play written in 2000 by Pulitzer prize-winning playwright David Lindsay-Abaire. Its title character is a lonely teenage girl suffering from a disease a lot like progeria, that causes her to age 4 and a half times as fast as normal. Thus, Kimberly is trapped inside the frail physical body of an elderly woman. She meets another misfit (a teenage boy) and the two form an attachment to one another that borders on attraction. The situation is not helped by Kimberly’s rapidly deteriorating health. Soon Kimberly’s family gets mixed up in some crazy money schemes and the family gets emotionally destroyed.

“I’m In PAIN” Can Chiropractic Help ME ? We are often asked, “What’s the best way of finding out whether or not a doctor of chiropractic can help my problem?” We believe the answer can be found in a complete chiropractic consultation and examination, including x-rays. And to help find out for sure, we will do a complete consultation and examination, including x-rays, if necessary, (procedures that normally cost $187.00 or more) for $25.00. We will make this special program available through July. The only exception to the offer involves personal injury cases (workers’ compensation and auto accidents) in which there is no charge directly to the patient.
