THANKSGIVING ON A BUDGET

With the economy still slumping, a lavish Thanksgiving might not be on the table this year. But we can still - and should - feast. We just have to squeeze our fistful of dollars a little harder. GO FOR WHAT’S IN SEASON When planning your meal, first consult the calendar. This is no time for asparagus and artichokes. Buy produce in season and you will get much more for your money, not to mention livelier flavors. Brussels sprouts are at their peak in late November; farmers’ markets should have them in huge quantities, still on their stalks. (Serving them sliced rather than whole not only makes them more tantalizing but also helps them go further.) Fresh herbs have become available all year round, so it can be a better deal to buy a bunch rather than an expensive jar of the dried kind - fresh sage might be $1.99 compared with $6.50 for half an ounce dried, which could go stale by the next time you need it. BUY A SUPERMARKET BIRD In an ideal world we would all be eating heritage turkeys. They have outstanding texture and flavor and when we buy them, we help preserve unique breeds. But they are anything but a bargain: A 12 to 14 pound bird, which feeds eight, from Heritage Foods USA goes for $159 including shipping or more than $10 a pound. Supermarket turkeys can be fine alternatives for less than $2 a pound. Just be sure to buy a free-range or organic turkey rather than an industrial one injected with flavored oil. Plus, brining will add flavor and improve texture in even the least expensive birds, all for about $2.29 for a big box of kosher salt, an ingredient that can be used to season the rest of the meal. START FROM SCRATCH Some convenience foods are often ridiculously cheap, loaded as they are with high-fructose corn syrup and chemicals, yet they rarely taste better than homemade. To cut costs and ensure the tastiest of feasts, make your own piecrust, cranberry sauce and gravy rather than opening up a box or can. Instead of paying $8 for a single loaf from an artisanal bakery, bake up some dinner rolls with yeast, butter and flour for a little over $7. A bakerybought pecan pumpkin pie can go for upwards of $50, but a homemade version will run you $15 and $5 less if you omit the pecans. KNOW WHEN TO BUY CANNED OR FROZEN Some canned and frozen foods are fine alternatives to fresh. Canned pumpkin is one of the great American ingredients and the generic brands are as good as premium labels. You could make a pie using a fresh pumpkin for $5, but you would wind up with a more watery filling than one made from a $2.49 can. And frozen vegetables can be both superior to and cheaper than out-of-season fresh ones; a bag of Cascadian Farms flash-frozen baby peas is $2.69, compared with $3.99 a pound or more for fresh snow peas, the only kind you are likely to find in November. DON’T BE A SLAVE TO A RECIPE If you don’t want to spring for three kinds of herbs in your soup or stuffing, choose one. Or none. Nothing but salt and pepper is ever really indispensable. Substitute water for canned stock in a soup; use a slurry of flour and water to thicken your pan gravy rather than making turkey stock. Instead of investing in a can of shortening for a piecrust, substitute butter for the two tablespoons needed in the recipe. The great thing about Thanksgiving is that the whole really is much more than the parts. Cut corners where you have to and all anyone will notice in the end is a heaping plate.

Please refrain from depositing any debris (lawn clippings, leaves, pet waste, motor oil, etc.) into the streets or storm drains. Disposing of debris in the street or other portions of the storm water drainage system can create problems. Flooding takes place when the system becomes blocked with debris. This can create a flooding potential that could result in property damage. The water quality is impacted if you’ve used chemicals on your lawn or garden. In addition, pet waste left on yards can contribute to contaminated run off. Grass clippings and leaves left in the storm water system contribute to system wear and can destroy the underground system. Please make sure you dispose of your lawn clippings, leaves and other debris in a proper manner.

Neighborhood security is provided by the Harris County Constables Precinct 5 Office, 24 hours per day, 7 days per week. We also have an additional contract with them (Contract 50 - in conjunction with the other sections of Green Trails and Windsor Park Lakes). To contact the Constable’s Office:

Residents of Constable Precinct 3 contract subdivisions, which include Estates of Green Trails, can have their homes checked by a drive-by patrol officer while they are away on vacation. Please contact the Constable’s office at 281-427-4791 or 713-453-6959 or complete a Vacation Watch Form, which can be found in the Forms section - You will need to complete the form and submit it to the Constable’s office one week before you leave! If your home is monitored by a private security alarm system, please be sure to tell them you are in Green Trails Contract 50 with the Harris County Constable in Precinct 5. You must also have an Alarm Permit with the Harris County Sheriff’s office. There is a $35 new permit fee or a $10 renewal fee for the permit. Estates of Green Trails has bi-weekly trash pick-up on Wednesdays and Saturdays by Waste Corporation of America (WCA) (Phone 281-368-8397). Should you be overlooked by WCA on a pickup day, please call WCA directly and register any complaints with Sterling ASI (Phone 281-491-0266). They will follow up with WCA about the problem. Holidays, which fall on our pickup days mean that trash will be picked up the next school service day. The following is a list of holidays observed by WCA Services: New Year’s Day, Memorial Day, Independence Day, Labor Day, Thanksgiving Day and Christmas Day.

Please have your trash ready for pickup by 7 AM on pickup days. Landscaping debris, such as large bags of grass clippings, tree branches/limbs, etc. will be picked up either day, but it must be carried to the end of your driveway and left there for pickup; you can bring these heavy items out the night before, but please not several days in advance of pickup. Your neighbors appreciate it!

Recycling plays an important role in how we help to protect the environment. The recycling day for the neighborhood is on Wednesday. Have your recycling bin at the curb no later 7:00 AM. You can recycle the following items; newsprint, magazines, phone books, corrugated boxes (broken down), non-corrugated cardboard (i.e. cereal boxes, soda boxes, etc.), HDPE Plastics 1 & 2 (look for the little triangle symbol usually on the bottom of the container with the number inside of it), aluminum and tin cans, paper, plastics 1 through 7, all glass and all metals. Items excluded include plastic bags, Styrofoam, pizza boxes and food soiled items.

It consists of an Olympic-size swimming pool, totally refinished in the summer of 2000 and two tennis courts, recently refinished. The 10.75 mile, asphalt trail is available from dawn to dusk for walkers and bicyclists, foot-and non-motorized-wheel-traffic. The trail runs from Highland Knolls at Fry Road through George Bush Park to Highway 6 then connects to Terry Hershey Park. (When all of this is completed, you will be able to walk/ bike to Terry Hershey Park (east of Hwy. 6) along this trail. Also look for the new trail connecting the trail behind the subdivision along the drainage canal to the new trail along Baker Road.

Texas Christian High School Lady Tigers have been giving their all in practice and their season is looking very bright! The team took 3rd place in their preseason volleyball tournament on August 22-24, 2013. The tournament held some individual competitions where Megan Austin won 1st place in passing and Kortney Carmouche took 1st place in setting. The Coaching staff, parents and administrators at Texas Christian are extremely eager for the Lady Tigers Volleyball season to begin and see these girls grow in skills and have a winning season. KATY ISD BOARD CALLS FOR NOVEMBER BOND ELECTION

During the August Board work study meeting, the Katy ISD Board of Trustees accepted a bond referendum recommendation by the Student Activity Facilities (SAF) Bond Committee and called for a Nov. 5th Bond election. It is projected that there will be no tax rate increase from the current rate of $.40 with the $99 million authorization. The authorization of the bond referendum by voters would fund the building of three new Student Activity Facilities: Agricultural Sciences Center - $25 million The District has outgrown the current L.D. Robinson Pavilion and room for growth or expanded instructional opportunities is limited. Developing an Agricultural Sciences Center at the current Gerald D. Young facility on Katy-Hockley Road will address student safety and convenience; reduce animal safety risk caused by travel; address the negative impact on Katy HS and Leonard Merrell Center operations and allow for strategic investment in a long-term solution. STEM Project Center - $4.5 million The STEM Project Center will provide additional classroom and project space for students engaged in science, technology, engineering and mathematics courses and activities. It will provide increased space for students to conduct large-scale experiments such as robotics and would lend itself to a variety of engineering projects such as boats, catapults and chip manufacturing. Physics teachers would also have the ability to video a large-scale demonstration at the S.T.E.M. Center while students are viewing from their classroom. 14,000 Seat Stadium - $69.5 million A second stadium will address scheduling issues that will become increasingly difficult as future high schools are opened. Bear Creek Baptist Church is offering Upward Basketball and Cheerleading for K-8th Grade. Cost is $70 for Basketball and for Cheerleading. This year the cost does not include the basketball shorts or the cheer mock turtleneck. These can be purchased for an additional $15 each. They will have one hour of practices a week and on Saturdays they will have a game for one hour. Every practice and game takes place on our Campus. The Texas Master Naturalist Coastal Prairie Chapter is please to host Bob Honig as the speaker for our monthly program. The topic for the September program is the “Christmas Bird Count” program. As an added bonus, Bob will also entertain any questions attendees may have with regard to butterfly counts. Bob is an environmental consultant who serves as a board member and volunteer for the Katy Prairie Conservancy. He is also a member of the Houston Audubon Society, The Nature Conservancy, World Wildlife Fund, The Wilderness Society, the Ornithology Group of the Outdoor Nature Club of Houston and other natural history organizations. He has a wealth of experience in leading field trips, presenting programs and performing bird surveys. This program will take place on Thursday, November 7th, at 7 PM.
