The history of Memorial Day Though many people are quick to refer to Memorial Day as the unofficial beginning of summer, the day is much more than that. Initially known as Decoration Day, Memorial Day is a day to remember those military members who died in service of the country. The origins of Memorial Day remain a topic of debate. In 1966, President Lyndon Johnson declared Waterloo, N.Y. as the official birthplace of Memorial Day. However, the roots of Memorial Day likely run much deeper, as researchers at Duke University note that during the Civil War, organized women's groups in the south had begun to decorate the graves of fallen soldiers. Memorial Day as we know it today can likely be traced to Charleston, S.C., where teachers, missionaries and some members of the press gathered on May 1, 1865 to honor fallen soldiers. During the Civil War, captured Union soldiers were held at the Charleston Race Course and hundreds died during captivity. Upon their deaths, soldiers were buried in unmarked graves. When the Civil War ended, the May Day gathering was organized as a memorial to all the men who had died during captivity. The burial ground was landscaped, and those freed as a result of the Civil War played an integral role in the event at the Charleston Race Course. While the event in Charleston might have been the first Memorial Day-type celebration in the southern United States, General John A. Logan is often cited as inspiring similar events in the north. As commander-in-chief of the Grand Army of the Republic, a veterans' organization for men who served in the Civil War, General Logan issued a proclamation just five days after the Charleston event that called for Decoration Day to be observed annually across the country. Logan preferred the event not be held on the

anniversary of any particular battle, and thus the day was observed for the first time on May 30. Celebrating the day in May also was significant to event organizers because May is a month when flowers are in bloom, making it easier for observers of the holiday to place flowers on the graves of fallen soldiers. In 1868, events were held at more than 180 cemeteries in 27 states, and those figures nearly doubled in 1869. By 1890, every northern state officially recognized Decoration Day as a state holiday. But southern states honored their dead on a different day until after World War I, when the holiday was changed to recognize Americans who died in any war and not just the Civil War. Nearly every state now celebrates Memorial Day, a name for the holiday first used in 1882, on the last Monday in May.

It was beloved "Peanuts" cartoonist Charles Schulz who made the following sage observation: "Life is like a 10-speed bike. Most of us have gears we never use." If you're like the average American, you will consume 22 pounds of lettuce this year. You might be surprised to learn that some fish can hibernate. During the long, dark winters, the Antarctic cod will burrow under the seabed and stay there for days at a time, cutting its metabolism by two-thirds. The name of the state of Wyoming comes from the Algonquian word chwewamink, which translates as "at the big river flat." If you pay attention to politics at all, you've almost certainly heard the term "gerrymander" used to describe the practice of carving up electoral districts in such a way that one party has an advantage. You probably don't know, though, how that term entered the lexicon. In 1812, a new district in Essex County, Massachusetts, was created, and a journalist thought the twisting boundaries caused the district to resemble a salamander. A cartoon highlighting the resemblance was created, and because the party that did the redistricting was led by Gov. Elbridge Gerry, the practice was dubbed "gerrymandering." Even the world's best high jumper is unable to stay in the air for more than a single second. Before he became a comedian and actor, Bob Newhart worked as an accountant at the Illinois State Unemployment Office. Those who keep track of such things say that Elvis Presley had 18 TVs at Graceland. One of them was installed in the ceiling over his bed. Some species of squid can swim up to 35 mph. If you're an avid hiker, you might want

to keep in mind that the most dangerous trail in America, according to Backpacker magazine, is located in Canyonlands National Park in Utah. The trail known as The Maze earned this distinction thanks to numerous dead-end canyons, few sources of water and temperatures that soar to over 100 degrees F. in summer. On June 7, 1692, a massive earthquake devastates the infamous town of Port Royal in Jamaica, killing thousands. A large tsunami hit soon after, putting half of Port Royal under 40 feet of water. Simple ways to find more time Workdays have a way of flying by, and many men and women find themselves wondering where the time went at the end of a typical day. Splendid strawberries By Angela Shelf Medearis

Strawberries are so lovely. Is it any wonder that the strawberry plant is a member of the rose family, and that the heartshaped baubles we gobble up are not really berries, but the enlarged receptacle of the plant's flower? Strawberries are very much a product of their environment: finicky, with the luscious fruit either providing an incomparable pop of flavor or the most disappointing let down of blandness. I don't know anyone who hasn't had more than their share of tasteless strawberries. Strawberries like their soil and weather just so. It also appears they have suffered from our loving them too much. This once-delicate fruit is now commonly grown on Ponderosa-sized farms. What were once tiny jewels are now bright red golf balls (all the easier for field hands to pick). It's widely believed that this attempt to bring mass quantities to a demanding public has compromised the strawberry's irresistible sweet-tart flavor. While it's not impossible to find a ripe, honeyed berry in your grocery, when late spring comes, I suggest you hit the road and head either to a farmer's market or small farm stand. Beside the color, the smell and the beguiling taste of seasonal strawberries, the great news is that they're good for you! They are on almost everyone's best-food list, mainly because of the high amount of vitamin C they deliver, more than oranges per serving, and with less sugar. They're also packed with fiber and antioxidants. Strawberries are considered a superfood. When choosing strawberries there is one important checkpoint: smell. If your prospective package of berries doesn't give you that familiar waft of sweetness, then set it back down. The other aspect to check for is mold. Strawberries are highly perishable, don't travel well and are known to start spoiling even as they sit there looking

attractive. When you get home, refrigerate them, and then wash as needed. In addition to strawberry ice cream, shakes, pies and jams, or a bowl of fresh strawberries and cream, there are other ways to accentuate these treasures. Strawberries pair well with many herb and citrus flavors, such as mint, lemon verbena, the juice and rind of lemons and oranges. You also can experiment with herbs such as tarragon, basil and lemon thyme. A little sugar or a great honey also will enhance the flavor of even the most perfectly ripe berry. Whipped cream, creme fraiche or a good quality Greek yogurt pair perfectly strawberries. Strawberries also go well in savory dishes, and can be used in salads and sauces to add a bright dimension of flavor. Like so many foods, the essence of strawberries will intensify when roasted, either for desserts or as a surprising and attractive addition to side vegetables, such as carrots or beets. 1. Preheat oven to 350 degrees F. 2. Rinse the strawberries thoroughly. Cut off tops and carve away any discolored or mushy parts. Quarter or dice each berry. 3. Place berries on foil or a parchment paper-lined roasting pan. Mix the berries with the sugar, juice, vanilla extract, salt and pepper. Spread berries evenly across the surface of the pan. 4. Roast for approximately 2 hours, 15 minutes, stirring every 20 to 30 minutes to prevent burning and sticking, making sure to scrape the sides of the pan. 5. Remove strawberries from the pan. Allow to cool slightly before using. Pour into an airtight container and refrigerate overnight to firm. Makes 1 1/2 cups.

Food is a real and delicious way for people to share themselves and engage with each other and a greater cause, as my neighbor, Emily Torgrimson, has found. She is co-founder and executive director of Eat for Equity, a nonprofit that builds a culture of generosity through sustainable community feasts (eatforequity.org). By inviting people to gather to eat and give what they can, the organization raises thousands of dollars for local and international nonprofit causes. Emily's creative approach to cooking features flavorful and simple recipes for busy families and her own household, developed by cooking for hundreds of people in home kitchens. No wonder I was eager to join her on a recent Sunday afternoon to prepare a week's worth of "salad-in-a-jar." Improvising with the resources at hand, she scanned the refrigerator for the forgotten carrot, leftover black beans and other fresh odds and ends of inspiration. She lined up a row of sparkling pint and quart size canning jars and together, we packed them to the brim. The carrot went into an Asian salad with sesame dressing, tofu, oranges, spring onions and spinach. The beans became a Southwestern salad with roasted poblano dressing, corn, tomatoes, cilantro and greens. The result was a rainbow shelf of grab-and-go meals. Make salad-in-jar with your kids for healthy portable lunches, or use a large quart-size jar for a last-minute complement to an evening meal. Gather the ingredients and get layering. Cleaning and stain removal tips Whether it's carpeting, clothing or upholstery, a new fabric can be ruined at the arrival of that first stain. Spills and spots can quickly mar the surface of any item, transforming a prized possession into an eyesore in a matter of seconds. But knowing how to treat a stain can save such items from the scrap heap and save their owners a substantial amount of money along the way. Mildew: Rare is the homeowner who hasn't battled mildew at one point or another. Bleach and baking soda are the materials most often used to tame a mildew outbreak. Depending on the severity of the mildew, begin with one part bleach to one part water in a spray bottle. Allow this solution to sit on the mildew and then rinse. If this does not work, mix one part bleach to three parts baking soda to form a paste. Use an old toothbrush or scrub brush to scour the mildew, allowing the concoction to set for roughly 30 minutes before rinsing it off. If the mildew is still stubborn, increase the amount of bleach in the cleaning solution. Remember to always clean in a well-ventilated room. Diluted bleach also can remove mildew from siding or plastic patio furniture. Never mix bleach with an acid, such as ammonia or cleaning products that contain ammonia. Red wine: Anyone who has hosted a party where adults are drinking wine knows the potential for a spill is significant. Red wine can stain quickly, so fast action is necessary to prevent wine spills from causing permanent damage. Use cold water to flush out the stain as much as possible. When cleaning spills on clothing, flush the red wine from the back of stain or the underside of the fabric. This is not often possible when cleaning spills on carpets and upholstery, so in such instances blot the stain with a clean cloth, such as a white rag, that will not transfer any additional coloring to the stain. Sprinkle table

salt on the wine stain and allow it to sit for two to three minutes. Rinse thoroughly with cold water while blotting up the excess. Continue to rinse until the stain has dissipated. Oily stains: Oil and water do not mix, so using water to try to treat an oil-based stain will only exacerbate the problem. The first step to cleaning oil-based stains is to use something absorbent, such as corn starch or talcum powder, on the stain and blot with a cloth. This will help draw some of the oil out of the fabric. Lay paper towels down on a table and place the stained clothing face-down on the towels. Use a dry cleaning solvent on the back of the stain and push down to blot out the oily residue onto the paper towels. Repeat the process until the oil is removed. Apply a laundry pretreatment product or even plain laundry detergent to the stain. Wash in the hottest water that is safe for the fabric and allow the item to air dry. Pet stains: As young puppies learn to house train, they can leave messes indoors, while cats may soil areas of the home if they are scared or finicky. Pet stains should be treated thoroughly because not only do they look unsightly, but they can begin to smell as well. Leaving odor behind may encourage the pet to urinate in the same area over and over. Plain, white vinegar is a good tool for pet stains. Blot up as much of the urine as possible. Use a 50/50 solution of white vinegar and water on the stain. Spray it onto the soiled spot. Blot up the remainder with a dry, clean cloth. Repeat as necessary. To remove any residual odor, sprinkle baking soda on the spot after it has dried. Let the baking soda sit for up to a day. Then vacuum up the powder. When stains occur, avoid rubbing or pushing the stain further into the fabric. Work from the outside in when blotting to contain the stain as much as possible.

Two most common childhood vision issues The two most common childhood vision issues are a crossed or wandering eye and uneven focus. Vision problems in children typically emerge when the child is between 18 months and four years old. When a child has a wandering eye, that eye will appear to drift during conversation or when the child is attempting to do something else, like watch television. A crossed eye is often easy to recognize, but few may know that a crossed eye is not a problem of the eye itself but rather the wiring of the brain. When a child has uneven focus, he or she will have one eye that is more farsighted than the other. Email correspondence has completely changed the way people communicate on a daily basis. Handwritten letters have become a relic of the past, as most people now take to their keyboards or touchscreens to tap out messages and send them instantaneously. If unwanted texts are getting out of hand, file a complaint with the Federal Communications Commission or the Canadian Anti-Fraud Centre. Ways to relax to calm your nerves Since 2007, the American Psychological Association has commissioned an annual nationwide survey to examine the state of stress across the United States and understand its impact. The 2013 survey found that people continue to experience what they feel are unhealthy stress levels, with 42 percent of adult respondents reporting that their stress levels have increased over the past five years. In addition, 44 percent of survey respondents feel they aren't doing enough to manage their stress, painting a potentially troubling future for people who cannot find better and healthier ways to manage their stress. The picture is none the rosier in Canada, where data from the 2012 Canadian Community Health Survey revealed that nearly 23 percent of Canadians aged 15 and older reported that most days were "quite a bit or extremely stressful." While those figures marked a slight improvement from the previous year's survey, it's apparent that stress is still a considerable concern for people throughout both the United States and Canada. Though many people unfortunately regard stress as an inevitable side effect of adulthood, it's important that men, women and even children avoid characterizing stress as simply a byproduct of a difficult and/or successful life and career. Even momentary stress, often referred to as "acute stress," like the kind that appears when stuck in a traffic jam, can have a potentially devastating impact on overall health. According to the American Institute of Stress, acute stress causes an increase in heart rate and stronger contractions of the heart muscle, and some medical professionals have suggested there is a link between repeated episodes of acute stress and heart attack. Regular use of relaxation techniques to reduce stress can help to counteract the effects of long-term stress, which the

National Center for Complementary and Alternative Medicine notes can contribute to depression, digestive disorders, headaches, high blood pressure, and insomnia. While it's always best for anyone, and especially those people with heart disease, epilepsy, certain psychiatric conditions or a history of abuse or trauma, to consult their health care provider before attempting to address their stress on their own, the following are two popular relaxation techniques that may help relieve stress in a healthy way. Meditation: There are many types of meditation, but in general people who meditate employ certain techniques when meditating. These techniques may include maintaining a specific posture or finding a quiet, distraction-free location to meditate. Many practitioners of meditation choose to recite a positive mantra that they repeat throughout their session. While many people question the effectiveness of meditation, research has suggested that routine meditation sessions can alter the brain's neural pathways and make a person more capable of combatting stress. Yoga: Yoga has grown increasingly popular in recent years, and much of that can be traced to the multitude of health benefits that have been linked to this typically low-impact practice of the mind and body. The NCCAM notes that studies have suggested yoga is effective at lowering heart rate and blood pressure and can even relieve anxiety and depression. Those are beneficial side effects for sufferers of stress, which over time can contribute to high blood pressure and arrhythmia (abnormal heartbeat) and even cause people to worry too much about minor things or suspect bad things are about to happen.
