1 lb skirt steak
1/4 cup olive oil
Juice and zest of 1 lime
1/4 tsp cayenne pepper
1-2 cloves of garlic, minced
1/4 cup chopped Italian parsley
Salt and pepper, to taste
2 shallots, peeled and minced
1 tbsp chopped fresh thyme

DIRECTIONS: Preheat grill on high. Blend olive oil, lime zest and juice, herbs, cayenne pepper, garlic, shallots, salt and pepper to create a chimichurri dressing. Set aside. Strawberry & Arugula Salad
to a SPECIAL MEAL
with Crispy Pancetta
1/2 cup Braswell’s Raspberry Vinaigrette
1 cup Isola Olive Oil Bruschetta, coarsely broken up
12 oz baby wild arugula
1 1/2 cup of organic strawberries, halved
1/2 lb pancetta, sliced 1/4” thick
2 tbsp olive oil
2 shallots, minced
3 cloves garlic, minced
1/2 cup basil leaves, chiffonade
3/4 cup crumbled goat cheese cheese
Fresh black pepper to taste
DIRECTIONS: Dice sliced pancetta into 1/4” pieces. Heat a sauté pan; add in pancetta and sauté until crisp. Remove cooked pancetta with a slotted spoon and keep warm, reserving pancetta drippings. Add in 2 tbsp of olive oil and minced shallots, sauté for 5 minutes. Then add in garlic and continue sautéing for 2-3 minutes. Shut off heat and whisk in Braswell’s Raspberry Vinaigrette. Season dressing with chiffonade basil leaves and freshly ground pepper. When ready to serve, place arugula in a bowl adding in strawberries and warm dressing. Toss well to coat arugula leaves. Garnish with crushed Isola Olive Oil Bruschetta, crumbled goat cheese and pancetta.
Arugula should be stored in the refrigerator and kept dry. Storing the greens in a plastic bag with a dry paper towel or in a salad greens bag can help them stay fresher longer. Kept dry and cold, arugula can last up to two weeks.

12 slices challah bread, sliced ½” thick
1 package Anna’s Ginger Thins, crushed
1/2 tsp vanilla
2 tbsp powdered sugar
1 tsp vanilla
1 cup half and half
12 oz. cream cheese
1/4 tsp cinnamon butter
1 jar Robert Rothschild Farm Raspberry Salsa
DIRECTIONS: Cut the crusts off the bread and cover to keep them from drying out. Combine the cream cheese, powdered sugar and vanilla in a small bowl. Mix well to thoroughly combine. Spread about 2 tablespoons of the cream cheese mixture on a slice of bread, but don’t spread it all the way to the edges. Top with a second slice of bread. Crimp the edges with a fork to enclose the cream cheese, being careful that you don’t tear holes in the bread. Combine the half and half, eggs, 1 teaspoon vanilla and cinnamon in a medium bowl. Whisk to completely blend the ingredients. Preheat a large griddle or heavy frying pan. Add a small amount of butter to lightly coat the surface. Dip the sandwiches in the egg mixture than dredge both sides of eggy bread into crushed Anna’s Ginger Thins and place them on the griddle. Do not soak them or they will be mushy! Grill the sandwiches until they are a golden brown on one side about 2-3 minutes. Flip them and grill another minute or two on the other side. Repeat until all sandwiches are grilled. Serve with Robert Rothschild Farm Raspberry salsa.

Baby Back Ribs
1 jar Dinosaur Sensuous Slathering BBQ Sauce
3 full racks baby back ribs
2 tbsp sweet paprika
1 tbsp chili powder
1 tbsp ground cumin
1 tbsp brown sugar
2 tsp granulated sugar
1 tbsp salt
1 tsp black pepper
1/2 tsp cayenne pepper (optional)
DIRECTIONS: Preheat the oven to 250°. Pat the ribs dry with paper towels. Combine the rubbing spices well in a bowl, and gently pat onto both sides of the ribs. Lay the racks out on rimmed baking sheets and wrap tightly with foil. Bake for at least 1-1/2 hours. Heat the Dinosaur Sensuous Slathering BBQ Sauce. Brush the fully cooked ribs with sauce and grill over moderate heat for an additional 3-4 minutes per side, until nicely browned. Cut and serve.
