HOW TO ARTICLE: As summer slowly approaches, I slowly am finding the best fresh recipe’s to compliment this beautiful weather! I was craving sweets, but also wanting something that was on the light side. Finally, Blueberry, almond and white chocolate cookies came to mind. I found a recipe that consisted of a few things, and then substituted and added ingredients to make it my own. Out with the old, and in with the new! Blueberry, Almond, and White Chocolate Summer Sensation • 2 ¼ cups whole-wheat • teaspoon baking powder • ½ teaspoon salt • 1 cup (2 sticks) unsalted butter, room temperature • 1 cup packed light brown sugar • ½ cup granulated sugar • 2 large eggs • 1 ½ teaspoons vanilla extract • ½ teaspoon almond extract • zest from one lemon (about 1 tablespoon) • 1 cup chopped white chocolate (or chips) • 1 cup chopped almonds (or slivered almonds) • 1 cup dried blueberries • Preheat the oven to 350 degrees. Line a baking sheet with parchment paper and set aside. • In a medium bowl, whisk together the flour, baking powder, and salt. Set aside. • In the bowl of a stand mixer fitted with the paddle attachment, add the butter, brown sugar and granulated sugar. Beat on medium speed until creamy, about 1 minute. Add in the eggs, one at a time, beating after each addition until combined. Add in the vanilla extract, almond extract and lemon zest. Beat until combined. With the mixer on low speed, slowly add in the flour mixture and beat until just combined. Remove the bowl from the mixer and gently fold in the white chocolate, almonds and blueberries.* • Scoop about a heaping tablespoon of dough (I used my large cookie scoop) and drop onto the prepared baking sheet, spacing the balls about two inches apart. Bake for 9 to 11 •

minutes, until the cookies are a light golden brown around the edges and the centers are just set. Let the cookies cool on the baking sheet for 3 to 5 minutes, then remove to a wire rack to cool completely.

Finally your cookies are done and you can enjoy a sweet summer treat!

BUZZ PIECE: Guilt-free Cake, Does That Even Exist? It’s your best friends 22nd birthday right around the corner and you have a fabulous beach day planned for her with all of her best gals. You know that she loves cake, but cake is defiantly not an option for her when she has to be in a bikini all day. Now you’re in a dilemma! Every girl deserves a cake on her birthday though, so there must be some way of getting around it. Well, great news for you (and all the bikini-goers this summer) there is! I will queue you in on some helpful tips of how to make the most perfect summer cake, while still being able to rock your perfect body you’ve been working so diligently for. All you have to do is learn a few tricks on how to substitute correctly.

Here are some things you want to remember to avoid: 1. Enriched Flours 2. Sugar, Sugar, and more Sugar!! 3. Canola Oil/ Butter 4. Heavy Cream 5. Milk Chocolate

You may be thinking, well that is just impossible, how on earth can I make a healthy cake? It is easy! Remember that substitution is your new best friend. Now, lets go over how to substitute these items one-by-one.

1. Enriched Flours: These bring our bodies absolutely no nutritional value. While it may taste yummy, you can substitute with many other flours that cut the calorie intake and boost the health benefits. Instead, try whole-wheat flour, soy flour, coconut flour, or gluten-free flour. 2. Sugar: When sugar is processed in our bodies it turns directly into fat, which is what we are trying to avoid. Try replacing with a sugar substitute such a stevia extract, adding honey or agave, or upping the amount of vanilla extract. All of these options will bring the same amount of sweetness without the added sugar. 3. Canola Oil/Butter: Lets face it… butter on anything is heavenly. But what tastes amazing doesn’t look amazing and that’s what we need to remember. Try substituting with applesauce or Greek yogurt. These options will actually make your cake even moister, and not make you feel guilty after finishing every last crumb on your plate! 4. Heavy Cream: It says it all in the name, “HEAVY!” Stray away from anything that clearly warns you on the label it is heavy. Instead try using evaporated milk! 5. Milk Chocolate: There are so many yummy substitutions to chocolate. The darker, the better. Always use dark chocolate in any chocolate recipe, but never too much. Remember, everything in moderation!

With these simple tricks, you will be sure to bake your friend her perfect cake on her birthday. It will taste amazing and no one will ever believe you cut the calories in half! Enjoy your cake, and enjoy your body!

Meet the Author, ME! Hello to all my fabulous readers, my name is Kala and I am a health freak with a love for a sweet treat. Most people would think that those two traits couldn’t be possible in the same person, but my job here is to give you all the tips and tricks on how to be healthy and feel good about yourself with still feeling great in your skin. Professionally, I work in a bakery. Mind you, they don’t offer one sugar free item! Imagine how tempting that must be. I also have an extreme love for healthy eating, and work out 7 days a week. Even though I work out and focus on all natural eating, it doesn’t mean I cant treat myself to a sweet treat every now and then. After all the hard work I put my body through, I deserve it and so do you! For years I have been modifying recipes to make everything better for my body. I am a genius at finding the perfect substitutes to anything that may seem harmful to all the hard work you put into your body. After years of doing this and finding what works best and what doesn’t, I feel like it is my time to share this with all my readers to help you on your journey to a happier and healthier version of yourself. We all aim to be the best we can be and it just takes one healthy choice at a time to see results. Secret 3 in the Slaunwhite book helps us to create our amazing buzz piece. Reading chapter 4 really helped me to understand exactly what a buzz piece was all about. I decided for my buzz piece that I would share something that can be relevant to my readers while also being

able to talk passionately about something I feel knowledgably about. I chose to do a “tips” piece on baking substations because it was the one thing I’ve always struggled in doing and I think it’s a great article to help my readers in their journey to a healthy lifestyle. QUERY LETTER: Dear Editor, Lets face it, 2013 is all about promoting a new lifestyle through a healthier way of living. You hear about other people doing it, you see improvements in other peoples lives, but you’re just not quite sure where to start in your own. Well let me share secret number 1 and the most important secret: It is all about your diet and food choices! I have come up with many recipes that still taste delicious and are fun and easy to make, without all the calories, fat, and sugars incorporated. If you keep your tummy happy with these newest healthy versions of all your favorite foods, your whole body and mindset will change and you will be wondering why you didn’t get on the heath bandwagon sooner. Throughout my articles, I will be sharing new recipes that I had experimented with. I have been reading and researching many health books and articles so I know exactly what nutrients your body needs and know what happens to your body with whatever food you decide to put in it. I get a lot of advice from experts in the field from the different personal trainers at my gym and from my own trainer. They give out meal plans daily to people helping to improve their diets. These collections of articles can be included in any health, food, or fitness magazine or blog. Each article will be about 200-400 words, short, sweet, and to the point. I believe that I am extremely knowledge about cooking and health and promoting a healthy lifestyle because I live it out in my own life. I have been dedicated to eating clean diet but also know that when the craving kicks in for some sweets that it is hard to knock out. I have been working at different bakeries since I was 18 and have learned so much about the baking process and how much sugars go into food that I just want to be able to change up recipes so you are still able to enjoy that muffin, just minus the carbs and sugars. I promise that if you read through my articles, you will be inspired to promote a healthier living and also be excited to get in the kitchen and try my fun recipes. Thank you again, for your consideration. I look forward to working with you in the future. Sincerely, Kala Gladding
