HOW TO ARTICLE: As summer slowly approaches, I slowly am finding the best fresh recipe’s to compliment this beautiful weather! I was craving sweets, but also wanting something that was on the light side. Finally, Blueberry, almond and white chocolate cookies came to mind. I found a recipe that consisted of a few things, and then substituted and added ingredients to make it my own. Out with the old, and in with the new! Blueberry, Almond, and White Chocolate Summer Sensation • 2 ¼ cups whole-wheat • teaspoon baking powder • ½ teaspoon salt • 1 cup (2 sticks) unsalted butter, room temperature • 1 cup packed light brown sugar • ½ cup granulated sugar • 2 large eggs • 1 ½ teaspoons vanilla extract • ½ teaspoon almond extract • zest from one lemon (about 1 tablespoon) • 1 cup chopped white chocolate (or chips) • 1 cup chopped almonds (or slivered almonds) • 1 cup dried blueberries • Preheat the oven to 350 degrees. Line a baking sheet with parchment paper and set aside. • In a medium bowl, whisk together the flour, baking powder, and salt. Set aside. • In the bowl of a stand mixer fitted with the paddle attachment, add the butter, brown sugar and granulated sugar. Beat on medium speed until creamy, about 1 minute. Add in the eggs, one at a time, beating after each addition until combined. Add in the vanilla extract, almond extract and lemon zest. Beat until combined. With the mixer on low speed, slowly add in the flour mixture and beat until just combined. Remove the bowl from the mixer and gently fold in the white chocolate, almonds and blueberries.* • Scoop about a heaping tablespoon of dough (I used my large cookie scoop) and drop onto the prepared baking sheet, spacing the balls about two inches apart. Bake for 9 to 11 •
minutes, until the cookies are a light golden brown around the edges and the centers are just set. Let the cookies cool on the baking sheet for 3 to 5 minutes, then remove to a wire rack to cool completely.
Finally your cookies are done and you can enjoy a sweet summer treat!

You know that she loves cake, but cake is defiantly not an option for her when she has to be in a bikini all day. Now you’re in a dilemma! Every girl deserves a cake on her birthday though, so there must be some way of getting around it. Well, great news for you (and all the bikini-goers this summer) there is! I will queue you in on some helpful tips of how to make the most perfect summer cake, while still being able to rock your perfect body you’ve been working so diligently for. All you have to do is learn a few tricks on how to substitute correctly.
Here are some things you want to remember to avoid: 1. Enriched Flours 2. Sugar, Sugar, and more Sugar!! 3. Canola Oil/ Butter 4. Heavy Cream 5. Milk Chocolate
You may be thinking, well that is just impossible, how on earth can I make a healthy cake? It is easy! Remember that substitution is your new best friend. Now, lets go over how to substitute these items one-by-one.
1. Enriched Flours: These bring our bodies absolutely no nutritional value. While it may taste yummy, you can substitute with many other flours that cut the calorie intake and boost the health benefits. Instead, try whole-wheat flour, soy flour, coconut flour, or gluten-free flour. 2. Sugar: When sugar is processed in our bodies it turns directly into fat, which is what we are trying to avoid. Try replacing with a sugar substitute such a stevia extract, adding honey or agave, or upping the amount of vanilla extract. All of these options will bring the same amount of sweetness without the added sugar. 3. Canola Oil/Butter: Lets face it… butter on anything is heavenly. But what tastes amazing doesn’t look amazing and that’s what we need to remember. Try substituting with applesauce or Greek yogurt. These options will actually make your cake even moister, and not make you feel guilty after finishing every last crumb on your plate! 4. Heavy Cream: It says it all in the name, “HEAVY!” Stray away from anything that clearly warns you on the label it is heavy. Instead try using evaporated milk! 5. Milk Chocolate: There are so many yummy substitutions to chocolate. The darker, the better. Always use dark chocolate in any chocolate recipe, but never too much. Remember, everything in moderation!
With these simple tricks, you will be sure to bake your friend her perfect cake on her birthday. It will taste amazing and no one will ever believe you cut the calories in half! Enjoy your cake, and enjoy your body!
