Elan Organic Coffees— Best Coffees in the World!

The only Fair Trade Organics from Papua New Guinea

P

apua New Guinea’s coffee industry is based upon tens of thousands of small, village coffee gardens. They range in size from twenty trees to six hundred.

These family-owned coffee gardens produce over seventy percent of the countries’ annual exportable crop; a crop which has averaged one million bags.

The balance of the crop is grown on plantations which are wild by default. Again, of a total of four hundred and sixty-one plantations registered with the Coffee Industry Corporation, all but a dozen of the largest are owned by local, villagebased business groups or locally-born individuals. Our coffees are grown in the Morobe District.

It is estimated that nearly two million people, or half of the nation’s population, derive a benefit from the coffee industry. In the highlands provinces, commerce and development would never have reached today’s levels without the annual flow of income from this crop, a flow which begins in April, peaks in July/August and then tapers off quickly, so that the highland towns are comparatively quiet again in the final months of the year. The coffee crop is ‘green gold’ which enriched the country annually to the extent of three to four hundred million kina in overseas earnings. It is PNG’s most valuable agricultural export.

And it is an eternally renewable resource.

Back in the early ‘fifties an active policy of encouraging the establishment of village coffee gardens was initiated, particularly in the highlands where the environment is ideal for the growing of Arabica coffee. Arabica has a finer flavor and commands a higher price than Robusta, grown in coastal regions, but lacks Robusta’s tolerance of the many fungus diseases which prevail in the steamy climate of the coast.

Although small areas of coffee had been established in certain coastal areas before the Second World War, no-one was prepared for the enthusiasm with which the highlands population adopted this new and initially strange crop. At first it was hard to explain the use to which the ripe, red coffee berries, would be put, and many older people, conservative, and suspicious of the new plant with its shiny, dark-green leaves, predicted that coffee would bring bad luck and even cause the death of their much-prized pigs! But very soon large numbers of highlanders were enthusiastically involved in setting up coffee nurseries with seed supplied by government agricultural extension workers. Everywhere, families and clan groups were clearing land for coffee.

From small beginnings in the early fifties, more than four thousand hectares of Arabica coffee has been established by villagers, mainly in the highlands near Kainantu, Goroka, Mount Hagen and in the Wahgi Valley, but also at Wau, and in the Huon Peninsula in the mountains behind Lae and Finschhafen. By the early seventies, the area planted by villagers had increased to an estimated twentythree thousand hectares producing some twenty-five thousand tones of green bean (raw bean) for export each year.

Papua New Guinea’s coffee growers experienced boom conditions for many years. In the highlands many new ventures based on coffee or the income from coffee were funded by a suddenly-adventurous banking industry. and business groups. At the same time a government-sponsored scheme for the establishment of scores of small twenty-hectare coffee plantations owned corporately by groups of village landowners, came into being. In the ‘eighties almost all the middlemen involved in the coffee trade, the buyers who trade either from trucks or roadside depots, were local businessman. Expatriates still provide management for the export companies and some of the larger mills, but ownership now rested almost entirely in the hands of citizens or citizen corporations. The View

Courage – the dedication and faith to move forward in the face of fear and overwhelming obstacles.

Historic economic shifts are taking place in the world. You do not need to be told this and we do not need to deeply explore the roots and causes. By now, everyone has their information and opinions without my adding two more cents. These changes are profound in the consuming countries where purchasing power is declining dramatically and job security is under attack.

What I do want to discuss is courage. In the face of declining customer counts and lower revenues it is hard to take the long view however, each of us in our businesses must do just that in times such as these. Fear causes poor decisions based on short-term goals. A crazy person starts a business, but a careful person keeps a business. Now is the time for all of us to be careful, but definitely not crazy.

In this issue, we present Frozen and Functional Beverages. However, the message is much bigger. Inside of these articles are seasoned professionals reminding all of us that our industry is built upon a successful business model – that producing beverages of the highest quality prepared with great care, and then serving customers with consideration and respect, will ensure prosperity. This model works and will continue to work through this economic downturn.

Most economists are anticipating that this period will last another 12 to 18 months. During this time we will see many companies, some household names, simply disappear. Many of your competitors will not successfully weather these times but in the end, we will be stronger and smarter. Those who succeed will be those who understand that the model works and the courage to continue to improve their products, their customer relations, and their business efficiencies.

Quality will always win in every phase of our businesses. This is true for independent retailers, small roasters, producers of allied products, importers, and yes…publications.

the leadership role of The Foundation. The purpose and mission of The Songbird Foundation and CoffeeTalk Magazine merge perfectly. We have always believed that consuming countries and producing countries are joined into a business and a spiritual relationship. Through Songbird, we can direct financial and human resources toward issues facing the coffeeworld from crop to cup.

When Danny began Songbird, the mission was simple. At that time, vast tracts of forestlands from Washington to Tierra del Fuego were being clear-cut to make way for monoculture agriculture. The migratory routes of birds from across North America funnel through Mexico and Central America and then on to South America. El Salvador, Honduras, and many other countries were rapidly approaching the complete destruction of their natural forests. Without intense intervention, the migratory flyway would be destroyed and millions of birds would simply die – the terrible ‘Silent Spring’.

With the intense response of Songbird, the Smithsonian Migratory Bird project, the Rainforest Alliance, Starbuck’s CAFÉ practices, and many others, the forests in Central America are in recovery and the threat is reduced.

Certification organizations are now in place to encourage and reward countries and growers for responsible and sustainable agricultural practices.

The role of Songbird now has grown to include mitigating our ‘carbon footprints’, consumer education through media entertainment, financial support of non-profit operations in countries of origin, international women business and resource development, and other activities. As Songbird’s role expands, we see that a tipping point is approaching in coffee.

No longer are the interests of consuming countries and producing countries opposed. Without a mutual understanding of shared purpose and prosperity we all are in danger of repeating the same self-interested business mistakes that have plagued coffee for 600 years.

With these changes, the name Songbird is all the more relevant. Seeing the beauty of songbirds is part of what sets us apart from the beasts. Winging from North America to Central and South America, they carry with them the promise of the hope of Spring, nature’s paintbrush splash of color against the green forest, and the message of promise for tomorrow. Songbirds represent our connection – North, Central, and South – and all the shared experiences and dreams of people everywhere. Songbirds are the Spirits of Hope, the Bringers of Change.

In the coming days we will communicate more about Songbird. Kerri and I hope that you will join with us in supporting these goals financially and with your time.

Frozen beverages – guidelines for troubled times

The specialty coffee industry and the current world economic situation are intimately tied to each other. Over the last 18 months, prices of coffee, cocoa, dairy, sugar, and other ingredients sold through specialty coffee outlets have soared, forcing suppliers to pass on price increases to their customers. Of course, retailers had to pass these increases on to their customers, the individual consumer.

Exacerbating these conditions is the recent credit crunch and near-collapse of many international economies. We are now experiencing staggering job losses in addition to very tight credit.The result is a future filled with questions that we cannot answer. Business owners of every size are unable to pin-down exactly what their cost of goods will be, both in the near and long term. This leaves many asking the question, “Will we survive”?

There is a bright side to all of this. These times represent challenge, not doom.

We can come through this and be so much better than we ever were before. We are being forced to make tough decisions that we just could not bring ourselves to make before. This could be releasing overpaid employees who never pulled their weight. Or hiring sales people on commission-only versus a high salary. The opportunity now exists to build the best relationships ever between you and your team. Why? Because everyone involved knows how important it is to bring his or her very best efforts to the job at hand. We all start to appreciate what we have, because we know it may all be gone at a moment’s notice. All involved can experience a sense of camaraderie like never before. It is like in the old movies; the locusts are coming to eat the crops and everyone pulls together to fight for the survival of the farm. Times like this can heighten our senses.

It is time to look at every possible way to understand your businesses better, or hold on tight and let the torrent of economic woe wash over you, while you resist the temptation to give into fear. Fear makes us react and use short-term band-aids right when we need long-term solutions that can only come from wisdom and a sense of calm.

You can consider eliminating products that are slow movers or are not profitable. Recognize which products bring you the most revenue, and focus your training, sales, and marketing efforts on those products. To help control costs, maximize order sizes to get either volume discounts or free freight from your suppliers. It is time to stretch our thought processes to areas they have not gone before. It has been said that necessity is the mother of invention. Necessity is also responsible for an awful lot of personal growth and enhanced business savvy. If ever there was a time that called to embrace this idea, now is that time.

I am bullish on the specialty coffee industry! The question is, “Why should I be?” Consumers can make a pretty good cup of coffee at home…so why do they go to a coffeehouse? To connect with people. That’s why! For those who are single, a lot of time is spent in the pursuit of connecting with someone to complete us, or just to find enjoyable company. For others, networking for business or for special interests, is a powerful motivation. Coffeehouses provide a unique and exciting place for us to fulfill those needs.

My particular experience and expertise is in specialty frozen beverages. Let me share some thoughts on how that background can help you in the best – and worst – of times.

Quality vs. Price

Specialty coffee houses are where consumers expect to find the best quality coffee products. Therefore, serving the very best quality that you as a business owner can find is an absolute must right now. A fast-food chain can get away with serving less than the best. Their customer base is a completely different type of consumer. That customer is more price conscious and less quality driven. It is important to know which type of customers you serve!!

Many retailers lie awake nights trying to think up ways to get new customers in the door, and how to keep the ones they already have. When economic times get scary some can forget what brought them their success. They may start wondering if replacing their current products or ingredients, for lower priced options, would be a way to keep them financially afloat. This can be a real trap.

I would only try this if I let my best customers taste the product and choose for themselves. They are the best judges of what they will purchase. Otherwise, if they find that they are being offered a different and sub-par quality product, you can kiss goodbye the loyal customer that you worked so hard to acquire.

Of course, it is always smart to get the best price you can from your suppliers.

A storeowner may think that saving a nickel to a quarter per serving for a given ingredient or product, will increase their bottom line. However, it is so important to remember that consumers do not purchase a price. They purchase a satisfying experience. Customers only come back for something they liked a lot! They come to your store for a quality experience, they do not give a hoot about how much you pay for it, they just want it to taste as good as it possibly can every time.

Specialty Frozen Beverages – An Excellent Profit Generator

Frozen specialty coffee beverages can be a great hedge against recession.

Even after significant price increases during the last couple of years, regardless whether frozen beverages are made from scratch, from a gourmet powder or a liquid mix, the cost-per- serving the retailer pays still hovers around $1.00; some higher, some lower, depending upon the quality and flavor purchased. Not bad, when considering that a sixteen-ounce serving is being sold for anywhere from $3.50 to $4.50. This makes specialty frozen beverages the single highest profit generator in “profit dollars” per each drink sold. This realization, in the face of the current economic situation, should bring a sigh of relief! They say that Starbuck’s profit is going down? If this is the case, I suspect it is “hot coffee sales” that are going down vs. frozen drinks. People can make a fair cup of coffee at home, but they cannot make frappes at home, they have to go to a coffeehouse to find good frozen coffee beverages.

“Will consumers continue to purchase specialty frozen beverages?” Of course they will!

Behavior patterns have shown that consumers will forego nights out on the town, take vacations closer to home, and belt tighten on their general spending, however one well known dynamic in consumer behavior is the importance of enjoying their daily minor indulgences. Each day we crave that special moment, and for some of us that urge comes several times a day. The coffeehouse is just where that daily tradition has been taking place. I say it will continue to be so.

Here are some last thoughts. With McDonald’s going into specialty coffee, retailers must make sure that the beverages they serve are much better than McD’s. This may sound a bit crazy; to actually spend more on what you serve when everything in front of you says spend less. But remember what brings the consumer back, great taste and a great experience. Make sure you supply this in your store. This is an absolute must. Taste test every drink on your menu. How does it compare to your best competitor? Look at what has been successful for you and tweak it to be even better. Keep an open mind; there may be a product that is a higher quality, that tastes better than what you currently serve. Most frozen beverage options are in the same general price range. The last point I am going to make is this. Whatever you do, don’t try to compete on price with McDonald’s. That is a sure road to the poorhouse. Believe in quality, serve quality and that’s what will keep your customers coming back.

Boosting Your Business with Functional Beverages

With health on everyone’s minds these days, consumers are seeking new ways to combat their ailments from weight loss and stress to immunity and energy. And, as the uncertain economy is tightening their belts on spending, consumers are increasingly choosing herbal and botanical supplements as a preventative health measure that is helping cut down on their skyrocketing medical costs.

According to the Calorie Control Council, an international association representing the low-calorie and reduced-fat food and beverage industry, as consumers have driven the food and beverage market toward preventative health and wellness, there will likely be an increased demand for ‘functional’ foods and beverages in 2009.

In fact, the Nutrition Business Journal, an industry-tracking publication, notes nationwide herbal and botanical supplement sales totaled $4.8 billion in 2007, when the recession began, up 4.3 billion over 2006.

This increasing propensity for supplements and functional foods opens new avenues for café owners to build upon already established beverage categories of coffee, tea, smoothies and blended hot and cold drinks.

“There is no doubt café owners can compete in the functional beverage category,” explains David Gross, Juice Bar Solutions, “Take a look in most beverage cases of coffee houses you’ll already see organic milk, acai drinks and vitamin infused waters. By adding hand-crafted functional beverages to your business you can expand your customer base and build business throughout the day.

This sentiment rings true with Matthew Lau of Sambazon who notes the increasing amount of “questionable” companies selling acai on the internet as a great way to lose weight. While Sambazon steers clear of the weight loss claim, “the freeze dried powder that is gaining interest from café owners who want to add the ‘real thing’ to their smoothie and other cold beverage offerings.

In addition to the liquid and powdered supplements that can be added to a variety of beverages, café owners can benefit from companies such as Elixr, which offer premium quality tonics that only require mixing with water. Whether it is a brain-enhancing tonic, or a relaxation tonic, the café owner can offer the customer a hot or cold tonic quickly and easily. “Instead of having tea, customers can easily get their tonic herbs and fruit extracts in and easy to prepare hot or cold beverage,” explains Claudia delVecchio, director at Elixir.

Giving Your Businesses a Boost

“Coffee cafes have become a place where they look for alternative beverages that they can’t get at their local supermarket,” explains Jamie Day, president and CEO, Beverage Innovations, Inc. “Therefore a functional beverage offering is essential for a coffee shop looking to remain on the cutting edge. Offering customers ‘value added’ functional beverage choices throughout the day when coffee related products are not top of mind is a sure way to boost sales.”

The addition of functional beverages offer new potential for profits, even though functional beverages carry a premium price. As Day notes, “The consumer who walks into a coffee shot is already mentally prepared to pay a premium for a beverage, so the premium for a functional beverage is not a big leap for consumers. Depending on the demographic area and the volume purchase, profit margins are in the range of 50 percent.

Adds Bill Haugh, founder and owner of Dr. Smoothie Brands, “When adding a nutritional component or boost to your smoothie or specialty beverage, you’re enticing the customer to customize their beverage to meet their own expectations.

Promoting the Category

Café owners have focused on handcrafting coffee beverages for years, and the functional beverage category should be no exception,” says Ben Weiss of Boosta Shot. “If you can customize freshly prepared frozen beverages with a personalized boost, you can bring in younger consumers and broaden the appeal of this category.” “The functional category brings excitement back into the category,” says Weiss, “come up with your own proprietary drink that customers can’t get elsewhere.”

Weiss suggests not to position functional offerings as an add-on, instead building the cost of the boost into the price of the drink. “If you put it on the menu board as an incremental 50 cents, you’re not presenting the product to the consumer in a way that they will get excited about it. Don’t think of it as a syrup [or powder], think of it as an ingredient that creates a whole new drink at a whole new price point. If done properly, it can create excitement in your café.”

Gross agrees with that contention, and suggests creating a separate functional line, rather than promoting “add a boost” to an existing beverage. “Give the functional beverage category its own place on the menu,” he explains.

Working on my “Q”

By Miles Small I seem to be the only journalist from the coffee industry that has taken the SCAA Cupping Certification and “Q” graders examination, at least as far as anyone I have talked with can remember, that is.

Inevitably, I am asked the question “WHY?” I understand the question, especially the emphasis, because the test is really hard! The course-work is really hard! The intensity of the process is, well…really hard!

So the answer to “WHY?” is, I truly believe that I have a responsibility to learn about the things I write about. A sort of Jack Kerouac/Dr. Hunter Thompson version of Journalism. That is why I took the roaster course with Mane Alves last year. I have been really uncomfortable not having a deep knowledge about cupping and the “Q” and so have drifted away from writing about it. Not a fair thing for our readers and definitely not fair to CQI.

This is not your everyday certification event. First off, there are only three places in the US where you can go for it (that number is soon to change). These are Coffee Labs in Vermont, owned by Mane Alves; SCAA headquarters in Long Beach; and now Coffee Solutions owned by Rob Stevens in Franklin, Massachusetts. The lab must itself be certified by the SCAA, which sounds easy but it isn’t. The test schedule must be proctored by a SCAA certified teacher, who are few and far between. Mane Alves is one, as well as Craig Holt from Atlas, Marty Curtis who was my Instructor, Ted Lingle, Willem Boot from Boot Coffee – plus a handful of others.

To say that the process is intimidating is an understatement. The first thing you are told is that there are webcams strategically placed throughout the lab and if that bothers you, or you think your butt looks big on TV, get over it or get out.

Every moment of the instruction giving and testing is monitored via live web by someone at CQI and the technical standards committee of the SCAA. Flitting on and off line as they please, these voyeurs are not only ensuring the consistency of the process but also the quality of the students and the presentation of the tester.

Over the course of five days, Marty led us through 23 separate tests to judge our ability and understanding of coffee including origins, cupping characteristics,

and identification of taints and flaws. We ‘Agtroned’ (is that a verb?), sized, and sorted; we measured moisture, learned about sample roasting, and we weighed.

We also washed a pile of dishes.

Our sensory abilities were tested and retested as we marched through challenges to our nose (olfactory) our taste (sweet, sour, salty) and our vision (roast quality, grind accuracy). The “Nez du Café” kit and I became very close... intimate even. Then there is that ‘vision’ part. Just when you are well into it, the lab is sealed from all light except a set of red ceiling lamps that take away all ability to perceive color. This is the dreaded ‘triangulation’ where you have to choose the one different coffee from three cups only it is not just the three cups, there are six sets of three cups in this eerie haunted house world and there are three different triangulation test events.

By the end of the second day I began to think that former VP Dick Cheney should learn about this, he would have considered it for his “enhanced interrogation techniques.” By then I was as compliant as a baby – lead me to a table and I will slurp. Most folks in the coffee industry know that I am not a daily cupper. Marty really seemed to get a kick out of taking my picture while I choked, coughed, and gagged after sucking coffee down the wrong pipe. To think that I travelled thousands of miles to participate in this self-inflicted ‘waterboarding’.

Nevertheless, you know, it was also really cool too.

So how did I do? Well, not bad. Most folks fail the first time so I did not go in with high hopes however by the third day I really thought I might pull it off. Alas, close but not quite. I slipped on one of the sensory tests and so did not pass. I was really disappointed, and a little angry with myself, but I have since become philosophical.

It took understanding of what a “Q” grader is to bring me around. A “Q” has the ability to make, or destroy, the fortunes of a grower. Being placed into a position of determining the quality of a producer’s coffee on record reminds the grader that with the title comes awesome power and responsibility, one not to take lightly or without deep and profound knowledge and respect. So, I am really glad that I did not pass the first time out, it might have seemed too easy. I will be taking it again real soon though, you can bet on that. CT
