Minty Melon Ice RECREATE THIS DECADENT RECIPE FROM ZAC POSEN HIMSELF. WHAT CAN'T HE DO?
“In New York City, an Italian ice is called an icy... Mint and honeydew are incredibly refreshing and instantly translate into something chic and elegant. Plus, since the ice is dairy-free and fat-free, it’s easy to serve to friends with dietary restrictions... You can always serve it in the style of Italian lemon sorbet, too: piled high into a frozen lemon half. It's also delicious made with some tequila or Prosecco instead of water.” Here's what you’ll need: ´´ 1 cup granulated sugar ´´ 4 sprigs fresh mint, plus 8 small sprigs for serving ´´ 6 cups frozen 1" honeydew melon cubes
Here's what to do: 1. Bring the sugar and 1/2 cup of water to a boil in a small saucepan, stirring often. Boil until the sugar dissolves, 2 to 3 minutes. Add the mint, cover the pan, and set aside to cool, at least 10 minutes. Remove and discard the mint and add 1 cup of cold water to the mint syrup. 2. Add the melon and mint syrup to a blender and puree until thick and slushy. Divide among eight small dessert glasses and serve garnished with a mint sprig and a spoon or a straw.
