JACOB’S CREEK JOHANN SHIRAZ CABERNET 2001 VINTAGE CONDITIONS Good winter rainfalls ensured soils were well filled before the Spring growing season and this resulted in healthy growth of vine canopies. Warm dry conditions in November provided ideal conditions for flowering and fruit set. Summer temperatures were 2-3ºC higher than normal, but healthy vine canopies were able to protect the fruit, which ripened slowly but with great intensity of flavour, colour and tannin. HARVEST Winemakers monitored blocks carefully throughout the ripening period, constantly tasting the fruit to ensure it was harvested at maximum flavour ripeness and acid balance. The various parcels of fruit for the Jacob’s Creek Johann Shiraz Cabernet were harvested from the middle of March to the end of April, 2001. WINEMAKING Once harvested, individual parcels of Shiraz and Cabernet Sauvignon fruit were kept separate in a range of fermenters and were inoculated with a neutral strain of yeast. During fermentation, temperatures were kept between 17-25ºC and the must was pumped over regularly to ensure good extraction of tannin and colour from the grape skins. The progress of each ferment was monitored during twicedaily tastings and regular analysis checks. The parcels were pressed separately and transferred into a range of oak hogsheads for maturation. After 18 months in oak, selected parcels of wine were carefully blended to ensure that the end product showed intense Shiraz and Cabernet varietal fruit characters, which are typical of the Jacob’s Creek Johann wine. WINE DETAIL The 2001 Jacob’s Creek Johann Shiraz Cabernet is the icon wine of the Jacob’s Creek range. The wine displays the seamless integration of high quality Shiraz and Cabernet fruit sourced from the premium grape-growing regions of South Australia. TASTING NOTE Colour: Deep Ruby Crimson Bouquet: The wine shows the delicate integration of spices and black pepper with luscious juicy cassis and red berry, this was achieved through carefully blending only the best Shiraz and Cabernet Sauvignon parcels. Developed aniseed and licorice notes along with integrated savoury oak give this wine complexity and richness. Palate: This wine shows enormous depth of fruit, with concentrated ripe blackcurrant and juicy blueberry flavours seamlessly integrated with savoury, charry oak. Well structured tannins give this wine elegance and finesse while still providing a balance with the wine’s intense ripe fruit characters. The 2001 Jacob’s Creek Johann Shiraz Cabernet has been bottle matured at the winery, so it is still fresh yet well integrated, and will delight consumers who choose to drink it now. On the other hand, carefully cellaring this wine for the next 5 to 10 years will enable further development and integration of the ripe and intense fruit flavours it has come to be known for.
