When “Kosher” is - or isn’t - “Kosher for Pesach”


hopping for Pesach can be rather complicated. Although year- round products shouldn’t be assumed kosher unless there is a genuine kashrut symbol on the package, we usually know exactly where on the package to look and what to expect. When shopping for Pesach, however, we have to be all the more careful that everything we are buying is really “Kosher for Pesach”. In general, the OU’s policy is that the packaging of all certified products must bear the OU-P (OU Passover/Pesach), and that there must be a Kasher LePesach ingredients list. However, in Israel this system is less common. The general rule in Israel is: if it says anywhere on the packaging Kosher for Pesach/Passover, the product is considered Kasher LePesach according to all the certifying bodies whose imprints appear on


the package. If any of the supervising agencies that oversee the product for year-round use do not want to certify the product for Passover, they must write an explicit disclaimer that their certification is for regular year-round use only – and not for Pesach. Additionally, because printing costs are higher in Israel and products are often produced by smaller companies, many Israeli kashrut agencies will allow a “Kasher LePesach” sticker to be added to regular year- round packaging. While such a label may be valid, it never hurts to check with the certifying kashrut agency. Always remember: whether for Pesach or even regular year- round kashrut – if a kosher symbol doesn’t seem genuine for whatever reason, check with the kashrut organization to verify the product’s kosher status. n

Why is this Hechsher Different from All Other Hechsherim?


e receive many inquiries regarding products that are certified by various kashrut authorities, yet Pesach, certification is given solely by the OU. Why is the OU willing to certify these products for Pesach when the other certifying agencies are not? The answer to this question is actually quite simple: Many of the kashrut authorities in Eretz Yisrael, like the communities they represent, have distinct minhagim for Pesach. A common minhag is that they do not, as a rule, certify products that contain more than four or five ingredients. Furthermore, only products that are deemed necessities are certified. These kashrut organizations see no reason to take responsibility for Pesach items that are not essential, and people in these communi-


ties generally forego use of non-essential products for the week of Pesach. The policy of the OU is to certify these items, if, and only if, all the raw materials are determined to be Mehadrin. (Often, all the ingredients are certified Mehadrin by the very kashrut organizations that are unwilling to give the end-product Mehadrin certification for Pesach.) As a matter of policy, the OU is strict regarding the level of supervision required for special production runs for Pesach products. In most cases, our requirement for extra high levels of hashgacha (supervision) on Pesach production-runs usually entails Hashgacha Temidit in all factories producing for Pesach. In short, the OU Kashrut Staff feel very comfortable telling Am Yisrael that they can expect the highest “Mehadrin” standards in our Pesach products, just as they can year-round. n

Motzi MaTza Shmura, Eighteen Minute, Hand-Made or Machine: What’s What?


ne of the least understood issues in Pesach kashrut is the distinction between the different types of matzot. Do I eat only shmura, eighteen minute shmura, regular eighteen minute matza, hand-made matza, Reichaim Shel Yad, or plain and simple Kosher L’Pesach matza? Is there really a difference? After all, if it says Kosher L’Pesach, isn’t it Kosher L’Pesach? The answers to the two latter questions are both YES: There are differences between the various types of matzot, and they are all Kosher L’Pesach.

Why Shmura?

The Torah tells us that we may not eat or even own any leavened bread during Pesach; however, the parameters of “bread” are not specifically outlined in the Torah. Our Sages teach us that matza must be created in a process that takes no more than 18 minutes from the moment flour and water come into contact until the process is completed. Therefore, all matzot that are Kosher for Passover must meet this criterion. However, the Torah tells us, specifically regarding the matzot that are eaten seder night, that we should ‘guard’ the matzot: “ “‫ושמרתם‬ ‫את המצות‬. We are commanded to watch


and guard the matzot so as to be certain that they do not become chametz (that is, by not allowing more than 18 minutes to pass from the time the flour and water come into contact). By commanding us to do something obvious – to watch or guard the matzot – the Torah appears to be using unnecessary, even redundant wording. Chazal therefore understand this commandment to be an additional obligation, specific to the matzot mitzva eaten at the seder. While we may eat no chametz throughout the seven-day holiday, we are specifically obligated to eat matzot on the seder night. The unusual, seemingly redundant wording of the verse ‫ ושמרתם את המצות‬is understood as an additional stringency for the matzot used to fulfill our obligation to eat matza at the seder; from this “extra” ‫שמירה‬ comes the concept of matza shmura. The clear implication is that for matzot to be considered “shmura” there must be something “excessive” – above and beyond the guarding of the flour – involved in their production. It follows that non-shmura matzot can be 100% kosher. If only shmura matza were kosher, by definition there would be Continued on page 17

nothing unusual or excessive about it or the process through which it was created or guarded – hence it would be regular matza. What sets shmura matza apart from “regular” matza? Even non-shmura matzot have an extra shmira. Rather than simply supervising the process of turning flour and water into matzot in less than 18 minutes, most matzot are made from flour that is Shmura miSh’at Techina – supervised or guarded from the time it is ground. According to many authorities, this level of supervision is sufficient for the matzot to be considered having an extra shmira. However, shmura matza is made from flour that is supervised from an even earlier stage – Shmura miSh’at Ketzira (from the harvesting of the grains). In both cases, the shemira is only halachically significant if it is done with express intention to prepare it for use as matzat mitzva (and not, for example, to meet government requirements or to prevent theft). On the other hand, because the whole idea of having matza shmura stems from this idea of extraordinary measures regarding matzot mitzva used at the seder, one only need use shmura matza for the seder. However, with regard to Pesach in particular, there are all sorts of minhagim (customs) that involve taking on extra

chumrot; using only matza shmura for the whole of Pesach is one such custom. Thus, there are those whose minhag is to use shmura matza all through Pesach, and they should continue to do so. For those who do not have this tradition or custom, there is no need to take on this extra stringency. There is, however, an additional reason why some people try to eat only matza shmura throughout Pesach: The Vilna Gaon was of the opinion that eating matza all seven days of Pesach may be a mitzva, as it says in the verse “Seven days you shall eat matzot.” If so, all matzot we eat for the whole of Pesach (in their recognizable form, and not in the form of matzo meal or cake meal) have the status of matzot mitzva and should therefore also require the additional shmira we have discussed. Those who eat only shmura matza for this reason may use non-shmura matza products such as cake meal, matza meal, or cakes and rolls made from matza meal.

Eighteen Minute matzot:

“Eighteen minute matza” is a term used to describe machine-made matza production during which the equipment is stopped, partially disassembled and cleaned every eighteen minutes, rather than after an eight hour shift (or some other set interval). Continued on page 18

Regular machine-made matza production does not include this 18- minute cleaning requirement, for several reasons: The concern that small bits of dough may adhere to the sides of the machinery is dismissed, because the machines that produce the matzot are in constant motion and all the dough is mixed constantly. There is consequently no risk of any chametz coming into existence. Two additional factors further reduce any possible concern. First, the minute deposits of dough that get stuck on the side of the machines (in little nooks and crannies) and get remixed into the matzot constitute a halachically insignificant percentage of the dough (this minute quantity is batel, meaning nullified or considered non-existent). Secondly, the machines are cleaned every few minutes, either with air guns or vacuum cleaners. While that cleaning process is not perfect (the equipment remains in operation, with a steady flow of matza production), it nevertheless provides yet another safeguard against the possibility of chametz.

While the same declaration could be made regarding the workers who control the production line of machine-made matza, it is a matter of contention as to whether or not this is effective, as they are not actively making the matzot but merely monitoring the machines. As a result, many people shy away from using machine matzot for the seder. This being said, there are those who prefer machine matzot over hand matzot, even for the seder. While hand-made matzot may be considered more mehudar because of the intent with which they were made, they cannot compete with the precision of machine-made matzot. When dealing with issues of chametz, every bit of precision counts. However, because many people have very particular minhagim regarding what they eat on Pesach, there are consequently people who will not use machine matzot, no matter how mehudar they are, because their ancestors did not use such matzot. Within the various categories of matza we have discussed, there is still a great deal of room for hidurim, whether the matzot are produced by machine or by hand. Consequently, there are, in fact, real differences between the brands and hashgachot. n

According to many halachic authorities, it is important that the matzot being used to fulfill the mitzva should be made expressly for this purpose. an extra stringency, the OU requires that during machine production of Matza under our supervision, all the rollers and belts are cleaned (not dismantled) with a vacuum or air gun every 3 minutes. u We are very particular that at the end of every shift (every 18 minutes for 18 Minute Matzot), all nooks and crannies of the machines are thoroughly cleaned. u We kasher the ovens used to produce Kosher L’Pesach matza with Libbun Gammur (ultra-high heating that turns metal white-hot). All plastic and rubber parts are changed and Teflon parts are either recoated or changed before the Pesach production-run (the same holds true for the hachshara between production of egg matza and regular matza. u We pay special attention to all parts of the


production line that lead to the oven (including the Pi HaTanur), to make sure that they stay cool. This involves special air-conditioning and ventilation techniques.

All Hand Matzot: We require that the paper sheets covering the ‘reidlers’ tables are changed approximately every two minutes. u We are very particular that the sleeves (of workers’ clothing) stay rolled up so as to avoid clothing coming into contact with the dough or collecting crumbs that may fall back into the dough. u The ovens used to produce matzot under our supervision are outfitted with special lights that enable us to monitor the matzot throughout the baking process. u

esach is a special yom tov that turns a spotlight on different kashrut-related subjects, some of which are exclusive to this seven-day period. Additionally, Pesach, to a large degree, centers on family minhagim. This article will examine one of Pesach’s more common family kashrut minhagim, kitniyot. Kitniyot as a category encompasses certain grains, legumes, or vegetables that Ashkenazi Jews have a tradition not to eat during Pesach even though they are not- nor can they become - chametz. This custom is not generally followed by Sephardic Jews, whose tradition has been to eat kitniyot during Pesach. The precise source of the minhag is not exactly clear, although it is referred to in writings of Rishonim. There are two primary rationales attributed to this minhag. The first refers to the harvesting process: the grains and

legumes in this category were grown or stored in proximity to wheat, which may inadvertently become mixed in and become chametz during baking or cooking. Alternatively, it is argued that the legumes and grains in this category were prohibited for Pesach use because they can be ground and used as a substitute for wheat flour, which might lead ignorant individuals to become confused and erroneously assume that wheat flour is permissible on Pesach. The parameters of this minhag are not always clear. For example, halachic authorities are in disagreement regarding the application of the ban on kitniyot to peanuts, cottonseed, quinoa, as well as oils produced from legumes in general. Furthermore, some earlier sources broadened this minhag to include coffee and tea. In addition, Rav Shlomo Zalman Auerbach zt’l is quoted as maintaining that the Continued on page 24

ne of the many preparations one must make for Pesach is kashering, a process to prepare chametz utensils for Pesach use. (Although most people only kasher their utensils in preparation for Pesach, the following directions apply to kashering all year-round as well.) As with all areas of halachah, those who are unsure of how to apply the rules of kashering to their situation should consult their local Orthodox rabbi.

General rules

There are two steps in kashering: 1. C leaning: removing all tangible traces of chametz, and 2. P urging: using heat to remove all ab-


sorbed chametz flavor.


All chametz utensils that will be used for Pesach must first be thoroughly cleaned. This involves the removal of all food, rust, dirt, calcium deposits and anything else that protrudes; it does not include the removal of discolorations. Items which have narrow cracks, crevices, deep scratches or other areas that cannot easily be cleaned, cannot be kashered for Pesach. Therefore, the following, for example, cannot be kashered: Colanders; decanters or baby bottles (due to their narrow necks) ; filters/screens over drains in sinks; graters; knives (or other utensils) where food or dirt can get trapped between the blade Continued on page 29

and handle; slotted spoons; sponges; toothbrushes. Additionally, the common custom is to cover tables, counters, refrigerator shelves and other areas where one might not have been able to clean away every trace of chametz.


In addition to cleaning, most items require some form of hot purging in order to remove the flavor that has been absorbed. As a rule, any utensil that came in contact with hot food, was washed with hot water or was used to store liquids, requires hot purging. A comprehensive analysis regarding when hot purging is required and how one determines which form of purging is effective is beyond the scope of this article. Rather we

it, even if one does not normally kasher artificial materials. As a rule, materials such as fabric, metal, wood, rubber and stone (for example, granite and marble) can be kashered.

Specific Items

All methods of kashering noted in this section presuppose that the equipment was thoroughly cleaned, as described above.

Silverware, Pots & Other Items

Small items are kashered with hag’alah, which involves three stages: 1. N ot using the utensil for anything, including non-chametz use, for twentyfour hours. This also applies to the (nonPesach) pot in which the hag’alah water will be boiled. 2. S ubmerging the utensil in boiling water that is over the fire. The water must be at a rolling boil before the utensil to be kashered is put into it, and the water must touch every surface of the utensil. Therefore, each item should be kashered individually, and the water should be allowed to return to a boil before the next item is placed into the pot. Large utensils may be submerged in the water one part at a time. 3. Removing the utensil from the water and rinsing it in cold water.


Kashering a Self-Cleaning Oven: 1. Remove any visible pieces of food (or other items) from the oven; 2. G o through one complete self cleaning cycle with the racks in place.


Kashering a Non-Self-Cleaning Oven: 1. Clean walls, floor, door, ceiling and racks thoroughly with an abrasive cleaner (for example, Easy-Off ) to remove tangible chametz. Pay special attention to the temperature gauge, the window in the door and the edges of the oven chamber. Black discolorations that are flush with the metal need not be removed. 2. O nce the oven is clean, it is preferable that it remain unused for twenty- four hours. 3. Place the racks back into the oven, and turn the oven to broil for one and-ahalf hours. 4. P esach food or pans may be placed directly on the door or racks once the oven has been kashered. If the oven has a separate broiler chamber, it should be kashered in the same manner as the oven chamber. A broiler pan that comes in direct contact with food cannot be kashered. Note: The method of kashering ovens described above is based on the ruling of Rav Aharon Kotler zt’l. However, Rav Moshe Feinstein ruled that the oven must either be kashered with a blowtorch, or that an insert should be placed into the oven for the duration of Pesach. Consult your own rabbi for guidance.


The grates of a gas stovetop should be kashered in the oven chamber in the same manner described above. For an electric stovetop, simply clean the coils and turn on high for ten minutes. If you have a glassContinued on page 31

topped stovetop, consult your rabbi for directions regarding the permissibility of use for Pesach or koshering methods. For a gas or electric stove, it is preferable to replace the drip pans that are under the burners; if this is not possible, the area should be covered with aluminum foil. The work area between the burners should be cleaned and covered with aluminum foil. The knobs and handles of the oven and stovetop should be wiped clean.


Kashering a Stainless Steel Sink: 1. If the filter covering the drain has very fine holes, remove the filter and put it away for Pesach with the chametz dishes. If the holes are larger, the filter may be kashered along with the sink. 2. Clean the sink, faucet and knobs, and don’t use the sink for anything other than cold water for twenty-four hours. 3. Boil water in one or more large pots (clean pots that have not been used for twenty-four hours). The pots may be chametz pots. 4. Dry the sink, then pour the boiling water over every spot on the walls and floor of the sink and on the faucet. One may kasher part of the sink and then boil more water for the rest of the sink. Extreme care should be taken during this type of kashering to ensure that none of the boiling water splashes onto the person doing the kashering or others who are nearby. 5. R inse the sink and faucet with cold water.

6. Put a new filter over the drain. One should also purchase new sponges and a fresh bottle of dishwashing liquid. Kashering a Porcelain Sink: Since a porcelain sink cannot be kashered, one should kasher the faucet and knobs as outlined above and, for the duration of Pesach, place a basin (or insert) into the sink. All dishes, silverware, etc., should be washed in the basin, and wash-water can be disposed of through the sink’s drain. One should be careful not to allow the sink to fill with hot water while the basin is in the sink.

Refrigerators, Freezers, Food Shelves and Pantries

These areas should be thoroughly cleaned, paying special attention to the edges where crumbs may get trapped, and the shelves lined with paper or plastic. The refrigerator and freezer will operate more efficiently if one pokes a few holes in the lining.

Kosher Countertops Get to Work on your Working Surface

Marble and granite countertops can be kashered for Pesach. This can be accomplished by thoroughly cleaning the countertop. After one is sure that the countertop is completely clean and free of all food residue and dirt, the surface must not be used for a full 24 hours (it isn’t a problem to leave objects on the surface during this period but hot pots and liquids shouldn’t be placed on it). At the end of the 24 hour waiting period, make sure that the surface is still dirt-free and pour boiling water over the entire surface taking special care that all areas are covered by the boiling water. One may boil a second pot and so forth and kasher the counter surface part by part. Note: special care should be taken that all seams of the countertop are cleaned thoroughly before kashering. This can be accomplished by running a toothpick back and forth multiple times. Even after koshering the countertops


the prevalent minhag is still to cover them as it is difficult to say for certain that the countertops are completely clean. Caesar Stone (Even Caesar) looks and resembles real marble, but it isn’t. Caesar Stone is actually made from 90+% ground quartz crystals and 10% or less glue and dyes. The glue acts to solidify the quartz crystals into a solid mass and then the mass is placed in a low heat oven to dry into a marble-like substance. As such it would seem that this Caesar Stone is halachically porous and therefore cannot be kashered. Therefore Caesar Stone should be thoroughly cleaned and then covered (some opinions maintain that it should be covered with two or more layers). Glass, wood, ceramic, and Formica countertops cannot be Kashered. Therefore they should be cleaned thoroughly and covered (some opinions maintain that they should be covered with two or more layers). n

Medicine Guidelines

You should exercise extreme caution and consult with your doctor and Rabbi before making a decision not to take a medicine.


Known and tested medications in the form of creams, non-chewable pills and injections may be owned, used and consumed on Passover, even if they contain chametz or kitniyot, since they are considered inedible. This covers most medicines used by adults. If an equally effective chametz-free alternative is available or procurable, this should be used instead. It is permissible to grind pills and mix the powder into food items so that a child can take medicine on Passover. However, a doctor must be consulted to make sure that the child is getting the correct dosage and that the potency of the pill is not compromised by altering its consistency.


Liquid medicines, chewable pills and pills coated with a flavored glaze are considered palatable and may contain chametz. Gelcaps may also present a problem because they may contain non-kosher edible gelatin.


Therefore: A. If possible, they should be replaced — under the direction of a doctor — with a nonchewable, uncoated pill. B. I f substitution is not possible and the person is in a state of sakanah or safek sakanah (any possible danger to human life), the medication may be owned and consumed. The same applies if the condition is not yet a safek sakanah but may deteriorate to that point. A Rabbi should be consulted as to whether it is preferable to purchase the medicine before or during Passover, and as to how to dispose of the medicine once the danger passes. C. If substitution is not possible and a doctor determines that there is no possibility of sakanah if the person does not take the medicine, a Rabbi should be consulted. He may be able to determine that the medicine does not contain chametz and/or kitniyot, or he may decide that the medicine may be consumed due to the seriousness of the patient’s condition.


In many cases, medicinal items that contain kitniyot are permitted for people who are ill. Questions on this issue should be directed to your Rabbi.


These guidelines do not address the more general prohibition of consuming medicines on Shabbat and Yom Tov. n

ne of the seven species with which Eretz Yisrael is blessed is grapes. While grapes can be enjoyed in their raw form, Chazal tell us that the main importance of grapes is the wine that is made from them. Wine has a special place in Judaism, and almost all Jewish ceremonies are inaugurated with wine - from Brit Mila to weddings, from Kiddush to Havdalah, from Sheva Brachot to Birkat HaMazon, and from Purim to the four cups on Pesach. Yet, although wine is a staple of Jewish ceremony, the laws regard-


ing kashrut of wine are quite complex. The most basic prohibition regarding wine is referred to as Yayin Nesech: Wine that was intended for use in idol worship is prohibited for Jewish consumption. Chazal enacted various additional halakhic safeguards in order to insure that we would not come to drink Yayin Nesech, including wine made by nonJews that was not intended for use in idol worship. This includes making sure that no one brings chametz into the areas where the wine is made and bottled. We also must make sure that the bottling machinery isn’t used for chametz products. In addition to the laws of Yayin Nesech and Stam Yainam, wines produced in Israel are subject to a unique set of halachot, known generally as Mitzvot HaTluyot BaAretz – mitzvot pertaining


to produce grown in the Land of Israel. Specifically, all produce grown in the Land of Israel is subject to various tithes (Trumot and Ma’asrot). However, there are different levels of obligation even within the modern State of Israel: In certain regions, Truma and Ma’aser are Torah-law obligations (d’Oraita). In other regions of Israel, the obligation to tithe produce is a rabbinic commandment (d’Rabbanan), while in certain areas tithes are taken by force of custom (minhag) and not law. It is halachically impermissible to mix tithes from the various regions. Another mitzvah unique to the Land of Israel is Orla (fruits borne by trees less than three years old). Israel’s burgeoning wine industry is relatively new, and many of the vineyards are newly planted, making Orla a serious concern. The Kashrut Division of the OU has invested much time and effort in order to be able to insure our rigorous Kashrut standards in this area as well. This is just the tip of the halachic iceberg regarding winemaking in Israel. ith our ever-shrinking globe, a question that was once rare has become quite common: If you are spending Pesach in a different time zone from your home base, how must you deal with selling your chametz back home? Does it matter if you go to a destination where Pesach begins earlier than where your home and chametz are, or if Pesach begins and ends later? In order to answer these questions we must first examine why chametz is sold. The Torah prohibits us to own


or possess chametz on Pesach. There are three mitzvot associated with this prohibition: 1) The positive mitzvah of tashbitu-to destroy your chametz prior to the afternoon of Erev Pesach; 2) Bal Yira’eh-not to see chametz for the duration of the holiday; 3) Bal Yimatzeh-literally, chametz is not to be found in one’s possession (in other words, one may not own chametz during Pesach). According to biblical law, one would be able to fulfill these mitzvot (at least the latter two) by reciting the verbal declaration called Continued on page 40

declaration called Bitul Chametz— nullifying chametz and relinquishing possession of it. However, the rabbis were concerned that human nature being what it is, a person may make this declaration halfheartedly and actually intend to keep his chametz, thereby violating the Torah Law. Therefore, they instituted an obligation to search for and destroy all chametz. However, if one has large amounts of chametz, one may sell it to a non-Jew prior to the onset of the prohibited time for retaining chametz. Selling chametz is actually mentioned in the Gemara, but only relatively recently it has become the universal custom to appoint one’s rabbi as the agent to sell personal chametz for the duration of the holiday and repurchase it at the holiday’s close. This brings us back to our original question regarding the timing of the sale of the chametz in your home if you are in a different time zone. The answer to this question hinges upon a debate: Does the prohibition of owning chametz depend upon where you are-or where your chametz is? Translated into the Brisk methodologyis this prohibition an issur cheftzah (object-centric) or an issur gavrah (personcentric)? The Chesed L’Avraham rules that the prohibition depends upon the owner; the location of the chametz is irrelevant. In other words, the chametz belongs to you, and it makes no difference where you happen to

be keeping it. However, the Teshuvot Oneg Yom Tov contests this and rules that the only consideration is the location of the chametz. (See Igros Moshe O.C.IV 94 and Emek Hateshuvah I:79 who rule in accordance with the former opinion that the physical location of the owner is the only consideration.) Current custom is to be stringent in accordance with both opinions. For example: if you live in New York and travel to Israel for Pesach, many US rabbis will arrange a special early Mechirat chametz so that the chametz is out of your possession when the holiday starts in Israel. If a foreign resident sells chametz through an Israel-based rabbi, instructions should be clear not to repossess chametz until the holidy is over abroad. The same is true for cross-continental travel: For a New Yorker travelling to California for Pesach, the prohibition of chametz begins earlier and ends later. Therefore, chametz should be sold with specific re-purchase instructions that take the time difference into account. We eagerly anticipate the day when the entire Nation of Israel celebrates together in one time zone, with the final exodus and redemption. he best guides to wine in Israel are the Bible and books on archeology. Since biblical times, Israel’s soil and mild climate have made it an ideal area for wine production. North of Jerusalem, in the region that belonged to the tribe of Benjamin there are the remains of hundreds of wine presses from the Second Temple period. Today, this beautiful area of ancient terraces is now dotted with modern vineyards. Wine has always had an important role in Judaism, but until relatively recently, most kosher wine was sweet Kiddush wine. It is only in the past few decades that Israeli consumers have begun to buy better quality wines and Israeli wineries have become successful exporters. Today there are hundreds of Israeli wineries ranging in size from boutique wineries that produce several thousand bottles to major companies that produce millions of bottles annually. According to the Yedioth Ahronoth website, Israeli wine exports reached $26.7 million in 2011. By 2012 Israel


was producing an estimated 36 million bottles of wine annually. Israel now has an estimated 50,000 dunams (12,355 acres) of vineyards. More than 80 percent of the vineyards are in the Shomron area north of Jerusalem, the Shimshon area between the Judean Hills and the Coastal Plain and the Galilee, which includes the Golan Heights. It is interesting to note that the growing conditions in Judea and Samaria, north of Jerusalem, are similar to Sonoma Valley, California. Winemakers from California, Australia and France have introduced new technologies which together with drip irrigation, have helped create a booming market for Israeli wine. Drip irrigation, which uses less water, yields grapes with stronger flavor. The most popular varieties of grapes today include Cabernet Sauvignon, Sauvignon Blanc, Chardonnay and Merlot. Other varieties include Muscat, Riesling and Syrah. In addition to traditional markets such as the United States and Europe, emerging markets for Israeli wines include Japan and China. n

1 1/2 teaspoon lemon juice or 1 1/2 teaspoon vinegar

1 cup graham cracker crumbs

1 cup ground cookies or soup nuts plus 1 teaspoon cinnamon

1 cup bread crumbs

1 cup matzoh meal

1 cup matzoh meal

3 matzot ground in a food processor

1 cup matzoh cake meal

1 cup plus 2 tablespoons matzoh meal finely ground in a blender or food processor and sifted

3 crumbled matzot

2 cups matzoh farfel

1 cup (8 oz.) cream cheese

1 cup cottage cheese pureed with 1/2 stick butter or margarine

Chicken fat or gribenes

2 caramelized onions (saute 2 sliced onions in 2 tablespoons oil and 2 tablespoons sugar. Cook until the onions are soft and golden; puree.

1 cup milk (for baking)

1 cup water plus 2 tablespoons margarine, or 1/2 cup fruit juice plus 1/2 cup water

1 1/4 cup sweetened condensed milk

Blend 1 cup instant nonfat dry milk, 2/3 cup sugar, 1/3 cup boiling water and 3 tablespoons margarine until smooth. To thicken, let set in the refrigerator for 24 hours.

1 cup wine

13 tablespoons water, 3 tablespoons lemon juice and 1 tablespoon sugar. Mix together and let set for 10 minutes.

Chicken fat for frying

Use combination of olive oil or vegetable oil and 1 to 2 tablespoons pareve Passover margarine

1 1/2 teaspoons Italian Seasoning

1/4 teaspoon EACH dried oregano leaves, dried marjoram leaves and dried basil leaves plus 1/8 teaspoon rubbed dried sage

Curry Powder

2 tablespoons ground coriander, 1 tablespoon black pepper, 2 tablespoons red pepper, 2 tablespoons turmeric, 2 tablespoons ground ginger. Makes 2/3 cup.

Pancake syrup

Use fruit jelly, not jam and add a little water to thin. Combine jelly and water in a microwave- safe bowl and heat gently before serving.

Seasoned Rice Wine Vinegar

Mix 3 tablespoons white vinegar, 1 tablespoon white wine, 1 tablespoon sugar, 1/2 teaspoon salt. Makes 1/4 cup.

Flavored Vinegar

Lemon juice in cooking or salad, grapefruit juice in salads, wine in marinades.

Water Chestnuts

raw jicama

Orange liqueur

Substitute an equal amount of frozen orange juice concentrate.

Egg Substitute (Passover egg substitutes don’t work quite as well as the chametz egg substitutes although they may be passable in kugels, matzoh balls, fried matzoh and some cakes.

To avoid using egg substitute, add one extra egg white and 1/2 teaspoon of vegetable oil for each yolk eliminated when baking. Use only egg whites as the dipping to coat and fry meats.

OU Israel Free Spirit Birthright Program Connecting Unaffiliated North American Young Adults to their Jewish Identity and to the Land of Israel This unique 10-day Israel experience is a first-time, peer group educational trip to Israel for Jewish young adults from North America. Designed to strengthen participants’ Jewish identity, our program emphasizes the connection between the Land of Israel, the People of Israel, and our vibrant Jewish tradition.


OU Israel Center Connecting old and new friends to Torah, Israel and one other The OU Israel Center encompasses a full range of community programs including daily shiurim, Friday night Onegs for young singles, enlightening tiyulim and stimulating Shabbatonim. The Center is the proud home of the Avrom Silver Jerusalem College for Adults,the primary provider of Adult Torah Education for the English speaking population of Greater Jerusalem, as well as the L’ayla Women’s Initiative, our blossoming Torah and community project for women young and old. Our Torah Tidbits is Israel’s most popular weekly English language Torah publication, circulated to virtually every Anglo community in Israel.
