RAYMOND C. HAUGEN 19262013 Raymond Calvin Haugen died peacefully on Tuesday, Oct. 15, 2013, surrounded by family at his residence in Montverde, Fla. He was 87 years old. He was born to Anton and Elizabeth Haugen on April 9, 1926 in Cook, Minn., where he also grew up, and later moved to Virginia, Minn. He joined the United States Navy during WWII and was stationed at Pearl Harbor. After being honorably discharged he returned to Virginia, Minn. and was united in marriage to Elizabeth Stanway and spent many years in the general contracting business. In 1964 he moved his family to Mora where he and his family resided until he retired in 1988 when he moved to

Brownsville, Texas. He and Beth resided there only for a few years and then moved to Montverde, Fla. He was preceded in death by his parents; wife, Elizabeth; son, Thomas Haugen; son-in-law, Mike Meyer; brothers, Melvin and Harvey Haugen; brother-in-law, Lloyd Bachman; sisters-in-law, Helen and Millie Haugen; and three granddaughters. He is survived by his four children, Sherill (Steve) Langager, Rochelle Meyer, Bob (Laurie) Haugen and Sheila (Norman) Johnson; 13 grandchildren; 24 great-grandchildren; one great-great-granddaughter; brothers, Earl, Leighton and Lenny Haugen; sister, Donna Bachman; and many nieces and nephews. Honorary pallbearers will be Sheldon Langager, Seth Langager, Stacy Dufault, Sherri Torres, Stephanie Gunning, Becky Haugen, Jessica Ferraro, Ashley Haugen, Bambi Jes, Fawn Jes, Thomas Haugen, Jennifer Painter and Bradley Haugen. A memorial service will be held at 11 a.m. Monday, Nov. 25, at the First Presbyterian Church, Mora. Inurnment will be Tuesday, Nov. 26, at Fort Snelling National Cemetery, St. Paul.

APPETIZERS BBQ Meatballs Mix: 2 lbs. hamburger 1/2 C. milk 1/2 C. cracker crumbs Grated onions Form into balls.

8 C. Corn or Rice Chex cereal (or Crispix) 1 C. pretzel twists 1 C. honey roasted peanuts 1 2 lb. bag peanut M&Ms 1 C. packed brown sugar 1 C. butter Melt butter and sugar and slowly boil for 2 minutes, stirring constantly. In large bowl, mix butter mixture with remaining ingredients (except M&Ms) and spread onto a jelly roll pan.

Sauce: 1 C. brown sugar 3 tsp. vinegar 2 Tbsp. minced onion 1/2 C. ketchup 2 tsp. prepared mustard

Bake at 375 degrees for 8 minutes; stir and bake for 8 more minutes. Cool on wax paper and then add M&Ms.

Place rolled meatballs in shallow dish. Pour sauce (heated in kettle) over meatballs. Bake at 350 degrees for 45 minutes. Submitted by Joanne Olen, Mora

1 qt. unsweetened pineapple juice (chilled) 1 qt. Ginger Ale (chilled) 1 qt. lime sherbet (slightly softened) 1 qt. vanilla ice cream (slightly softened) Frozen green grapes/lime slices/mint sprigs

1 C. white sugar 1 C. brown sugar 1 C. butter or margarine 1 C. oil 1 egg 3/4 tsp. salt 1 tsp. soda 1 tsp. vanilla 1 tsp. cream of tartar 1 C. Rice Krispies 1/2 C. coconut 1 C. quick oatmal 3 1/2 C. flour

Combine first four ingredients in a large bowl. Using a rotary beater, beat until just smooth. Pour mixture into chilled punch bowl. Decorate with clusters of frozen green grapes. Float lime slices garnished with mint sprigs. Serve immediately. 1 quart = 4 cups.

Cream together sugars, butter, oil, egg, salt, soda, vanilla and cream of tartar. Add Rice Krispies, coconut, oatmeal and flour. Drop on cookie sheet and press down with fork. Cherries in the Snow Beat: 6 egg whites 1/4 tsp. salt Gradually add:

1/2 tsp. cream of tartar 1 1/2 C. sugar Beat well and spread in lightly buttered 9x13” cake pan. Bake at 275 degree oven for 1 hour. Turn oven off and leave until morning. Do not open oven. In the morning, beat softened cream cheese, 2 (3-oz.) pkgs. Add 1 C. sugar and vanilla, mix well. Whip 2 C. of whipping cream and blend into cream cheese mixture, add 2 C. miniature marshmallows. Spread on top of crust. Refrigerate 4 to 5 hours. Before serving, mix together 1 can cherry pie filling and 1 pkg. frozen strawberrries (thawed, not drained). Mix together. 3/4 C. sugar 3/4 C. corn syrup Add: 2 T. melted butter 2 C. chocolate chips 1 C. coconut 1 C. chopped pecans Pour in pie shell. Sprinkle 3 Tbsp. coconut on top. Bake at 350 degrees for 50 minutes until filling is set. Cool. Refrigerate.

(24-26 squares) graham crackers 1/2 C. melted butter 1/4 C. powdered sugar 1 can sweetened condensed milk 1 tsp. vanilla 2 C. coconut 1 pkg. chocolate chips Bottom Crust: Finely crush graham crakers (use rolling pin). Add 1/2 C. melted butter and 1/4 C. powdered sugar. Mix together. Put in 9x13” pan. Bake at 350 degrees for 10 minutes. While that is baking, mix in bowl: 1 can sweetened condensed milk, 1 tsp. vanilla and

Mini pretzels 20 Rolo candies 20 pecan halves Preheat oven to 300 degrees. Arrange pretzels in single layer on parchment lined cookie sheet. Place one Rolo candy on each pretzel. Bake 4 minutes. Swedish Rice Pudding

Oatmeal Pancakes Serves 3 Add fresh fruit and lean protein, such as turkey sausage, to make a balanced meal 1/4 C. all-purpose flour 1 C. quick-cooking oats 1 Tbsp. sugar 1/2 tsp. baking powder 1/2 tsp. baking soda 1/4 tsp. ground cinnamon 1/8 tsp. salt 1 C. nonfat buttermilk 2 Tbsp. butter, melted 1 large egg Cooking spray 1. Lightly spoon flour into a dry measuring cup; level with a knife. Combine the first seven ingredients in a medium bowl, stirring with a whisk.

1 lb. Italian sausage 1/2 C. chopped onion 1/3 C. bread crumbs 1 egg 3 Tbsp. parsley 20 jumbo shells (boiled/ drained) 2 15 oz. jars Ragu 1/2 C. Parmesan cheese Fry sausage and onion. Drain. Add egg, bread crumbs, parsley and mix well. Fill shells with meat mixture. Pour half of sauce in bottom of a 13x9� pan. Arrange shells in baking pan and pour remaining sauce over them.

SALADS/ SIDE DISHES Fruit Salad 1 can chunk pineapple, drained 2 small cans mandarin oranges, drained Red and green grapes 1 8-oz. Cool Whip 1 can lemon pie filling 1 3-oz. pkg. instant lemon pudding, use dry

2 C. cream-style corn 2 eggs, well beaten 1 tsp. salt 1 tsp. sugar 1/4 tsp. pepper 1 Tbsp. butter 4 Tbsp. cracker crumbs

Put Cool Whip and pudding into bowl and mix. Drain pineapple and add, mix again. Add marshmallows and nuts, mix again.

Heat oven to 350 degrees. Mix ingredients except cracker crumbs and pour into a 8x8” baking dish. Cover with crumbs and bake for one hour. Serves 4. Submitted by Susan McEwen, North Branch

Turkey Stuffing 1 large onion, chopped (1 C.) 1 C. chopped celery 1 C. melted butter 18 C. (about 2 loaves) dry bread crumbs 1 Tbsp. poultry seasoning 1 1/2 tsp. salt 1/4 tsp. pepper 2 eggs, well beaten

1 14-oz. can pineapple chunks, drained 1 14-oz. can peach slices, drained 1/2 C. brown sugar 1 C. raw cranberries 2 Tbsp. tapioca Mix pineapple, peaches, brown sugar, cranberries and tapioca together. Put into a casserole dish and bake 1/2 hour at 350 degrees. Submitted by Susan Larson, Isanti

Ham and Cheese Bread Pudding 1 baguette, cut into 1” cubes 2 Tbsp. oil 1/2 onion, diced 8 oz. ham, cubed 2 C. cheese, like cheddar, swiss or gruyere 3 eggs 2 C. milk 1 Tbsp. good mustard 1 tsp. salt 1/2 tsp. pepper 1. Sauté onion with oil until tender. Add ham and cook for 1 minute. Set aside. 2. Whisk together eggs, milk, mustard, salt and pepper. 3. Spray an 8” square baking dish. Place bread in dish and toss with onion, ham and cheese. 4. Pour egg mixture over bread and allow to soak for 20 minutes. Bake in a 350-degree oven and bake until golden

Homemade Chili 1 lb. hamburger 1 garlic clove, crushed 1 small onion, diced 1/4 tsp. salt 1/2 tsp. oregano 2 tsp. chili powder 6-oz. can tomato paste

1. Heat oil in large saucepan over medium heat. Add onion and garlic. Cook and stir 3 to 5 minutes or until onion is tender. 2. Stir in chicken, cumin, beans and chiles. Reduce heat to low. Cover and cook an additional 10 minutes, stirring occasionally. Stir in sour cream.

Directions: 1. Heat the oil in a 4-quart saucepan over medium-high heat. Add the turkey, onion, chili powder, cumin, oregano, black pepper and garlic powder. Cook until turkey is well browned, stirring frequently to break up meat. 2. Stir the broth, salsa, sugar, beans and corn into the saucepan. Heat to a boil. Reduce the heat to low. 3. Cover and cook for 30 minutes. Stir the chili occasionally while cooking.
