orth Shore fine artist Nancy Kaplan Kuppersmith specializes in creating one-ofa-kind artwork enhanced with thousands of Austrian-imported Swarovski crystals that she meticulously hand-applies to bring the work to life. Think of a vintage Chicago travel poster that features 4,500 crystals in just the red beach umbrella alone and a personal wedding photograph in which the bride’s gown is enhanced with 2,000 crystals, some of them no larger than a poppy seed. “Each crystal is like a precious little jewel and the effect of thousands together is quite captivating,” says Kuppersmith. “The radiance and brilliance of the Swarovski crystals help to bring the art to life, shimmering as they capture and reflect light. As viewing angles and lighting conditions change, so too does the piece of art.” But while Kuppersmith grew up in an artistic household—her mother, she says, was always painting, sewing, and visiting the Art Institute of Chicago—it was a foregone conclusion that she would eventually attend law school. “I never really considered other possibilities,” says Kuppersmith. “It seemed logical and reasonable. I wanted a career and wanted to help people.” After graduating with a degree in political science from Tulane University in New Orleans, Kuppersmith headed West to study law. It was in the Bay Area that she first met her now husband of more than 30 years, Mike. He, too, practiced law and was happy

doing so. Kuppersmith, however, was not. Once the couple had kids and moved to Glencoe, Kuppersmith left law and shifted her attention to raising a family, becoming involved in many of the kid’s activities. However, it was what happened while the kids were at school that really recharged Kuppersmith’s batteries, so to speak. “I could often be found in our home’s very well-stocked craft room,” she says. “I made jewelry, designed invitations, crafted mosaic trays—a litany of things. I would become completely consumed and lose track of time. Creating things nourished my soul. It still does.” Upon becoming an empty nester years later—a defining period in her life—Kuppersmith looked inward and decided to return to her artistic roots. Thanks to her antique collecting parents, she had always loved colorful vintage posters and fruits and vegetable labels, so she tested a theory by mounting the pieces on a board and adding crystals. The results were “dazzling,” and Kuppersmith knew almost immediately that she was on to something unique. It was her mother who then encouraged her to continue creating, take more risks, and develop new techniques. “My mom then passed away. The adjustment to becoming an empty nester was, no doubt, compounded by the loss of my mother. It was a seismic shift in my world and a period of introspection,” recalls Kuppersmith. She sought refuge in her studio, spending hours quietly honing

her craft and committing to art in a way she had not done before. It was there that she felt closest to her mom, and Kuppersmith calls the period “therapeutic.” She came away from that time with a greater sense of self and a renewed desire to create, formally launching NIK Crystal Art Studios and expanding her process to geometrics and photographs. Despite having no formal art education, the studio took off and commissions started rolling in. Her most ambitious? A private individual called upon Kuppersmith to recreate a 1960s photograph of a luxe coffee van in Florence as a gift to espresso machine manufacturer La Marzocco. The work was later installed at the Accademia del Caffé Espresso, a coffee museum located outside of Florence. “An Alfa Romeo van sits in the foreground with the Duomo and rolling hills of Italy in the background,” explains Kuppersmith. “After increasing the contrast and making some additional edits to the original high-quality image, I added 24,000 crystals in 35 different colors and nine different sizes. I want the crystals to enhance a piece, not take it over.” Using Swarovski crystals in a variety of sizes and colors allows Kuppersmith latitude to create depth, shading, detail, and nuance.

She likens the process to that of a portrait artist mixing paint colors. Once she applied the process to larger, more intricate pieces, the possibilities became endless. “My newest technique allows me to elevate a client’s personal photographs into unique, meaningful pieces of art,” says Kuppersmith. “After converting color photos to black and white, I recreate spotlights of color in a photo editing program. Then, the crystal application process begins with my palette of more than 120 colors, many with differing effects.” Take, for example, the photo of a young couple in Beirut. Their daughter brought the image to Kuppersmith, telling the story of her parents who fell in love, emigrated to America, and have now been married for 58 years. “It had become a treasured family photo of when the parents first met,” notes Kuppersmith, who individually applied 9,000 crystals in 25 various colors and eight sizes to the image. “The daughter gifted it to her parents and now it will stay in their family forever. It was such an honor to create this piece, and I felt so connected to this family and the couple’s beautiful love story.” Kuppersmith has since memorialized album covers, reproductions of vintage posters, travel landscapes, cartoon characters, and more. What she would like to do next is continue working with photographs to further refine her technique, explore new contemporary and classic applications for her work, and create original artwork with her own photography. “Each piece is so special and brings me so much joy to create,” says Kuppersmith. “I think that the most meaningful way to honor my mom is by taking my work to the next level.” For more information, visit nikcrystalart.com or follow Kuppersmith @nik.crystal.art on Instagram.

T

he one-year anniversary for any restaurant at any time is a monumental achievement. But for those who came through the past year’s international health crisis, it’s an even bigger deal. Winnetka’s Spirit Elephant, the North Shore’s first fully-plant based restaurant and bar, opened its doors in January 2020, serving dishes with organic, locally sourced, and seasonally focused vegetables front and center. That healthy, environmentally friendly focus helped the restaurant not only survive but thrive. The sweet spot Spirit Elephant hit with its internationally inspired, yet approachable menu won the hearts and appetites of the entire community. So much so that the restaurant team is even readying a fast-casual version of the concept for launch in Evanston in the next year. “Our ethos, first and foremost is to serve amazing tasting food,” says owner CD Young. “Memorably delicious dishes that appeal to everyone—not just vegans and vegetarians. We knew we would have the hearts of vegans, but we wanted omnivores to taste and see that eating plant-based is not a sacrifice in any way.” To win those omnivores over, Young crafted a menu with lots of “gateway” comfort foods: Things like Mac & Cheese with a crunchy topping of roasted rice panko and house-pickled Fresno peppers, or the BBQ Burger with smoked Gouda cheese, tomato, lettuce, pickle, and frizzle of crispy onion on a pretzel bun. And then there’s the Jerk Meatless Loaf with fried plantains, black beans, and rice, and the Fig Flatbread, with mint pesto, mozzarella and cheddar cheese, poached figs, tomatoes, and a bright overlay of fresh arugula tossed in lemony herbed oil and finished with a balsamic drizzle.

“These are all familiar comforting foods that everybody likes,” says Young. “Once they have had a taste of these dishes and like them, they’re more likely to dive deeper in, trying our salads, plant-forward curries, and entrée bowls such as our hugely popular Pad Thai bowl.” It’s a smart strategy and one that’s working. “We are very aware that for every person who loves vegetable-forward eating, there are also family members who may eat differently,” says Young. “Most of our repeat business comes that way. I can’t tell you how many times vegans and vegetarians have said to me, “This is the only place we can come where the rest of the family likes it as much as I do.” Young says she started moving toward vegetarianism after living for 10 years with her family in London. “There were so many great restaurants serving super flavorful plant-forward Indian and Asian fare. And when I cooked, those were the dishes I would make.” But back in the United States, “it was really the documentaries that showed the negative impacts of factory farming on both animals and the environment that prompted me to become a vegan. The more I learned about the conditions that these sentient beings are subjected to—and simultaneously, how positively plantbased eating affects the environment and human health, the more I knew I wanted to be a part of the change for a better way.”

Adopting a vegan lifestyle Young says she lost weight, gained energy, and just felt happier. “There really is a mind/body/planet connection,” she sums. Wanting to share the healthy, feel-good, and do-good aspects of plant-based eating with the North Shore and beyond, she opened Spirit Elephant. In addition to the accessible food, her restaurant’s stylishly open design is equally welcoming. Filled with plants and warm lighting, Spirit Elephant has multiple seating options. There are booths, tables, and a plush nook near the white-marble bar which stretches the entire length of the restaurant. About that bar: “We knew from the start that we wanted to have a full bar with the restaurant,” says Young. “It just made so much sense—all of the botanicals, herbs, and fresh fruits that we could feature in beautiful cocktails.” Take for example the CherryGo-Round, Spirit Elephant’s cherry spin on a traditional Cosmo, with Titos, cherry juice, Pama, fresh lime juice, dry curacao, and simple syrup. And just as the restaurant goes the extra mile with house-made sauces, and pickles—such as the earthy smoked beet ketchup served with the fries, cocktails get special treatment, too. The ice sphere you’ll get in your

Elephant in the Room cocktail (Spirit Elephant’s Old-Fashioned) is house-smoked over cherry wood, adding nuance to the mix of Bulleit Rye, Demerara syrup, Luxardo Cherry, orange, and bitters. Everything—from soups, shareables and salads, to bowls, “Prime Cuts” (main dishes), cocktails, and dessert is made with no eggs, dairy, or animal products of any kind. For your gateway experience, be sure to try Chef Gabriel Iriarte’s Cauli-Wings (golden cauliflower nuggets coated in gluten-free batter, deep fried, and served with choice of Buffalo, BBQ, Wasabi-Dijon, Jerk, or Mango Chili Sauce). His Forbidden Rice bowl, with blackened tofu, tri-color cauliflower, fresh mango, confit tomatoes, avocado, toasted coconut, watermelon radish, and a mango chili drizzle, is exotically refreshing. Be sure to finish any meal with one of Pastry Chef Lisa Centner’s desserts. Her Raw Brownie a la Mode is a meltingly dense dream of Medjool dates, candied walnuts, cocoa powder, and chocolate sauce with vanilla gelato, sea salt caramel, and whipped cream. And her carrot cake—full of fresh shredded carrots and toasted pecans, gets the same vanilla cream cheese frosting that Centner slathers on the mammoth cinnamon buns she bakes for brunch. esigned as a portal into the landscape, history, and rich multi-cultural identity of the region, the recently opened Conrad Punta de Mita is designed to offer immersion in Mexico’s Pacific coast. The resort’s layout pays homage to the traditions of the indigenous Huichol people who have inhabited the mountains of central Mexico for more than 15,000 years. “From thoughtfully designed rooms to unique restaurant concepts driven by age-old recipes and enriching programming, we tapped deep into the region’s local heritage to provide an experience driven by exceptional service that meets the demand of today’s discerning traveler,” notes General Manager Marco Tabet.

Almost every resort vantage point, including guest rooms, offers views of the dramatic coastline, majestic Sierra Madre mountains, and palm trees that dance in the breeze. The resort’s nature-centric design encourages wellness and reflects a core belief of the Huichol that transformation and personal development occur through connection to nature. This admiration of nature is mirrored in the resort’s open-air common spaces including its luxurious pools, four dining venues, and indoor/outdoor spa. A labyrinth of paths intertwines the shimmering swimming pools surrounded by woven wood cabanas and chaise lounges half-submerged in water offering the coolest way to sunbathe. The overall design of Conrad Punta de Mita nourishes the mind and soul, but it is the cuisine that nourishes the body. All four restaurant menus and spaces pay tribute to age-old techniques and flavors of the local region. Executive Chef Victor Palma takes great delight in his position researching ancient ingredients to incorporate into his aromatic and enchanting cuisine.

The specialty restaurant Codex, lying at the resort’s edge, creates a sense of wonder and intimacy through a curated dining experience. Guests enter a forest of mangroves before reaching an entry with four fountains. Here they are handed a candle and asked to turn to each source of water for a gratitude ritual. Next, guests enter the dining room which rests on an elevated wood deck beneath an intricate bamboo ceiling. An open “window” to the ocean completes the hypnotic embrace … and the culinary journey has not even begun. Codex, inspired by the ancient Aztec book of herbs, ‘Codice,’ features traditional Mexican fare prepared with locally sourced ingredients. The seasonal Full Moon Experience offers a menu directed by the phases of the moon, on-property fermented mezcal tasting, and a discussion with local farmers on the health benefits of their crops and herbs used to prepare the meal. This is not just dinner, this is a true culinary escapade. The open-air Mezquite, one of our favorite restaurants, and just up the beach from Codex allows guests to dine on delicacies while toes rest in the sand. For lunch one day, we enjoyed a true sea-to-table affair, the Zarandeado experience, led by Executive Chef Palma. Fishermen from a local village brought their fresh catch for the chef to prepare one of Nayarit’s classic specialties, Red Snapper a-la-Zarandeado. This 500-year-old method of grilling fish over hot coals incorporates an abundance of spices and a “flipping” of the fish. We assembled fish tacos with the succulent grilled meat, salsas, guacamole, and pickled onions—Buena comida! Don’t miss Mezquite’s fresh grilled octopus and assortment of delicious salads (we recommend the quinoa with feta, green apple, and peas in a savory sesame dressing or the roasted squash with gorgonzola and arugula in a light dressing with a hint of vanilla.)

The traditional post-dinner charcoal popsicle is always a hit with guests and has the added benefit of aiding digestion. Start your mornings on Arbol’s patio and embrace nature while perched above the expansive grounds overlooking the pools and beach. Fortify your body with the avocado toast accented with delicious chunks of lobster or with the stuffed Chile Relleno, a popular choice. End evenings in the Agave Studio just off of Arbol’s entrance. Spirit aficionado and the resort’s Food and Beverage manager Ana Martinez will lead you on a journey of Mexico’s agave introducing you to the differences between Mexico’s well-known spirits with samplings of several different varieties including tequila, mezcal, and raicilla. You’ll even sample a sotol laced with a bit of viper venom. Last but not least and at the social heart of the resort, lies the open-air Paleta. A woven wood ceiling embodies a design in honor of the Huichol allowing light to enter and dance in patterns across the floor. My go-to here was the poke bowl with melt-in-your-mouth tuna, avocado, and Chile serrano—in one word—divine. The celebration of tradition and nature does not end with the resort’s overall design or with the restaurants’ cuisine. The indoor/

outdoor 10,000-square-foot Conrad Spa enhances wellness and mindfulness through indigenous rituals and natural elements. Upon entry, guests will find the air permeated with a customized smell that is spellbindingly glorious. Guests are then led through a vine encased tunnel to outdoor hummingbird nest-like cocoon treatment rooms handwoven from local wood. Therapists use a collection of rituals and therapies inspired by ancient traditions, local flora, medicinal herbs, essential oils, and extracts for an experience one is not likely to forget. For the adventurous, the spa also features a traditional clay Temazcal or “house of heat” providing a cleansing experience for body, mind, and spirit that has been a tradition within Mexican culture for over 1,000 years. The resident shaman awaits your arrival. If you can tear yourself away from the spa, pools, and beach, the resort also boasts a 24-hour state-of-the-art fitness facility overlooking the perfectly manicured grounds. While all of the amenities are outstanding, I would be remiss not to extoll the tremendous virtues of Conrad’s people. We found everyone from the general manager and executive chef to our stewards at the pool ( Julio and Alfonso), to be extremely friendly and conscious of our every need. It is often the people that can make a place that much more special. Speaking of special, on our last evening my daughter suggested we walk along the beach despite the rain. Sea turtles favor this two-mile stretch of beach for laying eggs and earlier in the day we noticed several signs marking nests. On our sunset stroll (and to our absolute delight) we came across a nest of hatchlings making their way out of the sand and across the beach. My daughter

dashed off to alert hotel staff and then we all spent 45 minutes shooing away crabs and birds, watching these tiny turtles head to their watery new home. At first, the little creatures tumbled and tossed in the waves but as soon as they were upright they took off as if they had been swimming for years. We bid farewell to the turtles, thanking them for this extraordinary experience which was the penultimate moment for a trip full of truly magical moments. Elaina Vazquez opened Winnetka’s Towne & Oak café and private event space amid a pandemic but despite that setback, this seasoned chef envisions a long and successful tenure on the North Shore. WORDS BY ALLISON DUNCAN / PHOTOGRAPHY BY CRISTINA G PHOTOGRAPHY

C

elebrated chef Elaina Vazquez has trained at a few of the most notable Michelin-starred restaurants in the country, like TRU, Avenues at the Peninsula Hotel Chicago, and the world-renowned Joël Robuchon at The Mansion at MGM Grand in Las Vegas. A graduate of The Culinary Institute of America, Vazquez says her love for cooking originally stems from her Puerto Rican heritage. “Food is a huge part of my culture, and I loved growing up surrounded by lots of people eating really good food,” she explains. “I spent a ton of time at my grandmother’s house, and she was an excellent cook. Since I was five-years-old, I knew I wanted to be a chef one day.” Having earned her chops at the highest level under famed chefs and hospitality concepts—and having grown tired of the fastpaced restaurant life in Sin City—Vazquez had an idea to translate the beautiful food, attention to detail, and highest standards of quality to catered events. She picked up a few odd party jobs from her one-bedroom apartment in Vegas as a side hustle but ultimately decided to

move home to Chicago to launch Boutique Bites, a creative and custom catering and events company specializing in the mix of stylish food and exceptional presentation, in 2008. The idea? To bring restaurant-style food to catered parties. “I should have been nervous, but I wasn’t,” says Vazquez of the 2008 Great Recession. “I wanted to create something of my own and knew it was time after reaching the pinnacle with Joël Robuchon. I had zero expectations and had nothing to lose.” Starting small with a team of one for the first year, the concept soon took off and, in 2014, Vazquez expanded to a West Loop headquarters with a 4,000-square-foot commercial kitchen and a private event venue, BRIQUE. She slowly built a dedicated clientele on the North Shore who appreciated the pairing of Vazquez’s background in fine dining with her appreciation for casual entertaining. So, when the lease on her West Loop space came up in 2019, Vazquez decided to switch things up once again. “Boutique Bites clients were always telling us they wanted a place to stop and grab dinner on the way home, and our casual food menu of simple things done well really took off in recent

years,” says Vazquez. “I wanted to build a place where I’d want to eat every day. That’s how I approach things, in terms of what I like and what I feel is missing.” That became the inspiration for what is now Towne & Oak in Winnetka, a 10,000-square-foot café and private event space in the Hubbard Woods business district that opened in October with a menu of easy and delicious grab-and-go items along with made-to-order favorites like salads, tartines, and more. Vazquez gut-renovated the former antique emporium—an eight-month process—and centered the Napa Valley meets Nantucket design aesthetic around the two living trees, standout skylight, and exposed beams that already existed in the space. Her goal was to preserve as much of the existing elements as possible with minor enhancements. Just don’t ask about the signature shade of blue—it’s a secret. “We started building in February 2020 and then COVID-19 hit. But we made the most of it, and I’m really proud to be a female, minority-owned business that opened during a pandemic. It takes a lot of guts to do what we did,” explains Vazquez. Vazquez wanted to end up somewhere that felt like a true community and says she’s found that in Winnetka. With Towne & Oak, she aimed to create a gathering place that provides the feeling of being away from it all, right in your own town. “I feel like we had good foresight to move to the suburbs when

we did,” says Vazquez. “There is such a community here that loves to shop local. At least once a day someone thanks us for opening in Winnetka.” Fans already love the handcrafted breakfast sandwiches complete with over-easy eggs, cheddar, maple glazed bacon, herb aioli, and homemade biscuits and miso-glazed salmon bowls full of salmon, pearl couscous, togarashi charred broccoli, roasted sweet potato, snap peas, and a miso glaze. “We make our biscuits from scratch and since we started selling them as a separate side, they fly out the door,” laughs Vazquez. “I joke that we should shut down operations and just do biscuits. They’re a hot commodity.” Because of that, Towne & Oak now offers gift baskets with boxes of the biscuits, like one for brunch with added strawberry preserves, butter, champagne, and orange juice for $55. And thanks to the event space and Boutique Bites catering arm, Vazquez is already hopeful about a busy event season this spring and summer. “Really, though, it is still a shock to me when I walk in,” says Vazquez. “It is all so surreal and crazy that it actually happened after I thought about it for so long. And they do it with the knowledge that they loved it well. They are leaving the house in pristine condition after adding a laundry list of upgrades and extensive home improvements. As a young family living nearby, they admired the property and placed a letter in the mailbox expressing interest, should the current owner ever decide to sell. We have all heard these stories— and this time, it worked. They opened that mailbox more than twenty-four years ago. Built in 1914, the house is considered the “Carson” home of the department store Carson Pirie Scott & Co. Samuel Carson began work at the age of 14 as a stock boy in the dry goods store.

He spent the whole 47 years of his business life there, eventually becoming a director. During his tenure, he enjoyed life in Glencoe on Washington Avenue. This extraordinary Georgian sits on over half an acre of lush landscape. It has been meticulously updated, yet retains beautiful architectural details. But when the family first moved in, “the kitchen was three rooms. We made it into one large room with a small sitting area where I just lived with my kids, especially when they were little. We had a loveseat and a wingback chair where we spent all of our time reading books. And before bedtime, we were always there. I will really miss that too,” she reminisces. In addition to the many upgrades, the house is located in a prime, walk to everything location. It is one of a kind, the type of property that sells before it even goes on the market, which is exactly what happened.

After the family completed the last round of renovations, the homeowner explains, “I wanted to put the house on the market, but my baby just went to college.” Due to COVID-19, they had to bring their daughter and all of her belongings back home in the spring and they didn’t want to rush her out as she was about to leave for the fall semester. “However, I did want to get pictures of the house in the summer.” Once the photos were taken, the family agreed to try it on the private market. It went on Friday, and by Sunday a contract was signed. “Time marches on,” the homeowner says. “This house deserves little kids now.” Recently, the homeowner decided to pop in one last time, “just to see how things looked. And I thought I’d be really upset. But with everything gone, it just didn’t seem like our house anymore. And then I thought, you know what? It isn’t. It was only a vessel, and I still have the things I love best—my family, and I’m still with them,” the homeowner concludes. A house well lived in, indeed. foods, what happens in your body when you have sugar, and why sugar should be used in moderation. Students learn to read the sugar content on labels of common drinks and snacks and then measure it out with visuals. “As we know, children are not always motivated by health and wellness, so I try to break down what it means to them,” explains Olson. “I start by asking them what they are interested in, like sports, academics, or even just playing Fortnite, and then tie it back into how this will help them improve in that particular area. I bring awareness to how they are feeling when they eat different foods. Connecting how it affects their physical, mental, and emotional health will help them understand how their food choices make them feel, and will stick with them as they grow.” Olson first started volunteering in her children Andrew and Ellie’s classrooms when they were in preschool. Once they realized what it meant to have their mom at school, she says, they simply asked that she make any activities fun. “When kids are engaged, they learn, and when they learn, they feel a sense of empowerment,” says Olson. “Understanding the education principles guides them to more informed choices. It’s much easier to create a healthy habit from the beginning than to try and undo unhealthy habits later in life. Food is inextricably linked to social, emotional, and mental health and development and contributes to a sense of belonging, connection, well-being, security, and nourishment. It really affects the overall quality of life.” Bringing nutrition to schools has been a perfect complement to current wellness curriculums. Like many businesses, this year Mighty Seeds Nutrition has shifted to have more of an online focus and is now offering online programming and social media on all aspects of wellness.

At home, Olson lives by the mantra that we should make kids food-friendly rather than make foods kid-friendly. Her top tips are to get kids involved, whether that means choosing produce at the store or selecting a dinner recipe from a cookbook; think about presentation and try creative displays with colorful bowls of veggies or rainbow fruit skewers; swap out sodas and other sweetened beverages for healthy alternatives, and; avoid using food as a reward. Olson aims to choose recipes that are quick, nutritious, and less than five ingredients (“I’m obsessed with my Instant Pot!”) and particularly loves those from Skinnytaste and Against All Grain. Her go-to snacks include a mini, kids-style charcuterie board, protein energy balls, and sugar-free lemonade. But, Olson recognizes, everything in moderation. With respect to nutrition, she follows the 80/20 rule, which says what you do the majority of the time builds the foundation that allows room for flexibility otherwise. “In high achieving areas like the North Shore, it is especially important to find balance and to not only focus on nutrition but also on factors like sleep, stress, movement, and spending time with loved ones,” says Olson. “Recognizing the challenges that have arisen from COVID-19, there are silver linings that have come out of it as well. In a way, it’s been like a giant cleanse, allowing families to reset priorities and habits. We are eating meals together, cooking together, and exploring nature together. IRON WILL Winnetka’s KATE NEAL, inspired by her mother’s battle with cancer, competes in and finishes her first full Ironman. WORDS BY BILL MCLEAN

wo women, two arduous journeys. Lois Gibbons’ trek began with a cancer diagnosis in 2018. Her daughter Kate Neal’s journey began shortly thereafter, with a commitment to train for her first full Ironman (2.4-mile swim, 112-mile bike ride, 26.2-mile run). Neal lives in Winnetka with her husband, Matt, and their sons, 11-year-old Ryan and 7-year-old Luke. “I’d wanted to do a full Ironman for a while,” says Neal, who, over a 15-year span, had raced in four half Ironman races and several triathlons before heading to Kentucky to line up for Ironman Louisville in late 2019. “Mom’s cancer diagnosis was the tipping point for me. I’d always been a disciplined person, but I knew training for and competing in a full Ironman would take me to a different level.” “You grow the most when you’re challenged,” she adds. This mother and daughter grew together. Exponentially. Gibbons started radiation and chemotherapy. Neal hired coach/trainer John Nichols, of Highland Park-based Vision Quest, and trained 10 to 15 hours a week for seven months. SHERIDAN ROAD 70

“Long journey and long days, filled with challenges and ups and downs,” recalls Neal, who is in her early 40s. “My mother has always been strong and resilient. I had to be the same, as I prepared for the Ironman, worked full-time, continued my role as wife and mother, and took care of my mom.” When asked about her training regimen, Neal shares that she typically practiced each discipline 2 to 3 times per week, doubling up some days. “There were days when I was on the bike for six hours straight and capped it off with a one hour run. It was like a fulltime workday. But I loved it.” Often workouts were tackled in the evening, after a long day of work. “I just made it happen because that’s what you do when you want something so much. It was good to throw myself into such a positive project.” She continues, “There were certainly challenges—like swimming in frigid 55 degree Lake Michigan, clad in a neoprene cap and booties to tolerate the extreme temps. You push your body to the limits.” And it’s not only about getting your body ready to perform for 12 hours straight—you need rest and recovery to prevent injury, and you need to master nutrition, which some triathletes consider the fourth discipline. You can come to race day ready to swim, bike, run, but if you don’t fuel properly throughout the day, it’s game over. “Looking back, I’m grateful for my coach, who was instrumental in my journey, guiding me every step of the way and providing consistent encouragement and support. John built my confidence.” Never underestimate the importance of having a coach.

“My kids? They motivated me, too. They propelled me, encouraged me.” Ironman Louisville took place in October 2019. Neal, while running in the final leg of the competition, thought about an important person in her life each mile and dedicated all 1,760 yards to that person. As she neared the finish line and eyed her thrilled husband and coach, she felt the collective energy of the spectators. Her thoughts and emotions swirled at breakneck speeds. “It is an indescribable feeling. Months of hard work built up to that moment. I was filled with gratitude for the people I have in my life,” notes Neal. In an event that traditionally includes 20 to 30 percent females, Neal finished in the top 60 percent of her division of 119 participants in Kentucky’s “Derby City,” and 42nd among that same throng in the running segment. “You sense the power of community everywhere you look on race day. You’re also surrounded by a sea of people, all striving for the same goal—to finish strong. I felt elation afterward.” Upon her return to Winnetka, Neal was greeted at home by beaming friends, Team Kate, rounds of applause, and a village of balloons. Champagne corks popped. At some point on that day, Ryan and Luke must have realized that their mother, without ever sacrificing a good night’s sleep, could be a loving parent, a career woman, and an athlete. But the celebratory day was about a pair of significant feats, not just Neal’s. my Bradley and Jessica Dietrich were walking two different paths on opposite sides of the world in 2016. Dietrich had just relocated from Winnetka to Hong Kong for her husband’s career, and Bradley was battling an aggressive form of breast cancer at just 36-years-old. What neither knew at the time is that their separate experiences would soon end up bringing the two together to open the new Winnetka wellness sanctuary Sole + Luna. “Amy and I are neighbors,” says Dietrich. “While overseas in Asia, I became immersed in the culture of self-care that is so ingrained in daily life there. When we returned to the North Shore in winter 2018, it felt like nothing met those same needs locally.” Adds Bradley, “I had just come off a crazy period when Jessica moved back. I had completed six rounds of chemotherapy, two surgeries, more chemo, 36 rounds of radiation, and a full hysterectomy. It was a really big wake up call to put more energy into taking care of myself.” Dietrich and Bradley met for coffee, which

turned into a “magical” three-hour meeting and soon, the idea for a local wellness retreat was born. Moving to Hong Kong provided Dietrich with the opportunity to immerse herself in progressive Eastern approaches to spiritual health and wellness. And, for Bradley, the battle scars from her fight with breast cancer were still fresh. Her physical and emotional ordeal was a head-first, blind dive into many traditional (and non-traditional) medical therapies. Through both transformative journeys, the founders then knew they wanted Sole + Luna to be a place of refuge from the everyday grind, one that offers daily rituals for the mind, body, and soul. “We named it Sole + Luna because, when we were on opposite sides of the world, the sun would be here and the moon there,” says Bradley. “It’s a reflection of our journey together and apart.” Core to their mission is to educate and improve the self, but also to bring people together and share as a community in the name of balance. As their sign reads, they believe slowing down is the new hustle. “That’s why this year has been kind of a great reset and pause,” says Dietrich. “It has made everyone think about what is really important and how to take a break to do something for themselves. The pandemic shined a light on that.” They had initially planned to open Sole + Luna in May 2020 but were delayed by the coronavirus outbreak, which led to a slow roll out throughout the past few months. Think a variety of rituals and meditations designed to improve overall health and wellness.

the latest movements, vet them and then bring everything together under one roof in a beautiful and cohesive way.” The space at 1015 Tower Court had sat empty for two years but when Dietrich and Bradley saw it for the first time, they fell in love with the beautiful beams, bright skylight, and natural tones. Then they added a standout Japanese light sculpture from Noguchi and fittingly dubbed it “the moon.” “Within three weeks of deciding to move forward with our idea for Sole + Luna, we had incorporated and found the space,” notes Bradley. “Every time we put it out there, it happened. It’s almost like we were just along for the ride. We incorporated in September 2019 and opened nine months later in June. It was like a pregnancy.” Now, they have slowly started to expand into monthly group workshops, private events, and meditations—even hosting a community Reiki on election night to help lower collective anxiety—and they have dreams of eventually launching IV hydration services, Gua Sha facials, and lymphatic massage. “It comes down to the simplicity of mindfulness and staying present in the moment,” explains Dietrich. “That in and of itself can be truly transformational.” Sole + Luna is located at 1015 Tower Court in Winnetka, 224505-5990, sole-luna.com.

A FAITHFUL LEADER It all starts and ends with kin for longtime Highland Park resident and champion of civil rights Kenneth A. Mines.

henever Kenneth A. Mines is anywhere near his grandsons Chase, 13, and Dylan, 11, the former civil rights attorney and forever civil rights leader must think, “Life does not get much better than this.” Their presence brings pure joy to the 91-year-old Mines, a Highland Park resident since 1972, and a man who has vivid memories of when he met Dr. Martin Luther King Jr. and Malcolm X in the 1960s. “I love spending time with my grandsons. They’re respectful and motivated, both academically and athletically. They love their school [School of St. Mary in Lake Forest], and playing sports.” “They’re fantastic kids,” says Mines, who also thinks the world of his other two grandchildren, Erica Mines and CC Herndon. Academically motivated sounds a lot like a young Mines, who was born in Cleveland, Ohio. During his formative years, the studious Mines absorbed invaluable lessons from an in-house instructor named Viola, also known as his mother, who didn’t need a chalkboard or a desk to support the occasional apple in order to teach Life 101 each year. “My mother was highly educated, highly intelligent, and she was my spiritual advisor who would become my health adviser,” says Mines, the father of daughters Myrna Traylor, Stephanie Mines, and Karen Mines Williamson (mother of Chase and Dylan). “She became my friend—my best friend. Very loving, very influential. I loved talking with her. She taught me true values in life. She took the time to talk to my siblings and me about our family’s history and its significance.” “Some of the most important words I’d ever heard from her were, ‘Don’t let anyone ever define you. You set your goals.’ Such advice served me well throughout my professional life.” Not only did the Korean War veteran officer serve as a senior manager with the U.S. Department of Labor, Mines also held a similar post with both the U.S. Department of Education (previously known as the U.S. Department of Health, Education and Welfare) and a Selective Executive Service position with the U.S. Department of Justice. Opportunities to successfully negotiate with school superintendents and university presidents and their attorneys enlivened the Ohio State University graduate and lifelong Buckeyes fan. Mines sought to ensure equal opportunities for all, particularly in the field of education, throughout his entire career.

“I enjoyed my career and was proud to be in positions to lead,” he notes. “I was most proud of my staff and the work we did to fight for civil rights on behalf of children. I was fortunate to have had as many devoted colleagues as I had.” Mines met Dr. Martin Luther King Jr. in Cleveland, where the minister and leader of the civil rights movement held a planning session for voter registration events. Mines found Dr. King absolutely fascinating. “When I was around him, he was open and unusually effective as a speaker. There was something about him, something special when one got face-to-face with him. We could all see it. He left me spellbound. Then, after a short while, it was time to get to work.” Mines—whose parents, George and Viola, were married for 77 years—and his family moved to Highland Park in 1972. There, the family joined Trinity Episcopal Church, where Mines would begin serving as an acolyte; he handled thurifer duties when he was in his 80s. His late wife Shirley founded the North Shore Chapter of Jack and Jill of America, Inc., an organization of mothers with children ages 2 to 19, dedicated to nurturing future African-American leaders by strengthening children through leadership development, volunteer service, philanthropic giving, and civic duty. Karen Mines Williamson is a member of the chapter, which is one of 252 branches across seven regions. “Highland Park is such a welcoming place, with excellent schools,” says Mines, who served on the City of Highland Park’s Human Relations Commission. “When we moved here, Highland Park was a quiet suburb, with a limited downtown. I loved Highland Park right away because of how well we were received as a new African-American family. Over time, I got to know every mayor and they got to know me and my family.” Mines’ take on the state of the United States, post-2020 election? Concerned. Too much divisiveness, entrenched positions, and not enough demonstration of courage from politicians to stand up for issues over party. “Our country, with regard to civil rights, has come a long way, but we still have a long way to go. Civil rights, to me, are human rights. Isn’t that how we all should look at civil rights?” Mines is also hopeful, positive, and resolute. His faith reassures him. His faith, after all, has been strong since he first entered a Cleveland church as a little boy with his family. “Going to church isn’t an obligation to me; rather, it’s something I want to do,” Mines says. “That was my mother’s approach to churchgoing. I would not be here today without faith. Faith has carried me through.”
