Chickens have been used for food for thousands of years, but it wasn't until World War II that it became a staple of the American diet. Most of us end up looking for chicken recipes to relieve the boredom of chicken every day. Fortunately, there is no shortage of recipes for chicken. The trick is finding recipes that are quick, easy, healthy... and different. Here is a recipe for Chicken Mole that fits the bill. Mole (pronounced Moh-lay) is the name for any number of Mexican sauces that usually include nuts, chilis, and chocolate. This recipe is delicious and healthy - and easy, too. Chicken Mole Serving Size: 1/6 of recipe Yield: 6 servings Ingredients: 1 chicken fryer, cut into pieces, skin and fat removed 1/4 cup water 1/4 cup chili powder 1 teaspoon oregano 1 teaspoon cocoa 1/2 cup + 2 Tablespoons flour 1 teaspoon pepper 1 teaspoon garlic powder 1 cup water -------------1 Tablespoon creamy peanut butter 5 cups water


Instructions: 1. Place chicken in a large pot with the 1/4 cup of water. Cover and simmer until tender, about 45 minutes. 2. In a medium bowl, mix chili powder, oregano, cocoa, flour (1/2 cup plus 2 Tablespoons), pepper, and garlic powder along with 1 cup of water. 3. Add mixture from step 2 to chicken in pot, mix well. 4. Add peanut butter and 5 cups of water to chicken in pot; mix well. 5. Bring to a boil. 6. Reduce heat to medium. Cook for 10-15 minutes. 7. Stir and serve immediately. This exciting chicken recipe is a crowd-pleaser, for sure! And with 210 calories per serving - and costing just $1.10 per serving - it's really a guiltless pleasure!
