Parmesan Crackle EVERYDAY HERBS


Parmesan Crackle Ingredients 1 cup shredded parmesan cheese 2 tsp Fresh As thyme powder Pinch Salt & pepper Combine ingredients. Spread a tray with baking powder. Shape the mix into a series of small rounds and flatten out on the tray. Bake at 180C until the parmesan is light golden. Keep a close eye on the mix, too long and it will taste bitter, too short and it will still be soft.

Uses Eat on own, use as a canapĂŠ base or smash up as croutons in a salad.

French Tarragon Vinegar EVERYDAY HERBS


French Tarragon Vinegar Ingredients 2/3 cup olive oil 1/3 cup canola oil 1 tsp wholegrain mustard 1 finely diced white onion 1 tsp liquid honey 2 tsp Fresh As French tarragon powder 1/3 cup white wine vinegar Put all ingredients in a jar and shake well.

Variation Summer Italian 1â „2 tsp Fresh As oregano 1 tsp Fresh As basil 1â „2 tsp thyme

Spanish Style Tapas EVERYDAY HERBS


Spanish Style Tapas Ingredients 4 medium red capsicum, roasted 1 tsp Fresh As mint powder 1/4 tsp Fresh As chilli powder Olive oil Salt & pepper Sliced almonds Golden raisins Peel, de seed and julliene the red capsicum. Place in a bowl and mix with the mint powder, chilli powder and a splash of olive oil. Toss the salt & pepper, almonds and raisins through the mix.

Variation Try adding poached fish. Remove the mint and add 1â „2 tsp Fresh As dill powder and 1â „2 tsp Fresh As lemongrass powder.

Garlic Potato Mash EVERYDAY HERBS


Garlic Potato Mash Ingredients 500g Agria potatoes peeled Olive oil Butter 1 tsp Fresh As garlic powder 1â „2 tsp Fresh As parsley powder Salt & pepper Boil potatoes until soft. Drain and push through a fine sieve so they are light and fluffy. Add a splash of olive oil, a knob of butter and the garlic powder (more or less according to taste). Season with salt & pepper.

Variation Garlic, chilli and thyme Mint & garlic

Asian Pesto EVERYDAY HERBS


Asian Pesto Ingredients 1⁄2 cup roasted shelled peanuts 2 tsp Fresh As mint powder 2 tsp Fresh As coriander powder 2 spring onions roughly chopped 1 tsp Fresh As lemongrass powder 1 tsp Fresh As ginger powder 1⁄2 tsp Fresh As garlic powder 2 tsp Fresh As Vietnamese mint powder Splash sesame oil or soya oil Salt & pepper Lime juice Combine all ingredients in a food processor. Finish with lime juice.

Variation Basil Pesto 1⁄2 cup toasted pinenuts 1⁄2 tsp Fresh As garlic powder 2-3 tbsp Fresh As basil powder 1 tsp grated parmesan cheese Salt & pepper Olive oil to blend.

Thai butter EVERYDAY HERBS


Thai butter Ingredients 250g softened unsalted butter 2 tsp Fresh As kaffir lime powder 1/2 tsp Fresh As chilli powder 1 tsp Fresh As lemongrass powder 1/2 tsp Fresh As coriander Salt & pepper Whip ingredients together in a bowl with the bat attachment until white. Leave out at room temperature for about 1/2 hr so the powders can infuse into the butter. Roll into a log and put in the fridge.

Variation 1 tsp oregano 1 tsp basil 1 tsp sage Oregano, basil & sage Mint & parsley or Garlic & dill

Meatball Mix EVERYDAY HERBS


Meatball Mix Ingredients 1/2 kg quality beef mince Grated zest of 1 lemon 1 tsp Spanish smoked paprika 2 tsp Fresh As thyme powder 2 tsp Fresh As basil powder 1 tsp Fresh As garlic powder 1 tsp Fresh As oregano powder 1 1â „2 tsp Fresh As parsley powder 1 egg Breadcrumbs Salt & pepper Mix ingredients together. Either use as burger patties or meatballs.

Variation Add 1â „2 tsp Fresh As chilli powder. (1 tsp if you like it hot) Use chicken or pork mince.

Smashed Peas & Avocado EVERYDAY HERBS


Smashed Peas & Avocado Ingredients 1 cup thawed frozen peas 1 tsp pickled ginger 1 avocado 1 tsp Fresh As lemongrass powder 1 tsp Fresh As ginger powder 2 tsp Fresh As coriander powder Salt & pepper Combine ingredients and blitz in a food processor until smooth.

Uses Serve with seared scallops, grilled flat bread or roti.

Dill Crust EVERYDAY HERBS


Dill Crust Ingredients 2 cups Panko breadcrumbs 3 tsp Fresh As flat leaf parsley 4 tsp Fresh As dill powder Grated zest of 1 lemon Wholegrain mustard White fish fillets Olive oil Salt & Pepper Combine ingredients and blitz well in a food processor. Brush a fish fillet with the wholegrain mustard. Lay the crust in a tray and press the mustard side of the fish onto the crust. Drizzle a little olive oil over the crust. Bake the fish in a moderate hot oven.
