BRACHOS – To further enhance our cookbook, a group of competent poskim read through the recipes in this book and assigned an appropriate bracha to each of the recipes (excluding the soups, for which a list of rules has been drawn up). Where more than one bracha is necessary, the brachos have been listed in the order in which they should be said. This will eliminate the uncertainty often encountered when one creates a new dish and is unsure which bracha applies. (Please do not attempt to apply the p’sak accompanying one of our recipes to other recipes.) Take note that there are different opinions among poskim regarding certain foods. Please consult your Rav to determine the correct bracha if you are in doubt. III. why include Brachos in a cookbook?

T

hroughout the ages, one of the very special tasks attributed to women in Yiddishkeit has been the preparation of food. From Sara Imeinu, who prepared food for the malachim, down to our generation, it has been the women who have been entrusted with preparing the special dishes for everyday, Shabbos, Yom Tov, and joyous occasions. The women of other nations cook and bake as well, but it seems that the food that we prepare has an importance far beyond providing physical nourishment and alleviating hunger. A Jewish woman says “L’kovod Shabbos Kodesh” when preparing Shabbos food, and reminds her children to make the proper brachos over their food before beginning to eat. What gives a Jewish woman the special koach to be able to create food for the neshama? The essence of the ishah, the Jewish woman, lies in her ability to raise even seemingly mundane, materialistic matters to a higher spiritual status. Every task and chore that seems mundane, such as cooking dinner, can be elevated. In the parsha of Bikurim we are told that the farmers used to gather together the first of the produce of the fields in a beautiful basket and present it to the kohanim in the Beis Hamikdash. By placing the food basket before the kohein, the farmer was actually acknowledging that the toil of his hand in the field and the produce it yielded were all possible only through Hashem’s Divine Assistance. This is where we learn the inyan of making brachos over food. It is in this way that a woman helps her family raise the physical act of eating to a spiritual level. She works hard in her kitchen, whether baking for a simcha, cooking for Shabbos or putting together an everyday supper. When she places the food before her family and reminds them to make a bracha, she is explaining to them that everything they have, including the food cooked in their very own kitchen, is a gift from Hashem. It is our hope that we, among all Jewish women, will continue this task that has been handed down to us by reminding our children and others eating our cooking to make brachos over the food, to recognize the bounty Hashem provides. May we always see and appreciate that He allows us to enjoy His Goodness in this world while reaping the spiritual benefits for generations to come.


Pecan Cranberry Muffins

Breakfast the gourmet way! Or snack…? These are yummy anytime!

1½ c. chopped fresh or frozen cranberries 1¼ c. sugar, divided 3 c. flour 4½ tsp. baking powder ½ tsp. salt 1 stick margarine 2 eggs, lightly beaten 1 c. pareve milk 1 c. chopped pecans

YIELD: 24 muffins

Toss cranberries in a bowl with ¼ cup sugar; set aside. In a separate bowl, combine flour, baking powder, salt, and remaining sugar. Cut in margarine until the mixture resembles coarse crumbs. In a separate bowl, combine eggs and pareve milk; stir into flour mixture just until moistened. Fold in pecans and sugared cranberries. Fill 24 greased or paper-lined muffin cups 2 /3 full. Bake at 400° for 20-25 minutes or until inserted toothpick comes out clean. VARIATION: You can substitute ¾ cup chocolate chips for the cranberries mixed with sugar. Add ½ teaspoon vanilla extract too.

Lemon Cranberry Muffins

Dreamy with coffee, tea, or a cup of cold milk. Great snack.

2 c. flour 1 c. sugar 3 tsp. baking powder ½ tsp. salt 2 eggs 1 c. milk or pareve milk ½ c. oil 1 tsp. lemon extract 1¼ c. fresh or frozen cranberries, halved ¼ c. sugar

16  – Dining In Again

Preheat oven to 400°. Combine the first 4 ingredients in a large bowl. In another bowl, beat the eggs, milk, oil, and extract. Stir into dry ingredients just until moistened. Mix ¼ cup sugar with the cranberries; fold into the batter. Fill paper-lined muffin cups 2/3 full; sprinkle with almonds. Bake for 18-20 minutes or until a toothpick comes out clean. Cool for 5 minutes before removing from pan to a wire rack. Cool completely before storing.


Carrot and Radish Salad

Fresh and flavorful, but so very easy to make!

4 medium carrots 6 large radishes (or 8 small) ¼ tsp. freshly grated lime zest 1 T. fresh lime juice (½ lime) 1½ T. oil Salt and pepper, to taste

Shred carrots; julienne radishes. Place vegetables in a medium-sized bowl. In a separate bowl, whisk together zest, juice, oil, salt, and pepper, and toss with the vegetables.

YIELD: 4 servings BRACHA: Ha’adama

Sugar Snap Pea and Cucumber Salad

Nice change from the usual cucumber salad and cole slaw. Walnut oil can be used instead of olive oil.

Bowl of cold water with ice 1 lb. sugar snap peas, trimmed Large pot of boiling, salted water 2 T. finely chopped walnuts, toasted 1 T. water 1 T. olive oil 1½ tsp. fresh lemon juice

Prepare a bowl of cold water with ice. Cook peas in a large saucepan of boiling, salted water until bright green and crisp-tender, about 2 minutes. Drain and immediately transfer to ice water. When cold, drain well and pat dry. Set aside. Mix walnuts, 1 T. water, oil, lemon juice, cayenne, and dill until blended. Season with salt. Toss mixture with peas and cucumber until vegetables are coated.

Slow Cooker Beef Soup

Easy and tasty, too. Your family will think you slaved over this for hours!

1 lb. ground beef 2 cloves minced garlic 1 small onion, diced 1 pepper, cut into small cubes 5 stalks celery, diced 1- 29 oz. can crushed or chopped canned tomatoes 2 c. frozen mixed vegetables 8 c. beef broth ¼ c. light soy sauce ¼ c. Worcestershire or BBQ sauce 6 oz. raw pasta

In a large crockpot, combine all ingredients except pasta. Cook on low for 6 hours, adding water as needed. Add pasta 10-15 minutes before ready to serve.

YIELD: 8 servings

Chicken Almond Soup

¼ c. margarine or olive oil ¾ c. ground blanched almonds Small pinch salt Small pinch pepper ¼ c. finely chopped celery 1 T. cornstarch 2 c. chicken broth 1 c. pareve milk Snipped chives or scallions

YIELD: 6-8 servings

74  – Dining In Again

Melt margarine or oil in a saucepan over medium-low heat. Add ground almonds and cook over mediumhigh heat for about 5 minutes, stirring occasionally, until almonds are lightly browned. Add salt, pepper, and celery; stir well. In a bowl, combine the cornstarch with a little of the chicken broth. Stir until smooth. Add remaining broth; mix well. Slowly add the broth mixture to the almond mixture in the pan, stirring constantly. Cook over medium-low heat for about 10 minutes, stirring occasionally. Remove from heat. Gradually add pareve milk to soup mixture, stirring continually. Cook over low heat just until the soup is thoroughly heated; do not boil. You may serve this soup hot or chilled, with chives sprinkled on top.


Sweet Potato Latkes  Delicious - you just can’t make them fast enough!

1 large sweet potato, grated finely 2 scallions, diced 1 /3 c. flour 2 eggs Salt and pepper, to taste Oil for frying

Combine all ingredients and mix well. Heat oil in large frying pan. Drop mixture by heaping tablespoonfuls into oil. When latkes are golden, turn and fry on second side.  For a low-fat version, you can fry these latkes in cooking spray.

Corned Beef Potato Latkes

These latkes are great for a fleishige Chanukah party!

1 T. oil ¼ c. chopped onion 2 c. flaked corned beef 2 c. cooked potatoes, cut into ½ inch cubes or coarsely mashed 1 egg, slightly beaten ¼ tsp. pepper 1 T. water ¼ tsp. salt (optional) Oil for frying

Heat 1 tablespoon oil in a skillet over moderate heat; add onion and cook just until soft. Put flaked corned beef into a medium size bowl; add potatoes, cooked onions, pepper, and water and mix well. Taste mixture and add salt if needed. (This much can be done a day ahead.) Heat a small amount of oil in a skillet (enough to grease pan). Scoop up the corned beef mixture, 1/3 cup at a time, and form into 3-inch patties. Add to hot oil and cook slowly until heated through and brown on both sides.

Flounder Mediterranean

Not your everyday fish-dish—the gourmet flavors in this recipe are extremely pleasing to the palate.

2 qts. water 5 plum tomatoes Ice water 2 T. extra virgin olive oil ½ Spanish onion, chopped 2 cloves garlic, chopped A pinch Italian seasoning ¼ c. white wine 24 Kalamata olives, pitted and chopped 4 T. capers 1 tsp. fresh lemon juice 6 leaves fresh basil, chopped 3 T. freshly grated Parmesan cheese, optional 1 lb. flounder fillets 6 leaves fresh basil, torn

Preheat oven to 425°. Bring water to boil in a saucepan. Plunge tomatoes into the boiling water, and immediately remove (using a slotted spoon) to a medium bowl of ice water. Drain, and remove skins. Chop, and set aside. Heat oil in a skillet over medium heat; sauté onion and garlic until tender. Stir in tomatoes, and cook until tender. Mix in seasoning, wine, olives, capers, lemon juice, and chopped basil. Reduce heat, blend in Parmesan cheese if using, and cook until the mixture is reduced to a thick sauce, about 15 minutes. Place flounder in a shallow baking dish. Cover with sauce, and top with basil leaves. Bake 12 minutes, until the fish is easily flaked with a fork.

Salmon Quiche

The salmon in this recipe can be easily substituted for or mixed with tuna. Feel free to experiment.

2 frozen, prepared pie crusts 2 medium onions, diced 2 T. oil 1- 15 oz. can plus 1- 7 oz. can salmon 1 c. mayonnaise 1½ T. mustard 1½ tsp. lemon juice 3 eggs ¾ c. milk or pareve milk

Preheat oven to 350°. Prick pie crusts with a fork and bake for 10 minutes. Remove from oven and raise temperature to 375°. While pie crusts bake, sauté onions in oil until golden. Set aside. Drain canned salmon and place in large bowl. Mash well with fork. Add remaining ingredients, mixing well to combine. Spread onions evenly over both baked crusts. Spoon filling over onions, dividing between two pies. Bake for 30-35 minutes, uncovered.

Pistachio-Crusted Minute Steak

Not difficult, and very impressive.

1 c. cranberry juice ¼ c. dried cranberries, finely minced 1 clove garlic, crushed 3 T. chilled margarine, cut into ½-inch cubes ½ tsp. ground cinnamon 4 minute steaks Salt and pepper, to taste ¼ c. chopped, natural, unsalted pistachios ¼ c. bread crumbs

Preheat oven to 400°. Boil first five ingredients in a small pot, stirring often for about 10 minutes. Line small, rimmed baking sheet with foil. Place steaks on sheet. Sprinkle with salt and pepper, to taste. Spread cranberry mixture over meat; sprinkle pistachios and breadcrumbs over, pressing to adhere. Roast steaks about 30-40 minutes, or until cooked through.

YIELD: 2 servings BRACHA: Shehakol

Silver Tip Roast

The juice-ketchup-brown sugar combo is the base for no-fail, great flavor gravy. It’s great on poultry, too, although you might want to leave out the mustard.

3-4 lb. Silver Tip roast (or French roast) Salt Garlic powder Onion powder Black pepper Sauce: 1 c. orange juice 1 c. ketchup 2 /3 c. brown sugar ½ tsp. salt 2 T. Dijon mustard

Rinse roast well and pat dry. Sprinkle generously with spices, and rub in. Place in a 9x13-inch pan. Combine sauce ingredients in a medium-sized bowl, and mix well. Pour sauce over meat and cover pan. Bake for 1½ hours at 350°. Remove roast from oven. Pierce meat with fork and baste with its own gravy. Cover and return to oven, baking another hour or until meat juices run clear when pierced with fork.

Zucchini Lasagna

A very tasty and healthy low-fat recipe. Make it for Pesach with matzah meal… or just skip the breadcrumbs altogether.

4 c. water 4 medium zucchini, sliced lengthwise to resemble lasagna noodles 2 cloves garlic, minced 2 c. spaghetti sauce or 1- 15 oz. can tomato sauce and ½ tsp. onion powder ½ tsp. salt ½ tsp. dried basil ½ tsp. dried oregano 2 c. cottage cheese, fat free 1 T. dried parsley 2 large eggs, lightly beaten Cooking spray ¾ c. bread crumbs 1¾ c. (3½ oz.) shredded (light) mozzarella cheese, divided

Preheat oven to 350°. Boil water in a large pot. Add zucchini and cook for about 3 minutes or until tendercrisp. Drain very well in a sieve and squeeze out liquid. Cool. In a separate bowl, combine spaghetti sauce or tomato sauce with salt, basil, and oregano. In another, medium-sized bowl, mix cottage cheese, parsley, and eggs. Coat a 9x13-inch pan with cooking spray. Layer ½ of the zucchini on the bottom of the pan. Sprinkle with ½ of the breadcrumbs. Spoon ½ of the cottage cheese mixture on top, and then ½ of the spaghetti sauce. Sprinkle on one cup of mozzarella cheese. Repeat layers with zucchini, breadcrumbs, cottage cheese mixture, and spaghetti sauce. Bake, covered, at 350° for 40 minutes. Sprinkle on an additional ¾ cup mozzarella and bake uncovered for five more minutes, or until cheese melts.

YIELD: approx. 16 servings BRACHA: Ha’adama

Layered Vegetable Cheese Casserole Something different for a weekday night side dish. Great next to tilapia or flounder fillet.

1- 16 oz. pkg. frozen mixed vegetables, defrosted 1- 14½ oz. can string beans 1- 16 oz. pkg. frozen broccoli or cauliflower, defrosted Butter, for greasing 1 c. cornflake crumbs or matzah meal, divided 6 slices American or mozzarella cheese 4 tsp. sour cream YIELD: approx. 16 servings BRACHA: Ha’adama

Cook vegetables with a bit of water, in a large pot, over medium heat for about 5 minutes. Stir often until heated through. Drain well. Butter bottom of 9x13inch pan and sprinkle with 1/3 cup cornflake crumbs or matzah meal. Spread half of vegetable mixture over crumbs. Tear cheese into large pieces and lay half of them atop vegetable mixture. Drizzle with half of sour cream. Repeat all of the layers: crumbs, vegetables, cheese, and sour cream. Sprinkle with remaining crumbs and bake, uncovered, at 350° for 45-50 minutes. Dairy  –  203


Candyland Cake

A delicious, fun cake that adults and children will love! It makes an especially beautiful girls’birthday cake.

1 pkg. white cake mix, or white cake recipe, see pg. 252 ½ tsp. peppermint or mint extract Creamy vanilla frosting (see Frostings section) 24 red & white-striped peppermint candies, crushed

YIELD: 12-14 servings

Prepare white cake mix, adding the peppermint/ mint extract with the egg whites. Preheat oven to 350°. Grease 2- 9-inch round pans, and divide batter evenly between them. Bake for 30-35 minutes, or until toothpick inserted in center comes out dry. Remove from oven, and cool completely. Frost the top and sides of one cake with vanilla frosting and sprinkle with half the crushed candy. Place unfrosted cake on top, and frost sides and top of upper cake, garnishing with remaining candy as well. Variation I: Add 3 drops red food coloring to frosting.

Variation II: Prepare recipe and bake as cupcakes. Frost with pink frosting and sprinkle with crushed candy. Press a red jelly bean in the center of each cupcake. Cinnamon Pull-Apart Crown f t s BRACHA: Mezonos

If you want some raisins in your cinnamon crown, add ½ cup with the last addition of flour. Yummy!

5 – 5¼ c. flour, divided ¼ c. sugar 2 pkgs. (¼ oz. each) rapid-rise yeast 1½ tsp. salt 1¾ c. water 1¼ sticks margarine, divided 1 egg, room temperature Cooking spray ¼ c. firmly packed light brown sugar 1 tsp. ground cinnamon mixed with ¼ c. sugar

Mix 3 cups flour, ¼ cup sugar, yeast, and salt with a wooden spoon in a large bowl. Heat water and ½ stick margarine in a small saucepan over medium heat until very warm (120° to 130°). Stir into flour mixture. Stir in egg. Add remaining flour and knead until smooth and elastic, about 10 minutes. Melt remaining margarine. Thoroughly grease 10-inch tube pan with cooking spray. Combine brown sugar and cinnamon-sugar mixture in small bowl. Pull off golf-ball-size pieces of dough and arrange in a single layer in pan. Brush dough with half of melted margarine and sprinkle with half of sugar mixture. Repeat to make second layer. Cover with damp towel and let rise until doubled, about 30 minutes.

YIELD: 16 servings BRACHA: Mezonos

Meanwhile, preheat oven to 375°. Bake crown until browned on top, about 35 minutes. Cool in pan on wire rack for 10 minutes. Serve warm. Cakes  –  247


Heavenly Chocolate Chip Cookies

3 sticks margarine 1½ c. sugar 1½ c. brown sugar 3 eggs 1 tsp. vanilla sugar 3 c. flour 3 c. oatmeal 1 T. baking powder 1 T. baking soda 1 T. cinnamon 1 tsp. salt 3 c. chocolate chips 2 c. shredded coconut 2 c. chopped pecans

Preheat oven to 350°. Cream first 5 ingredients in mixer bowl. Slowly add rest of ingredients in the order listed. Drop by teaspoonfuls (leaving space between cookies) onto lined cookie sheets. Bake, one cookie sheet at a time, for 15 minutes each.

YIELD: approx. 5 dozen cookies BRACHA: Mezonos

Award-Winning Soft Choco-Chip Cookies

The pudding is the secret ingredient in these richly delicious cookies… there’s no margarine at all!

4½ c. flour 2 tsp. baking powder 1 c. oil 1½ c. packed brown sugar ½ c. sugar 2- 3.4 oz. pkgs. instant vanilla pudding mix 4 eggs 2 tsp. vanilla extract 2 c. semi-sweet chocolate chips 2 c. chopped walnuts (optional)

Preheat oven to 350°. Cream first 5 ingredients in mixer bowl. Slowly add rest of ingredients in the order listed. Drop by teaspoonfuls (leaving space between cookies) onto lined cookie sheets. Bake, one cookie sheet at a time, for 15 minutes each.  Using parchment paper on your cookie sheet will always save you cleanup time.

Chocolate Pecan Pie

This pie is thick, gooey and full of pecans – with just a hint of chocolate. The cocoa makes the subtle difference.

1 stick margarine, melted 1 c. light corn syrup 1 c. sugar ¼ c. premium cocoa 1 tsp. vanilla extract ¼ tsp. salt 4 eggs 1 c. chopped pecans, divided 9-inch single crust pie

Preheat oven to 325°. In a heavy saucepan, combine melted margarine, corn syrup, sugar, and cocoa. Cook over low heat, stirring constantly, until sugar dissolves. Add vanilla, salt, and eggs, mixing well. Stir in ½ cup pecans. Mix well. Pour filling into unbaked pastry shell and top evenly with remaining ½ cup pecans. Bake for 55 minutes. Let cool and serve.

Chocolate Peanut Butter Parfaits

A fabulous dessert both beautiful and scrumptious, this one will win you accolades.

3½ T. peanut butter 2 c. plus 3 T. pareve or soy milk, divided 1 /3 c. dessert topping 1 pkg. instant chocolate pudding Optional Garnishes: Chopped peanuts Mini chocolate chips Whipped cream

YIELD: 6 servings BRACHA: Shehakol

Place peanut butter in a medium-sized bowl, gradually adding 3 tablespoons milk, stirring with a whisk until well blended. In a separate bowl, whip dessert topping to soft peaks; mix into peanut butter mixture and stir until well combined. Set aside. Prepare pudding as directed on package. Spoon half of pudding evenly into 5 parfait glasses; top with peanut butter mixture. Cover with remaining pudding. Refrigerate at least 30 minutes or until ready to serve. Optional Garnishes: For a beautiful presentation, pour a thin layer of chopped nuts and then one of mini chocolate chips on top of the first layer of pudding. Or, you can pour a layer of any type of garnish before and after each of the three layers in the glass. Garnish parfaits tops with a dollop of whipped cream and a sprinkling of nuts (see photo).
