Seafood Trip at 6’blings hen I heard of Gensan They served me the following W dishes, the first thing that dishes: Seafood Thermidore, came to my mind was Tuna. Stuffed Squid, Mixed Seafood, But Tuna isn’t a dish, it’s a fish! They say Gensan is known for grilled food, kinilaw and sinuglaw but other parts of the Philippines are also known for that. So what is it that makes a Gensan dish unique? I went to 6’blings Lechonan and Seafood Restaurant where they make Gensan specialties.

Pork BBQ and Dayana. Seafood Thermidore - a mixed seafood dish (shrimps, white marlin, mussels and squid) in butter and milk sauce. The taste reminded me of seafood ala king or seafood carbonara. It would make a great pasta to page 2 & 5 dish. The

next dish was the Squid stuffed with ground pork in sweet and spicy tomato sauce. The squid is cooked to perfection but the sauce and the pork may have over powered the taste of the squid. The Mixed Seafood is similar to Seafood Thermidore but it is served in chilli garlic and hoisin sauce. It is full of oriental flavors and the sauce compliments the seafood well. The BBQ is an original Gensan BBQ that looks more like a satay with thinner cuts of meat. The pork is tender but its flavor is almost the same with your usual barbecue with a twist. It is marinated in Gensan and is shipped right to 6’blings restaurant. The BBQ flavor is consistent and you’ll taste the same flavor everytime you order it. The last dish was the Grilled Dayana Belly. This is my favorite. Dayana is a huge round fish coined as the pork of the sea. The texture is as tender and juicy as pork liempo, except you won’t feel guilty when eating it. Not only is the fish packed with flavors, it is also good for your health and

I could taste the freshness of the seafood in every bite. After sitting with the owners, I learned that the dishes they served me were all created by their cook, Tita Dory. So I asked them, how can it be a Gensan dish if the recipe was created here? The answer was simple – a Gensan dish is the flavor of the deep

sea. Of course!
