Travel tips for a great family vacation METRO IMAGE

W

e have traveled many times with friends and family. All the people we have travelled with have been wonderful travelers. In order for everyone to have an enjoyable time simple rules need to be set before you leave your home. Here are a few easy ideas to make sure that everyone has a great trip: • If you are gone more than a night or two, everyone deserves a chance to choose a restaurant for one meal. (It doesn’t matter if it is McDonald’s or sushi – find something you like on the menu and smile.) • Take turns sitting in the middle, window or aisle, or front seat - back seat • Plan the day, but leave time for some spontaneity – Don’t be on such a tight schedule that if something wonderful comes up you can’t change your plans and enjoy an event that was not planned. • Mix the day, one museum or gallery and then equal pool time. • Always take a deck of cards. They can be used for fish, war,

multiplication table, gin rummy, solitaire, etc., etc., etc. • If you share a family tablet – decide the timeline for each member that wants to use it. If your daughter wants an hour of Facebook time, then dad gets an hour to follow the stock market and you get an hour for your latest novel. • Take lots of pictures – sometimes a disposable camera from one of the kids gets the best shot of the trip. • If you are driving, decide ahead of time how often you will stop. We will stop once this morning for a snack and bathroom break and then not again until noon (I still remember my father driving until I threatened to go the bathroom in the back seat if he did not stop at the next gas station). • Remember the worst part of the trip is the part you will remember and the first thing you will tell your friends (We missed our flight, our flight was five hours late, we ran out of gas, we got lost in downtown New York, we left a suitcase at the hotel and had to drive an hour back). • If you are travelling with adults, remember everyone needs some alone time (On a family vacation

with our adult children, we split up for an entire day in a city – each had something to do that was different. We met for dinner later and had lots of stories to relate. We did the same thing one night with restaurants). • Decide on a starting time in the morning that everyone can live with. Some mornings early, some later so the late sleepers can sleep. • Decide on a budget for your children. You get this much money for souvenirs for yourself or friends. Stick to the budget. • Let everyone pack their own suitcase so if something is forgotten it is not your problem. • Take plenty of snacks in your purse. The airlines charge for everything.

The most important thing you can take is your sense of humor. Something will go wrong. So just go with the flow and make the memories. Time goes fast. n Ann Young is an avid traveler and usually tells the worst stories first when she gets home.

The Legend of Wilhelm Tell 75 Anniversary Festival th

wiss legend has it that in the early 14th century, Wilhelm Tell, of Burglen, Switzerland, was an expert shot with the crossbow. A ruthless sheriff named Hermann Gessler was appointed town overlord in the canton of Uri, demanding that all citizens bow before his hat that he hung on a pole in the town square. Tell refused to bow down, was arrested, and his cruel punishment was twofold: either his execution or he could redeem himself by shooting an apple off the head of his son, Walter, in a single attempt. Tell saved his own life and that of his son when he split the apple and thus began his years of struggle for Swiss independence from Austrian rule. Wilhelm Tell is a central figure in Swiss patriotism to this day. This year marks the 75th anniversary of The Wilhelm Tell Festival in New Glarus, Wis. Each year, residents have faithfully presented the entire Wilhelm Tell play complete with authentic Swiss costumes, the sound of alphorns and, of course, the famous scene featuring marksman Wilhelm Tell and his son. The lively play will be performed in English at 2:30 p.m., Saturday, Sept. 1, and at 11:30 a.m., Sunday, Sept. 2. A special ethnic Grand Finale will then be presented in German at 2:30 p.m. on Sunday. Matt Streiff has been intimately involved

with the Wilhelm Tell Festival in New Glarus all of his life. He has played one part or another in the play since he was a child. “My dad, Dean, was in the original performance; my grandpa was as well.” Matt explained. “My dad was the

hunter. He played the role of the hunter for close to 60 years. At one point there was an opening for a young herdsman’s boy so I got that role for a while. Then after I grew too tall, I played one of the adults.


EXPERIENCE A few years later, I played the head of one of the original Swiss cantons and stayed in that role for probably 25 years.” “There are still a couple of the original cast members,” he said. “They’ve changed the roles over the years. My dad, for example, has been involved since the original performance. Other people around town had different parts back in 1938 and they’re still around and contributing.” The performance has evolved and changed over the years -long enough to tell the story, but short enough to hold the audience’s attention. The play draws its charm from a pastoral setting in a picturesque valley just east of New Glarus. “We will have beer and food, and spend a real nice afternoon,” Matt said. “There are many live animals in the

performance – cows, horses, goats and an occasional Saint Bernard or two. Playgoers can enjoy a special Swiss camping event on Saturday evening. The camp host will cook supper for everyone over the fire. Bring your own tent and camping equipment, pick out your spot and spend the evening there. It’s really pretty neat.” To mark the 75th anniversary of the Wilhelm Tell Festival, a special parade will be held which will focus on the history. Past performers will return and tell about all their years participating. On Saturday night, the local yodeling club will perform. Of course, there will be Swiss folk music accompanied by alphorns and Swiss button accordions -- performed by residents with a delightful SwissGerman accent. Tickets can be obtained online as well as event day admission.

Early booking is recommended for a weekend stay at one of the Swiss chalet style hotels in town. While in New Glarus, visitors should take time during their weekend schedule to visit two wonderful museums in New Glarus: The Swiss Historical Village Museum, operated by the New Glarus Historical Society, and The Chalet of the Golden Fleece Museum.

ublished in 1925, F. Scott Fitzgerald's novel, The Great Gatsby, is a classic piece of American fiction as it examines both triumph and tragedy, as well as being noted for capturing a cross-section of American society in the 1920s. This special time in American history is soon to be celebrated. On Saturday, August 18, 2012, guests at the home of Dr. Keith and Mrs. Diane Martin will find themselves magically transported back to the Roaring Twenties as part of a charity fundraiser for Highland Community College, entitled “The Great Gatsby.” Throughout the property and home built in 1924, attendees will mingle amongst period-era cars, flappers, dapper gentlemen – all in the art-deco/ black-and-white/speak-easy tradition of “The Great Gatsby.” Known throughout the area for stories of Rawleigh opulence, mafia ties, and gorgeous restoration, the Martin family, owners of the former Countryside haven, will open their home and grounds to help raise funds to benefit the HCC Foundation’s

“Growing for tomorrow… Changing lives today” campaign. Jim Berberet, Executive Director of the HCC Foundation, stated the importance of this fundraiser to the College: “This on-going campaign continues to support a wide variety of college programs, including the Ray and Betty Stamm Health Science wing, medical training programs, the wind turbine technology initiative, additional career training, educational programs, and scholarships for students.” Beginning at 5:30 p.m. with a silent auction, guests can review and bid on auction items displayed in a side tent while moving through six buffet stations for complimentary periodspecific food and spirits. At 7 p.m., the party moves to the large tent where auctioneer Doug Munda of Munda & Associates, again donating his services to support the HCC Foundation, will begin an energetic live auction with unique items and packages up for the highest bidder. Items up for auction will be featured on HCC’s website, and the Foundation’s Facebook page.

Throughout the event, the Martins will have the first floor of their home open to showcase their home’s restoration. When the Martins initially looked at the former Rawleigh property, it had been on the market for nearly four years. Originally, they were more interested in the land and thought about tearing down the home and starting over. The house had trees growing into the windows, the majority of the windows were nailed closed from the inside, and the pool building had no roof and was home to about a 1,000 frogs and their relatives. Dr. Martin explained: “It wasn’t until a friend of ours led us to the original blueprints in Madison that we saw what we had. It was a very solid structure – the floor joists were steel beams – it was really built like a castle.” Diane Martin added: “Keith was the one with the vision. He saw what it could become. We made the purchase in 1999, worked on the house for a few years, and finally moved in.” The family has lovingly restored the home to its proud origins paying specific attention to old photographs of the home taken when the Rawleigh


EVENT family was in residence. They’ve added their own special touches to the home, especially in the incredible expanded kitchen complete with vaulted ceiling, wooden beams, builtin cabinets, and state-of-the-art appliances. In addition to their home, five other structures have been rebuilt to their original specifications. The pool house has a roof and has hosted many pool parties for the six Martin children, family, and friends. The stables are used for storage and hold a batting cage. Basketball courts have been restored and the Martins use the lodge as a gym/workout area. A screened-in gazebo is believed to have originally been at the back of the Rawleigh property based on photos obtained by the family. Martin concluded: “We had a passion to redo everything.” When asked about hosting The Great Gatsby at their home, Diane Martin stated: “People are fascinated with this house. Keith and I are peppered with questions when others learn we are the owners of this property. We are hoping the mystique of this house will entice guests to attend the charity event in support of Highland. Through Keith’s practice and our interactions, we have seen the high quality of nurses who have graduated from Highland. It’s important to continue the caliber of education and develop strong nurses to serve in this region.” The lore of the home is legendary. One of Diane’s favorite tales is related to the alleged Chicago-area mafia man who lived in the home during the 1960s. Robert Joyce, although that wasn’t his real name – it was the name of his dead brother-in-law, installed several protection perimeters around the grounds. According to Martin, he not only added a fence that surrounded the land, but added another fence, with barbed wire at the top, around the home. When she and Keith dug up the fencing surrounding the house and removed the concrete plugs supporting the fencing, they found barbed wire in the ground, as well, to prevent tunneling into the home.

This is the second major fundraiser in the past two years hosted by the HCC Foundation. Berberet, explained: “Last year our major fundraiser—Shindig at the Stables— netted closed to $40,000 for the benefit of the Foundation’s “Growing for tomorrow…changing lives today” major gift campaign. The original Shindig, hosted by Don and Janey Morse, was successful for many reasons--more than 275 individuals attended and participated in the live and silent auctions of 145 items and baskets donated by college departments, businesses, organizations and individuals from across northwest Illinois. Many generous sponsors helped underwrite various expenses and many volunteers helped plan and worked at the Shindig.” When asked about the specialness to this year’s fundraising effort and event, Todd Weegens, President of the Foundation’s Board of Directors, replied, “There’s going to be a unique and exciting atmosphere pervading the Martin estate during this year’s Shindig II as both Highland Community College and the Foundation celebrate 50 years of serving and providing educational programs to businesses and citizens in Northwest Illinois. Fifty years is very special for us. Cheese Days in Monroe Green County Cheese Days is a threeday celebration of the county’s historic cheesemaking past and its bright future, as well as the Swiss heritage of those that settled in the area, making it an out-of-this-world celebration rooted in Old World tradition. Fine Wines for Dining

I

t’s been a while since I have written about cabernet sauvignon. But this summer when everyone throws some steaks on the grill, one of the best bottles of wine to go with them are cabernet sauvignons. That’s why when my husband and I went to Bern’s Steakhouse in Tampa, Florida in June, we ended up ordering four different glasses of cabernet sauvignon to share and have a taste testing with our filets. Bern’s Steakhouse has the largest working wine cellar in the world; and after one dines they are offered a tour of the kitchen and wine cellar. They have 7,000 different wines to select from. The oldest bottle is a 1792 Madiera and the most expensive is a double magnum bottle of 1947 Chateau Latour for $30,000. The glasses of cabernet sauvignon wine that we ordered were: 2007 Provenance, 2008 Cade, 2008 Faust, and 2008 Jordan, all from Napa Valley. The Provenance was the best value and was great with food. The Cade was very fruit forward and could be enjoyed by itself as well as with food. The Faust was the best glass with our food. And the Jordan was the most expensive and was good, but the others were also good and offered the best value. It was a great experience and the restaurant was quite awesome. None of my readers have e-mailed me and told me that they have tried the St. Pepin. It is an Elmer Swenson “creation”, a cross of several varieties, including Seyval, and was released in 1983. Characteristics are: fruity, low acidity, comparable to many German

white wines (think Riesling), and hardy in the north. Rocky Waters, in Hanover, also has it in their 25 acre vineyard. So I decided to give it a try with my son, David, and his fiancé, Laura, both in the restaurant business. I told them about St. Pepin, which I wrote about in the last issue and we tasted the two bottles that I have. One was from Park Farms in Iowa and it was 14% alcohol and very sweet. It was like a dessert wine or ice wine. The other bottle was from Massbach Ridge Winery in Elizabeth and was only 10% alcohol. Laura said that this wine would not offend anyone. It is very light and could be a good opening at a dinner party with appetizers. After our tasting we all went back to a cabernet. Laura and I had a glass from Robertson Winery in South Africa, that was opened two days before. She loved it and loved the chocolate flavor that she tasted. It’s the terroir from that region and it is in their pinotage too that I have written about. David asked to open a Franciscan. He opened a 2005 and thought it might be corked. It had a stinky smell to it. But after just a few moments, it started opening up and tasted great. It seems that fine wines all have that smell when you first open them, but as soon as you let it breath awhile, that changes. It seems as though a lot of people think they cannot drink wine because it gives them a headache. Have you ever heard that before? Some think that they are allergic to the sulfites that are contained in the wine when it is made. I have tried to do some research on the topic and have found that they have not yet proven that there is any connection to sulfites and headaches. There is an observational study in the Journal

of Allergy and Clinical Immunology entitled “No correlation between wine intolerance and histamine content of wine.” There was another study that tested the theory of low-sulfite and high-sulfite wines in patients with a reported history of asthmatic sulfite reactions. There was no objective drop in the subjects’ breathing test with either wine. As for getting headaches from drinking wine, I have a suggestion. Maybe you are drinking too much wine OR not enough water to keep yourself hydrated. Especially in the summer when the temperatures are high, we lose a lot of moisture from our bodies through our skin without even realizing it. Most people should drink more water every day. Someone told me once that you could taste wine all day as long as you drink enough water too. So, drink your water first, then drink your wine! Cheers!! n

I

t’s all about choices at the Galena Canning Company where the standards are high, the flavors divine and the product names are wild: Ghost Dust, Pure Jolokia, Kiss my Bhut, Mad Dog .357, PURE Ghost, Enforphyin Rush Beyond, Wanza’s Wicked Temptation, Mad Dog 44 Magnum. So what’s a person to do? “The first time I met my neighbor, Chef Ivo, I was standing in my yard,” said Galena Canning Company store

manager Sue Hermann. “He ran up to me and asked if I liked spice. I said sure and he stuck a spoon in my mouth. I thought my head would come off. I like spice, but that was fire, pure fire.” She said she knew he had latched onto a great idea and so she went to work for him. Ivo Puidak is no stranger to convincing folks about flavor and the advantages of using fresh ingredients in his products. Prior to coming to Galena, Ivo was a private chef to the Chairman of the Board and Board of Directors of the United States Federal Reserve

He has served United States Presidents, as well as visiting state and foreign officials. “I’m from an Estonian background and my mom made everything fresh, so I was always used to having fresh and not the store bought stuff,” Ivo said during one of his rare breaks between cooking up batches in his downtown Galena kitchen. “We came to Galena originally to do a bed and breakfast. We wanted to start a family. My wife and I needed to get away.” He said he started out producing small batches of jam and jelly, in the


EDIBLES kitchen at the B&B, to serve with their fresh baked breads, muffins and things because he didn’t want to serve store bought products. “Then this sort of light went off, and we realized that we were in this great little town, why not have an old fashioned cannery here, just like grandma used to do,” he said. They started slow. He owned a couple bars and restaurants in Chicago, but kept coming out to Galena on the weekends getting local products and canning. He went to the local health department and learned what he needed to do and just kept everything alive. “I always saw the light at the end of the tunnel and for thirteen years I sold our products wholesale to one of the retail stores here in Galena,” Ivo said. “I kept coming out on weekends and promoting it and demonstrating it until about 8 years ago a building came up for sale. We took it, and it became our original store. At that time I was making about sixty different items and carrying

about two thousand different hot sauces. It was quite the little emporium.” He said that through it all, he never knew what to expect. “It was a huge leap of faith,” Ivo said. “I asked my wife to tell me what she thought because I told her we had to put everything we have into this business. We knew it was either going to go or there would be nothing left. She said let’s go ahead, I know you and you don’t fail. So we did and the first month we were open we did triple what I expected and the next month we did triple again. It just kept growing. We were running out of stuff because we couldn’t make it fast enough.” They got a bigger cooker, but kept things small; only producing a lot of small batches to contain the flavor and not overcook the fruits. Word traveled and before long, Galena Canning Company appeared on the Food Network, The Wall Street Journal, the Sun Times, and the Chicago Tribune; travel magazines from all over

the country; Oprah; and Good Morning America. “Everybody was trying to figure out what magic I’m doing, but it’s not magic,” said Ivo. “What I’m doing is bringing back yesteryear where grandma made things, and that was the whole idea.” Ivo and the canning company opened a new store a year and a half ago right across the street from the original shop and went from about three thousand square feet to over ten thousand square feet. “We’ve added a couple hundred new products and we deal with local suppliers for our ingredients,” Ivo said. “We carry some fabulous wild game sauces and deal with a local pheasant grower. We search out the things that nobody else has.” He said one of their key strategies is that at any given time there are over three hundred samples out for the tasting. “I remember when I was a little kid


EDIBLES my dad used to take me down to the old German butcher shops and cheese shops where you would go in and there were always little samples of everything,” Ivo recalled. “It entices you to buy, but also, what a great feeling when you’re coming to this beautiful historic town and you come into our store and you can try everything so you know what you are getting.” Never one to rest on his laurels, Ivo and the crew are getting ready to start on the next leg of the Galena Canning Company journey with a restaurant that will encompass a lot of the products they make, plus a lot of local produce that is available through area farmers markets. He said he got the idea from an earlier visit to Epcot Center where they grow produce hydroponically downstairs and have a restaurant upstairs with a menu showing what is coming fresh from the gardens that day. “What I’m looking to do is go to the farmers markets and local farms to get local produce and post where it’s from and when I got it and here it is on the menu,” he said. “We want to give folks a taste of the country.” Ivo said it’s all about being happy “I tell my son that I want him to be as happy as I am when he gets up every day to do what he loves doing, because that is the key to life,” said Ivo. “If you love what you do you will become successful. M

onroe, Wisconsin is not only known for its wonderful cheese products. It also has a rich brewing history, especially when considering the 167-yearold brewery now known as Minhas Craft Brewery. Minhas Craft Brewery has the distinction of being the oldest brewery in the American Midwest, and the second oldest in the United States. Established in 1845, it is located in exactly the same place it began. “It was established before Wisconsin was a state,” Minhas president Gary Olson pointed out. At that time it satisfied the requirements of the miners who settled in the area. As the population increased, most towns had a brewery. Without adequate transportation and refrigeration, they had to be close to the consumer. What exactly is a craft brewery? “Being a craft brewery means we can do smaller batches at a time than a big brewery,” explained Olson. “We are more hands-on than a big brewery. It’s not all automated. You see an actual brew person standing in front of the brew kettle monitoring and physically adding the hops. We can keep an eye on the progress of the brew and make adjustments if necessary.” One aspect of the brewery is their contract brewing, which is making a beer for another company. For example, they make beer for Dixie Beer, whose brewery was badly damaged by Hurricane Katrina. They also make beer for chain stores such as Trader Joes.

A range of sodas, including the Blumers line of Root Beer, Cream Soda, Black Cherry Soda, Orange Cream and Blueberry Cream, is produced at the brewery as well. The current owners Ravinder and Manjit Minhas follow a long line of first- or second-generation immigrant owners of the brewery representing Switzerland, France, Britain, Germany, Denmark and now Canada, where the brother and sister team were born. Upon purchasing the Joseph Huber Brewing Co., Inc. on October 3, 2006, they became the youngest commercial brewery owners in the world and changed its name to Minhas Craft Brewery. The Minhas siblings invested $5 million, adding among other things, a 50,000 square foot warehouse and distribution center, a gift store, a new visitor center with a museum and the Lazy Mutt Lounge. In the museum, you can see a lifetime collection of brewing memorabilia from around the world. The Herb and Helen Heydock World Beer Memorailia Museum is considered to be the best of its type in North America. Valued at more than $1 million, the collection includes lithographs and prints from the mid1800 era to the 1950s and 60s. “It is a really nice collection,” said Minhas President Gary Olson. “It occupies three rooms and is free to the public.” The museum is open Monday through Friday, 8 a.m. to 5 p.m.; Saturday and Sunday from noon to 4 p.m. Tours of the brewery are given seven days a week.

“We like to do it; it’s fun for the people that come to the tour, and it’s fun for us to show the place off,” Olson said with obvious enthusiasm. “It’s pretty unique in that it is old and at the same time we are trying to modernize where it is appropriate. We want to maintain the charm of the place, but make it more efficient and modern. We have been in a constant state of expansion since 2006.” The tour takes about an hour including the welcome video, walking tour and tasting. Larger groups are welcome.
