Most of the prepared and processed foods we eat today are designed more for long shelf life than good nutrition. Getting the Most from Your Meals Make the most of your meals by choosing nutrient-dense foods: foods that have been minimally processed, are high in vitamins, minerals, and phytochemicals, and are low in pesticides, hormones, and antibiotics. Choose the freshest foods you can find, preferably from local suppliers and organic growers. The improvement in the nutrient density with local produce is sometimes remarkable. Whenever I go to Greece, for example, I am always amazed at the eggs. When they are cooked sunny side up, the yolks are a magnificent deep yellow-orange color. They taste delicious and have ten times the amount of the vital brain nutrient docosahexaenoic acid (DHA) as do eggs produced on an American factory farm. If you buy organic, free range eggs from a local farmer, you will be getting much more nutrition and better taste.
