PRINJOLATA a delicious sweet made during Carnival days. Ingredients : 600g sponge 75g cherries 85g pine nuts 50g almonds 4 tablespoon anisette 500g icing sugar 250g margarine - Cut the sponge into small pieces and put it in a large bowl. - Chop the pine nuts, almonds and cherries and add to the sponge. - Sprinkle the anisette to all the ingredients. - Mix the margarine and icing sugar until it get soft. - Blind in the bowl and mix well using a wooden spoon. - Mold the mixture in a form of a dome and place it on a plater. - Refrigerate the prinjolata for few hours before putting the frosting. Frosting 300 g caster sugar 2 egg whites 4 tablespoon hot water Decoration
75g cherries dark melted chocolate - Frost the egg whites with an electric whisk. - Add the caster sugar and the water until sugar dissolves. - Beat the frosting until stiff. - Cover the "prinjolata" with the frosting. - Decorate with melted chocolate and colourful cherries.
