In Quebec, each barrel of syrup has to pass quality control. Although the human tongue used to be the only judge of quality, devices such as the Spectracer are now used to test syrup and determine its grade.
Discovered in a recent study, Quebecol—named in honour of Quebec—is a polyphenol found only in maple that forms when maple water is boiled into syrup. It is just one of 63 other polyphenol antioxidants found in maple, including five that are found nowhere else.
3. EVERYONE’S TALKING ABOUT MAPLE According to an Influence Communication survey, maple syrup is the leading Quebec food product highlighted by foreign media. With a media coverage of 19.68%, it is far ahead of poutine and Montreal bagels.
MAKING THE GRADE There are five grades of syrup: Extra Light, Light, Medium and Amber (for consumers) and Dark (for industrial processing). As a general rule, the more the season progresses, the darker the syrup and the more pronounced the taste.
