Chef Christopher Cohen, Bistro Aix How did you receive your training to become a chef? I learned on the job and then went to culinary school. I was in the field for about 13 years before I decided to go to school. What’s your favorite dish on the menu? I would say the duck cassoulet. What’s the most underrated ingredient in your kitchen? Properly made veal stock. I don’t think people realize the true definition of a quality veal stock and what it can bring to a sauce to bring together everything on that plate. It can carry so many flavors. It’s a great base. What’s the most unusual dish you have eaten? Live baby octopus, had that in Boston.

How did you receive your training to become a chef? I went to culinary school in Portland, Oregon, at the Western Culinary Institute. What is your favorite kitchen tool? I’m going to be a bit cliché, but my knife. Though I do find apple corers to be quite useful. What’s your favorite dish to prepare? Once a year I make a pork dish called puerco pibil, which involves slow roasting 15 pounds of pork butt. I look forward to it because it gets me out of sweets. What’s the most unusual dish you have eaten? I had kangaroo once and couldn’t stand it. The piece I had was gristly and inedible.

What cuisines influence your style of cooking? I have a lot of Italian background. I was in Providence for almost five years. I also have a Southern background too, being from Kansas City, so there’s some BBQ. What’s your favorite dish to prepare? It kinda depends. If it’s family, it’s biscuits and gravy. If it’s for friends, one of many favorites is risotto. We do a scallop risotto at the restaurant - easy to make and easy to mess up. On my birthday, I’ll smoke St. Louis style ribs. What’s your favorite dish on the menu? Goat cheese gnocchi with black angus short ribs. What’s the most underrated ingredient in your kitchen? Butter. Finishing things with butter like bordelaise or au poivre. It’s so important because it adds a velvet feel across your palette.

What cuisines influence your style of cooking? My favorite has always been Italian. Growing up, my mother would make baked ziti, eggplant parmesan, chicken parmesan and lasagna, amongst other dishes. But lasagna has always been my favorite. My mom finally shared her recipe with me and I’ve tried over the years to improve on it with my own modifications. She’ll try it, give me notes, then make hers and outdo me by growing her own tomatoes and herbs for the sauce. What’s your favorite dish to prepare? I enjoy cooking risotto. Mac and cheese was one of my favorite meals since I was a kid, so one of my own recipes that blows my family away, blows my fiancée away, is definitely one of my favorite dishes to make. Mine uses several delicious cheeses, garlic, onions and some special spices. What’s the most underrated ingredient in your kitchen? You know, I’d say arugula. It’s so versatile: it can be a side dish, a garnish, a salad, you can do so many things with it. I use it as a substitute for spinach at times. It’s more flavorful, with a bold pepperiness that is just unique.

What cuisines influence your style of cooking? Initially, I was classically French trained and then gained an affinity for all the different types of Asian cuisine. I love them all. Having those solid French techniques as a base, you can apply them to all of the varied ingredients and recipes to create great dishes. What is your favorite kitchen tool? I would say a great pair of tongs, but my best tool in the kitchen is a tasting spoon. I encourage all my line cooks and chefs to taste everything they make. If they don’t like how it tastes, why serve it? What’s your favorite dish to prepare? We serve a dish called pot au feu. It’s one of my favorites to serve and to prepare. It exemplifies patience and proper technique using braising, timing and proper cooking. If you take short cuts it will show in the results. What’s the most underrated ingredient in your kitchen? Love. You’ve gotta have love in everything that you put out of your kitchen. 6

He defeated a scandalridden incumbent in a landslide, and is already making a lot of changes to the Public Defender’s office here in North Florida’s 4th Circuit. Charlie Cofer spent 17 years as a county judge and 18 in the public defender’s office. Now, after defeating his predecessor Matt Shirk, Cofer says he’s doing what he can to bring salaries and budgets under control and restore trust in the office. Cofer says he feels the goodwill of the community at his back as he starts his term, “particularly the legal community,” he told First Coast Connect. But he adds, “I also know expectations are high. Volunteers in Medicine is a not-for-profit, free clinic that provides integrated medical services and programs to one of Northeast Florida’s most vulnerable and often over-looked populations: low-income, working, uninsured individuals and families. Since opening their doors in 2003, they have provided high-quality integrated care, including primary and specialty care, lab tests, eyeglasses, mental health counseling, chronic disease care and cancer screenings – all at no charge to their patients.

BUZZ: How did your firm get started and what area of law do you focus on?
We’re a boutique law firm out of the Southside area and we practice solely immigration law. We’ve been independent since about 2008. Lisa actually started the law firm first. After she started it, I decided to go to law school. I joined her about three years later.
BUZZ: What do you think makes you different than other immigration law firms?
We’ve really tried to make sure and give to our clients just really good customer service. It may sound like a bit of an oxymoron, but we try to be honest attorneys; honest with our clients, honest with the agencies. So they know that if they come see us, then we’re going to do right by them. We will do right by the law and give them the best representation because we feel like they deserve it. It doesn’t matter what their status is at the moment, they’re people too and deserve respect. So
that’s something that we’ve really tried to hone in. I think that’s something that we’ve managed to become known for in the community - as a firm that’s there to help.
BUZZ: What types of services do you offer to your clients?
We’re mostly a family-based immigration law firm. We do take some business immigration, but mostly all kinds of family petitions, asylum and other various immigration issues. We basically help anybody who doesn’t have status obtain status and take the next step, whether it’s to obtain a visa or apply for permanent residence or citizenship. Once a family member has become either a permanent resident or U.S. citizen, then the law allows for them to bring people from their countries, so we also help them bring their family members along. It can be really challenging, but when we win the cases it’s just something that is so rewarding and it makes the hard times worth it.

BUZZ: Tell me about the firm. So we are a six-person law firm. We’re boutique-oriented, meaning we don’t practice in all areas. We really focus on corporate law along with mergers and acquisitions work. We have a large presence in the healthcare industry here in town, so we do a lot of physician group setups, buying and selling of physician practices, but in general, the firm’s practice area is very agnostic. We represent lots of different industries. BUZZ: How can clients benefit from your services? So, anything you can think of with a business. If you’re looking to start a business, we help form companies, set up ownership structures, (i.e. how people should be paid, ongoing business needs such as employee compensation plans, independent contractor relationships). And then, on the back end, mergers and acquisitions work, whether it’s people that are selling their companies or people looking to buy or roll up like practices or industry groups, we do that work as well.

Are there problems like starting the process too late or putting all of their assets into the business that you see? Yes, we see businesses that try to expand too fast. We see in retailers that have had a very successful

You want to make sure to get out early and not wait too long. We normally don’t charge to talk to you. Bankruptcy has a bad stigma, especially for businesses. But if you consider it early enough, bankruptcy may be able to save the business, save the jobs, and hopefully save the business owners.

What’s the standard rate for your services? For criminal it’s case by case, because we won’t charge the same for a life felony as a misdemeanor. But for hourly work (family, contracts, etc.) it’s about $200/hr.

Law school was difficult, but interesting. When I got out, I worked for a family law attorney for a week and realized I’d never work for a small private practice ever again without being my own boss. Then I went to work for the PD’s office, they’re great at helping to foster growth and knowledge.
How do you stay connected to the Jacksonville community?
My partner and I are part of the Jacksonville Bar Association. I’ve taken the classes to be a coach at Westside Soccer but haven’t been asked to coach as yet and we’re going to do a chili kickoff. Tell me a little bit about your law firm. I’ve been in private practice for a few years but I worked part time from home and recently, as of last week, I decided it was time to move back downtown to a real cool space that was just renovated. It’s called Level Office and it’s the old Public Defender’s Office. It’s actually where I started my law career 10 years ago.
What is your specific field of law? Criminal defense, that’s what I’ve practiced my entire career. I started at the Public Defender’s Office in 2006. Bill White was the Public Defender at the time and there were some amazing attorneys that I learned from. I started in misdemeanor, moved to felony and from there I went into private practice, practicing criminal defense. Then I went back to the Public Defender’s Office and was in the repeat offender court. After that I moved to the major crimes division where I handled attempted murders, sex crimes, things like that. Following that, I went to regional conflict counsel, which is a similar office, where I handled all felonies from drug possessions on up to murder. I then decided it was time for a little break and had my two kids. I worked from home for a while and finally decided now was the time to open my own practice. I love the work. Sometimes it’s very difficult. You don’t get a lot of thanks, but it’s fulfilling. It’s good work and I really enjoy doing it. That’s why I decided to continue doing it in private practice.
Why did you choose Jacksonville? Well, I was at Florida State. I graduated and decided to come to Jacksonville for law school. I graduated from Florida Coastal and then I just decided to stay. It’s a very cool city. I love all of the different areas.
What makes your law firm different from others? I feel that I have a lot of experience, working in the public sector for so long. I have 30-35+ trials and those are mostly complex trials with complex sentencing structures, jury instructions, things like that, not just basic trials. So I have everything that I learned and experienced from the Public Defender’s Office. But in private practice, you work on a smaller scale, so I can focus more of my attention and really get one-on-one with a client. Producing work gives Lauren Pumphrey the sensation of being a creator of beauty and the ability to express her imagination from observing the world around her. Her subject matter primarily deals with the playful relationship between nature and humans. She manipulates images of natural elements such as vegetation, animals and anatomical structure creating utopian environments. Pumphrey shows the beauty of nature in a fantastical way, teetering between realism and abstraction. Using a rich, full palette of lush colors, she hopes to bring happiness and joy to others. Driven by music, her work is infused with passion and vibrates throughout the composition, bringing the piece to life. Pumphrey is currently an art teacher who enjoys sharing her passion with the youth.
Jeff Luque is a Jacksonville Beach native with a natural gift. His ability to make the realistic out of the unrealistic in terms of color is something that truly should be experienced in person. His series of paintings, Girl with Flowers, features countless stunning works that can be seen at the CoRK Arts District. Luque started painting at the age of 23, though he always enjoyed drawing. In high school he had a natural interest in sketching and drawing. One day, he decided to explore a new medium. “I just went to Michael’s and picked up the biggest canvas they had and a brush and three paints.” And with that, Luque became a painter. The painting he created that day is now hanging in a ballet school in Australia. His art has also been shown in Beijing, Hong Kong, Paris and Los Angeles. Though Luque has moved around, spending three and a half years in New Mexico and seven in North Carolina, his time in Jacksonville seems to fit. CoRK has allowed him to have the space to paint and the subject matter to inspire him is plentiful.

VICKI LAWRENCE & MAMA: A TWO WOMAN SHOW

FEB. 25 AT 7:30 P.M. • THCENTER.ORG Emmy Award-winning comedienne Vicki Lawrence is one of the most beloved television personalities of her generation. Plucked out of total obscurity as a high school senior, Lawrence went on to become part of the now-legendary cast of the “Carol Burnett Show.” In the seventh season, and hundreds of hilarious sketches later, at the ripe, old age of 24, Lawrence created her most endearing character to date, Thelma Harper, or “Mama” as she is better known to her fans. After the Burnett Show ended, Lawrence went on to star in “Mama’s Family,” which consistently topped the ratings for its entire six-year run of original shows. “Mama” has attained almost a cult status among her legions of loyal television viewers. In 2001, Lawrence decided that the time was right to take Mama out of the closet, dust off her sensible shoes and hit the road with her new touring production, “Vicki Lawrence and Mama: A Two Woman Show.” The California native has always been multi-talented, excelling in dancing and singing from a young age. Over the course of her career, she has sung and danced in a variety of productions. Lawrence began with the Young Americans musical group from 1965 to 1967. She also appeared in the feature film “The Young Americans,” which won an Academy Award for Best Documentary. Lawrence also published two books: her autobiography “Vicki, the True Life Adventures of Miss Fireball” and “Mama for President, Good Lord Why Not?” After the “Carol Burnett Show” and “Mama’s Family,” Lawrence started her own daytime talk show, appropriately called “Vicki!,” which ran from 1992 to 1994. On stage, Lawrence has appeared in numerous productions, including “Carousel,” “Hello Dolly,” “Special Occasions,” “I’m Getting My Act Together and Taking It On The Road,” “Annie Get Your Gun,” and countless others. Currently, “Vicki Lawrence and Mama: A Two Woman Show” is performing it’s 40th Anniversary Tour. The contest allows kids to experience the hands-on process of developing their own stories and illustrations, encouraging their creativity and imagination, all while building key academic skills such as grammar and syntax.

Discovering Nature Nearby
The Jacksonville Arboretum and Gardens will host the Discovering Nature Nearby program series, thanks to grants from TD Bank and Rayonier Advanced Materials. The event will be at 9:30 a.m. on February 18. The presentation will include a brief introduction to the Arboretum and its ecosystems followed by a presentation from a Forrester about fire as it relates to Florida’s ecosystem, tools, safety gear and take-aways. Each third Saturday of the month between September and May, expert presenters educate audiences on a wide variety of topics. There is limited seating, so bring a lawn chair or blanket if possible. Bug spray is recommended. Most programs will take place in the shade and a water bottle filling station is handy. All ages and abilities are welcome and free of charge, although donations are greatly appreciated. Go Nuts for Heart Health! People who eat nuts as part of a heart-healthy diet can lower their “bad” cholesterol. High LDL cholesterol is one of the primary causes of heart disease. Eating nuts can provide nutritional benefits for your heart. Nuts, which contain unsaturated fatty acids, are a great on-the-go snack food. A serving is a small handful (1.5 ounces) of whole nuts or two tablespoons of nut butter. Eighty percent of a nut is made up of fat. Although most of this fat is healthy fat, it’s still a calorie-dense food. Stick to the proper portion. It is important to eat nuts and also cut back on saturated fats found in many dairy and meat products. In addition to consuming nuts, make sure to consume a diet high in fruits, veggies, lean meats, whole grains and low-fat dairy. In addition to being packed with protein, most nuts contain some of these heart-healthy substances: • Unsaturated fats. The “good” fats in nuts — both monounsaturated and polyunsaturated fats help lower bad cholesterol levels. • Omega-3 fatty acids. Many nuts are rich in Omega-3 fatty acids. These fatty acids help your heart. • Fiber. All nuts contain fiber, which help lower your cholesterol. Fiber makes you feel full, so you eat less. • Vitamin E. Some studies show Vitamin E stops the development of plaque in your arteries, which can narrow them. Plaque development in your arteries can lead to chest pain, coronary artery disease or a heart attack. • Plant sterols. A substance that can help lower your cholesterol. Plant sterols are often added to products, but sterols occur naturally in nuts. • L-arginine. A substance that may help improve the health of your artery walls by making them more flexible and less prone to blood clots that can block blood flow.

children for more than 25 years. Why did you choose this age group? DR. O: The impact is so huge when you can actually do preventative medicine with this age. It can actually prepare them for an enormous amount of quality of life.

Don’t be fooled though, said Marie Merritt, a local certified personal trainer and studio owner. Fitness resolutions will only be maintained with the correct mindset. “Most people think of fitness as a chore, and for me it’s just an avenue to get people to accomplish what they want in their life,” said Merritt, who opened Momentum Wellness in 2005. A life-long athlete and soccer player, Merritt tells her clients that exercise should fit into their life, whether it’s a bike ride or a walk. “There is no perfect answer for anybody,” she said, adding that she encourages people to see fitness for its core purpose. “Fitness is pulling us back to what we were meant to do as a society,” Merritt said. “Our bodies are supposed to move.” Merritt provides these three tips to start moving and maintain an active lifestyle: 1. Understand you are worth it and you are doing it for yourself. 2. Change one or two things at a time. One step at a time. 3. Stop dieting. Food is fuel. It’s recovery. It gives you energy to get through your day.

When it comes to trying out new foodie finds to flex my forking skills, I am certainly no chicken. So, when it came to reviewing Another Broken Egg Café in Tapestry Park, my feathers were not ruffled in the least. Since 1996, when the original Broken Egg Café opened in Old Mandeville, LA, they have been passionately creating exceptional dishes for breakfast, brunch and lunch that are “craveably” delicious with an artisanal flair. At the Jacksonville location, parking is plentiful, but be sure to get to Another Broken Egg early or closer to their closing time around 2 p.m. This noshery gets so packed that the wait time can be up to two hours. Yes, the menu (and adult libations) are that unique.
Appetizer:
This casual brunch eatery has a bright and cheerful atmosphere with the staff equally as vibrant. The menu is a creative array of omelets, specialty benedicts such as the Crabcakes Cavallo, distinctive pancakes like the Banana Foster stack and other yolky yummies. Burgers and sandwiches like the turkey, brie and pesto, and signature salads also round out the breakfast and brunch ensemble.
Baked Brie Delight – raisins, pecans and perfectly diced apple sautéed in a Grand Marnier butter sauce and served over warm brie. Comes with French bread for only $10.49.

Overall the service was friendly and menu-knowledgeable, the environment was energetic, the price points were good for the product and quantity of items and on the whole, each element was extremely worthy of Two Thumbs Up.

ABE uses this vodka to make their signature ABE Famous Infused Bloody Mary. On the drink menu are many other creative libations such as the Lady Marmalade Mimosa which is topped with St. Germain Elderflower Liqueur and a dollop of orange marmalade. Sangrias, Margaritas and Rum Chatas also grace the drink menu here.
Just keep this in mind, don’t fly the coop if there is a slight wait to get in. Hang out and have a cup of Joe or a Lady Marmalade Mimosa as the plates here are worth the wait. More importantly, if you take the time to indulge in Another Broken Egg’s food, you won’t spend your morning feeling peckish!

When you think of the iconic dishes Chicago is known for, most people’s minds go immediately to the deep-dish pizza. But there’s so much more. Enter Muzzi’s Madhouse, the purple behemoth rolling the streets of the Bold City, bringing their own take on hearty Chicago food staples that would make even Ditka happy. Muzzi’s size makes it possible for the team inside to offer one of the bigger menus of a food truck compared to most of the other rigs in town. Normally one would fear that would mean they sacrifice quality for quantity, but worry not. Whether you’re craving a Chicago-style hot dog loaded down with a farmer’s market full of produce or a gigantic chicken parm, Muzzi’s is ready to satisfy you. I opted for their Italian beef (thinly sliced roast beef, heated in its own au jus, with sautéed green peppers and onions covered in melted cheese on a Gonnella roll) topped off with the optional spicy giardiniera. Don’t let the carrots and celery in the giardiniera deceive you; it also sports some hot peppers and a spice blend. The roast beef was impeccably cooked and the convergence of flavors from the giardiniera along with the peppers, onions and cheese made me almost want to brave the frigid Midwest to try one in its natural environment. For side offerings, Muzzi’s has a homemade pasta salad and homemade chips. The homemade chips aren’t just some upstart kettle chips. Instead, they’re fried to perfection and dressed up with a balsamic reduction and gorgonzola cheese crumbles. If that doesn’t make your mouth water, you might want to check your pulse. The crispness of the chips pairs perfectly with the sweet bite of the balsamic and the unbelievable flavor of the gorgonzola. Just don’t lick the tray clean in front of your coworkers like I did.

I fell in love with food and the feeling of seeing people love my food. How did you receive your training to become a chef? Culinary School & Grandmother. What cuisines influence your style of cooking? French & Southern comfort - the stuff that makes you feel like a kid at grandma’s table again. What sets your restaurant apart from others within your food style and in the local area? The main thing that sets us apart is the love we put into our food! It is the first ingredient of every recipe in our building. Almost everything is made from scratch with lots of love and passion. Favorite kitchen tool? Vacuum Sealer & Immersion Circulator. DIRECTIONS Heat the oil in a heavy-bottomed sauté pan over medium heat. Add the ground pork and ground chicken livers, cook until brown. Once browned, add garlic, Vidalia onion, celery and red bell pepper. Cook until soft, about 5 to 7 minutes. Add precooked orzo, Cholula, mixing thoroughly. Add salt and pepper if necessary to taste. 26

Behind each participant is a story of love, hope and courage that inspires them to support the mission to finish breast cancer. Although everyone’s story is different, every story is significant. Monster Jam makes its return to the Jacksonville area when the annual motor sports spectacle drives into EverBank Field. Monster Jam is one of Jacksonville’s most popular and largest single day stadium events, attracting capacity crowds of over 65,000 fans. For the first time ever, there will be two shows!
The unsung heroes of a Monster Jam effort can be the technicians who are charged with keeping the trucks in tip-top condition. Like the Monster Jam drivers, they can come from many areas, but a key consideration is experience and education.
Each Monster Jam truck is approximately 10.5 feet tall, 12 feet wide, 17 feet long and weighs 10,000 pounds. A Monster Jam engine will generate 1,500 horsepower, thanks to a blower that forces air and fuel into the engine. The driver’s compartment is a steel safety structure, built from tubing and mounted to the truck frame. The truck bodies are custom-built and constructed of fiberglass. Each truck is transported in specially prepared trailers, which can include spare parts and as many as two trucks.

The first coach in Jaguars history is back with the franchise in a different leadership role, the Executive Vice President of Football Operations. Coughlin returns to a place he won 68 games as the head coach. After leaving Jacksonville, Coughlin won two Super Bowls with the New York Giants.
Marrone is the new head coach of the Jaguars. He becomes the fifth full-time coach in Jaguars history. He was the interim coach for the last two games of the season. Previously, he coached the offensive line. Marrone has also been a head coach for the Buffalo Bills and in college at Syracuse.

The Jacksonville resident has become the talk of college basketball once again, for all the wrong reasons. Allen was called for a trip in a December game and subsequently was suspended one game. Allen is up for player of the year in college basketball but is also one of the most controversial players.
The Armada FC have weathered the storm and will still exist as a franchise in the NASL in 2017. Owner Mark Frisch is trying to sell the team, while the league tries to find stability. STORY BEHIND THE MUSIC:
Luke Bryan will be stopping in Jacksonville for his Kill the Lights 2017 Winter Tour with special guest Brett Eldredge. Luke Bryan is an American country music singer and songwriter best known for hits like “Drink a Beer” and “That’s My Kind of Night.” Luke Bryan got his first guitar at 14 and soon began writing and producing his own songs. The Georgia native moved to Nashville after high school to pursue his music career and after a few short years, created his first album with Capitol Records. The album was titled “I’ll Stay Me” and was released in 2007. The album earned him a nomination for Top New Male Vocalist from the Academy of Country Music. His next album, “Doin’ My Thing” came out two years later. Both albums peaked at No. 2 on the country charts with multiple hit singles. From there, his career took off, leading to countless other hit albums and songs like “Tailgates and Tanlines” and “Spring Break…Here to Party.” “Tailgates and Tanlines” had four singles in the Top 5 of the country charts with “I Don’t Want This Night to End” and “Drunk on You” both hitting No. 1. Bryan began his crossover success here as “Spring Break…Here to Party” reached the pop charts in addition to the country charts. In 2013, Bryan won the Academy of Country Music’s Entertainer of the Year Award and released his fourth studio album, “Crash My Party,” which hit No. 1 on both the country and pop charts. Bryan is constantly touring and recording new music in addition to enjoying time with his wife and sons.

Dennis DeYoung and the music of the Styx will be at the Florida Theatre with the Jacksonville Rock Symphony Orchestra. This symphonic rock spectacular features Styx founding member, lead singer and songwriter Dennis DeYoung performing “Lady,” “Babe,” “Come Sail Away,” “Too Much Time on My Hands,” “The Best of Times,” “Mr. Roboto,” plus many of the band’s classic rock anthems including “Renegade,” “Blue Collar Man,” “Suite Madame Blue,” and “Rockin The Paradise” with the Jacksonville Rock Symphony Orchestra. This new rock band is dedicated to the legacy of the Styx and their 35+ million albums sold. Band members include Suzanne DeYoung, August Zadra, John Blasucci, Jimmy Leahy, Craig Carter and Michael Morales. In a career that has spanned more than 40 years, Dennis DeYoung has become one of the most recognized voices in the music world today. He continues to inspire new generations of fans across the globe. From 1970 to 1999, DeYoung was the lead vocalist and keyboardist with Styx and is credited as the writer of more songs than any other Styx member. Styx had eight Billboard Top 10 singles and countless other top hits including several multi-platinum records. Styx was also inducted into the Ultimate Classic Rock Hall of Fame in 2014. The band’s broadly eclectic sound incorporated elements of classical and hard rock, cementing their legacy in history. Dennis DeYoung will be joined on stage in this special concert by the Jacksonville Rock Symphony Orchestra. This 27-piece symphony orchestra can only be seen and heard at the Florida Theatre.

St. Pauli and X102.9 present Pepper and Less Than Jake in an alternative pop and ska punk extravaganza live at the St. Augustine Amphitheatre on Saturday, February 25. “It’s the hardest thing we’ve ever done as a band to make this record,” says guitarist/vocalist Kaleo Wassman of Pepper, in speaking on the recording process of their new self-titled album. “It speaks loudly and widely to a broader audience while maintaining everything good about the band, which, first of all, is our positive attitude.” After releasing five albums, Pepper has opened a new chapter in their storied career which began in 1997 when the trio moved to the mainland from their hometown of Kailua Kona, Hawaii. Pepper has toured extensively with groups like 311, Slightly Stoopid, Flogging Molly and Sublime With Rome, and spent several summers on Warped Tour. The band’s music – both live and on their releases – is really about enjoying life and being grateful for each experience. Pepper embodies not only a style of music but a lifestyle, one that’s most easily found on beaches across the world, but also one that’s relatable to anyone anywhere. Formed in 1992, Less Than Jake is a ska punk band from Gainesville, Florida. Less Than Jake released their debut album, “Pezcore,” in 1995, following a series of independent seven-inch single releases. The band’s subsequent two studio albums, “Losing Streak” and “Hello Rockview,” were released on Capitol Records and the band’s fifth studio album, “Anthem” was the group’s most commercially successful to date, featuring the singles, “She’s Gonna Break Soon” and “The Science of Selling Yourself Short.” In 2008, Less Than Jake founded their own label, Sleep It Off Records and released its seventh full-length album, “GNV FLA.” After more than two decades together, Less Than Jake is embracing a total back to basics approach. An interview with Monica Stouder, resident BUZZ food photographer and writer. BUZZ: Where do you work? Monica Stouder: I own Monica Lea Imagery, just voted one of the top 15 real estate photographers in Jacksonville by Expertise. com. We provide food, commercial, product, drone, real estate and 3D photography. BUZZ: When did you start your business? MS: I have been shooting photography for a long time, but started Monica Lea Imagery in 2012. BUZZ: What do you love most about Jacksonville? MS: The people here are such a great melting pot of personality and culture. BUZZ: How are you involved in the Jacksonville community? MS: I am a board member for the Women’s Food Alliance (WFA). We are a food and hospitality networking group that meets monthly to provide members with educational events and business-related seminars. BUZZ: What business goals are you still working toward? MS: We have a large real estate client base and are working to add home staging services to that pillar for a full circle, one-stop-shop for the new listing market. Additionally, I am creating a food photography curriculum and class so that others can learn how to photograph cuisine in the best light. Great for hobbyists and bloggers! BUZZ: Who was the biggest influence in your career? MS: Shawn O’Neill, owner of Jacksonville Expert Home Advisors, influenced me to think bigger, really be goal-minded and to work what is on my calendar to maintain a clear vision of my day. His words of wisdom truly have influenced a lot of our practices and thus added to the increase in our business volume. Can’t thank him enough! BUZZ: What advice would you give to someone thinking of getting into this business? MS: Be sure to be really in tune with your clients. Having open and real conversations prior to your photo sessions alleviate any disconnection on the finished product. BUZZ: Why do you like to take pictures? MS: I love that my superpower is freezing time!
BUZZ: What is your favorite thing to take pictures of? MS: My favorite things to shoot are sunsets. I love vibrant colors – and Jax sunsets are amazing! BUZZ: Why do you like to write? MS: Writing lets me express how I feel about a food item or product in a public forum. BUZZ: What is your favorite thing to write about? MS: I love writing about food because the precursor is usually a great meal! BUZZ: What do you love most about Jacksonville’s cuisine options? MS: That over the last five years, Jax has become so diverse in its food options. You can find so much more than just great BBQ here now; Ramen shops, incredible Italian, authentic Mediterranean…you can get it all here in Jax! BUZZ: What’s your favorite restaurant in town? MS: It’s so difficult to pinpoint just one, but for an amazingly eclectic Southern experience when dining, I am loving Gilbert’s Social right now! BUZZ: Do you have any crazy cuisine experiences? MS: When shooting for the TV show, “Beat Bobby Flay” for Food Network, the chef with whom I was photographing sent me home with every single dish he prepared for the 1,000-photo shoot. I went home with about seven bags full of items from the menu! BUZZ: What are the first things you look for when you go to a new restaurant? MS: Cleanliness, friendly staff, creativity on menu, house-made items, local ownership then pricing. BUZZ: What do you want people to know about you? MS: I love what I do – all of it. Whether it be reviewing a restaurant, writing a food column or shooting real estate, my passion is relegated to doing what works for our clients and for my incredible family.

How did you receive your training to become a chef? I started off in the kitchen as my first job at a Japanese restaurant and stayed with them for five years. I actually worked for two Japanese restaurants. Then I went to culinary school here in Jacksonville at the Art Institute. Then did two years of stages (internships) in San Francisco and New York, at 3 & 2 Michelin star restaurants, respectively. I broke into the regular job market after that. What cuisines influence your style of cooking? A lot of northeastern Asian, namely Japanese and Korean. I grew up working around all these people, so it had a big impact. What is your favorite kitchen tool? A spoon. You can do everything with a spoon. I actually don’t like using tongs or tweezers because they pinch the food. You can flip things over and baste things with a spoon. What’s your favorite dish on the menu? That would be an appetizer we have, a braised veal tongue topped off with a mostarda (whole mustard seeds and seasonal fruit with spices). FEBRUARY 2017 • iwantaBUZZ.com

Riverside Craft Beer Fest
Get ready, Jacksonville! The area’s first large-scale beer fest of the year is coming your way Saturday, February 25. Here’s the what, where, when, who, how and why. It’s a big party along the river for a good cause that you won’t want to miss! What is it? Fourth Annual Riverside Craft Beer Fest presented by Rotary Club of Riverside. Where is it? Under the Fuller Warren Bridge at the home of the Riverside Arts Market. When is it? February 25. An early VIP entry starts at 3 p.m., with General Admission at 4 p.m. The fest runs until 7 p.m. Who is putting this together and who will benefit? The Rotary Club of Riverside once again presents the fourth edition of the fest. Proceeds benefit Community Peds Care (a division of Community Hospice of Northeast Florida) and the Riverside Rotary Foundation. Community Peds Care, a program for children with life-threatening medical conditions, provides support for the kids and their families. The Riverside Rotary Foundation disburses funds to several various charitable organizations around the Jacksonville area, including schools, military service personnel and other causes. Roughly 4,000 people have attended each of the past Riverside Craft Beer Fests! Last year, Rotary Club of Riverside presented a check for $75,000 to Community Hospice of Northeast Florida following the event. How do I get tickets? Get your tickets online at RiversideCraftBeerFestival.com. Advanced online General Admission tickets (4 p.m. entry) are $36 for unlimited beer sampling in the main area. If you wait until the day of the fest, General Admission is $40. The VIP ticket ($50 online purchase) not only gets you access at 3 p.m., it also includes a special selection of rare and limited beers. You must be at least 21 years of age for beer sampling. If you’re a Dedicated Driver, you get in free (no beer for you, but your friends will thank you for it). Why do I want to go? Really? It’s beer, for one thing! You’ll enjoy unlimited tastings of over 100 different beers from local area breweries, Florida breweries, and regional and national breweries, including many that you may not have tasted before or that have not been available in the Jax area. You’ll be able to satisfy your munchies right there on site from the 12 food trucks which will have a variety of eats and treats available to purchase. What about music? Grandpa’s Cough Medicine will take the stage from 3-7 p.m. and that’ll get your feet stompin’.
