The game meat produced under the brand Zselicvad are the main ingredients of our products.

Producer University of Kaposvรกr Centre for Agriculture The Wild Animal Management Landscape Centre of the University of Kaposvรกr operates a diverse and unique training plant in the Zselic mountains. The closed area livestock area and deer farm has a history of more than 2 decades and it has expanded to be one of the most significant stocks in Central Europe. The estate covers 1300 hectares and provides habitat for

1500 red deers, 300 wild boars, 200 fallow deers, 150 mouflons and 50 roe deers. At our farm, games and household animals - such as Hungarian grey cattle, racka sheep, horses, goats and water buffaloes - are also. The game meat produced under the Zselicvad brand (and acclaimed with the Golden Ribbon Award) are the main ingredients of our products.

Rex Ciborum The goose and duck liver products under the brand name “Rex Ciborum” are worldwide known and are available in more than 30 countries.

Producer Merian Foods Ltd. Merian Foods is one of the main producers of processed poultry products like Vienna and Bologna sausages, hams, cold meat and canned food, especially „Foie gras goose” and „Foie gras duck” in Hungary. The Company has been presented in the Hungarian food industry for more than a hundred years. Chopped goods have been produced from the beginning of 1960’s,

first among food producers. First halls of the tinned food factory were built in 1968. The Company was the first Hungarian producer presenting poultry Vienna sausage to the market in 1982.

Products Goose Liver Natural Specialities: Marinated fat goose liver has a cutting sheet with light-yellowish liver chunks. We recommend it per se, with toast, fruits, fruit sauces or vegetables. Our drink recommendation is a sweet white wine, especially the Tokay ‘aszú’ or ‘furmint’.”

Gourmand Company A bite of luxury - a guaranteed culinary delight

Producer Gourmand Company Since 2009 our company provides to its gourmand costumers a bite of luxury, a guaranteed culinary delight. Our philosophy is not to use any artificial preservatives and additives. Our delicacy are prepared with the method of heat-preservation („dunsztolás”) which is traditional in Hungary. Speciality The main ingredient of our products is Truffle (tuber aestivum). It is a luxury food held in high esteem in inter-

national haute cuisine and known since the antiquity. It grows under the soil. Cultivation: People had long observed that truffles were growing among the roots of certain trees. The first successful attempts were performed in France: Joseph Talon had the idea to sow some acorns collected at the foot of oak trees known to host truffles in their root system. Truffle has been cultivated since the beggining of the 19th century.

Products with truffle Butter with truffle in 80 g jar A homemade butter (fresh butter) based delicacy with no added flavourings or additives. TruffleServing suggestion: Excellent as a starter or as a light supper. Use it as a spread on fresh bread or even better, on toast, as heat brings out the unique volatile aroma of the truffle. Truffle “caviar” in 25 g jar Contrary to its name this product does not contain any caviar but fresh truffles are grated to such small pieces that resemble the size of the caviar and they are preserved in oil. Since truffle loses its aroma as it goes dry it is recommended to consume it in a week time. However, truffle caviar, keeps the aroma fresh so it can be enjoyed for weeks. Its usage is similar to that of the fresh truffle, that is, to be added to dishes, for example omelette, risotto, or served as the most simple yet most popular truffle dish: pasta with truffle. Due to its strong aroma it is sufficient to add only a very small amount to a plate of food.

Pesto with truffle in 90 g jar Ingredients: champignon, truffle, oil, salt. It does not contain any preservatives. Preserved with heat treatment. Packaging: ornamental jar. Best before end: see jar. Producer Chili-Trade The Chili-Trade Food Industrial and Commercial Ltd. was founded in October 1994. Its main activity is the processing and packaging of paprika. Paprika is a spice used for about 300 years in Hungary. Paprika became a spice of every day usage, which cannot be missed from our nutrition. The excellent climate of Hungary, soil conditions, the

tradition of cultivation, which is inherited from father to son, made this plant word-wide renowned. Chili-Trade Ltd. is dealing with keeping these features in view. It was introduced and used by our company the food security system called HACCP in 2001. Due to the usage of germ-limiting method we could reach an improvement of the quality.

Vitafood Producer Első Híd Ltd.(First Bridge Ltd.) Our business association was founded in 1993 as a family company. Ever since the beginning, our goal has been to produce healthy and tasty bio-products that do not pollute the environment during their production and processing. We started with the production of apple cider vinegar and beetroot juice and then expanded with producing other fruit and vegetable juices. Later, sauces have also

been introduced to our range of products: the Milanese and Bolognese sauces and then the delicate jams made of Hungarian fruits, with apricot, raspberry, blackberry, sour cherry and forest fruits. Hungarian Hazelnut Producer Balรกzs Bohรกr Traditional Primary Producer. The Roman-type Hungarian hazelnuts are produced in the area south from the Balaton, on 17 hectares of humus-rich soil.

Products Roman-type Hungarian hazelnuts Specialities: The Roman-type Hungarian hazelnuts are much larger then the Turkish counterpart and they are also richer in minerals, vitamins and natural oils. The hazelnut is very rich in Vitamin B. Vitamins B1 and B5 contribute to the beauty of the skin and the hair, Vitamins B1, B8 and B12 help the operation of the nervous system , while Vitamin B9 (or folic acid) plays a major role in the production of red blood cells. It also contains Vitamins H, C and E which are useful in protecting the immune system, as numerous studies regarding the

prevention of cancer, and cardiovascular diseases indicated. Seed oil of Ĺ?rsĂŠg Producer Bartha Porta Specialities Our oils of nut, hazelnut and pumpkin seed have an outstanding positive effect on health. A lot of antioxidant against the free radicals in the blood helps to keep young and healthy.The specific components of pumpkin seed oil are known to prevent bladder and prostateproblems. They are said to even shrink enlarged prostate glands in early stages. Minimal amounts of oil are needed. Chewing a handful of dried seeds every day or taking the oil for salads and for dips can easily give a similar preventive supply. So you see it is a wonderful product of mother nature. The dried seeds are crushed and fine milled. This process is done at a low temperature to protect of burning the seed flour. The roasting brings the typical flavour and makes the oil

tasting so fine. After roasting the pressing is done with high pressure to gain the oil.

The fresh pressed oil is stored for some days then the oil is bottled or canned.

Products Nut oil The nut oil is known since the ancient times. It is one of the most valuables oils what we use int he cuisine. The nut oil is a dark yellow, organic nut tasted oil which is produced by fresh pressing from the inside of the nut.

Hazelnut oil Our hazelnut oil is freshly pressed with a traditional method. Ingredient is 100 % turkish hazelnut. The hazelnut oil can be heated to 220 celsius so it is convenient for vegetables, pickles, hazelnut cream. Its taste is unique.

Pumpkin seed oil The seed of pumpkin without peel is traditionally roasted then by fresh pressing we extract this dark brown, highly savoury liquid. Beside its culinary use, the pumpkin seed oil performs great effectivity in the medical treatment of certain disease such as bladder or prostate problems.

HONEY

Brand:

Honey of Majsa Producer Pรกl Horvรกth Traditional Primary Producer The peoples living in the territory had already been beekeepers, before the Hungarian conquest of the Carpathian Basin. The arriving Hungarians learnt and continued to perform this activity. In Kiskunmajsa, the gentle bees collect the nectar for the honey to 120 hives from several hectares of privately owned acacia forest.

Speciality Milkweed or Asclepias also grows in this area, which enables the production of the special milkweed honey with the help of the bees The acacia forests grow on sand soil, providing unique aromas to the honey made from multiple types of acacia.

Products Acacia honey Specialities: It contains Vitamins B1, B2, B3, B5, B6, zinc, sodium, phosphorus, magnesium, manganese, magnesium, copper, iron and most of all, calcium. A great relief in common cold and catarrhal diseases, or to a sore throat. A universal sweetener.

Milkweed/Asclepias Specialities: Milkweed (or Asclepias) honey is a honey with delicate perfumes and an intensive flavour, with a light colour similar to acacia, only of a darker shade. Its pollen content is low, because bees do not collect it. It is also ideal for people with an allergy. It has anti-inflammatory and blood pressure regulating effects and it also strengthens the body. If stored appropriately, it only crystallises after two years. According to clinical experiments, milkweed honey is the second best type of honey for anti-inflammatory effects.

Blended honey Specialities: A honey in the colours of gold or light brown, which crystallises soon, but it is important to know that this is absolutely not a sign of decreasing quality, but a natural process. The creamy honey that started to crystallise is a pleasant delicacy. Many consume it with cheese, nuts, seeds and raisins. It is also ideal for baking.

We played with the words, associated and hid the products behind exciting word constructions. Speciality Artison jams under the Derecskei Fenséges brand are produced in our artisan production unit with great care and love, with a fruit content of 80-100 percent and names playing on words. Due to the traditional production method the fruit is transformed through cooking, and it enters the Fenséges world as a drop of the sun. The Derecskei Fenséges jams are not made in industrial production. They contain no preservatives or other artificial additives. Every jar contains at least 80 percent of fruit and they are cooked with unique recipes and artisan procedures.

Szamos Marzipan Producer Szamos Marzipan Ltd. The small Serbian boy Szavits Mladen growing up without a father in Szentendre in poverty was a confectionery student in the shop of the appreciated Auguszt E. József in the Krisztina Boulevard. One fine day - at the beginning of the 30s - a Danish confectioner came to the company, who showed that: with appropriate manual skills, attention and plenty of practice pretty roses can be moulded from the sugared almond mass, the marzipan. The marzipan, a special dessert Marzipan is a sweet dated back to the Middle Ages. It

came from Persia to Europe in the 13th century. It was first made in Venice, its name refers to the patron saint of the town, Saint Mark: the Latin name of marzipan is panis martii, whose meaning is: Mark’s bread. In Hungary sugar appeared in the 14th century. It was gained from sugar-cane, therefore it was called cane-honey. At that time they sold the sugar arrived from the port of Levante in the Middle East as an expensive spice. It first occurred on the tables of princes, at the holiday banquets of Sigismund and Matthias as table decorations in the shape of statues. Seybold Bavarian traveller recorded that in 1477 a brown-white chessboard made from almond and sugar was served as the eighth course of the New Year’s lunch following the wedding of King Matthias.

Degenfeld-Tokaji Bio wine Producer Degenfeld-Tokaj Winery Of German-Hungarian descent the counts of Degenfeld family history leads back to medieval Switzerland. They arrived in Hungary and Transylvania at the start of the 19th century. With their superior estates they played an important role in the history of Tokaj-Hegyalja. One of the most influential Tokaj landowners, Count Imre Degenfeld, was a founding member, of the Tokaj-Hegyalja Wine Makers Society established in 1857. Winery-vineyard region’s specialities Tokaj-hegyalja is Hungary’s first wine producing region and one of the most beautiful places in the country. The earth of Degenfeld vineyard is an optimal mix of loess and brown forest soil on rhyolite bedrock but on a perlite ridge. The presence of different soils and rocks ensure rich and varied minerals for the grapes.

Products TOKAJI ASZÚ 3 Puttonyos 2008 sweet 0,5 l A pale golden tone and intensive aromas are the signs of citrus fruit and maturation in wooden barrels. TOKAJI MUSCAT BLANC 2012 semi dry 0,75 l This full-bodied Muscat Lunel is one of the Winery’s favourites. It is predominantly characterized by the harmony of bouquet and taste typical of this variety, and by its refreshing nature. The wine is elegantly presented by the notes of Muscat in its nose, which combine with zesty acids and the harmonizing residual sugar to make this a complete wine. It may be enjoyed as an aperitif or simply on its own.

TOKAJI ASZÚ 5 Puttonyos 2008 sweet 0,5 l A light golden-yellow tone and a fresh and fruity bouquet, typical of young Aszú wines. In taste, the choice botrytis and fresh summer fruits blend well with the lively acids, which are typical of the 2008 vintage and are one of the essentials of wines suited to long maturation. As with all of our wines, we endeavoured to create harmony in this one, too; here it is founded upon the good balance between acids and sugar. Its concentration is pleasant and it gives a long finish. It could be matured further, but makes an excellent impression as it is right now. It is a perfect accompaniment to desserts and cigars.
