Leonardo’s hashes Simona Bertocchi is a Piedmontese writer who has lived for years in Tuscany, specializing in composing novels born from real figures, works and paths of the Italian Renaissance. Three years ago, an eclectic person informed her that Leonardo Da Vinci also had, among his many interests, the one for pastry. Simona explores correspondence and manuscripts and finds out documentation that certifies Leonardo’s special passion for confectionery creations: cakes, sorbets and “pasticci” (hashes), as they were properly called at the time. The compositions were created using the raw materials made of the fruits and flowers allowed by nature and the knowledge of those times: strawberry grapes, blackberries, lemon balm, violet, lavender... book of great charm, entitled “I Pasticci di Leonardo” (Leonardo’s Hashes). Each chapter talks about a cake inspired or created by him. Each of these “pasticci” marks a phase of his long life. The book flows between real historical references and an intriguing fictional plot. Simona has no knowledge of confectionery, but she remembers an old friend of hers who runs a confectionery company in Romagna, Fugar Produzione S.p.A .. That friend is Andrea Cinelli. It is then that Fugar becomes the fundamental support to recreate textures, ancient combinations, perfumes. A department of the Rimini-based company is specialized in extracting essences and aromas from natural raw materials, through infusions, macerations and distillations. Today an unusual and original project has taken shape, respecting the authentic recipes that between 1400 and 1500 have accompanied Leonardo’s existential and creative adventure.
