Pastry: a constantly changing world Anno II - n° 10 / 2019

In these uncertain times, the pastry world follows its future, where the winning supply will be made up of the right mix between tradition and innovation, elements which are apparently in conflict, but could be successful if they are well dosed and mixed. The most visible changes are seized in what is the current supply in the pastry shops and Italian cafes that aim at following the tastes that keep changing and the preferences of the consumer that is more and more attentive than before and, above all, much more well-informed. To conquer and reconquer the palate of such new consumers is a “must” and, thus, new, edited, reworked and optimized recipes with which to stimulate your gluttony, new and appealing ways that strike your eyes and trigger irresistible cravings and languor. By following the changes your creativity can free, firstly, the most extraordinary fantasies, secondly, skills and interpretation, so that the pastry chef becomes more and more artistic entirely. He has to face new challenges. In fact, the modern pastry is constantly changing, it is a world that rises and falls and incessantly opens itself to the new, without betraying those cornerstones that have been fundamental for his success. Therefore, new breakthrough techniques and theories with which you can measure a more professional technical preparation, a professional who is able to work differently in the pastry sector and who looks to the future by keeping the good things of his past, and is capable of adapting to the needs of contemporary consumption, without falling in the extreme. A mix between tradition and innovation that needs to be well dosed though, in other words, to be able to innovate without betraying the tradition. This has to happen, obviously, without forgetting the quality, which is the first necessary ingredient, in order to get magically that perfect mix that is kept in the papillas of the consumer who, in the end, proclaims the success and indicates, with his cravings of tastiness, the borders of his next challenge.
